시금치나물의 조리방법에 따른 Vitamin C 함량변화에 관한 연구 (A Study on the Variation of Vitamin C Content in Cooked Spinach by the Cookery Method.)

  • The effect of the temperature and the time of scalding, and the addition of various seasoning on the remaining % of total Vitamin C contained in Spinach (Spinacia oleracea) was studied and discussed by means of chemical kinetics. The quantitative measurements of total Vitamin C were made by 2,4-dinitrophenyl hydrazine (DNPH) method with Clinical Electrophotometer (Fisher). The sample spinach contains 39.88mg. % of total vitamin C on the average, and the ratio of oxidized and reduced forms of Vitamin C is 1 : 4.7. When the sample spinach was scalded, the kinetics of the decrease of the remaining total vitamin C. % was observed to follow the first order reactions regardless of the temperatures applied (i,e. 70$^{o}$ , 80$^{o}$ , 90$^{o}$ and 100$^{o}$ ) with half-life range of 2.10 - 1.47 minutes. In the case of the addition of various seasonings, the addition of various seasonings, the kinetics remaining Vitamin C % showed to be the zero order reactions regardless of the kinds of seasonings and storage temperatures. With the addition of seasonings, the stability of Vitamin C was found to be increased in the order table salt+sesame oil+vinegar+soybean sauce, without seasoning, table salt+sesame oil, table salt+sesame oil+soybean sauce.

항산화성 비타민 보충 급여가 흡연자의 혈중 지질 양상에 미치는 영향 (Effect of Antioxidant Vitamin Supplementation on Plasma Lipid Pattern in Smoking College Men)

  • Cigarette smoking is a well known risk factor for cardiovascular disease and has negative effects on blood lipid and lipoprotein . Some of the associations between smoking and chronic disease can be attributed to the less healthful lifestyles of smokers. A large body of epidemiologic evidence suggests inverse relationships between ischemic heart disease and plasma vitamin C and E concentrations . Smokers have lower plasma concentrations of these vitamins than do nonsmokers. Smokers therefore need antioxidant vitamin supplementation. The purpose of this study was to investigate the effect vitamin supplementation on plasma lipid patterns in smoking college men. 24subjects were divided into 3 groups of which were the vitamin C supplementation group (n=8), the vitamin E supplementation group(n=8) and the vitamin C+E supplementation group(n=8). The vitamin C supplementation group consumed 500mg of ascorbic acid, the vitamin E supplementation group consumed 200IU of D-$\alpha$-tocopherol, and the vitamin C+E supplementation group consumed 500mg of ascorbic acid+ 200IU of D-$\alpha$-tocopherol for 4 weeks. We examined the plasma lipid patterns before and after the vitamins were supplemented. The results obtained were as follows ; In the vitamin C supplementation group, the concentration of total cholesterol decreased significantly and HDL-cholesterol increased significantly with the supplementation of vitamin. In the vitamin E and vitamin C+E supplementation groups, however, there were no significant differences observed with the supplementation of vitamin. Concentration of plasma LDL, triglyceride, free fatty acid were not significantly affected by the supplementation of vitamin in all groups. In terms of plasma fatty acid composition, the concentrations of saturated fatty acid were not significantly affected by the supplementation of vitamin in all groups. The concentrations of palmitoleic acid, arachidonic acid, and docosahexaenoic acid, however, significantly increased in the vitamin E supplementation group(p<0.05). The concentration of plasma linoleic acid significantly increased in the vitamin C+ E supplementation group)(p<0.05). The results of this study show that antioxidant vitamin supplementation in smokers has a tendency to decrease coronary heart disease risk in view of the plasma total cholestrol and HDL-cholesterol concentrations of the vitamin C supplementation group and fatty acid concentration of the vitamin E supplementation group.

