To examine the possibility of ear mushroom (EM) as a source of natural vitamin D, the UVB (ultraviolet B) was treated according to sample drying status, drying methods before UVB treatment and harvest time. And then, vitamin D2 and ergosterol contents were investigated. According to the sample drying status, the vitamin D2 contents of fresh and freeze-dried EM (whole) increased to 4,634.4~4,780.9 ㎍/100 g D.W. (dry weight) under UVB dose 52.5~70.0 kJ/㎡ and above 18,693.1 ㎍/100 g D.W. under above 105 kJ/㎡, respectively. By drying methods before UVB treatment, vitamin D2 contents of EM powder (below 500 ㎛) that dried in the vinyl house and freeze-dryer increased to 4,886.2~5,132.9 ㎍/100 g D.W. under above 105 kJ/㎡ and 17,103.7 ㎍/100 g D.W. under 70 kJ/㎡, respectively. Ergosterol content decreased with increasing UVB dose in all experiments. According to the harvest time, vitamin D2 content under UVB dose 210 kJ/㎡ showed marked difference and in order of June, July, August, October and April. As for the results, the optimum harvest time, drying method before UVB treatment, sample size, UVB dose for the EM contained high vitamin D2 content were June, freeze-drying, whole, and 105 kJ/㎡, respectively.
The objective of this study is to provide a fundamental data to improve meals of the college foodservice operations serving more than 300 meals per day through evaluating changes in; total vitamin C contests, water contents, and pH, in the process of handling such foods as soybean sprout cooked and of fresh vegetable salads. This study, also, tried to identify nutrition reduction, step by step, to minimize nutrition loss. 1. In handing COOKED SOYBEAN SPROUTS, total vitamin C contents were higher after wash(1.54%mg%) than other cooking methods adopted in university meals(1.08mg%), however, total vitamin C contents was significantly lost during boiling step. 2. Significant loss of total vitamin C and water content in the FRESH VEGITABLE SALADS was detected in the process of washing and cutting vegitables. Especially,'cabbage' lost 20% of total vitamin C in the process of 'soaking in water', which was one of preparation process 3. Significant loss of vitamin C was observed after 6 hours of HOLDINC AFTER COOKING but it can be reduced through holding under lower temparature, in case of soybean sprouts and fresh vegitable salads. pH became acidic as holding time expanded. WATER CONTENT of cooked soybean sprouts decreased up to 4 hours holding time, however, it increased when we checked at after 6 hours' of holding time. Water content continuously decreased up to 6 hours of holding time in case of FRESH VESITABLE SALADS with the statistically significance level.
This study was performed to investigate the effect of dietary vitamin E supplement and kinds of lipid on the vitamin E concentration and lipid composition in serum of the rats fed fro seven weeks. Supplemented vitamin E was 300mg/kg diet as DL-α-tocopherol acetate, and 15% of corn oil or beef tallow was added to standard diet. The results were as follows ; 1) Body weight and feed efficiency ratio were significantly increased by supplement with vitamin E, corn oil and beef tallow. 2) Serum vitamin E concentration increased significantly by supplement of vitamin E and beef tallow on the diets, while one of corn oil fed group decreased significantly . 3) The contents of triglyceride, total cholesterol, phospholipid in serum were significantly increased in the beef tallow group, and the vitamin E only -supplemented group showed significantly lower serum cholesterol in serum increased significantly in the vitamin E only -fed group and vitamin E plus corn oil-fed group. 4) The content of HDL-cholesterol in serum increased significantly in the vitamin E only -fed group and vitmain e plus corn oil -fed group. 5) The ratio of VLDL, LDL-cholesterol content to HDL-cholesterol one in serum was significantly low in the vitamin E only-supplemented group and corn oil group, and was significantly higher in the beef tallow group than in the corn oil group.
The influences of fish oil and different levels of vitamin I supplement on hepatocellular chemical carcinogenesis have been studied. Male Sprague-Dawley rats received diethylnitrosamine (DEN)(200mg/kg body weight) and were subjected to two-thirds partial hepatectomy to induce murine chemical hepatocarcinogenic procedure. Placental glutathione S-transferase(GST-P) positive foci area, antioxidant enzymes(Cu/Zn-superoxide dismutase(SOD), catalase, glutathione reductase (GR), total- glutathione peroxidase (TGPx), glutathione S -transferase (GST)), glucose 6-phosphatase (G6Pase) activities, and lipid peroxidation of microsomes(thiobarbituric acid reactive substances (TBARS)) were measured. Experimental animals were fed 15% corn or fish oil with 0, 40, 1,000, 10,000IU vitamin E /kg diet for 8 weeks. Vitamin E supplements decreased the area of GST-P positive foci in both groups. The higher the vitamin E levels, the smaller the area of GST-P positive foci were noticed. Compared to 0 IU vitamin E, 40 IU in corn oil and 1,000 IU in fish oil groups were effective in decreasing G57-P positive foci area. Fish oil groups tended to have smaller area of GST-P positive foci. fish oil groups showed lower body weight, lower activities of Cu/Zn-SOD and TGPx, higher TBARS contents, higher activities of GST, catalase, G6Pase, GR and higher liver/body ratio than corn oil groups. As the level of vitamin I increased, GST-P positive foci count, catalase activities, and TBARS tended to decrease. G6Pase activities tended to increase in both groups. At higher vitamin E levels, GST activities tended to decrease in fish oil groups. These results suggest that vitamin I has suppressive offects on hepatocellular chemical carcinogenesis probably through antioxidant eH:cts decreasing TBARS contents, $H_2O$$_2$, and organic peroxides. fish oil tended to have greated suppressive offects than corn oil on hepatocellular carcinogenesis. The aim of this study was to assess the association of metabolic syndrome (MetS) and vitamin D and urine microalbumin (MA) in Korean adults. The study subjects were Korean adults 20 years or older (n=4,948). A covariance test adjusted for covariates was performed for urine MA levels in relation to vitamin D status (vitamin D deficiency, vitamin D insufficiency, vitamin D sufficiency). The key study results were as follows: First, in subjects without MetS, after adjusting for related variables (age, gender, smoking, drinking, regular exercising, wast measurement, body mass index, total cholesterol, triglycerides, high density lipoprotein cholesterol, fasting blood glucose, and glomerular filtration rate), vitamin D levels were inversely associated with Log-MA levels (p<0.001). Second, in subjects with MetS, after adjusting for related variables, vitamin D levels were not associated with Log-MA levels (p=0.892). In conclusion, vitamin D was inversely associated with urine MA levels in Korean adults without MetS, but not in Korean adults with MetS.
