Quality and Storage Characteristics of Pork Teokgalbi with Added Rosemary (Rosemarinus officinalis) Extract Powder (로즈마리 추출분말을 첨가한 돈육 떡갈비의 품질 및 저장특성)

  • This study was carried out to investigate the effects of adding rosemary extract powder (REP) to pork teokgalbi on its quality and storage characteristics. Five types of teokgalbi were tested, viz. with no REP added (normal, N), with 0.05% ascorbic acid added (control, C) and with 0.05% (R1), 0.1% (R2) and 0.2% (R3) of REP added. The proximate composition, calorific value, water holding capacity and cooking loss were not significantly different among the different types of pork teokgalbi. The L and a values of the teokgalbi containing REP were significantly lower than those of the N and C groups. As regards the textural characteristics, the addition of 0.2% REP increased the springiness value. In the sensory evaluation, the teokgalbi with the addition of 0.1% REP had higher scores in flavor and total acceptability. The 2-thiobarbituric acid (TBA) value, total microbial count and volatile basic nitrogen content of the teokgalbi containing 0.2% REP were lower than those of the N group. In conclusion, R3 was significantly more effective in delaying lipid peroxidation than the other treatment groups. Therefore, rosemary extract could be used as a natural antioxidant in meat products.

  • The purpose of this study is to examine the expressional characteristics of T-shirts design using digital printing. Through digital printing system, a variety of patterns and pictures can be printed on T-shirts in a relatively short time. At this backdrop, the result of this research can aid to develop design of T-shirts with a high value added on it. The result was that the printing methods were categorized into borrowing the pictures of masterpieces, applying photography or caricatures, introducing graffiti or lettering, and representing industrial arts. In conclusion, digital printing system unlike the established printing method can have almost an unlimited range of expressing various kinds of pictures and patterns, so that designers may develop high value-added differentiated T-shirts. In other words, by creating a variety of designs with no limit of its quantity, its expressive range can be more widened and with an increased development of plotting machines, we may manufacture more varied kinds of products in a small quantity at a faster rate.

  • Recently, the fresh logistics recognizes to be created the high value-added part for logistics companies. Because the fresh logistics, which provides the system of temperature control and sanitary management, is able to be created more better high value-added products than the existed logistics system. In this research, we suggest the fresh logistics cluster for the proposal of activation in the field of food industry, which apply good activity for fresh logistics, and show the present condition and matters domestic fresh logistics market. This study did analyze the status & volume of perishable cargo which come from the imported Chinese fresh products representatively, at Incheon port and assume to build the fresh logistics cluster complex at Songdo FEZ, which is available developing and located near by Incheon port. The actual intensive study should be progressed for Korean logistics companies in order to optimize to the suitable fresh logistics system, need to set up the policy and management of statistical data concerning fresh logistics system.

Studies on the Quality of Restructured Pressed Smoked Duck Steak

  • The objectives of this study were to investigate the quality characteristics of restructured pressed smoked duck steak from the breast meat of Cherry Valley ducks. Different levels of isolated soybean protein (ISP) (0, 15 and $30g{\cdot}kg^{-1}$) or carrageenan (5, 10 and $15g{\cdot}kg^{-1}$) were added to manufacture the restructured pressed smoked duck steak. The results were as follows: No significant differences were observed for moisture, crude fat, crude protein, cooking loss and water holding capacity of products from all treatments. The panel test scores showed that color, flavor and binding ability of products were considered acceptable. The drip loss in control sliced-products was significantly higher than products containing ISP or carrageenan (p<0.05) during storage at $-18^{\circ}C$ for 12 weeks. The pH value, volatile basic nitrogen (VBN) value and thiobarbituric acid (TBA) value of vacuum-packaged products did not change significantly during storage at $-18^{\circ}C$ for 6 weeks. However, TBA values increased with storage time. The viable bacterial counts were about $10^{3}-10^{4}CFU/g$ during storage at $-18^{\circ}C$ for 12 weeks. The products remained good quality during the storage period.

  • This study introduces the adoption of the logistics industry by the Korean government as a threshold of overcoming economic difficulties. The core contents of the National Logistics Plans (2001-2020) which contain the basic principles of the logistics policies of the Korean government and its aim to be an 'Excellent Nation of Logistics' is introduced. The economic effect of the logistics policies implemented between 2001 and 2005, (the period of the first Medium-term Logistics Plan according to the National Logistics Plans (2001-2020) set up by the Korean government at the end of 2000) is estimated through input-output analysis. The input-output analysis result is as follows: the total output effect is 8,856 billion won of which indirect output effect is 3,982.9 billion won; indirect output effect comes mainly from real estate and business services, non-metal products, metal products, electrical and electronics products, finance and insurance, wholesale and retail, petroleum and coal; the total amount of value-added effect is 3,376 billion won and total import effect is 726 billion won. Employment effect including self-employed and unpaid family supporters with paid laborers is 79,203.7 people of which paid laborers comprise 67,547.7 people.