항산화비타민 보충이 인슐린비의 의존형 당뇨병 환자에서 항산화상태에 혈액지방성분에 미치는 영향 (Effects of Antioxidant Vitamins Supplementation on Antioxidative Status and Plasma Lipid Profile in Korean NIDDM Patients)

  • We investigated the effects of antioxidant vitamins supplementation on antioxidative status and plasma lipid profile in female Korean non-insulin diabetes mellitus(NIDDM) patients. Forty-five patients were groups by types of vitamin to take into three groups-Vitam in E group(400IU/day, n=15), Vitamin C group (1,000mg/day, n=15) and Vitamin E plus C group (400 IU plus 1,000mg/day). Supplementation period was 4 weeks. After vitamins supplementation, plasma vitamin E concentration significantly increased in vitamin E and vitamin E + C group, but plasma retinol concentration were not affected by vitamin E or vitamin C supplementation. And plasma levels of lipid peroxide measured as thiobarbituric acid reactive substances(TBARS), indicator of lipid peroxidation and increased susceptibility of LDL towards lipid peroxidation, were significantly decreased in all three groups after vitamins supplementation. Also catalase activities in erythrocytes were significantly decreased after antioxidant vitamin supplementation in all subjects. And after vitamins supplementation, post prandial 2 hour glucose and total cholesterol levels was decreased in all subjects. And after vitamins supplementation, post prandial 2 hour glucose and total cholesterol levels was decreased in all patients, especially there was a significant difference in vitamin C, Vitamin E + C group. In this study, antioxidant vitamins supplementation might have a protective function against the free radical-mediated lipid peroxidation and decrease the plasma total cholesterol levels in Korean female NIDDM patients.

Associations among plasma vitamin C, epidermal ceramide and clinical severity of atopic dermatitis

  • BACKGROUND/OBJECTIVES: Atopic dermatitis (AD), a chronic inflammatory skin disease, is accompanied by disruption of the epidermal lipid barrier, of which ceramide (Cer) is the major component. Recently it was reported that vitamin C is essential for de novo synthesis of Cer in the epidermis and that the level of vitamin C in plasma is decreased in AD. The objective of this study was to determine the associations among clinical severity, vitamin C in either plasma or epidermis, and Cer in the epidermis of patients with AD. SUBJECTS/METHODS: A total of 17 patients (11 male and 6 female) aged 20-42 years were enrolled. The clinical severity of AD was assessed according to the SCORAD (SCORing Atopic Dermatitis) system. Levels of vitamin C were determined in plasma and biopsies of lesional epidermis. Levels of epidermal lipids, including Cer, were determined from tape-stripped lesional epidermis. RESULTS: The clinical severity of patients ranged between 0.1 and 45 (mild to severe AD) based on the SCORAD system. As the SCORAD score increased, the level of vitamin C in the plasma, but not in the epidermis, decreased, and levels of total Cer and Cer2, the major Cer species in the epidermis, also decreased. There was also a positive association between level of vitamin C in the plasma and level of total Cer in the epidermis. However, levels of epidermal total lipids including triglyceride, cholesterol, and free fatty acid (FFA) were not associated with either SCORAD score or level of vitamin C in the plasma of all subjects. CONCLUSIONS: As the clinical severity of AD increased, level of vitamin C in the plasma and level of epidermal Cer decreased, and there was a positive association between these two parameters, implying associations among plasma vitamin C, epidermal Cer, and the clinical severity of AD.

저산소 및 산소재도입시 vitamin C와 E가 간장 약물대사 기능에 미치는 영향 (Effects of Vitamins C and E on Hepatic Drug Metabolizing Function in Nypoxia/Reoxygenation)

