홍국 분말을 첨가한 유화형 소시지의 이화학 특성 연구 (Physicochemical properties of emulsion-type sausage added red yeast rice powder)

  • 본 연구는 홍국 분말 첨가수준에 따른 유화형 소시지의 이화학적 특성에 대하여 조사하였다. 수분함량은 홍국분말 첨가량이 증가할수록 유의적으로 높아지는 추세를 보였으며, 단백질함량과 지방함량은 감소하는 경향을 보였다. 색도는 홍국 분말 첨가량에 따라 명도와 황색도는 감소하는 반면 적색도는 크게 증가하였다. 가열감량, 수분리, 유분리와 점도는 홍국 분말 첨가량이 증가함에 따라 감소하는 경향을 보였다. 관능평가에서 색도와 다즙성은 홍국 분말 3% 첨가 처리구가 유의적으로 가장 높은 값을 나타내었고, 풍미는 홍국분말 2~3% 첨가 처리구가 유의적으로 가장 높은 값을 나타내었다. 연도는 홍국 분말 첨가 처리구가 대조구보다 높은 값을 보였으며, 전체적인 기호도에서는 홍국 분말 2% 첨가 처리구가 가장 높은 값을 나타내었다. 연구결과를 종합하면 돈육 유화물에 홍국분말을 첨가하여 제조하였을 때 홍국 첨가에 따른 적색도가 증진되어 육색을 개선시키는 효과가 있으며 이화학적 품질특성을 향상시키는 것으로 생각된다.

병풀분말을 첨가한 염소고기 떡갈비의 품질특성 (Quality Characteristics of Goat Meat Tteokgalbi Prepared with the Addition of Centella asiatica Powder)

  • This study aimed to investigate the effects of Centella asiatica powder on the quality characteristics and storage stability of goat meat Tteokgalbi. The goat meat Tteokgalbi samples were prepared with four different quantities (0, 0.5, 1, and 1.5%) of Centella asiatica powder. The moisture content of the samples containing Centella asiatica powder was significantly lower than that of the control (p<0.05). The protein content of the samples containing Centella asiatica powder was significantly higher than that of the control (p<0.05). As the proportion of Centella asiatica powder increased, the pH, L*, and a* values of the uncooked and cooked samples decreased (p<0.05). The water holding capacity and the cooking yield of the uncooked and cooked samples were higher in the samples containing Centella asiatica powder than in the control (p<0.05). Also, with the increasing amounts of the Centella asiatica powder, the thiobarbituric acid reactive substance (TBARS) levels decreased. The 1-1.5% Centella asiatica powder group showed lower levels of volatile basic nitrogen (VBN) than the other groups as per the assay (p<0.05). The results indicate that Centella asiatica powder could enhance the quality characteristics and storage stability of goat meat Tteokgabi.

곤드레를 첨가한 김치의 품질 특성 (Quality Characteristics of Kimchi added with Gondre)

  • 곤드레의 이용과 김치의 다양성을 모색하기 위해 강원도의 특산물인 곤드레를 김치제조에 이용하고자 하였다. 곤드레는 당과 단백질이 풍부한 식품으로 김치제조에 생 또는 삶은 형태로 이용을 검토한 결과 일반 성분은 비슷하였지만 항산화성이 생 곤드레가 삶은 곤드레보다 1.2배 많은 것으로 나타나 김치제조에 생 곤드레를 첨가하기로 하였다. 생곤드레를 배추김치에 20, 40 및 50 (w/w) 첨가하여 저장실험한 결과 pH, 산도 및 미생물의 변화는 곤드레의 첨가량과 관계없이 유사한 경향을 보였고 관능검사를 한 결과 곤드레를 20% (w/w) 첨가한 김치가 맛, 향, 색 및 전체적인 기호도에서 우수한 것으로 나타나 향후 김치 제조에 곤드레의 이용이 가능할 것으로 사료되었다.

