한국산(韓國産) 식용(食用)버섯의 향기성분(香氣成分)에 관(關)한 연구(硏究)(III) -표고버섯의 향기성분(香氣成分)- (Studies on the Volatile Components of edible mushroom (Lentinus edodes) of Korea)

  • 한국산 표고버섯의 생것과 가열한것의 향기성분을 GC, GC-MS를 이용하여 분석한 곁과는 다음과 같다. 1) 생 표고버섯에서는 향기성분 10종을 동정하였으며 이들중 1-octen-3-ol이 71.05%, ethylacetate 1.17%, 2-octenol 1.22%, 그리고 octylalcohol 1.05%로 전체의 향기성분 중에서 74.47%를 함유하고 있었으며 2) 가열중인 것에서는 8종을 동정할 수 있었으며 1-octen-3-ol이 83.68%, ethylacetate 2.24%, 2-octenol 1.55%, octylalcohol 1.28% 및 1,2,4-trithiolane 1.91%로 전체 향기성분의 90.56%를 함유하였다. 3) 1,2,4-trithiolane과 1,2,4,5-tetrathiane은 유황화합물의 향기성분들로서 표고버섯 향기의 특징으로 인정되었다.

한미산 황색종 잎담배의 휘발성 정유성분 비교연구 (THE COMPARISONS OF VOLATILE OILS OF FLUE-CURED TOBACCO PRODUCED IN KOREA AND IN THE UNITED STATES)

  • Generally, the same quality tobacco may give similar concentration of each chemical component. This research investigation was studied to obtain the differences in concentrations of volatile oil compounds in physically similar tobacco produced in different environment and managements-in Korea and in the United States. The flue-cured leaf tobacco produced in Korea and America was regraded to B3L and P3L by American grading system and analyzed for volatile oils relating to tobacco flavor and aroma. Sixty compounds of the more than 100 peaks distinguishable on the total neutral volatile oils were identified by G5-MS and quantified. Their concentrations are compared between B3 L and P3L produced in Korea and in the United States. The most volatile oil concentrations of B3 L and P3L grade tobacco arc higher in American than in Korean. Only a few components such as benzaldehyde, pulegonc, 4, 6, 9 - megastigmatriene - 3 - one, and coumaran are less in American.

향끽미종 담배의 재식밀도 및 질소시비량이 잎담배 생육 및 특성에 미치는 경향 (Effect of Spacing Density and Nitrogen level on Yield and Properties of Aromatic Tobacco leaves)

  • 향미종 연초 재배에서 재식밀도 및 질소 시비량에 따른 생육특성 및 수량, kg당 가격과 향미종 연초의 특징인 휘발성 유기산 함량의 관계를 분석, 재배법에 활용코자 시험한 결과, 1. 10 a당 13,885주에서 24,997주로 밀식할수록, 주당 생장량은 감소하나 LAI는 증가하였으며 수량은 21.875주까지 유의성 없이 증가하였으나 그 이하에서는 증가를 보이지 않았다. 2. 10a 당 질소 시비량을 1.5, 3.0, 4.5kg 증비 할수록 주당 생장량, 잎의 크기 및 LAI가 증가하고 수량 및 kg당 가격이 유의하게 증가하는 경향이였다. 3. 발뢰 7 일 전 엽중 질소 함량은 처리간 차를 나타냈으나, 건조엽중의 질소, 환원당, 니코딘 함량에서는 재식밀도 및 질소수준간 일정한 경향을 보이지 않았다. 4. 초장 및 엽의 크기가 작을수록 건조엽중 2-methyl butanoic, 3- methyl butanoic 및 3- methyl pentanoic acid의 함량이 높은 경향이었으며, 5. 건조엽중 휘발성 유기산 함량과 개화기의 초장(r=-0.49), 최대엽장(r=-049), 일주당 엽면적(r=-0.47)은 유의한 부의 상관을 보였다. LAI 및 단위엽면적당과는 각각 유의한 상관을 보이지 않았다.

메밀녹차의 향기성분 (Volatile Flavor Components of Buckwheat-Green Tea)