  • Liver isolated from 18 hours fasted rats was subjected to $N_2$hypoxia (for 45 min) followed by reoxygenation (for 30 min). The perfusion medium used was Krebs-Henseleit bicarbonate buffer (pH 7.4, $37^{\circ}C$). Vitamin C (0.5 mM) and trolox C (0.5 mM), soluble vitamin E analog, were added to perfusate. Lactate dehydrogenase (LDH), total glutathione, oxidized glutathione, lipid peroxide and drug-metabolizing enzymes were measured. After hypoxia LDH significantly increased but this increase was attenuated by vitamin C and combination of vitamin C and E. Total glutathione and oxidized glutathione in perfusate markedly increased during hypoxia and this increase was inhibited by vitamins C, E and its combination. Similarly; oxidized glutathione and lipid peroxide in liver tissue increased after hypoxia and reoxygenation and this increase was inhibited by vitamin I and combination of vitamin C and E. Hepatic drug metabolizing function (phase I, II) were suppressed during hypoxia but improved during reoxygenation. While vitamins C and E only increased glucuronidation, the combination of vitamin C and E increased the oxidation, glucuronidation and sulfation. Our findings suggest that vitamins C and E synergistically ameliorates hepatocellular damage as indicated by abnormalities in drug metabolizing function during hypoxia/reoxygenation and that this protection is in major part, caused by decreased oxidative stress.

단체급식에서 제공되는 콩나물무침 및 야채 salads의 생산단계 및 보관단계에 따른 총 비타민C 함량변화 (A Study on Total Vitamin C Content Changes in Process of Food Products Flow and Holding Time of Cooked Soybean Sprouts and Fresh Vegetable Salads in Food Service Operations)

  • The objective of this study is to provide a fundamental data to improve meals of the college foodservice operations serving more than 300 meals per day through evaluating changes in; total vitamin C contests, water contents, and pH, in the process of handling such foods as soybean sprout cooked and of fresh vegetable salads. This study, also, tried to identify nutrition reduction, step by step, to minimize nutrition loss. 1. In handing COOKED SOYBEAN SPROUTS, total vitamin C contents were higher after wash(1.54%mg%) than other cooking methods adopted in university meals(1.08mg%), however, total vitamin C contents was significantly lost during boiling step. 2. Significant loss of total vitamin C and water content in the FRESH VEGITABLE SALADS was detected in the process of washing and cutting vegitables. Especially,'cabbage' lost 20% of total vitamin C in the process of 'soaking in water', which was one of preparation process 3. Significant loss of vitamin C was observed after 6 hours of HOLDINC AFTER COOKING but it can be reduced through holding under lower temparature, in case of soybean sprouts and fresh vegitable salads. pH became acidic as holding time expanded. WATER CONTENT of cooked soybean sprouts decreased up to 4 hours holding time, however, it increased when we checked at after 6 hours' of holding time. Water content continuously decreased up to 6 hours of holding time in case of FRESH VESITABLE SALADS with the statistically significance level.

Evaluation of the Antioxidant Contents of Korean Wild Leaf Vegetables

  • The purpose of this study was to evaluate the antioxidative potential of Korean wild leaf vegetables. Antixoidative activity of chamchwi (Aster scaber), nurucchwi (Pleurospermum kamtschaticum) sumssukbujengee (Aster glheni), moshidae (Adenophora remotiflora), spinach (Spinacia oleracea)k was evaluated as a reference for commonly used synthetic antioxidant, BHA. We compared the content of $\beta$-carotene, vitamin C and vitamin E as antioxidant vitamins, and total phenolic compound including flavonoid as non-vitamin compounds in Korean wild leaf vegetables and spinach. Thiobarbituric acid (TBA) value of Pleurospermum kamtschaticum, Aster scaber and Adenophora remotiflor was only 18-20% of control. TBA value of Aster glheni was 40% of control. On the basis of moles, the high level of vitamin C is the major contributor to the total antioxidant vitamin contents of Pleurospermum kamschaticum and Adenophora remotiflor. The amounts of flavonoid as well as total phenolic compound in Pleurospermum kamtschaticum and Adenophora remotiflor were also much higher than those of spinach. The amounts of flavonoid as well as total phenolic compound in Aster glheni were much higher than those of spinach while total amount of antioxidant vitamins was significantly lower than that of spinach. These results suggest that Pleurospermum kamtschaticum and Adenophora remotiflor could have antioxidative potency in food. Because of the higher content of antioxidant vitamins in Pleurospermum kamtschaticum and Adenophora remotiflor, these Korean wild leaf vegetables may have preventive effects on degenerative diseases, which have been associated with free radical mediated events.