Determination of Adulteration of Chicken Meat into Minced Beef Mixtures using Front Face Fluorescence Spectroscopy Coupled with Chemometric

  • The objective of this study was to explore the potential of front face fluorescence spectroscopy (FFFS) as rapid, non-destructive and inclusive technique along with multi-variate analysis for predicting meat adulteration. For this purpose (FFFS) was used to discriminate pure minced beef meat and adulterated minced beef meat containing (1%, 2%, 3%, 4%, 5%, 10%, 20%, 30%, 40%, 50%, 60%, 70%, 80%, 90%, and 100%) of chicken meat as an adulterant in uncooked beef meat samples. Fixed excitation (290 nm, 322 nm, and 340 nm) and fixed emission (410 nm) wavelengths were used for performing analysis. Fluorescence spectra were acquired from pure and adulterated meat samples to differentiate pure and binary mixtures of meat samples. Principle component analysis, partial least square regression and hierarchical cluster analysis were used as chemometric tools to find out the information from spectral data. These chemometric tools predict adulteration in minced beef meat up to 10% chicken meat but are not good in distinguishing adulteration level from 1% to 5%. The results of this research provide baseline for future work for generating spectral libraries using larger datasets for on-line detection of meat authenticity by using fluorescence spectroscopy.

Evaluation of the Quality of Beef Patties Formulated with Dried Pumpkin Pulp and Seed

  • The objective of this study was to investigate quality attributes of beef patties formulated with dried pumpkin pulp and seed mixture (PM). Four different meatball formulations were prepared where lean was replaced with PM as C (0% PM), P2 (2% PM), P3 (3% PM) and P5 (5% PM). Utilization of PM decreased moisture and increased ash content of the patties. Incorporation of 5% PM (P5) increased the pH value of both uncooked and cooked patties compared to C group. Increasing levels of PM increased water-holding capacity. No significant differences were found in cooking yield and diameter change with the addition of PM. Incorporation of PM increased fat and decreased moisture retention of the samples. $a^*$ values were decreased with PM addition, where $L^*$ values did not differ among treatments and $b^*$ values were similar in C, P3 and P5 samples. Textural properties were mostly equivalent to control samples with the incorporation of PM even at higher concentrations. The addition of PM did not significantly affect any of the sensory scores tested. These results indicated that utilization of PM presents the opportunity to decrease the amount of meat besides to improve healthier profile without causing negative changes in physical, chemical and technological quality of beef patties.

시중에서 유통되는 건강식품의 종류에 관한 연구 -매스미디어와 인터넷 미디어를 중심으로- (A Study on the Classification of Health Food Circulated in the Market -Surveyed on Mass Media and Internet-)

  • This study was performed to investigate the kinds of health food advertised and sold through media like printed matter, TV broadcasting or internet. It was found that fifty three percent of the health food was circulated through internet, 27% through printed matter, 9% through TV Broadcasting. When the health foods was classified, the proportion of special purpose nutritious foods was 36.1%, health aid foods 33.9%, uncooked powdered foods 18.5%, functional foods for health 4.9%, Ginseng products 3.9%, and tea 0.9%. The special purpose nutritious foods was composed of 59% of nutrition supplementary foods, 24% of dietary fiber foods, 9% of weaning foods, 7% of milk formula and 2% of HCA. Vegetable extracts occupied 21.1% of health aid foods, yeast 7.5%, mushroom extracts 7.0%, chitosan 6.2%, aloe 5.3%. Dried powdered type health food occupied the highest proportion. The other type were capsule(18.8%), tablet(18.1%), and liquid type(16.4%). When the health food was classified with health claim, the proportion of "nutrition supplementation" was the highest (23.9%), "diet" 14.9%, "ergogenic"(18.8%), "promoting bowel movement" 7.8%, "growth" 5.7%, "regulation of blood sugar" 4.5%, "improving of immunity"(2.4%) and anti-aging effect(2.4%).

마늘분말을 첨가한 떡볶이 떡의 품질 특성 변화 (Changes in the Quality Characteristics of Topokkidduk Prepared with Garlic Powder)

