Microwave Vacuum Drying of Brown Rice Koji as an Enzymic Health Food (효소식품으로서 현미코오지의 마이크로파 진공건조)

  • This work was to study drying characteristics of the brown rice koji, an enzymic health food, using microwave under vacuum. Cooked brown rice was inoculated with Aspergillus oryzae and incubated at $32^{\circ}C$ for 6 days. The brown rice koji was dried by different drying methods: microwave vacuum drying, hot air drying, vacuum drying and freeze drying. Each drier except freeze drier was set to maintain the sample temperature at $40^{\circ}C$. During microwave vacuum drying, the sample reached $40^{\circ}C$ much faster (within $5{\sim}10\;min$) and was dried much faster (2 hrs) than the other drying methods. The initial drying rate of microwave vacuum drying was ten times faster than that of hot air drying. The microwave vacuum drying produced a dry sample of the highly retained enzymic activity, followed by freeze drying, vacuum drying, and hot air drying.

Effects of the Low Temperature Vacuum Drying Process on Drying Curve and Physico-Chemical Properties of Astringent Persimmons (저온진공건조 공정에 의한 떫은 감의 건조 및 품질 특성)

  • This study was performed to investigate drying characteristics and quality properties of dried persimmon with vacuum drying process. Drying characteristic curve of the dried persimmon showed that the constant rate drying period and falling rate drying period exist definitely. $_{\circ}Brix$, sugar content and hardness value of the dried persimmon increased as the vacuum pressure and heating temperature increased, but L value of the dried persimmon lower. The results indicated that the optimal conditions were at vacuum pressure of 40~50kPa abs., heating temperature of $30^{\circ}C$ and drying time of 3~4days.

  • This study investigated changes in physicochemical properties of onion powders during various drying conditions. The moisture content during vacuum drying at $40^{\circ}C$ remained at 5.23% for 5 days of drying, and it was possible to quickly obtain day powder Weight reduction upon $-70^{\circ}C$ vacuum drying was 90% after 7 days. The large change in browning caused by vacuum freeze drying was lowest ($OD_{420}\;of\;1.173$) after 7 days of drying. The content of vitamin C increased with vacuum freeze drying. The major free sugars were fructose, glucose and sucrose. Of organic acids, citric acid was prominent and, after vacuum freeze drying, showed a high value of 1,965 mg/100g. Free amino acids noted were L-arginine, ${\beta}-alanine$, L-alanine and L-threonine. In summary, vacuum freeze drying at $-70^{\circ}C$ is optimal.

The Evaluation for Quality Characteristics of Drying Flowering Plant by Vacuum-Freeze (진공 동결에 의한 건조 화훼류의 품질특성 평가에 관한 연구)

  • In case of using rapid vacuum-freeze drying for high quality dry flower of flowering plant, the morphological and physiological characteristics of dry rose showed as the following. The dry ratio of about 82% presented after 1 day in case of using rapid vacuum-freeze drying and it was reached that the optimum storage water content of general dry products was 18%. The dry ratio of about 89% presented after 4 days. This result indicates very short dry time comparing with natural dry time of 12 days. Also, the morphological characteristics of flowering plant in case of vacuum-freeze drying showed similar shape with real flower. The contraction decreased about 9% comparing with real flower under dry time of 72 hours. But the contraction in case of natural dry decreased 36% and showed noticeable difference. The brightness which affects physiological characteristics of dry flowering plant showed lower values according to the dry process and chromaticity was thick. After 4 days, natural dry was thick with about 2 times comparing with vacuum-freeze drying. In case of vacuum-freeze drying, the quantity of anthocyanin and chlorophyl which affect discoloration and bleaching of dry flowering plant showed the clear difference comparing with natural dry method due to the sublimation by vacuum after rapid freeze with short initial time.

Changes in Saponin Composition and Microstructure of Ginseng by Microwave Vacuum Drying (수삼의 마이크로파 진공 건조 후 사포닌 조성 및 미세구조의 변화)

  • Changes in saponin composition and microstructure of ginseng by microwave vacuum drying were determined. Korean fresh ginsengs were subjected to four different processing : 3 min microwave vacuum drying and 2 min holding-24 hrs drying (MWVD1), 5 min microwave vacuum drying and 2.5 min holding-24 hrs drying (MWVD2), 3 min microwave vacuum drying and 2 min holding-12 hrs drying after hot air drying for 12 hrs drying at $45^{\circ}C$ (HMWVD1), 5 min microwave vacuum drying and 2.5 min holding-12 hrs drying after hot air drying for 12 hrs at $45^{\circ}C$ (HMWVD2). The water content was decreased until 16.82% without shrinkage and water activity was 0.54 after microwave vacuum drying. The lipid content was decreased after microwave vacuum drying (MVD). Glucose was increased after MVD while sucrose decreased. Ginsenoside-Rb1 and ginsenoside-Rc were decreased after MVD. Ginsenoside-Rg1 for MWVD2 and HMWVD2 was higher than that of MWVD1 AND HMWVD1. MWVD1 AND HMWVD1 dried ginsengs showed a more compact structure than the HMWVD2 and HMWVD2 ginsengs.