폐경기 여성의 혈청 과산화지질 농도에 따른 항산화비타민의 영양상태 (The Nutritional Status of Antioxidant Vitamins in Relation to Serum MDA Level in Postmenopausal Women)

  • The purpose of this study was to investigate the nutritional status of antioxidant vitamins in relation to serum malondialdehye(MDA) level in postmenopausal women with common occurance of cardiovascular disease(CVD). Data about general characteristics including smoking, drinking and exercise status, dietary intake and serum level of antioxidant vitamins, and serum MDA level were collected from eighty-five postmenopausal women. Mean serum MDA level was 1.62$\pm$0.03nmol/ml, and general characteristics and serum lipid profiles were not significantly different among the three group: low MDA(<1.45nmol/ml), midium MDA(1.45-1.74nmol/ml) and high MDA($\geq$1.74nmol/ml). Total mean vitamin A intake was 472.8$\pm$37.7RE, 68% of RDA, vitamin C intake was 134.3$\pm$8.7mg, 192% of RDA and vitamin E intake was 8.6$\pm$0.5mg, 86% of RDA for Korean. In takes of antioxidant vitamins from the diet were not significantly different among the three groups. However significant negative correlation(r=-0.242, p<0.05) was observed between vitamin E intake and serum MDA level in total subjects. Total mean serum vitamin A, $\beta$-carotene and vitamin C level were 0.59$\pm$0.01$\mu\textrm{g}$/ml, 0.25$\pm$0.01$\mu\textrm{g}$/ml and 9.02$\pm$0.28$\mu\textrm{g}$/ml, respectively. Total mean serum vitamin E and vitamin E/total cholesterol level were 9.15$\pm$0.42$\mu\textrm{g}$/ml and 4.09$\pm$0.17$\mu\textrm{g}$/mg, respectively. Serum antioxidant vitamins levels were not significantly different among the three groups. However serum vitamin C and E level were negatively correlated to serum MDA level. We can conclude that it will be helpful for postmenopausal women with common occurance of CVD to improve nutritional status of antioxidant vitamins by increasing intakes of antioxidant vitamins, especially vitamin C and E. 감잎의 처리방법과 추출조건에 따른 감잎차의 Vitamin C와 Superoxide Dismutase(SOD) 유사활성의 변화 (Changes of Vitamin C and Superoxide Dismutase(SOD)-like Activity of Persimmon Leaf Tea by Processing Method and Extraction Condition)

