The effects of different rumen protected forms, oleamide, Ca oleate, of dietary oleic acid on the carcass quality and fatty acid composition in intramuscular and subcutaneous fat tissues of Hanwoo steer were examined. Sixty, 25 month old Hanwoo steers divided into three groups were fed no supplement (Control), 2% of oleamide (Oleamide) or Ca-oleate (Ca-Oleate) in their diet for 45 or 90 days. Disappearance rates of oleic acid supplements in digestive tracts (Rumen bypass, abomasal and intestinal disappearance rate) were 48.5, 68.4 for oleamide and Ca oleate, respectively. Both oleic acid supplements affected feed intake, growth rate, cold carcass weight and carcass fatness. Live weight gain, carcass weight, backfat thickness and marbling score were higher in the oleic acid supplemented steers compared with those from the control. Oleic acid supplements increased marbling score and ether extract in Hanwoo steer m. logissi thoracicmus. Rumen protected oleic acid increased not only the level of oleic acid but also polyunsaturated fatty acids in intramuscular and subcutaneous fat tissue. Total saturated fatty acid contents in both fat tissues were decreased whereas total unsaturated fatty acid content was increased compared with those from control. Linoleic acid, linolenic acid and polyunsaturated fatty acid contents were significantly higher in Ca oleate than any other steers. Lipid metabolites in blood were increased in rumen protected oleic acid treatments. HDL content in blood was increased in Ca-oleate supplemented steers whereas LDL was decreased compared with control. The changes of fatty acid compositions in the rumen protected oleic acid supplemented steers suggest that the oleic acid and unsaturated fatty acid were protected from rumen biohydrogenation and can be deposited in the fat tissues.
This study was conducted to evaluate the quality characteristics of domestic as well as imported fermented skate. Three types of fermented skate products were analyzed for proximate composition, pH, VBN, ammonia-N, free amino acids, and fatty acids. The results indicated that the domestic fermented skate contained large amounts of TMAO. Also, the domestic and imported fermented skates each contained approximately 7.1 log CFU/g and $5.8{\sim}6.5$ log CFU/g of aerobic bacteria, respectively, and 585.9 mg and $384.1{\sim}398.5$ mg of total free amino acids, respectively; all samples contained high levels of taurine, anserine, lysine, alanine, glycine, proline, and ${\beta}-alanine$. For fatty acid composition, the domestic fermented skate contained 11 different types of saturated fatty acid and 16 types of unsaturated fatty acid, whereas the imported skate contained 8 types of saturated fatty acid and $10{\sim}15$ types of unsaturated fatty acid. Overall, the results suggest that domestic fermented skate is a better source of amino acids and essential fatty acids and contains more aerobic bacteria than imported fermented skate.
This study was carried out to investigate the chemical composition of peanut mutants induced by gamma radiation (Co-60) at 300 Gy in seeds of the cultivar Shinnamkwang. The protein contents of twenty-eight peanut mutants ranged from 23.3% to 31.7% and were increased by from 0.5% to 8.4% in fifteen mutants lines from the 26.8% of the original variety, cv. Shinnamkwang. Lipid contents of in mutants ranged from 43.2% to 53.5%, an increase of 0.2% to 5.7% from the 47.8% of the original variety. The range of unsaturated oleic acid in 28 mutants was from 38.9% to 56.9% an increase of from 1.3% to 14.0% from the 50.6% in the original variety. Linoleic acid, the highest unsaturated fatty acid, constituted 32.6% meanly of mutants, it was 17.4% lesser than oleic acid, ranging from 25.9% to 42.0%. Palmitic acid (16:0) contents ranged from 8.6% to 11.1%, and the mutant line-9 had the highest content. The ratio of oleic to linoleic acid was 0.9 to 2.2. A negative coefficient (r=-0.98**) was obtained between oleic and linoleic acid, but for other fatty acids, no significant relation was observed. Similarly, a negative coefficient of r=-0.68**was observed between saturated and unsaturated acids. The sucrose compositions of mutants ranged from 2.6% to 6.2%.
The study on phytochemical analysis and the biological activity of Kalopanacis Cortex was carried out in this research. As a phytochemical result, liriodendrin as a lignan glycoside was isolated and characterized. Two subfraction separated from the acidic substance of $CHCl_3$ fraction were saturated and unsaturated fatty acid, respectively. Saturated fatty acid mixture identified from GC-MS tool was as follows: palmitic acid, stearic acid, arachidic acid, heneicosanoic acid, docosanoic acid, tricosanoic acid, tetracosanoic acid, pentacosanoic acid, hexacosanoic acid and octacosanoic acid. Unsaturated fatty acid was found to be linoleic acid on the basis of spectroscopic method. An active principle of liriodendrin exhibited significant antihepatotoxic activity but failed to show a considerable antiedemic activity. In this paper, the result of writhing test on liriodendrin was also described.
Medicinal mushrooms, including Cordyceps militaris, have received attention in Korea because of their biological activities. In the fruiting body and in corpus of C. militaris, the total free amino acid content was 69.32 mg/g and 14.03 mg/g, respectively. In the fruiting body, the most abundant amino acids were lysine, glutamic acid, proline and threonine. The fruiting body was rich in unsaturated fatty acids, which comprised about 70% of the total fatty acids. The most abundant unsaturated acid was linoleic acid. There were differences in adenosine and cordycepin contents between the fruiting body and the corpus. The adenosine concentration was 0.18% in the fruiting body and 0.06% in the corpus, and the cordycepin concentration was 0.97% in the fruiting body and 0.36% in the corpus.
