Effect of Enzymatically Hydrolyzed Vital Wheat Gluten on Dough Mixing and the Baking Properties of Wheat Flour Frozen Dough

  • The effect of enzymatically hydrolyzed vital wheat gluten (EHG) on dough mixing and the baking quality of wheat flour frozen dough was examined. Three different proteases, pepsin, trypsin, and chymotrypsin, were tested individually, sequentially paired, or in combination of all three enzymes. Addition of 1% EHG produced no observable effect on the mixing properties of wheat flour dough. However, addition of 2.5% pepsin-hydrolyzed gluten decreased the mixing tolerance of the wheat flour, and 1% trypsin-hydrolyzed gluten increased the loaf volume of both frozen and non-frozen dough. This finding suggests that trypsin-hydrolyzed vital wheat gluten may serve as a baking additive in replacement for $KBrO_3$ to improve frozen dough quality.

  • The literatual study on the Bogi haehun-tang(補氣解暈湯), the results were obtained as follows : 1. Bogihaehun-tang(補氣解暈湯) is reported Fuqingzhu's Gynecology, Qing dynasty at the first and is used when puerperal faintness, a disorder due to deficiency of vital energy and blood and up ward attack of the asthenic yang, or due to lochistisis and blood stasis attacking the heart. 2. Bogihaehun-tang(補氣解暈湯) is composed of Radix Ginseng(人蔘), Radix Astragali, Radix Angelicae sinensis(當歸) Rhizoma Zingiberis praeparatae(乾臺), Spica Schizonepetae(荊芥). 3. Bogihaehun-tang(補氣解暈湯) have an effect on homeostasis by in vigorating the vital energy, a treatment for prolonged bleeding due to deficiency of vital energy(補氣攝血) applicable to the patient suffening from chronic hemorrhagic disease accompanied with the anifestations of the deficiency of vital energy.

Effect of Inspiratory Muscle Training with Elastic Taping on Forced vital capacity and Sway Area in Stroke Patients

  • Purpose: The purpose of this study was to evaluate the forced vital capacity and sway area of respiratory muscles taping with threshold inspiratory muscles training for 1 week. Methods: Nineteen stroke patients were divided into two groups: experimental group (respiratory muscles taping with threshold inspiratory muscles training, n=10) and control group (threshold inspiratory muscles training, n=9). Forced vital capacity tests were performed using a spirometer. The instrument records the forced vital capacity (FVC). COP excursion test was performed using Zebris. The instrument records the sway area. All tests were measured before and after intervention. Results: The experimental group and control group showed significant increase in FVC (p<0.05). The sway area showed a significant decrease only in the experimental group (p<0.05). The FVC and sway area was no significant difference between the two groups (p>0.05). Conclusion: Threshold inspiratory muscles training is an effective intervention for improving FVC. Threshold inspiratory muscles training with respiratory taping is an effective intervention for improving FVC and sway area. Threshold inspiratory muscles training with respiratory taping can improve balance ability.

척수손상 환자의 자세에 따른 폐활량의 변화 (A Comparison of Vital Capacity Value With Spinal Cord Injury Following Changing Positions)

  • The purpose of this study was to identify vital capacity (VC) in relation to the changing position of 19 patients with spinal cord injury (SCI) and 20 normal controls. Among the 19 SCI patients, there were 9 quadriplegics and 10 paraplegics. The vital capacity was measured in each subject during sitting, standing, lying, and head down position of 30 degrees. The data were analysed by the Kruskal-Wallis test, Mann-Whitney test, and Wilcoxon signed rank test. For the SCI, significant difference of VC accoring to the 4 positions between quadriplegics and paraplegics. In the control group, significant difference of VC according to the 4 positions. In 4 positions the VC of men were significantly larger than that of women between two groups. No statistical significant difference was shown in VC by the postural change between quadriplegics and paraplegics.

