The objective of this study was to characterize and determine contents of vitamin E isomers (alpha-, beta-, gamma-, delta-tocopherols and tocotrienols) in different steamed rice dishes, with or without other grains. Five different rice dishes were evaluated for the vitamin E nutritional value as major Korean staple foods. They were plain steamed rice (SR) and steamed rice mixed with barley (SRBa), red bean (SRRB), black bean (SRBB), or multi-grains (SRMG) containing a mixture of black rice, barley, red beans, and black beans. Vitamin E isomers were extracted from five grams of freeze-dried samples with hexane after saponification. An analytical method, using a normal-phase HPLC with a UV detector, was developed and used to determine the amount of each vitamin E component. The results showed that SR contained three vitamin E isomers (alpha-tocopherol, alpha-tocotrienol, and gamma-tocotrienol). Alpha-tocopherol and gamma-tocotrienol were de-tected from all samples while only SRBB contained beta-tocopherol and beta-tocotrienol. SRMG showed the highest (3.9$\mu$g/g dry wt) and SRRB showed the lowest alpha-tocopherol (1.3$\mu$g/g dry wt) contents. SRBB contained about 5 to 16 times more gamma-tocopherol (19.7$\mu$g/g dry wt) than othe.5. These results suggested that adding black bean or multi-grains can dramatically improve the vitamin E nutritional values compared to the plain steamed rice (SR). Information obtained from this study can be directly related to the amount of vitamin E intake and can be used to balance the diet for Koreans.

A comparative analysis of farm incomes was performed from the new composition system of crops, such as feed crops, including soybeans, Italian ryegrass, soybean-potatoes, and soybean-barley planted in rice fields. Through this analysis, the suggested implications were derived, and the technological solutions were determined. The profitability of the composition of soybean-Italian ryegrass showed that the soybeans yield was 325kg/10a, and the sale price was ₩3,962/kg, leading to a gross revenue of ₩1,288,000/10a. The yield of Italian ryegrass was 1,584kg/10a with a sale price of ₩125/kg, showing a gross revenue of ₩198,000/10a. The net income of soybeans was ₩284,000/10a, which means a net income rate of 22.1%, whereas the net income of Italian ryegrass was -₩30,000/10a. The composition of soybeans-potatoes and soybeans-barley showed a gross revenue of ₩930,000/10a and ₩375,000/10a, respectively. The crop composition types have been developed for the Income Type, Production Type of Forage, Improvement Type of Food Self-Sufficiency, and Corresponding Type to Climate Change. On the other hand, regional types have not been developed sufficiently. In addition, various selections of alternative crops and the establishment of crop composition congruent to the specific regions should be developed systematically in terms of the production technology. Therefore, it is necessary to develop the technological establishment of the crop composition through continuous related studies with the mid-to-long term objectives of land utilization and grain self-sufficiency rates.

