The use of vitamin and mineral supplements among 330 preschool children was examined for relationships with general characteristics and food habits. Mean intake of vitamin and minerals obtained from supplement use was calrulated. The percrntage of preshool children receiving vitamin-mineral supplements was 34.2% and a higher percentage of use was shown in boys(p<0.05). Among preschool children, supplement use by mother and children showed some association(p<0.05). Socio-economi factors had little influence on vitamin-mineral supplement usage. There D·ere no significant differences in. weight and height between the users and non-users. The parent's main reasons f3r providing their preschoolers with vitamin-mineral supplements were that they were unsure that the preschoolers were receving sufficient nutrients from their diet, and that they were not healthy. The reasons for not feeding their children vitamin-mineral supplements were that considered the preschoolers were eating well and were healthy, therefore vitamin-mineral supplements were not necessary. The mean vitamin intake obtained from the supplements was about 2-7 times the RDA, but the level of minerals(Ca, Fe, Zn) furnished by supplement use was 1/2 of the RDA. 우량 나물콩 품종 육성을 위한 자료로 활용하고자 시판 콩나물 및 장려품종 나물콩으로 재배된 콩나물을 사용하여 콩나물의 무기이온 함량과 비타민 함량을 분석하였다. 1. 콩나물의 무기이온 함량은 K, Ca, Mg, Na, Fe, Zn, Mn, Cu의 순으로 많이 함유되어 있었으며, 콩나물을 자엽과 배축으로 분리하여 함량을 분석한 결과 자엽에서의 무기이온 함량은 전체 콩나물과 같은 양상으로 축적되어 있었으나 배축에서는 다른 경향을 나타내었다. 2. 뜨거운 물에 콩나물을 데칠 경우 많은 양의 무기이온이 물로 용출되며 특히 K의 함량 감소가 컸다. 3. 콩나물의 비타민 C 함량은 품종에 따라 변이가 있었으며, 콩나물을 열처리할 경우 비타민 C는 급속하게 감소되었다. 4. 콩나물에서의 비타민 B군(niacine, thiamin, pyridoxin)은 품종별로 함량 차이가 있었으며 대부분 자엽부위에 축적되어 있었다.
To confirm basic nutrient contents of Korean honey as a food material, we assessed New Zealand Manuka honey by measuring proximate components, vitamin C and minerals of 16 kinds of honey harvested in South Korea. The proximate composition of each honey sample was as follows: moisture content 18.45~29.84%, crude protein 0.10~0.95% (vs Manuka honey 0.23%), crude fat 0.02~0.60% (vs Manuka honey 0.34%), crude ash 0.01~.52% (vs Manuka honey 0.24%) and carbohydrate 67.90~80.94% (vs Manuka honey 79.39%), respectively. In the case of free sugars analyze by HPLC, fructose showed a content of 26.12~49.84% which was highest in acacia honey and lowest in sorbus honey. Content of glucose was 19.38~36.12% and lowest in chestnut honey, whereas sucrose, lactose, maltose were absent. Total sugar contents were 64.16% which was less than Manuka honey (70.23%) and vitamin C was not detected in all samples. Minerals were detected 15~25 kinds, including K, Ca, Mg, Zn, Fe, Cu, Mo and so on. Ca was high in order of linden > canola > codonopsis > hedysarum honey, and K was higher than in Manuka honey in order of chestnut > hedysarum > codonopsis > jujube honey. Especially, these results suggest that Korean honey have a better nutrient content profile than Manuka honey.
This study was carried out to investigate the effects of addition of citron peel powder(OJ 0/0, 0.60/0, 0.9 %) on proximate composition, minerals, vitamin A, C content and fatty acid composition of emulsion-type sausages. The moisture content of sausage containing 0.3% citron peel powder were significantly(P< 0.05) higher compared to those for control. The crude fat content of sausage containing citron peel powder were significantly( P< 0.05) lower compared to those for control. The crude ash content of sausage containing 0.9% citron peel powder were significantly(P< 0.05) higher compared to those for control. The minerals, vitamin A and C content of sausage containing citron peel powder were significantly(P < 0.05) higher compared to those for control. The palmitic acid(CI6: 0) and linoleic acid(CI8: 2) content of sausage containing citron peel powder were higher compared to those for control, but the palmitoleic acid(CI6: I) content of sausage containing 0.9% citron peel powder were lower. The total saturated fatty acid content of sausage containing 0.3% citron peel powder were significantly(P < 0.05) lower compared to those for control.