  • 본 연구는 다양한 생리활성을 가지는 마늘을 떡볶이 떡에 첨가하여 관능적 특성 향상과 떡볶이 떡의 다양화에 기여하고자 떡볶이 떡에 마늘분말을 0, 1, 3, 5, 7%의 비율로 첨가하여 제조한 떡볶이 떡을 수분함량, 색, 기계적 품질 특성, 관능적 특성의 변화를 살펴보았다. 마늘 떡볶이 떡의 수분함량은 45.72~46.74%로 나타났으며 무첨가구에 비해 유의적으로 높은 수분함량을 나타내었다. 색도는 마늘 분말 첨가량이 증가할수록 L값이 감소하는 경향을 나타내었으며, a값과 b값은 마늘분말 첨가량이 증가할수록 증가하는 경향을 나타내었다. 마늘분말 첨가 떡볶이 떡의 기계적 품질특성을 조사한 결과 조리 전의 경도는 무첨가구에 비해 마늘 첨가군에서 유의적으로 낮은 값을 나타내었으며 마늘 분말 3% 첨가구가 가장 낮은 값을 나타내었다. 조리 후의 경도는 조리 전과 같이 무첨가구에서 유의적으로 높은 값을 나타내었다. 부착성과 탄력성은 조리 전과 후에 마늘분말의 첨가에 따른 차이를 나타내지 않았다. 씹힙성은 조리 전과 후에 마늘분말 첨가군이 무첨가구에 비해 낮게 나타났으며 첨가량에 따라 감소하는 경향을 나타내었으나 유의차는 없었다. 응집성은 조리 전에 1% 첨가군이 높게 나타났으며, 조리 후에는 마늘분말 첨가량에 따른 차이는 나타나지 않았다. 점착성은 조리전에 마늘분말 첨가군이 무첨가구에 비해 낮은 값을 나타내었으며 첨가량이 증가할수록 감소하는 경향으로 나타났으나 조리 후에는 마늘분말 첨가에 따른 유의차는 나타나지 않았다. 관능적 특성을 조사한 결과 색, 향의 강도에서 7% 첨가구가 높게 평가받았으며 졸깃함의 강도에서는 1%, 3% 첨가구가 유의적으로 강하게 평가되었으나 7% 첨가구는 낮게 평가되었다. 마늘떡볶이 떡의 색, 향, 맛에 대한 기호도 평가는 7% 첨가구가 낮은 점수를 나타내었으며 조직감의 기호도는 무첨가구와 첨가구들 사이에 유의차를 나타내지 않았다. 전반적인 기호도는 무첨가구와 3% 첨가구가 유의적으로 가장 높은 점수를 받았다. 따라서 본 마늘분말을 첨가하여 마늘 떡볶이 떡을 제조할 경우 마늘분말 3% 첨가가 가장 적합할 것으로 사료된다.

  • Korean vegetable dishes-Na mul are indigenous and popular foods for a long time, and have been eaten by not only the common people but also the royale people in the ordinary meal and customary affairs. Grains are principal item of diet for Koreans and additions of Na mul in diet provide the nutritional minerals and vitamins. Especially vegetable oils in seasoning played the important role in nutrition balance. This manuscript historically investigate the Korean vegetable dishes-especially Na mul, Seng chae, Ssam, and the vegetables, additional ingredients and seasonings. 1. Foreign vegetable were introduced very actively. As the result of it, the more variety of vegetables are available. 2. Vegetable oils such as sesame oil, perilla oil, roasted sesame seed and pine nuts, etc were widely used for seasonings. 3. Seng chae dishes had been prepared with more than two different kinds of vegetables. Seasonings are used from the various sources, and combination of ingredients and development of condiments are expected to research further. 4. Ssam foods basically used uncooked vegetables, but steaming and boiling are also common methods.

반조리 냉동 육류제품의 저장 및 재가열 방법에 따른 지방 산화율 측정 (Measurement of Lipid Oxidation Rates in Semi-prepared Frozen Muscle Foods During Various Storage and Reheating Conditions)

  • Semi-prepared frozen muscle foods purchased from local industry were tested for lipid oxidation. The effects of various storage conditions, cooking methods, defrosting methods and reheating methods on rancidity were examined using TBA assay and sensory evaluation. TBARS values were increased faster in cooked samples than in uncooked ones during storage periods. During refrigeration of cooked samples, TBARS values were increased significantly for 15 days (p<0.001). In defrosting experiments, refrigerated defrosting was proven to be better compared with room temperature or microwave defrosting (p<0.05). For overall explanation, stepwise regression analysis was done and the results are in this order: storage conditions, cooking methods, moisture content, and lipid content. Using these 4 variables, TBARS values could be explained by 40~53%.

Effect of Black Rice Powder on the Quality Properties of Pork Patties

  • Physicochemical properties of pork patties formulated with black rice powder were investigated. Moisture contents of samples containing black rice powder were significantly higher than that of the control (p<0.05). Protein, fat, and ash contents increased with increasing black rice powder content. Uncooked and cooked pH values of samples increased with increasing black rice powder content. Lightness and yellowness of samples decreased with increasing concentration of black rice powder. Redness of cooked samples containing black rice powder was significantly lower than that of the control (p<0.05). Water holding capacity and cooking yield of samples increased with increasing black rice powder concentration. Diameter and thickness reduction ratio of samples decreased with increasing black rice powder content. Sensory evaluation of samples showed no significant difference between samples. Thus, black rice powder improved the quality of pork patties.