Background and objective: The nanobubbles remain stable in water, and it increased dissolved oxygen (DO) in the water that promotes the seed germination and the plant growth. We evaluated the seed germination and growth of sprouts (radish, wheat, and barley) and leafy vegetables (red mustard and pak choi) when irrigated with various DO of nanobubble water (NB). Methods: The oxygen NB was generated by surface friction and treated in 4 levels: NB 0% (control, DO 9.21 mg·L-1), NB 20% (DO 15.40 mg·L-1), NB 33% (DO 20.93 mg·L-1), and NB 100% (DO 39.29 mg·L-1). Results: The root length of radish and wheat increased more in NB 33% than the control plot. The fresh weight increased in NB 33% compared to the control plot in radish and wheat, and both fresh and dry weight increased more in NB 20%, NB 33%, and NB 100% than the control plot of barley. The leaf length and width of red mustard decreased more in NB 33% and NB 100% than the control plot and NB 20%, which indicated the leaf compactness. The fresh and dry weight of shoot and root increased more in NB 100% than the control plot in red mustard. In pak choi, the shoot fresh weight increased more in NB 100% than the control plot. In leafy vegetables, the germination rate of red mustard in NB 100% was higher than the control plot, however, it was not significantly different between oxygen NB plots in sprout vegetables. Conclusion: The results showed that the root growth and biomass increased after applying NB 33% in sprout vegetables. The leaf growth properties as the number of leaves and leaf size were not significantly different or decreased in NB treatments compared to control plots, but NB 100% (DO 39.29 mg·L-1) effectively increased the root growth and plant biomass in leafy vegetables.
In a search for plant extracts with potent in vivo antifungal activity against various plant pathogenic fungi, the methanol extract of the Curcuma longa rhizomes effectively controlled the development of rice blast catised by Magnaporthe grisea and tomato late blight caused by Phytophthora infestans. Three curcuminoids such as curcumin, demethoxycurcumin, and bisdemethoxycurcumin were purified from the methanol extract of C. longa rhizomes as antifungal principles. Among the three curcuminoids, demethoxycurcumin was the most active to both rice blast and tomato late blight, followed in order by curcumin and bisdemethoxycurcumin. However, they all exhibited no or little in vivo antifungal activity against other fungal pathogens causing rice sheath blight (Corticium sasaki), tomato gray mold (Botrytis cinerea), wheat leaf rust (Puccinia recondita), or barley powdery mildew (Blumeria graminis f. sp. hordel).
An emerging interest in healthy eating has led to an increase in the consumption of rice mixed with various types of grains. Cooked rice was prepared with five different seaweeds, Hizikia fusiformis, Sargassum fulvellum, Enteromorpha compressa, Undaria pinnatifida, and Gracilaria verrucosa, and the antioxidant activity was measured. In addition, the antioxidant activities of 80% ethanol and methanol extracts of the five seaweeds were compared. Total phenolic content (TPC), total reducing power (TRP), 2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2'-azino-bis-3-ethylbenzthiazoline-6-sulphonic acid (ABTS) cation radical scavenging activities of the ethanol extracts were higher than those of the methanol extracts. The TPC of raw seaweed ethanol extracts was from 7.58 to 26.27 mg gallic acid equivalent (GAE)/g. The antioxidant activities of both extracts of Hizikia fusiformis were the highest among the five seaweeds, and the antioxidant activities of the cooked rice were lower than those of the raw seaweed extracts. The DPPH radical scavenging activities of cooked white rice, mixed grains, barley, and a mixture of white rice and barely added with Hizikia fusiformis, Sargassum fulvellum and Undaria pinnatifida were 3.17, 23.12, 31.11 and 10.66%, respectively. These results demonstrate the addition of seaweeds to cooked rice helps to improve the antioxidant activity compared to white rice alone.

In order to determine the feeding value of t:1e waste wood of Lentinus eddodes, the waste wood was milled and treated with $Ca(OH)_2$ and cellulase, then raw waste wood and the treated waste wood were fed to broiler chicken and Korean native goates. The results obtained were as follows; 1. The chemical composition of the waste wood was c. protein 2.26%. c. fat 2.57%. c. fiber 44.60 and c. ash 5.58%. No differences were detected between the raw waste wood and $Ca(OH)_2$ or cellulase treated waste wood in chemical composition. 2. In amino acid composition. no cystine and methionine was showed, but trace amount of Vitamin A, $B_1$, and $B_2$, and cholin chloride were detected. 3. Trichoderma viride SANK. No. 16374 was used to decompose the cellulose. 4. In broiler performance, when waste wood meal was subsituted for 5% wheat bran, no adverse effect was showed on weight gain, feed in take and feed efficiency. But $Ca(OH)_2$ and cellulase treated waste wood meal could be subsituted for 8% wheat bran. 5. In Korean native goat performance, feeding waste wood meal subsituted by 50% various bran (25% defatted rice bran and 25% barley bran) had no adverse effect on growth and feed efficiency. 6. Considering the above results, though the waste wood meal could be replaced to part of various bran, there was a bottle-neck to process the waste wood. The waste wood of Lentinus edodes was little feeding value on bed of ruminant.
Trichoderma asperellum SKT-1 is a microbial pesticide that is very effective against various diseases. Our study was undertaken to evaluate T. asperellum SKT-1 for induction of resistance against yellow strain of Cucumber mosaic virus (CMV-Y) in Arabidopsis plants. Disease severity was rated at 2 weeks post inoculation (WPI). CMV titre in Arabidopsis leaves was determined by indirect enzyme-linked immunosorbent assay (ELISA) at 2 WPI. Our results demonstrated that among all Arabidopsis plants treated with barley grain inoculum (BGI) of SKT-1 NahG and npr1 plants showed no significant reduction in disease severity and CMV titre as compared with control plants. In contrast, disease severity and CMV titre were significantly reduced in all Arabidopsis plants treated with culture filtrate (CF) of SKT-1 as compared with control plants. RT-PCR results showed increased expression levels of SA-inducible genes, but not JA/ET-inducible genes, in leaves of BGI treated plants. Moreover, expression levels of SA- and JA/ET-inducible genes were increased in leaves of CF treated plants. In conclusion, BGI treatment induced systemic resistance against CMV through SA signaling cascade in Arabidopsis plants. While, treatment with CF of SKT-1 mediated the expression of a majority of the various pathogen related genes, which led to the increased defense mechanism against CMV infection.