The effects of different feeding ratios of concentrate (C) and roughage (R) on balance of long chain fatty acids and microbial fatty acids in the rumen of sheep were investigated. The diets were divided into 8:2 (concentrate feeding), 4:6 (middle mixture) and 0:10 (roughage feeding) ratios (C:R). Duodenal digesta was collected through 24 hours after feeding. Biohydrogenation rate, total duodenal flow of fatty acids and microbial fatty acids were measured. Total duodenal flow of fatty acids was significantly (p<0.05) increased with increasing concentrate. Total duodenal flow of fatty acid was greater than intake of fatty acid in all diets. In comparison with intake of each fatty acid, duodenal flow of stearic acid ($C_{18:0}$) remarkably increased in all diets. Biohydrogenation rate for total C18 unsaturated fatty acids in the rumen tended to increase (p<0.10) when sheep were fed the middle mixture. In particular, biohydrogenation rate of linoleic acid ($C_{18:2}$) and linolenic acid ($C_{18:3}$) with the middle mixture were highest (p<0.05) compared with other diets. Duodenal flow of protozoal fatty acids was significantly (p<0.05) increased with the increased supply of concentrate. That of bacterial fatty acids was significantly (p<0.05) increased with both concentrate diets compared with the roughage feeding diet. $C_{18:0}$ occupied the greater part of both protozoal and bacterial fatty acids in all treatments. Results indicated that biohydrogenation of free unsaturated fatty acids was actively carried out when the middle mixture diet was supplied, and that microbial uptake and synthesis of fatty acids were accelerated by adding the supply of concentrate.
The inhibitory effect of omega-3 such as linolenic acid (LNA), docosahexaenoic acid (DNA) and eicosapentaenoic acid(EPA) on the growth of normal cell lines and cancer cell lines was evaluated by 3-[4,5-dimethylthiazol-2-yl]-2,5-diphenyItetrazolium bromide (MTT) and 2,3-bis-2-methoxy-4-nitro-5-sulfophenyl]-2H-tetrazolium-5-caboxanilide (XTT) methods. LNA was found to decrease the cell viability of human oral epithelioid carcinoma cells (KB) in the MTT assay, whereas EPA appeared to inhibit the cell adhesion activity of human skin melanoma cells (SK-MEL-3) in the XTT assay analysis. DPPH radical scavenging activity was examined on LNA, DHA and EPA at the concentration of 100 ${\mu}M$, where they showed about 53% scavenging activity. These results suggest that omega-3 unsaturated fatty acid has a potential anticancer activity.
A total of 180 Arbor Acre broilers (35 days of age) were fed a diet containing 0%, 0.6%, 1.2%, 1.8%, 2.4% or 4.8% conjugated linoleic acid (CLA) for 3 weeks then slaughtered at week 1, 2 and 3. Thigh and breast muscles were seamed out, vaccum-packed prior to storage in a chill for days 7 to analyse thiobarbituric acid reactive substances (TBARS). The accumulation of CLA in breast and thigh muscles was increased significantly (P<0.05) as the CLA level was increased, but no significant difference amongst the treatments. The contents of saturated fatty acids were significantly increased(P<0.05) with an increase of dietary CLA level, but those of unsaturated fatty acids were significantly decreased (P<0.05). The content of mono unsaturated fatty acid (MUFA) was decreased as dietary CLA level increased, even though that of poly unsaturated fatty acid (PUFA) had a little difference between dietary CLA level. Dietary CLA reduced the degree of lipid oxidation in raw chicken meat during storage.
The change in fatty acid compositions of the glycolipid and phospholipid of sesame seed was analyzed during the storage for 4, 9, and 15 months at four different storage conditions, that is, storage under light with linen bag(LA), storage under light with polyethylene bag(LS), storage in dark with linen bag(DA), and storage in dark with polyethylene bag(DS). In the fatty acid composition of glycolipid, palmitic and stearic acid decreased during the storage but the linoleic acid increased significantly, particularly, between 4 to 9 months of storage. The content of palmitic and stearic acid in phospholipid decreased until 9 months, then increased until 15 months of storage, but reverse tendency was, observed in the content of oleic and linoleic acid. The ratio of unsaturated to saturated fatty acids in glycolipid increased during the storage of 15 months in all the storage conditions. The ratio of unsaturated to saturated fatty acids of phospholipid in DA and LA was slightly higher than that in DS and LS conditions during the storage for 15 months.

Boiled feed is obtained by mixing and boiling agricultural by-products such as rice straw, rice bran, and bean curd with grains. The study explored the change in fatty acid, free amino acid, nucleotide, mineral, cholesterol, myoglobin and collagen of longissimus dorsi muscle in Hanwoo steers fed with boiled feed. Forty steers, 20 heads per group, were divided into two groups: a control group and a boiled feed group. The steers were raised for 10 months. The boiled feed group was enriched with palmitoleic acid, oleic acid, arachidonic acid and unsaturated fatty acids compared with the control group. There were no significant differences in amino acid and nucleic acid composition between the two groups. The boiled feed group contained higher levels of iron and manganese in the boiled feed group compared with the control group. The total cholesterol level was significantly increased, whereas calorie levels, myoglobin and collagen composition showed no differences. As the supply of boiled feed increases the content of fatty acids, unsaturated fatty acids and minerals related to flavor, it should be a feed that leads to the production of high-quality beef.
