Analysis of Menu Management in Korean Welfare Institutions for Mental - Disorders (한국 정신 요양 시설의 식단관리 분석)

  • The purpose of this study was to improve menu management of welfare institutions for mental-disorders. Special objectives were: to analyze dietitians' special considerations for menu planning in the view of nutrition, recipients' food preferences, and foodservice management; and to interprete menus by food groups and food costs. An open-ended questionnaire was developed and sent to 55 dietitians of welfare institutions for mental-disorders by a fax. Dietitians were asked to write their special considerations for menu planning relating to the nutrition, recipients, and menu management. A total of 46 dietitians responded to the questionnaires. Also, 32 weekly menus were sent to analyze in this study. Results of this study showed that dietitians considered specially energy, proteins, vitamins, minerals, and fats for recipients's health conditions and daily RDA. However, dietitians wanted more information about right menu plan manuals for psychiatric patients. Analysis of weekly menus showed that milk and milk products were th most insufficient serving food group in these institutions. Also, snacks (p<0.05)and milk products (p<0.05) serving was significantly affected by higher food costs. The results implicated that future research on menu development should be necessary for nutritional balanced meal services in welfare institutions.

A Study of the Nutritional Composition of the Dandelion by Part (Taraxacum officinale) (민들레의 부위별 영양성분 함량 비교)

  • Many studies have presented results about the antioxidative and antimicrobial activities of Dandelions (Taraxacum officinale). There has yet to be a study which makes comparisons of nutrients based on the parts of the Dandelion. To identify the nutrient composition by part of dandelion, nutrient contents were analyzed. Dandelions were taken from Songpa-gu in Seoul and the nutrient composition of the flower, leaf and root were measured. The nutrient content of each part was analysed by using the method developed by the Association of Official Analytical Chemists (AOAC). The proximate components(moisture, protein, fat, fiber, ash, and carbohydrates), minerals and vitamins of the dandelion were analysed. The nutrient composition of the dandelions showed many significant differences among the parts when the differences were determined by using Duncan's multiple range test. The leaf contains more protein, ash, Ca, K, Mg, Zn, vitamin A, B$_1$, B$_2$, and C than the other parts. The root has much more fiber, carbohydrate, P and Fe content. The results demonstrate that dandelions could be used as a food source supplement for fiber, Ca, Fe and vitamin B$_2$ which are common nutritional deficiencies in Korea. It is recommended that more research for other bio-functional factors besides nutrients composition is needed to enhance the utilization of the dandelion.

The Effectiveness and Preferences of Nutritional Supplementary Drinks for the Elderly (노인들을 대상으로 한 영양보충음료에 대한 기호도 및 영양적 효과)

  • This study was conducted to evaluate the effectiveness and preferences of supplementary drinks for very old subjects who are likely to be malnourished. Twenty- five elderly subjects were divided into two groups. The supplemented group(N=15) received 500mls of nutrient supplement(New Care) two times daily for 4 weeks. This resulted in a significant increase in the total calories, protein, minerals and vitamins. Nutritional status was assessed both anthropometrically and biochemically, before and after the study period. A significant improvement in mid arm circumference, triceps skinfold thickness and serum albumin were observed in the supplemented group but not in the control group. There is a possibility that most of the elderly were in an anemic state at the beginning of the study since their mean hematologic parameters were within the lower normal range while their mean serum osmolarities was slightly higher than normal, . Although mean serum hemoglobin and hematocrit were not increased significantly, th percentage of the recovery rate from anemia in the supplemented group was higher than in the control group. Total lymphocyte count also showed similar tendency. Sensory evaluation of nutritional supplementary drinks were relatively good and the elderly showed great interest in nutrient supplements. This study suggests that a nutritional status of poorly nourished elderly subjects can be improved by providing them with nutritional supplementations.

Changes in Dietary Guidance: Implications for Food Composition Tables

  • New Dietary Reference Intakes (DRIs) forthe United States and Canada have recently been set for both macronutrients and micronutrients, and are likely to be of interest to health professionals in Korea as well. DRIs are now available for nutrients that did not have Recommended Dietary Allowances set in the past (amino acids, n-3 and n-6 fatty acids, total fiber, added sugar, choline, boron, nickel, and vanadium). Furthermore, the units for the DRIs do not always match those traditionally carried on food composition tables (FCTs). FCT developers will also need to consider carrying new variables to allow the calculation of folate intake in $\mu$g of dietary folate equivalents, vitamin E intake as mg of a-tocopherol (not as mg of a-tocopherol equivalents), and vitamin A intake as $\mu$g of retinol activity equivalents (not as $\mu$g of retinol equivalents). Because the new recommendations for upper levels of intake sometimes refer to a specific form or source of a nutrient, nutrients occurring in foods must be separated from added or supplemental forms for vitamin E, niacin, and folate; pharmacological magnesium must be carried as a separate variable; and preformed vitamin A must be separated from vitamin A from carotenoids.   • Phytomedicines are believed to have benefits over conventional drugs and are regaining interest in current research. Moringa oleifera is a multi-purpose herbal plant used as human food and an alternative for medicinal purposes worldwide. It has been identified by researchers as a plant with numerous health benefits including nutritional and medicinal advantages. Moringa oleifera contains essential amino acids, carotenoids in leaves, and components with nutraceutical properties, supporting the idea of using this plant as a nutritional supplement or constituent in food preparation. Some nutritional evaluation has been carried out in leaves and stems. An important factor that accounts for the medicinal uses of Moringa oleifera is its very wide range of vital antioxidants, antibiotics and nutrients including vitamins and minerals. Almost all parts from Moringa can be used ad a source for nutrition with other useful values. This mini-review elaborates on details of its health benefits.