The objective of the present study was to determine the prevalence and type of nutritional ergogenic aids use, and to determine the frequency, reasons for use of nutritional ergogenic aids. Thirty-four male bodybuilders (mean age = 27.0 years), twenty-four male weight lifters (mean age = 20.9 years) participated in the study. Participants completed a comprehensive survey detailing their usage patterns. In this study, 78.1% of bodybuilders and 79.2% of weight lifters reported using nutritional ergogenic aids. The most frequently taken nutritional ergogenic aids, in ranking order, were protein/amino acid powders (79.4%), multivitamin/minerals (67.7%) and creatine (67.6%) for bodybuilders, in contrast to sports drinks (100.0%), protein/amino acid powders (50.5%) and creatine (50.5%) for weight lifters. Over the half of the respondents, 79.4% of bodybuilders and 50.6% of weight lifters, used protein/amino acid powders to gain muscle mass and to stay healthy. Bodybuilders, 67.6% and weight lifters, 41.7%, used multivitamin/minerals to stay healthy and for energy. The intakes of most vitamin and minerals through diet and nutritional ergogenic aids were much greater than RDA. Vitamin $B_1$, vitamin $B_2$, niacin, vitamin $B_6$ and folate intakes were ranged at 400-900%. Vitamin C intake was 1285.4% (for bodybuilders) and 1322.6% (for weight lifters). The correct answer rate of nutritional ergogenic aids was 46.0% for bodybuilders and 52.0% for weight lifters. Both bodybuilders and weight lifters took highly nutritional ergogenic aids and it tended to be taken irrespective of scientific background. Specific sport nutrition education applicable to athletes, especially strength athletes, is recommended. The findings of this investigation could be used to enable the professionals (sports dietician and physician) to identity common misconceptions regarding nutritional ergogenic aids and to implement educational programs.
본 연구는 전국의 1,407명의 청소년 중 일반의약품과 또는 건강기능식품 비타민 무기질 보충제를 섭취한다고 응답한 청소년 921명 중 조사지 기입과 상시 면담이 가능한 남녀 각각 30명씩 총 60명 (15~18세)을 선정해, 조사지 작성 및 직접면담을 통해 일반의약품 및 건강기능식품 비타민 무기질 보충제, 3일간의 식사, 간식 섭취 실태를 조사함으로써 비타민과 무기질 최대섭취량을 파악하고 위해도를 평가하였다. 일상식사, 일반의약품과 건강기능식품 비타민 무기질 보충제 및 강화식품 섭취를 통한 비타민과 무기질 섭취량을 산출해 평균, 97.5 백분위수 (최대섭취량) 등을 구하고 권장섭취량 및 상한섭취량과 비교하였다. 일상식사를 통한 비타민과 무기질 섭취량은 권장섭취량의 0.3~4.4배이었다. 각각의 급원에서 상한섭취량 이상을 섭취한 대상자가 있는 영양소는 식사로는 비타민 A (1.7%)와 니아신 (5.0%), 일반의약품 비타민 무기질 보충제로는 비타민 C (9.1%)와 철 (5.6%), 건강기능식품 비타민 무기질 보충제로는 니아신 (8.6%), 비타민 $B_6$ (7.5%), 엽산 (2.9%), 비타민 C (2.3%)이었다. 식사, 일반의약품과 또는 건강기능식품 비타민 무기질 보충제, 강화식품을 통한 총섭취량이 상한섭취량 이상인 대상자가 가장 많은 영양소는 니코틴산 (33.3%)이었으며, 그 다음 비타민 C (26.6%) > 비타민 A (13.3%), 철 (13.3%) > 아연 (11.7%) > 칼슘 (5.0%) > 비타민 E (1.7%), 비타민 $B_6$ (1.7%)이었다. 이런 연구 결과로 볼 때, 한국 청소년 중 일상식사를 통해 충분한 비타민과 무기질을 섭취하는 경우 비타민 무기질 보충제와 강화식품을 섭취하면 비타민과 무기질 과잉섭취로 인한 부작용이 나타날 가능성이 클 것으로 여겨진다. 앞으로 더 큰 표본을 대상으로 정확한 섭취량 평가가 이루어져 비타민과 무기질의 상한섭취량 설정 및 바른 비타민 무기질 보충제와 강화식품 섭취에 대한 근거를 마련해야 할 것이다.
Objectives: Use of dietary supplements containing vitamins and minerals is growing in Korean adults, especially in pregnant and lactating women. Vitamin and mineral supplements are available in different composition and in a wide range of contents. The purposes of the study were to examine nutrient composition and content of vitamin and mineral supplements for pregnant and lactating women and assess their appropriateness as dietary supplements. Methods: Information on the name, manufacturer, nutrient composition, and usage of vitamin and mineral supplements for pregnant and lactating women were obtained from the homepage of the Food Safety Information Portal managed by the Ministry of Food and Drug Safety, and Korean Index of Medical Specialties. A total of 264 products were identified. Results: Among 264 products, 26.1% were single nutrient products, and 73.9% were multinutrient products. The most commonly included nutrient was iron (70.1%), folic acid (66.3%), vitamin $B_{12}$ (45.8%), vitamin C (38.6%), and vitamin $B_6$ (38.6%). Although more than 50% of products contained nutrients less than 150% of Recommended Nutrient Intakes or Adequate Intakes for daily use, some products contained inappropriately high amounts of nutrients. When a maximum daily dose of supplements was taken as described on the label, iron in 73 products (39.5%), folic acid in 14 products (8.0%) were likely to be consumed in amounts greater than Tolerable Upper Intake Levels. Most products were assessed as inappropriate for pregnant women due to the possibility of excessive intake of vitamins or minerals when compared with Dietary Reference Intakes. Conclusions: Pregnant and lactating women need to carefully select dietary supplements containing adequate amounts of vitamins and minerals. Nutritionists should provide guidelines regarding selection of appropriate vitamin and mineral supplements for pregnant and lactating women.