  • Purpose : This study aimed to investigate the effect of foot massage on sleep, vital signs and fatigue in the elderly who live in their Home. Method: Data were collected from 20 elderly who live in the Seoul-Kyunggi province area by convenience sampling and analyzed the change of sleep and sleep satisfaction, vital signs(pulse, respiration, systolic and diastolic blood pressure) and general fatigue between pre and post foot massage using Paired t- test at 0.05 of significance level. Result: There were very significant difference in the sleep and fatigue between pre and post foot massage. Conclusion: Foot massage can improve the sleep and decrease fatigue, therefore we recommend to use foot massage as a effective sleep related nursing intervention in the elderly who live in their home.

  • Sixty non-vital primary molars of forty six children who were patients at the Pedodontic Department of Seoul University Hospital, aged from 2 years 7 months to 9 years 1 month were performed for coronal pulp therapy. For the evaluation of non-vital pulp therapy, the author observed those teeth both clinically and roentgenographically. The results were as follows: 1. Coronal therapy of non-vital tooth can be accepted as one of the ordinary methods at the view of the save of tooth, time and simplicity. 2. The results were satisfactory 78.3% clinically and 68.3% roentgenographically. 3. The dissatisfactory signs were a) Clinical view There were dissatisfactory signs on 13 cases. (1) 2 teeth had fistulous opening. (2) 11 teeth reacted to purcussion and mobility. b) Roentgenographical view There were dissatisfactory signs on 19 cases. (1) 13 teeth showed roentgenolucency at bifurcation area. (2) 2 teeth showed pathological root resorption. (3) 4 teeth showed periodontal thickening.

  • The aim of this study is to find out the relationships between the vocal sounds and physiologie and pathologic mechanisms based on the Eum-yang and five phases theory[陰陽五行論]. Firstly, concrete characters of vital rhythm of five-viscera were analyzed and patterns of the five-note in oriental music were converted into that of western music, then it was investigated, the possibility of oriental music therapy using sounds as stimulation methods like herbs, acupuncture, and moxibustion. In conclusion, it was found that controlling the Five-visceral vital rhythm by sounds could be used as one of methods for prevention and treatment of disceases, growing on and balancing a body, etc.

  • The purpose of this study was to search non-invasive and reproductive pulp test. Temperature of the crown surface was measured using the infrared thermography, and the pulp test was investigated with difference of crown temperature of the vital and the non-vital tooth in vitro and in vivo. Twenty extracted human maxillary central incisors were used in this study. Two sample teeth after access cavity preparation were arranged setting with one pair.   • Impaired respiratory function is common in patients with stroke. The purpose of this study were to investigate the effectiveness of exercises and to assess forced vital capacity and peak cough flow after completion of neck stabilizing and respiratory reeducation exercises (combining diaphragmatic breathing and pursed-lip breathing exercises). The 45 participants were randomly assigned to an experimental group 1 ($n_1=15$), experimental group 2 ($n_2=15$), and a control group ($n_3=15$). All subjects performed conservative physical therapy for 30 minutes. Experimental group 1 undertook the neck stabilizing exercise and the respiratory reeducation exercise. Experimental group 2 undertook the respiratory reeducation exercise. Additional exercise did not exceed 30 minutes, five times a week for six weeks. The subjects were assessed for deep neck flexor thickness and breathing function (forced vital capacity, forced expiratory volume at one second, forced expiratory volume at one second/forced vital capacity, peak expiratory flow, and manual assisted peak cough flow) at pre-post value. The results of this study were as follows. Experimental group 1 showed a significant increase only in deep neck flexor thickness change rate (p<.05). All groups showed significant increases in forced vital capacity, forced expiratory volume at one second, and peak expiratory flow in pre-post measurement (p<.05). Experimental groups 1 and 2 showed an increase in manual assisted peak cough flow in pre-post measurement (p<.05). There was no significant difference between experimental group 1 and experimental group 2, but experimental group 1 improved more than experimental group 2 in respiratory function as a whole. In conclusion, these findings suggest that the neck stabilizing exercise in combination with the respiratory reeducation exercise can improve forced vital capacity and peak cough flow in patients with stroke.