  • 생리활성을 갖는 것으로 알려진 메밀을 고소하게 볶은 시판 메밀차를 중급 정도의 녹차에 혼합하여 메밀녹차를 제조하고 기호도와 관련이 있는 향기 성분을 동시증류추출(SDE) 장치를 사용하여 분석하였다. 메밀차와 녹차를 1:1로 혼합한 메밀녹차의 향기성분으로 42종류를 동정하였다. 메밀녹차에는 메밀차의 향기성분 23종류와 녹차의 향기 성분 16종류 및 공통으로 포함된 3종류의 화합물들로 구성되어 있었다. 메밀녹차의 향기성분으로는 15종류의 pyrazine류를 동정하였다. 이는 메밀녹차의 향기 성분 중 약 32%를 차지하는 비율이었다. 메밀녹차의 향기 성분은 본래 녹차가 가지고 있는 향에 구수하고 달콤한 향을 띄는 볶음 메밀의 향기성분들이 부여되어 생성된 것으로 밝혀졌다. 본 연구에서 사용한 녹차는 중급 정도에 해당되는 덖음차로 고급녹차에 많았든 linalool이나 geraniol은 적은 함량 포함되어 있었으나 녹차향에 기여하는 꽃향기를 띄는 nerolidol의 함량은 많았으며 nonanal, 2-phenylethanol, cis-jasmone, indole 및 ${\beta}-ionone$ 등도 함유되어 있었다. 복은 향의 중요성분으로는 roasted flavor인 pyrazine류와 pyrrole류, 달콤한 향을 띄는 methylbutanal류와 furan류 등으로 밝혀졌다. 특히, pyrazine류는 종류도 많고 함량도 메밀차 전체 면적의 56%로서 녹차에 혼합되었을 때 메밀녹차의 고소한 향에 크게 기여하는 것으로 나타났다.

Flavor Characteristics of Hanwoo Beef in Comparison with Other Korean Foods

  • The present study identified volatile flavor components of Hanwoo longissimus muscle and other Korean foods (Doenjang, Chungukjang, sesame oil) and their traits were compared in relation with flavor precursors that include fatty acids and protein degradation products. Hanwoo longissimus muscle was purchased from a commercial abattoir while the other foods were sampled from three separate households. The results showed totals of 68 ($9.94{\mu}g/g$), 60 ($15.75{\mu}g/g$), 49 ($107.61{\mu}g/ml$) and 50 ($7.20{\mu}g/g$) volatile components for Doenjang, Chungukjang, sesame oil and Hanwoo beef longissimus, respectively (p<0.05). Aldehydes were the most predominant components in beef, but alcohols, acids and esters, and pyrazines are probably the major contributors to the flavor characteristics of other foods. SDS-PAGE revealed that beef longissimus muscle and Doenjang showed higher protein degradation than other foods which could be likely related to chiller ageing and ripening process. The total polyunsaturated fatty acids were approximately 50, 60, 41 and 5% for Doenjang, Chungukjang, sesame oil and beef longissimus muscle, respectively. Based on the mechanism(s) of generation of the volatile compounds and the chemical composition of each food sample, differences and traits of volatile flavor components among the four food types are likely due to fatty acid profiles, proteolytic activity and processing conditions. Aroma intense compounds like pyrazines and sulfur-containing compounds were limited in cooked beef in the current experimental condition (i.e., relatively low heating temperature). This suggests that higher heating temperature as in the case of roasting is needed for the generation of high aroma notes in meat. Furthermore, proteolytic activity and stability of fatty acids during ageing have a great influence on the generation of flavor components in cooked beef.

The Global Volatile Signature of Veal via Solid-phase Microextraction and Gas Chromatography-mass Spectrometry

  • The volatile composition of veal has yet to be reported and is one of the important factors determining meat character and quality. To identify the most important aroma compounds in veal from Holstein bull calves fed one of three diets, samples were subjected to solid-phase microextraction (SPME) combined with gas chromatography-quadrupole mass spectrometry (GC-MS). Most of the important odorants were aldehydes and alcohols. For group A (veal calves fed entirely on milk for 90 d before slaughter), the most abundant compound class was the aldehydes (52.231%), while that was alcohols (26.260%) in group C (veal calves fed starter diet for at least 60 d before slaughter). In both classes the absolute percentages of the volatile compounds in veal were different indicating that the veal diet significantly (p<0.05) affected headspace volatile composition in veal as determined by principal component analysis (PCA). Twenty three volatile compounds showed significance by using a partial least-squared discriminate analysis (PLS-DA) (VIP>1). The establishment of the global volatile signature of veal may be a useful tool to define the beef diet that improves the organoleptic characteristics of the meat and consequently impacts both its taste and economic value.

