  • The role of fat is important from nutritional standpoint. The physiological functions of fat are energy yielding as well as the carrier of fat soluble vitamins, with special activities of essential fatty acids. It is fortunate that Korean families prefer to use vegetable oils rather than those from animal origin. But the problems are focused on better qaulity of food oils with attempt to exploit the available resources. This study was undertaken to inevestigate the fatty acid compositions of Korean origin both from conventional and unconventional resources of gas-liquid chromatography. The results obtained are as follows. 1. The total lipid contents of seeds of red pepper, Korean squash, sesame, perilla (var Japonica), and Korean pine nuts and walnuts were 24.3%, 56.6%, 56.4%, 46.9%, 69.8%, and 67.2%, respectively. 2. The saponification numbers of samples ranged from 190 to 200. It showed that the mean molecular weights of fatty acids composing the lipids were very much closed each other. 3. Iodine numbers of varing seed oils ranged from 96.5 of Korean squash seed oil to 124.6 of walnut oil. Oils obtained from squash seeds and sesame seeds showed significantly lower value, while others ranged from 122 to 125. 4. In the fatty acid compositions, squash seed oil was composed mainly of unsaturated fatty acids, 74.9% of which was oleic acid, whereas red pepper seed oil, pine nut oil, and sesame oil contained linoleic acid as a major component showing 64.4%, 56%, 48.8%, and 47.8%, respectively. In perilla seed oil, the amounts of linoleic and linolenic acids were 14.1% and 58%, respectively which meant nearly three-fourths of the total fatty acidsbeing the unsaturated essential fatty acids. This study will encourage the use of these conventional and unconventional vegetable oils which have highr ratios of polyunsaturated to saturated fatty acids.

  • Objectives: We examined the common allergenic foods, symptoms and management of food allergies in children attending the facilities registered at Center for Children's Foodservice Management in Gangdong-gu, Korea. Methods: The survey was conducted among the directors or head teachers of 186 children's food service facilities with 7,591 children in 2019. The questionnaire consisted of three parts, including general information about food service facilities, information related to food allergies and allergenic foods and symptoms in individual children. Results: The number of children with food allergy was 271 (3.6%), and the proportion decreased with the increase of age. There were 91 children (33.6%) with a medical certificate, and these children had a significantly higher number of allergenic foods and symptoms than those without a medical certificate. Allergenic food groups included meat, fish, eggs and legumes (59.1%), fruits (12.4%), milk and dairy products (8.9%), cereals (7.8%), vegetables (6.2%), processed foods (3.8%) and oils and sugars (1.9%). Eggs accounted for 22.1%, followed by peanut and tree nuts (18.6%), fruits (12.4%), milk and dairy products (8.9%), shellfish (8.6%), vegetables (6.2%), fish (5.7%), cereals (4.3%) and meat (1.1%). The common allergenic foods were eggs, peanuts, walnuts, kiwi, shrimp, milk, tomatoes, mackerel, blue-green fish, peaches, shellfish (clams and abalone), buckwheat, wheat and soybeans. The most common allergic symptoms were skin and mucous membrane symptoms, such as hives, rash, itching and oral angioedema. Meal management for children with food allergies showed different trends depending on the causative food. Conclusions: The objective diagnosis by an allergist should be done for food allergy management in children's catering facilities. A system for systematic meal management of causative foods should be prepared.

  • The present study describes the bacterial blight of walnut, caused by Xanthomonas arboricola pv. juglandis (Xaj) in the northern Gyeongbuk province, Korea. Disease symptoms that appear very similar to anthracnose symptoms were observed in walnut trees in June 2016. Pathogens were isolated from disease infected leaves, fruits, shoots, bud, flower bud of walnut, and cultured onto yeast dextrose carbonate agar plates. Isolated bacteria with bacterial blight symptoms were characterized for their nutrient utilization profiles using Biolog GN2 and Vitek 2. In addition, isolates were subjected to physiological, biochemical, and morphological characterizations. Furthermore, isolates were identified using 16S rDNA sequence analysis, and multi-locus sequence analysis using atpD, dnaK, efp, and rpoD. To confirm pathogenicity, leaves, fruits, and stems of 3-year-old walnut plants were inoculated with bacterial pathogen suspensions as a foliar spray. One week after inoculation, the gray spots on leaves and yellow halos around the spots were developed. Fruits and stems showed browning symptoms. The pathogen Xaj was re-isolated from all symptomatic tissues to fulfill Koch's postulates, while symptoms were not appeared on control plants. On the other hand, the symptoms were very similar to the symptoms of anthracnose caused by Colletotrichum gloeosporioides. When walnut plants were inoculated with combined pathogens of Xaj and C. gloeosporioides, disease symptoms were greater in comparison with when inoculated alone. Xaj population size was more in the month of April than March due to their dormancy in March, and sensitive to antibiotics such as oxytetracycline and streptomycin, while resistant to copper sulfate.

