  • When the quality and cooking characteristics of wash free rice was compared with those of control milled rice during storage, smaller quality change during storage and more easy to cook was found in wash free rice than control. The wash free rice equipment manufactured in foreign country was carefully investigated and commercial wash free rice equipment with 1metric ton per hour capacity was made considering the characteristics of domestic rice cultivar. Modification of the equipment was made through the repeated field test, and the technique on wash free rice equipment was transferred to the RICETECH. These systems were manufactured in RICETECH will be exported to China next year.

Development of the Processing System for Pre-washed Rice

  • Demand for development of processing systems for pre-washed rice and propagation of the systems has recently been on the rise, because rice-cooking requires watering 15 times the rice quantity to cook, as in case of the regular rice currently being circulated in Korean market, in addition to paying the trouble of washing it for cooking, and besides the milky turbid water coming from the rice-washing contributes to water contamination. In this study, therefore, a processing system for pre-washed rice was designed and built with rice surface polishing devices that adopted abrading and airing methods, an electrostatic method and a method using a fine watering, to conduct its performance test. The result showed that turbidity of the wash water, which is the base to determine the pre-washed rice standard, turned out 47.33 ppm and 48.00 ppm respectively for 800 kg/hr and 1,000 kg/hr supplies, which meets the standard for the processing system free from rice-washing for cooking. The quantity of watering at this experiment was only 0.43 times the rice, thus resulting in curtailment of process-watering by approximately $69\%$ compared with the existing wet-type pre-washed rice processing system popular in Korean market.

백미 제조방식에 따른 저장특성 (Storage characteristics of milled rice according to milling system types)

  • 본 연구는 제조방식별로 제조된 씻지 않는 쌀의 저장특성을 조사하기 위하여 최근 개발된 건식(DT), 반건식(SDT) 및 가수정미방식(WT)의 제조 시스템으로 공시재료를 조제한 후 저장기간과 저장온도에 따른 품질특성을 분석하여 수행하였다. 공시재료는 각각 백도가 41(DT1, SDT1, WT1)과 43(DT2, SDT2, WT2)의 두 가지 수준으로 조제하였으며, 저장기간은 약 12주이었고, 저장온도는 각각 10, 20 및 $30^{\circ}C$로 설정하였다. 저장기간 동안의 품질특성을 살펴본 결과 색도 b값과 지방산가는 점차 증가하는 경향을 나타내었으며, 백도, 함수율, 탁도, 건고물량 및 총균수는 감소하는 경향을 나타내었다. 그러나 백도, 색도 b값, 탁도 및 건고물량은 저장초기인 1주차 이후부터는 변화가 적게 나타났다. 반면 함수율, 총균수, 지방산가는 제조방식보다 저장온도의 영향이 큰 것으로 나타났으며, 저장온도가 높을수록 함수율과 지방산가는 감소폭이 크게 나타났고, 총균수는 증가폭이 크게 나타났다. 또한 함수율, 탁도, 건고물량은 제조방식의 영향을 받아 가수정미방식으로 제조된 시료의 경우에는 각 항목의 초기값이 다른 제조방식과 차이가 큰 것으로 나타났다. 가수정미방식으로 제조된 시료(WT1, WT2)의 초기함수율은 높게 나타났으며, 탁도 및 건고물량은 다른 제조방식의 시료보다 낮게 나타났으나, 저장기간이 경과함에 따른 감소폭은 비슷한 것으로 나타났다. 따라서 본 연구에서는 건식, 반건식 및 가수정미방식으로 제조한 백미는 저장온도와 저장기간이 증가할수록 저장성이 떨어지는 경향을 나타내었고, 특히 가수정미방식으로 제조된 시료는 초기 품질특성 중 함수율이 높게 나타나 저장중의 산패에 영향을 주는 지방산가가 증가하여 저장성이 낮은 것으로 판단되었다.

도토리에 대한 국내의 연구 동향 (A Study on the Literature Review of Acorn in Korea)

  • This study was surveyed and compiled the contribution about acorn in korea .the physico-chemical properties of acorn and acorn starch. preparation of acorn starch and elimination of the acorn tannin, the rheological properties of acorn starch gel. Nutrition of acorn and antioxidative activity of tannin in acorn extract. The result obtained were as follow. 1. The chemical compositions of acorn were water 6.5∼13.7%, crude ash 1.9∼3.4%, crude fat 1.1∼5.0%, crude protein 5.8∼7.8%, crude fiber 2.1∼3.6%, N-free extract 71∼77.5%, total tannin 4.6∼9.3%, Ca 92.7∼460.9mg%, p 80.0∼740.9mg%, Na 66.2∼93.9 mg%, and K 867.9∼983.1mg%. 2. The acorn tannin was extracted with water, acetone, and ethanol. The generation method was wash SE settling method with water. 3. The shape of acorn starch granule was rounded triangular and some elliptical, rasing power 12.4∼12.5, Blue value 0.43∼0.47, Alkali number 10.8∼11.3, Amount of Arnylose 28.8∼30.50% Tannin contents on the initial go tim-zation temperature of acorn starch were not influenced but maximum and cooling viscosity o the acorn starch were decreased. 4. Nutritional effect and diet absorption rate were not influence, by rice and 20% T-A(elimination of tannin from the acorn) mixed diet, and the content of lipid in s rum were not influenced by rice 40% and T-A (elimination of tannin from the acorn) mixed diet. 5. jallic acid, digallic acid, gallotannin were contained in acorn powder extract. The main antioxidative : stlvity was speculated due to the gallic acid.