Seibel 포도즙 알코올 발효 및 저장 중 휘발성 향기성분의 변화 (Changes of Volatile Flavor Compounds of Seibel Grape Must during Alcohol Fermentation and Aging)

  • A great variety of the volatile metabolic by-products was formed in yeast cell during alcohol fermentation. The seibel grape (Vitis labrasca) which was grown in the Southern Korea used for wines. The objective of this research was to identify the volatile flavor compounds during alcohol fermentation and aging at 12$^{\circ}C$. saccharomyces cerevisiae and Schizosaccharomyces pombe were inoculated and fermented in seibel grape must. The volatile flavor compounds of logarithmic, stationary and death phases were extracted, concentrated and identified by gas chromatography/mass spectrometer (GC/MS). The volatile flavor compounds were determined by a Hewlett-Packard 5890 II Plus GC which was equipped with Supelcowax 10 fused silica capillary column (60m$\times$0.32mm$\times$0.25${\mu}{\textrm}{m}$ film thickness) wall coated with polyethyleneglycerol. The scan detection method allowed the comparison of the spectrum from the chromatogram of volatile flavor compounds to those in data Wileynbs base library. Among the volatile compounds collected by ether-hexane extraction method, the evolution of 20 main compounds, such as 9 esters (ethyl butyrate, isoamyl acetate, ethyl caproate, n-hexyl acetate, ethl caprylate, ethyl caprate, diethy succinate, ethyl hexadecanoate, 2-pheneethyl acetate), 4 alcohols (3-methyl-1-butanol, 1-hexanol, 1-heptanol, benzoethanol), 4 ketones and acids (2-octanone, caproic acid, caprylic acid, capric acid), 2 furan and phenol (2,6-bis(1,1-dimethyl ethyl)phenol, 2,3-dihydrobenzofuran) were observed during alcohol fermentation and aging. The production of the esters during alcohol fermentation with S. cerevisiae was higher than those of Sch. pombe. The sensory scores of the aged wine samples in aroma, taste and overall acceptability were not significantly different(p<0.05).

Constituents of the Essential Oil from Eclipta prostrata L.

  • The volatile aroma constituents of Eclipta prostrata L. (leaves, stems, and flowers) were isolated by hydro-distillation extraction method and analyzed by GC/MS. The yield of Eclipta prostrata L. essential oil was 0.1% (v/w), and its color was yellow. Sixty-eight volatile flavor compounds, which make up 71.15% of the total volatile composition of the essential oil were tentatively characterized. It contained 35 hydrocarbons (56.25%) with sesquiterpene predominating, 12 alcohols (3.05%), 8 ketones (3.83%), 9 aldehydes (1.86%), 2 oxides (6.03%), and 2 esters (0.13%). ${\alpha}$-Humulene, 6,9-heptadecadiene, (E)-${\beta}$-farnesene, and ${\alpha}$-phellandrene were the major abundant aroma components in Eclipta prostrata L., aromatic and medicinal plant.

어육장의 휘발성 향기 성분 특성 (Characterization of Volatile Components in Eoyuk-jang)

  • 어육장의 휘발성 향기 성분들을 용매추출을 이용하여 분리, 농축하였으며, GC-MS로 분석하였다. 총 36가지의 휘발성 성분들이 검출되었으며, 11개의 aliphatic hydrocarbons, 4개의 acids, 2개의 ketones, 5개의 phenols, 7개의 alcohols, 1개의 pyrazine, 4개의 pyrones와 furanones, 2개의 miscellaneous components 등으로 구성되어 있었다. 특히, acids인 butanoic acid가 높은 함량을 나타내었다. 어육장의 향기활성 성분을 규명하기 위해 용매추출을 이용하여 휘발성 성분들을 분리 후 향추출물 희석분석법으로 flavor dilution(FD) $factor(Log_3$ FD)를 구하였다. 이 결과 어육장에서 총 20종의 향기활성 성분들이 확인되었다. 이 중 군덕내의 특성을 지닌 butanoic acid와 구운 감자향을 지닌 methional이 높은 FD factor를 보였으며, 이들 성분 외에 높은$(Log_3$ FD>7)를 나타내는 성분들로는 2-methyl-2-butanol(soysauce-like), 3-hydroxy-2-butanone(buttery), 2-furanmethanol(burnt sugar-like) 등이 있었다. 본 실험에서는 어육장을 시료로 하여 휘발성 향기성분 및 향기활성 성분들을 GC-MS 및 AEDA법에 의해 분석함으로 어육장 특유의 향미특성을 규명하였다. 이는 앞으로 고급화된 장류 제품으로서는 물론, 다양한 식품에서 조미소재로의 어육장의 활용도를 높이는데 기여할 것이다.

Health Promoting Properties of Natural Flavor Substances

  • The study of health promoting and disease preventing compounds in food or by themselves, so called nutraceuticals or functional foods, has become a major field of research in food science. Natural flavor compounds are usually present in food, essential oils, spices, and herbs. These compounds can produce aroma, not only by themselves, but also in combination with other compounds. Today, however, greater interest is being paid to the health promoting properties of natural flavor substances rather than their flavoring properties. In fact, a number of naturally occurring flavor compounds that possess health promoting and disease preventing properties have been extensively studied and identified. The beneficial properties of natural volatile flavor compounds as well as non-volatile substances in spices and herbs discussed in this review include antioxidant, anticarcinogenic, anti-inflammatory, and immune enhancing activities.