This study examines the effects of the Korean horticultural foods which are, by traditional wisdom, supposed to contain anti-aging substance. All twenty three kinds of plants are chosen as a sample for the experiment in which the content of three main anti-aging nutrients, -carotene, Vitamin C, and Vitamin E are respectively measured by Nilis, Colorimetric, and AOAC method. The result shows: among the samples, top six plants that contain the most -carotene content are high quality tea(Camellia sinensis), thistle(Cirsium japonicum Var.), Angelica keiskei, mulberry leaves(Morus alba l.), field horsetail(Equisetum arvensa), and carrot(Daucus carota), in order; top four for a Vitamin C contents are low quality tea, mulberry leaves, pine leaves(Pinus densiflora), and high quality tea, in order; top four for a Vitamin E contents are persimmon leaves(Diospyros mongolicum) tea, high quality tea, low quality tea, and pine leaves, in order. Drying or boiling process increases the content of -carotene and Vitamin E in high quality tea, dropwort(Oenanthe javanica), field horsetail, and wild aster(Ligularia stenocephala Marsumum et Koldzumi), while, in case of mulberry leaves, drying process lowers them. Vitamin C content strikingly decreases in heating and drying process.
The effects of vitamin E supplement on 15%(w/w diet) perilla or corn oils were studied in rat hepatocellular chemical carcinogenesis induced by modified Solt & Farber model, which consists of 20mg/kg body weight diethylintrosamine(DEN) injection, 3 weeks feeding of 0.02%2-acetylaminofluorene(2-AAF) and partial hepatectomy. The area of placental glutathione S-transferase(GST-P) positive foci tended to be smaller in perilla oil group had lower thiobarbituric acid reactive substances(TBARS) CONTENT. Fatty acid compositions in microsomal membrane were reflected by dietary fatty acid compositions, and not affected by carcinogen treatment or vitamin E supplement. By vitamin E supplement, linolenic acid contents of perilla oil group were much increased. By carcinogen treatment, membrane stability decreased significantly in corn oil, but maintained in perilla oil groups Vitamin E supplemental effect was noticed only in the corn-carcinogen group. Perilla oil may prevent hepatocarcinogenesis by maintaining membrane stability and by reducing cytochrome P-450 content. Vitamin E supplement did not seem to have the effect on hepatocarcinogenesis, but prevented lipid peroxidation, reduced cytochrome P-450 content and maintained membrane stability.
In this study, lipid composition of milk obtained in colostrum from 22 mothers delivering preterm infants and 17 mothers delivering term infants was analyzed. Fatty acid composition and vitamin E content were analyzed as well as the concentrations of total lipids in preterm and fullterm milk. Lipid and cholestol concentrations were higher in the fulltrm milk than preterm milk. PUFA and P/S ratio in preterm milk were higher than those in fullterm milk. On the other hand, SFA and MUFA contents were higher in the fullterm milk. Vitamin E which is related to PUFA concentration in colostrum was also higher in the preterm milk than fullterm milk.
To investigate the nutritional contents of lunchbox of students of elementary school located in Sokcho city Kangwon province, the survey was conducted from April 23 to April 26, 1991. Main dishes and side dishes in lunchbox were weighed and nutrients were analyzed from food composition table. Total daily energy and nutrients intake were reach to RDA's, except for intake of calcium, iron, vitamin A, vitamin Be and vitamin C. Children's height was positively correlated with energy and protein Intake. Fat intake was positively correlated with monthly income and intake of vitamin A was positively correlated, with number of family, This survey suggests that it need nutritional education program and school feeding to improvement of nutritional status for children.

This study was carried out to examine physicochemical characteristics of three kinds of commercial spinach produced from three areas(Gyeongbuk Yeongdeok Younghea, Gyeongnam Tongyeong Yongnam, Gyeongnam Tongyeong Gwangdo) in autumn of 2004. The length, weight, moisture, minerals, oxalic acid, chlorophyll, vitamin C, and Hunter's color values of spinach leaves and stem; were determined. Mg, Ca, Na, K, chlorophyll, and vitamin C contents of leaves were higher than those of stems. On the other hand, stem; showed higher contents in Fe, P and oxalic acid Moisture, Mg, Na, Fe, chlorophyll, and vitamin C contents in the spinach leaves from Gwangdo were higher than those from Yongnam and Younghea, but oxalic acid lower a little.