Chemical and Mechanical Improvement of Damaged Hair Treated with Cordyceps militaris Extract (동충하초 추출물에 의한 모발의 화학적·물리적 개선효과)

  • Cordyceps militaris (CM) occurring from a fruiting body by a host insect is a kind of mushroom, which is composed of animal host and plant fruit body. CM contains large amounts of useful ingredients including polysaccharides, vitamins, amino acids, minerals, etc. The essential amino acids from CM including cystine, lysine, and methionine can be expected to improve damaged hair treatment as effective ingredients. In this study, the improvement effect of the CM extracts on chemical and physical properties for damaged-hair treatment was investigated. The cysteic acid and cystine monooxide produced by oxidation of cystine were analyzed their chemical structure by FT-IR spectroscopy. It was confirmed that the vibration absorption peak ($1,041cm^{-1}$) of cysteic acid was reduced and increased sulfur content considerably which means meaningful improvement effect on damaged-hair treatment. Apparently, the cuticle morphology of the damaged-hair was improved significantly by treatment with CM extracts. Especially, confocal laser scanning microscope images of the damaged-hair treated with the extract showed highly increased fluorescence intensity which means promising effect in hair treatment. The tensile strength of the damaged hair treated also increased by 168% compared with the damaged hair.

Preparation of Drum-dried Weaning Food Based on Sweet Potato and Soybean (고구마와 콩을 이용한 이유식품의 제조에 관한 연구)

  • 1) A process was described for the preparation of drum-dried weaning food containing about 20% protein and based on a blend of sweet potato, full-fat soy flour, minerals, vitamins and methionine. 2) The protein efficiency ratio of this product was 2.63 as compared to 3.30 for the blend containing corn starch in place of sweet potato. This is attributed to the partial destruction of available lysine in the presence of sweet potato during the drum-drying process. 3) Overall nutritive value of the weaning food was comparable to milk food and control food based on corn starch and soy flour in terms of feed efficiency, body composition and protein retention.

  • Mushrooms as a health food with high protein, low calorie, and rich in a variety of vitamins and minerals, get more and more attention. While the artificial cultivation of mushrooms, besides temperature there is another important factor, that is humidity. There are a lot of research on the temperature,buttherelativeresearchof correlation between the mushroom and the humidity is less. In this paper, the growth status of mushrooms under different humidity conditions was investigated. Data reference is provided to improve the yield and quality of mushrooms.

An efficient microscopic technique for aleurone observation with an entire kernel cross-section in maize (Zea mays L.)

  • The aleurone layer in maize is crucial as it contains essential nutrients such as minerals, vitamins, and high-quality proteins. While most of the maize varieties are known to possess a single aleurone layer, several multi-aleurone layer mutants and landraces have been suggested for hierarchical genetic control of aleurone development. Conventional microscopy analysis often involves using immature seeds or sampling only a portion of the kernel sample, and whole kernel section analysis using a microtome is technically difficult and time-consuming. Additionally, the larger size of maize kernels posed challenges for comprehensive cross-sectional analysis compared to other cereal crops. Consequently, this study aimed to develop an efficient method to comprehensively understand the aleurone layer characteristics of the entire cross-section in maize. Through observations of diverse maize genetic resources, we confirmed irregular aleurone layer patterns in those with multiple aleurone layers, and we discovered a landrace having multiple aleurone layers. By selectively identifying genetic resources with multiple aleurone layers, this method may contribute to efficient breeding processes in maize.

A Study of Application of Exercise Treatments according to Sasangin (사상인의 운동요법 적용에 관한 연구)

  • Sasang Constitutional Medicine (SCM) is based on the theory of Sasang (Taeyang, Soyang, Taeum, Soeum) in Traditional Korean Medicine (TKM). It is hypothesized that all of the things in the material world can be divided into the four categories of SCM. We made a new attempt to combine nutritive components, and patterns in physical activities with SCM. At first, we hypothetically divided the nutrients into 4 compartments according to SCM theory, and human body composition as well. These factors could be basically related to Sasangin Exercise Treatment (SET). Therefore, we applied sasangin theory to exercise prescription. As a research method, we hypothesized that human beings' types can be distinguished by mind and body. Mind was focused on exercise psychological aspects, and body also handled by nutrients, body compositions, body shapes, and exercise physiological aspects. For application of sasang theory to the exercise prescriptions, Taeumin as a sample sasangin was selected in this study. We concluded that in perspective of general traits, Taeumin have to reduce their carbohydrate intake volume, but greatly increase their intake of vitamins, minerals, and water in daily diet. They are also recommended exercises that can increase cardiorespiratory function and make them sweat, like endurance running, hiking, swimming, cycling, etc.