Bifidobacterium Fermentation of Rice and Apple Pomace Mixture (쌀과 사과박 혼합물을 이용한 Bifidobacterium발효제품의 개발)

  • This study was aimed to develop a value-added fermented products from rice and apple pomace using Bifidobacterium fermentation. The Bifidobacterium fermentation system of the mixture of rice and apple pomace was developed, and the physicochemical properties of the products were investigated. After 4 different bifidobacteria were compared for their fermentation capability and sensory properties of the fermented product, Bifidobacterium FBD-13 and FBD-22 were selected as appropriate strains for the fermentation of saccharified rice solution(SRS). The optimum inoculation level was 2% and the optimum fermentation time was 42 hrs. When wet apple pomace(WAP) was added to SRS, it contributed to the improvement of sensory properties of the fermented products and the optimum mixing ratio was 40% WAP and 60% SRS in weight. For the fermentation of the mixture of WAP and SRS, Bifidobacterium FBD-27 and FBD-22 were selected as suitable strains.

Effect of Added Sweet Potato Flour on the Quality Characteristics of the Korean Traditional Steamed Rice Cake, Backsulki (고구마가루 첨가가 백설기의 품질특성에 미치는 영향)

  • In order to enhance overall quality of the Backsulki, a sweet potato flour (SPF) which is rich in sugar and dietary fiber was added into the rice flour at 0, 5, 15, and 25% (w/w, db) ratios. Quality changes of the products were evaluated by storing at 5, 15, and 25$^{\circ}C$ for 4 days. Water binding capacity, swelling power, and solubility of the products increased as the SPF increased. Hunter colorimetric a- and b-value increased while L value of the products decreased as the SPF increased. Retarded retrogradation of the flour mixtures containing the SPF was shown from the DSC thermogram as indicated by the decreased $\Delta$H values. Increases in $T_{i}$ and $T_{p}$ values in relation with the starch gelatinization were shown from the DSC thermogram with a temperature margin of 15-20$^{\circ}C$ as the SPF increased. Increases in softness along with decreases in springiness and chewiness of the products were shown as the SPF increased. It was not so much the storage temperature as the added SPF affected the final texture of the products. Retarded growth of the total microbes of the products was noted by the added SPF during storage at 25$^{\circ}C$ for 3 days. Regarding the above and additional sensory preference scores of the products, a 15%(w/w) level of the SPF was suggested as optimum for the best Backsulki with improved qualities.

Quality and Antioxidant Properties of Sponge Cake added with Flaxseed Powder (아마씨 분말을 첨가 스펀지케이크의 품질 및 항산화 활성)

  • The study produced a functional sponge cake added with 0~20% proportion of excellently functional flaxseed powder aimed at obtaining basic data for the possibility to develop new products through a physiochemical properties assessment and a sensual assessment of the product. The water content was the lowest in the control, at 27.63%, and the 5~20% water content following the increase in added flaxseed powder failed to display a significant difference (p<0.05). The pH of the dough was 6.77~6.44, and displayed a significant difference according to the added amount of flaxseed powder (p<0.05). The specific weight of the dough appeared to be 0.40~0.51, and displayed a significant increase according to the added amount of flaxseed powder. The DPPH radical scavenging activity of the sponge cake added with flaxseed powder was 12.8%, and the plot added with flaxseed powder displayed a significantly higher percentage of 22.34~55.57% than the control plot. Crumb color change had increased values for value a and value b, and a significantly decreased L value. Texture significantly increased according to the increase in hardness, gumminess, chewiness, and cohesiveness, while springiness significantly decreased. Sensual assessment displayed a high preference for the 10% flaxseed powder additive plot in all items including appearance, taste, color, flaror, softness, and overall acceptability. The assessment of physiochemical properties and sensuality of the sponge cake added with flaxseed powder revealed that 10% flaxseed powder is suitable as the optimum proportion.

Study on Processing Properties for Improving the Utilization of Food Resources (식품자원의 활용가치 향상을 위한 가공적성 연구)

  • The needs to develop high value-added foods are expanding due to the trends of food market, such as importance of food security by enlarged international free trades and expanded market size for processed foods. However, our home country exhibits limit transport to development of new products and high-value added area compared to other advanced countries. For this reason Ministry of Agriculture, Food and Rural Affairs and Institute of Planning and Evaluation for Technology have launched "High Value-Added Food Technology Development Program" for improvement of value of food resources for practical use since 2013. The program contains research to increase the values of agricultural and animal resources and the construction of database. Main research topics are studies in pretreatment techniques to improve the values of agricultural and animal resources, improvement of acceptability, and processing qualities that would be engrafted on materializaton and commercialization technologies. In addition the construction of a consolidated database regarding the research achievements is included in the program. Currently, studies in processing qualities for about 30 food materials re under progress, being suitable for materialization, for examples drying, fermentation, grinding, heat-treatment, and so on. The research results are provided in public through the consolidated database website after reconstruction in the form of united database format. To date the database containing the about 300 of research contents for process qualities has been constructed.