Literatures on microorganisms of traditional Korean nuruk published since 1945 were reviewed in this paper. Traditional Korean nuruk consists of raw barley and various grains. Traditional Korean nuruk consists of unbolied raw barely and various grains. They are ground to paste and moistened, and then naturally inoculated by airborne microorganisms. Therefore, many kinds of microorganisms such as fungi, yeast, and bacteria grwo in nuruk. Since 1945, new 14 species of Aspergillus and 9 species of Penicillium have been identified from traditional Korean nuruk. Total number of fungal species identified so far is now up to 38 species among 12 different genus. Among newly isolated fungal species, Aspergillus penicilloides and Penicillium, expansum showed not only high production rate of acid and amylase but also extreme stability of the enzyme at room temperature for 3 months. As examples of newly isolated yeast species, there are 5 species of Candida, 4 species of Hansenula, 1 species of Pichia and 1 species of Schizosaccharomyces. Total number of yeast species isolated so far is up to 18 species from different 8 genus. Newly isolated bacteria, were Bacillus pumilus, Lactobacillus casei and Leuconostoc mesenteroides.

The objectives of this research were to investigate the effect of serpentine as a new soil conditioner for growth of turfgrass. To achieve the goal, pure sand or mixtures of sand and serpentine with various ratios were tested for soil physical properties and the growth effects of perennial ryegrass and zoysiagrass growth were compared. Major results of this research are summarized as follows; 1) Hydraulic conductivity of 10~30% serpentine mixtures were observed within the range of 1010~901mm/h which is good for USGA recommendation. Experimental results of pH and EC for various mixtures indicated that the 10% serpentine mixture was the most suitable for turfgrass growth. 2) Perennial ryegass treated with 10% serpentine mixture showed the highest visual quality(p<0.01) among all treatments. And serpentine treatment was more effective to improve visual quality of perennial ryegrass than that of zoysiagrass. The treatment of 10% serpentine had better visual qualities than that of 20% in both of zoysiagrass and perennial ryegrass. Treatment with the right amount of serpentine extends green period for one to two weeks during early winter in both zoysiagrass and perennial ryegrass. 3) In perennial ryegrass, the treatment of 10% serpentine resulted in an increase of total dry weight compare with those of zeolite or barley stone, and also dramatically promoted the dry weight by 15% compared with sand 100%(control). Total dry weight of zoysiagrass treated with 10% serpentine was 9% higher than that of san. These results indicated that serpentine can be a good soil conditioner for both zoysiagrass and perennial ryegrass when it is blended with sand within a range of 10 to 20% by volume.

The aim of this study was to investigate the anti-oxidant and anti-inflammatory activities of the Rhododendron weyrichii flower extract fermented using Shindari, a traditional Jeju barley Nuruk-based fermentation. In this study, we examined the antioxidant potential of R. weyrichii flower extracts (RF) and R. weyrichii flower extracts fermented with Nuruk or Shindari (RFFN or RFFS, respectively) using various in vitro antioxidant assays including DPPH and ABTS radical scavenging assays, total phenol content and FRAP assays. We also evaluated the anti-inflammatory activity of the RF and RFFS on murine RAW 264.7 cells. The anti-inflammatory activity was evaluated by treating the RAW 264.7 cells with various concentrations (6.25, 12.5, 25, and 50 ㎍/ml) of RF or RFFS. As a result, we observed that the ABTS radical scavenging activity and total phenol content of RFFS was higher than that of RF and RFFN. Additionally, lipopolysaccharide-induced nitric oxide (NO) production was significantly lower in RFFS-treated cells when compared to the LPS-treated control. In addition, RFFS-treated cells exhibited decreased expression of inducible NO synthase (iNOS) proteins and high-performance liquid chromatography (HPLC) fingerprinting showed that both the quercetin and quercetin glucoside (quercitrin and isoquercitrin) levels were affected by the fermentation process. In conclusion, our data suggests that traditional fermentation could be an important strategy in improving the biological properties of raw materials including their antioxidant and anti-inflammatory activities. Finally, RFFS may be a candidate for developing topical antioxidant and anti-inflammatory agents.