  • 감잎차의 효과적인 제조법 및 음용방법을 조사하기 위해 세가지 방법(재래식, 증자법, 발효법)에 의해 감잎으로부터 감잎차를 제조하여 vitamin C와 SOD 유사활성의 변화를 조사하였다. Vitamin C는 발효법에 의해 제조된 감잎차에서 가장 함량이 높았으며 이 수치는(551.85 mg%) 생감잎에 들어 있는 vitamin C의 (1173.67 mg%) 47%에 해당하는 양이며 재래식 및 증자법에 의한 감잎차에 대해 각각 42배, 8배나 되는 많은 양임이 밝혀졌다. 반면 SOD 유사활성은 재래식(833.33 SOD unit/g)과 발효법(816.33 SOD unit/g)에 의해 제조된 감잎차가 증자법(754.72 SOD unit/g)에 비해 조금 높은 것으로 나타났지만 절대 수치에서는 큰 차이가 없었다. 추출온도와 시간에 따라 증자법 감잎차의 vitamin C는 온도에 상관없이 추출시간의 증가에 따라 조금씩 감소하였다. 발효법 감잎차는 $60^{\circ}C$$70^{\circ}C$에서는 추출량이 시간의 증가에 따라 대체적으로 증가하였으나 $80^{\circ}C$$90^{\circ}C$에서는 추출시간 5분까지는 증가하고 이후에는 감소하였다. 발효법 감잎차의 vitamin C의 최적 추출조건은 $80^{\circ}C$$90^{\circ}C$에서 3분과 5분이었고 $70^{\circ}C$에서는 5분과 10분 그리고, $60^{\circ}C$에서는 10분이었다. 재래식 감잎차의 vitamin C는 그 양이 적어 실험에 사용된 DNP법에 의해서는 측정할 수 없었다. SOD유사활성을 살펴볼 때 재래식 및 증자법 감잎차는 추출시간에 따라 $80^{\circ}C$$90^{\circ}C$에서 조금씩 증가하는 경향을 나타내었으며 발효법 감잎차는 $80^{\circ}C$$90^{\circ}C$에서 증가${\rightarrow}$감소${\rightarrow}$증가하는 경향을 보였고 재래식 및 증자법에 의한 감잎차보다 $80^{\circ}C$$90^{\circ}C$ 경우 추출시간에 관계없이 모든 조건에서 높은 활성을 나타냈으며 SOD 유사활성 물질의 최적 추출조건은 3분과 10분이었다.

한국 남자 흡연자의 금연과 항산화제 보충에 따른 체내 가역적.비가역적인 산화 손상도 변화의 정량적 측정 연구 (The Quantitative Determination of Reversible and Irreversible Oxidative Damages Induced by Smoking Cessation and Supplementation of Antioxidative Vitamins in Korean Male Smokers)

  • The effect of oral vitamin e (800IU/day) and C (500mg/day) supplementation for 10 days and/or smoking cessation for 5 days on oxidative damage to the red blood cells (RBC) of male smokers (22.2$\pm$0.2 years old) was studied. RBC were tested for their ability to protect against smoking-induced oxidative damage by measuring heme proteins (carboxyhemoglobin, hemoglobin, methemoglobin, oxyhemoglobin), hemolysis and thiobarbiturinc acid reactive substances (TBARS). Plasma levels of vitamin c, A, E, $\beta$-catotene, total cholesterol, glutamic pyruvic transaminase(GPT) and glutamic oxaloacetic transaminase(GOT) were also analyzed. In experiment one, a comparison was made of heme proteins and lipid damage to RBC, plasma antioxidant status (indexed by plasma levels of vitamin C, E, A and $\beta$-carotene) between smokers(n=56) and non-smokers (n=16). No differences were found in plasma antioxidant status, heme protein damage and TBARS concentration of RBC. In experiment two, 46 fasting male smokers from experiment one were divided into 4 groups. The groups were smoking with placebo group(SP, n=14), smoking cessation with vitamins supplementatin group (SV, n=13), smoking cessation with placebo group (NSP, n=9) and smoking cessation with vitamins supplementation group (NSV, n=10). After supplementing antioxidant vitamins, significant increases were seen in plasma vitamins supplementation group (NSV, n=10). After supplementing antioxidant vitamins, significant increases were seen plasma vitamin C (p<0.05) and vitamin E levels (p<0.05). The plasma vitamin E level was highest in the NSV group. Vitmain E and C supplementation provided some protection against heme proteins and lipid damage by lowering methemoglobin, hemolysis and TBARS concentration of RBC. Smoking cessation significantly decreased TBARS of RBC and plasma total cholesterol concentration. Supplementing vitamin E and C with smoking cessation considerably lowered plasma total cholesterol. These results point to a special association among smoking, oxidative damage and plasma antioxidant vitamin status. They indicate that increases in plasma antioxidant status can be detected after the supplementation of vitamin C and E and that smoking cessation had an additional effect on plasma vitamin E level. The present data suggest that improved antioxidant status induced by antioxidant supplementation or smoking cessation may help prevent oxidative damage in smokers.