  • The objective of our study was to predict future cultivation areas for walnut trees (Juglans sinensis), using the cultivation suitability map provided from Korea Forest Service and MaxEnt modelling under future climate conditions. The climate conditions in 2050s and 2070s were computed using the Regional Climate Prediction (RCP) 4.5 and 8.5 scenarios with the HadGEM2-AO model. As a result, compared to the present area, the cultivation area of the western Korea including Chungcheongnamdo, Jeollabuk-do, Jeollanam-do decreased on a national scale under RCP 4.5, and those of Gyeongsangbukdo and part of Gyeongsangnam-do decreased under RCP 8.5. However, Gangwon-do which is located in higher altitude over 600 meters than other regions showed increases in cultivation areas of 18.3% under RCP 4.5 and of 56.6% under RCP 8.5 by 2070s. The predicted map showed large regional variations in the cultivation areas with climate change. From the analysis of current top ranking areas, the cultivation areas in Gimcheon-si and Yeongdong-gun dramatically decreased by 2070s under RCP 4.5 and 8.5; that of Gongju-si decreased more under RCP 4.5; and those of Muju-gun and Cheonan-si sustained the areas by 2070s under both scenarios. The results from this study can be helpful for providing a guide for minimizing the loss of walnut production and proactively improving productivity and quality of walnuts with regard to unavoidable climate change in South Korea.

  • Pesto were prepared with five different nuts including pine nut, sunflower seed, pumpkin seed, walnut and almond to examine the antioxidant properties(total polyphenols, total flavonoids, electron donating ability) and sensory test(attribute difference, acceptance). Pesto were measured based on color value, pH, viscosity, total cell numbers for 0, 5, 10, 15 and 20 days at $4^{\circ}C$. The higher total phenol and total flavonoid content of pesto added with various nuts was higher antioxidant capacity. Basil pesto added with sunflower seeds and walnuts were considered to be more functional more than pine nuts addition. The attribute difference test results was the color intensity, nut taste, bitter taste, coarseness, oily taste, thickness were evaluated significant difference kinds of nuts. Gloss, basil flavor, nuts flavor, basil taste were not evaluated significant difference in kind of nuts. The preference test results reveal that the appearance, taste, texture and overall preference level was the highest in PNP(pinenut pesto) and SSP(sunflower seed). L value, pH, decrease while a value, b value and viscosity increased as kind of nuts in during storage. Total cell number increased and then decreased a little at a certain point. When prepared pesto, SSP(sunflower seed) was the highest in antioxidant property, and change of color value, pH, viscosity, total cell number were the lowest. In addition to the use of pine nuts, sunflower seeds have been identified are possible.

  • Walnuts are one of the most economically important fruit trees in forestry. In walnut orchards, however, studies examining damage by insect pests are limited. This study was conducted to investigate the rate of damage caused by Conogethes punctiferalis to walnut fruits and by Acrocercops transecta to walnut leaves. In 2017, the change of damage rate (caused by C. punctiferalis) to fruits were investigated in Buyeo. In addition, we counted fruits and leaves damaged by two lepidopteran species in Gimcheon, Buyeo, Yeongdong, and Hwaseong. Damaged fruits steadily increased in abundance with fruit growth in Buyeo, and the highest number of damaged fruits was documented in late summer. The rates of damage caused by C. punctiferalis to fruits in Buyeo, Gimcheon, and Hwaseong were 22.1%, 20.5%, and 11.7%, respectively. Additionally, the rates of damage caused by A. transecta to leaves in seedlings (58.5% on average) were significantly higher than to those in older trees (11.2% on average), irrespective of the study location. In conclusion, this study showed that C. punctiferalis and A. transecta were serious pests affecting walnut fruits and leaves, respectively. Therefore, management methods for these insect pests need to be developed.

  • This study applied the portfolio approach as a means to provide decision-making information for the establishment of the optimal production plan for non-timber products. The target items of non-timber forest product were Chestnut, Jujube, Walnut and Astringent Persimmon. The data used in this study were the annual report of forestry production cost survey which contains the annual production, annual gross income, and annual product cost from 2008 to 2013. These data were used to calculate the expected return of non-timber forest product. The objective function in the portfolio models was to minimize the expected return volatility, called risk and the constrain was to achieve the minimum expected return rate. Results indicated that the production ratio of the nuts and fruits in 2013 was 7% for Chestnut, 20% for Jujube, 5% for Walnut and 68% for Astringent Persimmon. Furthermore, portfolio presented that the production ratio was 10% for Chestnut, 9% for Jujube, 3% for Walnut and 78% for Astringent Persimmon in the near future. The cause was analyzed due to maintain stable production and income of Astringent Persimmon and Chestnut. Meanwhile, the revenue of Walnuts and Jujube was in great variation with relatively higher revenues.
