  • 본 논문에서는 3D 프린터의 원료로 이용하기 위하여 연육의 물성을 조정하기 위하여 식염의 함량을 변화시키는 연구를 수행하였다. 이를 토대로 식염 3%를 첨가하였을 때 연육의 물성이 3D 프린터에 더 적합한 물성을 갖는 것을 확인하였다. 식품산업은 식품 안전성의 특성상 3D 프린터의 적용 가능한 잉크 원료개발에 제한이 많은 분야이다. 그러므로 본 연구는 연육이 물성조절을 통해 3D 프린터용 잉크로 개발될 수 있음을 확인한 기초 연구이며, 수산식품산업의 3D 프린팅 기술 응용에 매우 중요한 연구이다. 향후 연육의 3D 프린터 원료로의 개발이 표준화 된다면, 개인맞춤형 수산 식품 제작, 수산 단백질을 이용한 다양한 대체육 개발 등 많은 분야에서 응용이 가능할 것으로 생각된다.

Textural Properties and Structures of Wheat and Maize Starch-Gum Mixed Gels During Storage

  • Effects of commercial and lab-generated gellan gums on the textural properties, structure, and aging of wheat and maize starch gels were investigated using a rapid visco-analyzer (RVA), rheometer, scanning electron microscope (SEM), and X-ray diffractometer. Gellan and guar gums increased the peak and final viscosities, but xanthan gum and gum arabic reduced them. The maize starch had higher breakdown viscosity than the wheat starch, regardless of the type of gum. The hardness of all starch gels increased during storage, but their cohesiveness and springiness decreased. The degree of the gel hardness showed higher in maize starch than in wheat starch and the effect of gum addition had a difference with gum type. The wheat starch-guar and -gellan gum mixed gels showed higher elasticity and cohesiveness after storage. The starch-gellan gum mixed gels had dense and stable network structures, and were well maintained even after 7 days of storage. Most of the gums had anti-aging effect on X-ray diffraction pattern of starch gels.

양파분말 첨가가 식빵의 품질특성에 미치는 영향 (Effect of Onion Powder Addition on the Quality of White Bread)

  • Physicochemical properties of dough and bread supplemented with onion (Allium cepa L.) powder were investigated. Farinographic characteristics of dough showed that addition of onion by 2% and 4% increased water absorption, however, as the onion added more the water absorption decreased. Addition of 2% onion delayed time for development of dough a little, while more than 4% onion shortened the development time significant1y. A reduction in stability and an Increase in weakness of dough were observed by addition of onion. Addition of onion powder resulted in a reduction of extendibility and an increase in resistance to extension of dough as measured by extensograph. Amylographic analysis showed that addition of onion increased gelatinization temperature and decreased maximum viscosity. Moisture content, baking loss, height and volume of bread tended to decrease with the addition of onion powder. Lightness of bread crust and crumb decreased as the onion powder added more, while redness and yellowness increased. Bread tilth onion powder had mode free amino acid. especially, Arginine. aspartic acid, glutamic acid and alanine, than control. The addition of onion hardness of bread increased, but springiness decreased as the onion added more. Sensory evaluation of bread indicated that addition of 2% and 4% onion powder enhanced springiness, mouth feeling, appearance, hardness, moistness and overall acceptability.

Characterization of Bacteria Isolated from the Traditional Steeping Process and Their Application as Starters for the Production of Yugwa, a Korean Traditional Snack

  • During the traditional production process of yugwa, a Korean traditional oil-puffed snack, three bacterial isolates, 12, 37, and B1 from waxy rice slurry were characterized by using the molecular techniques, and the quality of the yugwa prepared by using three isolates was examined in relation to physical and sensory properties. Isolates 37 and B1 were identified as Lactobacillus sp. by 16S rDNA sequence analysis, while isolate 12 was as Bacillus amyloliquefaciens by gyrA sequence analysis. Waxy rice inoculated with isolate 12 demonstrated the lowest hardness and the highest peak and [mal viscosity. Yugwa prepared from isolate 12-inoculated waxy rice indicated the lowest hardness and the highest volume expansion, the key characteristics of yugwa. This result presents the possibility for the use of a starter in the commercial production of yugwa and other rice-based snacks.

한국과 일본의 자포니카종 쌀에 대한 이화학적 특성의 비교 및 관능품질의 추정에 관한 연구 (Studies on the Comparison of Physicochemical Properties and the Presumption of Sensory Quality of Japonica Rice Varieties Cultivated in Korea and Japan)

  • Twelve varieties of Korean rice and ten varieties of Japanese rice were selected. After being milled. they were analyzed about various physicochemical properties such as moisture, protein and amylose, a -amylase activity, gelatinization properties. And after being cooked with proper amount of water texture and other physical properties were measured by Texturometer, Tensipresser and Rheolograph-micro. Finally the sensory evaluation test was carried out. The results were as follows. 1. In case of protein contents, amylose contents and $\alpha$-amylase activity, Korean rice had a slightly higher value than Japanese As a consequence. Korean rice showed a little stronger hardness and a little weaker stickiness compared with Japanese rice. 2. Amylose contents showed very high correlation with other physicochemical properties and peak viscosity and gelatinization temperature of RVA, the ratio of stickiness to hardness( -Hl/Hl ) of Texturometer and the tan $\delta$(the ratio of dynamic loss to dynamic viscoelasticity) of Rheolograph-micro showed high correlation with other analyzed properties. 3. The ( -/+)work balance of low compression test(25% ) of Tensipresser analysis(texture analysis on the surface of cooked rice) and tan f of Rheolograph-micro showed very high correlation with sensory evaluation results. By using this parameters as major independent variables, some trials to derive high confidence multiple regression equations were accomplished. By the equations it would be possible to make an approximate pre-estimate of eating quality for unknown japonica rice.