Purpose: The Purpose of this study was to evaluate the effects of antioxidant vitamins and minerals supplementation on blood pressure and lipids in the elderly with hypertension. Methods: This study adopted a unequivalent control group pretest-posttest design. For this study, 79 subjects with hypertension were selected among the home visiting clients of public health centers. The experimental group received 12-weeks' treatment with antioxidant vitamin A, C, E, carotene, magnesium and selenium and the control group did not take any antioxidant vitamin and mineral. Results: There were statistical differences in systolic blood pressure and diastolic blood pressure between the experimental group and the control group after the intervention. In the experimental group, systolic blood pressure decreased from 145.4mmHg before the intervention to 135.7mmHg after the intervention, and diastolic blood pressure decreased from 88.3mmHg before the intervention to 81.9mmHg after the intervention. However, there were no statistical differences in total cholesterol and triglyceride between the experimental group and the control group after the intervention. Conclusions: A short-term supplementation with antioxidant vitamins & minerals can reduce blood pressure in the elderly with hypertension. The continuous effects of the supplementation and its beneficial effects on the prevention of cardiovascular diseases still need to be studied further.
The safety of pufferfish (Lagocephalus gloveri) liver oil and the contents of some nutritional components were examined to obtain important information on their use as high valued functional foods. Pufferfish liver oil was extracted by the hot-water method using $1\%$ NaOH solution to remove toxic compounds, and then purified using a general purifying method of fish oil. Any extraordinary clinical symptoms were not observed from all groups administrated with pufferfish liver oil throughout the test period. None of the rats died when administrated the highest concentration of 10 mL/kg of the pufferfish liver oil. Vitamin A content was 114.2 ppm, as a retinal equivalent in the oil extracted using hot-water, but the content was higher (169.3 ppm) in oil extracted using n-hexane. Vitamin D and E were not detected in ppm in oil extracted using hot-water. Vitamin D in the pufferfish liver oil extracted using n-hexane was also undetected, but vitamin E was at 32.5 ppm. Among the 18 minerals detected, the sodium content was the highest at 253.5 ppm, followed by 13.9 ppm ofpotassium, 1.5 ppm of calcium, 0.2 ppm of magnesium, and other trace minerals. The contents of EPA and DHA were $0.8\%\;and\;14.8\%$, respectively, in the pufferfish liver oil extracted using hot-water. Considering these results, there is potential that pufferfish liver oil could be used as a functional food.

Two feeding trials were conducted to evaluate the effects of inclusion levels of dietary vitamin and trace mineral (VTM) premixes on growth and nutrient digestibility in growing pigs. A total of 112 pigs ($24.82{\pm}3.22kg$) were employed for 49 days (exp. 1), and 168 pigs ($21.64{\pm}1.41kg$) for 40 days (exp. 2) in completely randomized block designs. Treatments were: 1) 100%, 2) 150%, 3) 200% and 4) 250% NRC (1998) requirement of VTM in exp. 1, and the ratio of vitamins to trace minerals at 1) 100:100%, 2) 100:150%, 3) 150:100% and 4) 150:150% of NRC (1998) requirement in exp. 2. Basal diets for feeding trials were formulated to contain 3,310 kcal ME/kg and 18% crude protein, and contained 0.25% chromic oxide as an indigestible marker for digestibility trials. Increasing dietary VTM premix in growing pigs had linear and quadratic effects (p<0.05) on ADG, and feed conversion ratio was also improved (p<0.05) as VTM premix was increased by 150-250% of NRC (1998) requirements in exp. 1. Adding vitamin to trace mineral premixes at 150% NRC (1998) over the control improved (p<0.05) ADG and feed efficiency in growing pigs, but performances were not improved by vitamin nor by trace mineral premixes alone (p>0.15) (exp. 2). There were no differences (p>0.05) in the digestibilities of energy, crude protein and fat among dietary treatments. However, increasing dietary VTM premix in growing pigs had a linear effect (p<0.05) on the digestibilities of calcium and phosphorus. The 200 or 250% fed group showed improved (p<0.05) calcium digestibility, and 250% fed group also showed improved (p<0.05) phosphorus digestibility as compared to 100% or 150% fed group (exp. 1). The digestibilities of Ca and P were higher (p<0.05) in 150% addition of vitamins than in 150% addition of trace minerals in the diet (exp. 2).