  • This study was carried out to investigate the vacuum drying characteristics of 50mm- and 75mm- thick tree disks of some domestic softwoods for substituting the conventional hardwoods as the materials for wood crafts. Though the elapsed drying times from green to in-use moisture content(MC) were largely shortened by vacuum drying, the tree disks treated by EWS couldn't be dried to in-use MC, and so sapwood stains also were occurred severely. We suggest EWS treatment is undesirable for the species with very high sapwood portion or vacuum drying with hot water circulation heating system. Heart checks were slight, but sapwood checks, which have never been trouble in drying process of tree disks, were severe. For the reasonable explanation it is suggested MC differences between sapwood and heartwood were large and most of tree disks had already no barks before drying test. Ginkgo was vacuum-dried with very slight drying defects such as heart checks, sapwood checks. V-cracks and sapwood stains. In Korean red pine and pitch pine V-cracks were severely occurred. And it was found the special feature that most of these defected tree disks contained several V-cracks within one tree disk. It can be considered as the causes that the region of sapwood was defected by the several checks at the early drying stage because of the steep MC gradient along the radial direction, and then at the later drying stage the drying stresses due to differential shrinkage were concentrated on these brittle spots.

  • In tradition, there have been two kinds of drying methods, which are sun drying and artificial drying. The sun drying method which has been adopted traditionally has been replaced by the hot-air drying method which is one of the most general methods of artificial drying, with its simple drying system, low initial cost of drying plant, and easy operating method. But the hot-air drying method has some defects ; (1)much energy loss happens due to the discharge of hot air during the drying process, (2)control of drying rate is not easy on account of changing relative humidity of inlet air for uniform hot air temperature, (3)high temperature of floods in drying process brings about the production of low-grade drying products. Also, the hot-air drying method is inducing environmental and sanitary problems which are resulting from the emission of high temperature and high humidity air, including stick on the drying progress. Vacuum drying technique, whose drying time and 7uantity of exhausting energy is about 1/3 ~1/4 of hot air drying, is very excellent in the drying efficiency. As the results, it took about 20 hours for material to reach about 18% of the final moisture content in order to store products for a long time, from about 470% of the early moisture content at the beginning of drying, and maximum drying rate comes to about $0.35 kg/m^2hr$ at about 350% of the moisture content.

The aim of this paper is to develop the low temperature vacum dryer, with low initial investments and operating costs, easy operating method and trouble-free operation.

Preparation and Quality of Dried Yam Chip Snack Coated with Ascorbic Acid Cocrystallized Sucrose

  • The specific objectives of this study were to dry yam chips using microwave vacuum drying, freeze drying and hot air drying, then to coat the dried yam chips with ascorbic acid cocrystallized sucrose, and finally to compare the quality of yam chip snack foods with respect to drying and coating characteristics. The microwave vacuum dried sample showed the highest drying rates and much less surface damage than the hot air dried one did. The shape and color of the microwave vacuum dried/coated sample were allocated between those of the freeze dried/coated sample and the hot air dried/coated sample. The freeze dried/coated sample scored excessively low in organoleptic hardness and chewiness to be suitable as a snack. The hot air dried/coated sample was too deep in color, wrinkled, excessively high in organoleptic hardness and chewiness, and excessively low in mouthfeeling. Therefore, the microwave vacuum dried/coated sample presented the best overall attributes as a snack, with respect to organoleptic characteristics, shape, color, and drying rates.

Studies on the Changes in the Alliinase Activity during the Drying of Garlic (마늘의 건조과정 중 Alliinase 활성 변화에 관한 연구)

  • Changes in the alliinase activity during the hot air drying and vacuum freeze drying of garlic samples treated as the whole, sliced and crushed state were investigated. The specific activity of alliinase in raw garlic was 8.52 units/mg protein. The activity in the whole garlic prepared by the hot air drying for 8 hrs was reduced remarkably to 5.22 units/mg protein with 61% remaining and to 4.25 units/mg protein with 50% remaining for 36 hrs. The activity in the sliced garlic prepared by the hot air drying for 36 hrs was reduced to 3.55 units/mg protein with 42% remaining and the activity in the crushed garlic prepared by the hot air drying for 36 hrs was reduced to 3.12 units/mg protein with 37% remaining. The garlic sample sliced or crushed was higher than the whole state in the efficiency of drying but was lower in the remaining activity of alliinase. The activity in the whole garlic prepared by the vacuum freeze drying for 8 hrs was reduced to 7.21 units/mg protein with 85% remaining and to 5.53 units/mg protein with 65% remaining for 36 hrs. The activity in the sliced garlic prepared by the vacuum freeze drying for 36 hrs was reduced to 4.55 units/mg protein with 53% remaining and the activity in the crushed garlic prepared by the vacuum freeze drying for 36 hrs was reduced to 4.16 units/mg protein with 49% remaining. The remaining activity of alliinase in the garlic samples prepared by the vacuum freeze drying was higher than the remaining activity in the garlic samples prepared by the hot air drying.