  • Laser assisted machining (LAM) has been researched in order to machine the silicon nitride ceramics economically and effectively. LAM is an effective machining method by local heating of the cutting part to the softening temperature of the silicon nitride using laser beam. When silicon nitride ceramics is heated using a laser beam, the surface of silicon nitride ceramic is softened, oxidized and decomposed. And then surface hardness is decreased. Through machining in low viscosity and hardness conditions, silicon nitride was machined effectively and the life span of tool was increased. The plastic deformation was occurred due to softening of amorphous YSiAlON above $ 1,000^{\circ}C$. Transgranular fracture of ${\beta}-Si_3N_4$ was occurred when YSiAlON was not softened, but mostly intergranular fracture was occurred by the plastic deformation of softened YSiAlON.

Effects of Blends of Low-Protein Winter Wheat Flour and Barley Byproducts on Quality Changes in Noodles

  • The physicochemical characteristics of fresh noodles made with blends of low-protein wheat flour and barley byproduct (BBP, $250{\mu}m$) were investigated. The crude protein contents (PC) of flour from Goso and Backjoong cultivars were 7.91% and 7.67%, respectively. PC and ${\beta}$-glucan contents from the BBP were 14.10% and 3.11%, respectively, which were higher than those in wheat flour. The water-holding capacity (WHC) of various blends was increased as a function of BBP but not gluten contents. Goso flour had the highest starch content (78.68%), with peak and final viscosities of 3,099 and 3,563 cp, respectively. Peak and final viscosities, trough, breakdown, and setback of the blends were decreased with the addition of BBP. Noodles made with Backjoong had the highest thickness score, while the hardness of noodles made with blends of Goso or Backjoong and 20% BBP were similar to those made from wheat flour only. The WHC of the samples was strongly correlated with PC, crude fiber, and ${\beta}$-glucan. The PC was not correlated with final viscosity, setback, thickness, hardness, gumminess, or chewiness.

  • 아끼바레(일반계), 삼강(다수계), 마하트마(인디카형) 등 세 품종의 쌀 전분에 대해서 인화학적 성질, 호화 양상, 산처리(lintnerization)실험을 하였고 밥의 단단한 정도를 Rheometer로 측정하였다. 물결합 능력과 아밀로오스 함량은 삼강이 가장 컸다. 최고점도와 breakdown은 아끼바레, 삼강, 마하트마 순인 반면 consistency, set back은 마하트마, 삼강, 아끼바레의 순이었다. 산 가수분해는 세 전분 모두 두 단계로 진행되었으며 마하트마 전분의 가수분해율은 아끼바레, 삼강보다 낮았다. 상대적인 결정화도는 마하트마, 아끼바레, 삼강 순으로 높았다. 상대적인 결정화도가 가장 큰 마하트마는 열이나 산처리에 강한 저항을 보였고, 물결합 능력이 작았으며 취반시 더 단단하였다.

스피루리나를 첨가한 떡볶이떡의 저장기간 중 품질 특성 및 항산화성 (Quality Characteristics and Antioxidantive Activities of Spirulina Added Korean Rice Cake(Garaeduk) during Storage)

  • This study evaluated the quality characteristics of Garaeduk, a traditional Korean rice cake, to which Spirulina (0, 1, 2, 3%, all w/w) was added. Moisture content of Spirulina-containing Garaeduk both before and after cooking increased with Spirulina level. During storage, moisture content was greater in Spirulina-containing cakes compared with control cakes, and the Hunter color L and b values of Spirulina-containing cakes decreased. Textural properties (hardness, chewiness), measured using a texture analyzer, of Spirulina-containing cakes were greater than those of control. During storage, hardness and chewiness of Spirulina-containing cakes remained higher than those of control cakes. The antioxidant activities of Spirulina-containing cakes increased with Spirulina content, owing to increased phycocyanin levels. Amylography showed that peak viscosity, and thus gelatinization temperature, of Spirulina-containing Garaeduk cakes were similar. Sensory preference tests revealed that Garaeduk with 2% Spirulina had the highest scores for color, odor, taste, and overall preference. It is suggested that Spirulina to 2% can be added to Garaeduk to improve quality.

Preparation and Properties of Waterborne-Polyurethane Coating Materials Containing Conductive Polyaniline

  • We have prepared an aqueous dispersion of poly(aniline-dodecyl benzene sulfonic acid complex) (PANI-DC) that has an intrinsic viscosity (〔η〕) near 1.3 dL/g using aniline as a monomer, dodecyl benzene sulfonic acid(DBSA) as a dopant/emulsifier, and ammonium peroxodisulfate(APS) as an oxidant. We found that the electrical conductivity of a PANI-DC pellet was 0.7 S/cm. A waterborne-polyurethane (WBPU) dispersion, obtained from isophorone diisocyanate/polytetramethylene oxide glycol/dimethylol propionic acid/ethylene diamine/triethylene amine, was used as a matrix polymer. We prepared blend films of WBPU/PANI-DC with variable weight ratios (from 99/1 to 66/34) by solution blending/casting and investigated the effects that the PANI-DC content has on the mechanical and dynamic mechanical properties, hardness, electrical conductivity, and antistaticity of these films. The tensile strength, percentage of elongation, and hardness of WBPU/PANI-DC blend films all decreased markedly upon increasing the PANI-DC content. The antistatic half-life time ($\tau$$\sub$$\frac{1}{2}$/) of pure WBPU film was about 110 s, but we found that those of WBPU/ultrasound-treated PANI-DC blend films decreased exponentially from 1.2 s to 0.1 s to almost 0 s upon increasing the PANI-DC content from 1 wt% to 15 wt% to > 15 wt%, respectively.
