찹쌀풀 및 새우젓 첨가가 김치 발효중 총 유리아미노산, 총 Vitamin C 및 환원형 Ascorbic acid의 함량변화에 미치는 영향 (Effect of Cooked Glutinous Rice Flour and Soused Shrimp on the Changes of Free Amino Acid, Total Vitamin C and Ascorbic Acid Contents during Kimchi Fermentation)

  • This study was intended to observe the effect of cooked glutinous rice flour and soused shrimp on the fermentation of Kimchi samples were fermented for 11 days at 10$^{\circ}C$ after they were previously fermented for 6 hours at 20$^{\circ}C$. Changes of pH, total acidity, salt content, reducing sugar content, free amino acid content, total vitamin C content, and ascorbic acid content were measured. The results were as follows; 1. Soused shrimp and glutinous rice flour added in Kimchi acted as lactobacilli growth enhancer during fermentation. 2. Initial cincentrations of redng sugars in Kimch samples with no soused shrimp, 5% and 10% sosed shrimp were 7.5~8.3 mg/g, 3.0~4.7 mg/g and 0.5~0.6 mg/g respectively. Kinchi samples with glutinous rice flour showed higher reducing sugar contents than Kimchi samples without it. 3. Free amino acid contents in Kimchi samples gradually decreased during fermentation at 10$^{\circ}C$. According to their soused shrimp concentration, contents of free amino acid of Kimchi samples were significantly different. And Kimchi samples with glutinous rice flour showed lower free amino acid contents than Kimchi samples without it. 4. Total vitamin C contentrations of Kimchi samples were 24.5~28.0 mg% at the initial stage of fermentation and 15.0~19.2 mg% at the final stage of fermentation. During the fermentation of Kimchi, the higher soused shrimp concentration, the less total vitamin C contents were remained. 5. During the fermentation, ascorbic acid contents of Kimchi samples were not affected by soused shrimp and glutinous rice flour.

  • Yu Ja cheong(Citron product) one of the traditional drinks was processed by a modified method to improve the quality,. Sugar(38%) and sorbitol(12%) were added as partially substi-tuted sugar and experimented about quality stability during storage at 20$\pm$2$^{\circ}C$ comparing with conventional 50% sugar added product. Chemical compositions of the acidity 40. 46mg% total Vitamin and 28.5mg% amino-N and pH was 3.7 During the storage pH reducing sugar and amino-N contents increased slightly while total acididty decreased slightly and reduced vitamin C occupied most part of total vitamin C after proessing was converted to oxidized vitamin C greatly at 70 days of storage. While L a and b values deceased in between modified one and conventional product. e value increased continually during storage {{{{ {C }_{16 { }:_{ } 0 } }}}} {{{{ {C }_{18 { }:_{ }0 } }}}} {{{{ {C}_{18 { }:_{ }1 } }}}} and {{{{ {C }_{18 { }:_{ }2 } }}}} contnts in fatty acid and citric acid itaconic acid malic acid and succinic acid in organic acid were the major componets in both products. Judging from the results of experiments during storage the quality of the modified product was compared quite well with that of vonventional one during storage.

배추김치 숙성(熟成) 중(中) 일부(一部) 첨가재료(添加材料)가 질산염(窒酸鹽), 아질산염(亞窒酸鹽) 및 Vitamin C 함량(含量)에 미치는 영향(影響) (Effect of Some Materials on the Content of Nitrate, Nitrite and Vitamin C in Kimchi during Fermentation)

  • 첨가 부재료를 달리한 김치를 $18^{\circ}C$에서 24시간 예비 발효시킨 후, $4^{\circ}C$에서 35일간 저장하면서 질산염, 아질산염 및 vitamin C의 함량변화를 살펴보았다. 염도가 2.5% 수준인 김치 숙성도를 pH와 산도로 판정해 볼 때, 초기 숙성속도는 새우젓>멸치, 갓, 마늘>대조구, 무우>ascorbic acid>K-sorbate 순이었고 35일 후 pH 기준으로, 그 숙성도는 대조구>갓>무우>ascorbic acid, 멸치젓>새우젓>K-sorbate>마늘 첨가구 순이었다. 총 vitamin C 함량은 적숙기인 2주에 ascorbic acid 첨가구를 제외한 시료들에서 18.2-26.4 mg%로 담금직후와 같은 수준이었다. 그 중 환원형 ascorbic acid 보존율은 마늘, 갓, K-sorbate 첨가구에서 비교적 좋았다. 질산염, 아질산염의 함량은 숙성초기에 마늘, 무우첨가 김치에서 비교적 높았으며, 숙성기간 중 질산염의 함량범위는 260-490ppm이었고, 숙성 3주째에 최소량을 나타내었으며 이때 아질산염은 검출되지 않았다. 그리고, 총 vitamin C 함량도 이때 가장 낮았다.

The Effect of Vitamin E and Vitamin C on the Performance of Japanese Quails (Coturnix Coturnix Japonica) Reared under Heat Stress during Growth and Egg Production Period

  • This study was carried out to determine the effect of vitamin E and vitamin C on the performance of Japanese quails (Coturnix coturnix japonica) reared under heat stress during the growth and egg production period. A total of 810 seven-day-old Japanese quails were used in the trial. The birds received a diet with either three levels of vitamin E (DL-${\alpha}$Tocopheryl acetate) (60, 120 and 240 mg/kg of diet) and vitamin C (ROVIMIX STAY-C 35) (60, 120 and 240 mg/kg of diet). Live weight on day 35 and weight gain were the lowest in the group of chicks on a combination of 60 mg of vitamin E and 60 mg of vitamin C, whereas the highest live weight was demonstrated in chicks on a combination of 240 mg of vitamin E and 240 mg of vitamin C (p<0.01). The effects of treatments on cumulative feed consumption, feed conversion ratio, age at 5% lay, sexual maturity weight, rate of lay and mean egg weight values were found to be significant (p<0.01). The highest feed consumption, feed conversion ratio, age at 5% lay, sexual maturity weight, rate of lay and mean egg weight values were found in the group on a combination of 240 mg of vitamin E and 240 mg of vitamin C. The effect of treatments on the mortality ratio was found to be insignificant (p>0.01). The cost of supplementing diets with vitamin E and vitamin C is very low. Therefore such a combination of supplement can offer a potential protective management practice in preventing heat stress related losses in performance of Japanese quails.

칼슘급원 및 보존료 첨가가 김치 발효중 비타민 함량변화에 미치는 영향 (Effect of Calcium-Sources and Preservatives on the Changes of Vitamins during Kimchi Fermentation)

  • In the present study, an attempt was made to observe the effect of calcium-sources and preservatives on Kimchi fermentation. After pre-fermentation at room temperature for 16 hours, each Kimchi was stored at 4$^{\circ}C$. Changes of vitamin contents(vitamin C, thiamin, riboflavin and $\beta$-carotene) during the fermentation of Kimchi were determined. It was also attempt to relate the fermentation of Kimchi with the changes in chemical and organoleptic characteristics, such as pH, total acidity and reducing sugar. The findings were summarized as follows; 1. During Kimchi fermentation, the pH decreased steady and total acidity increased slowly in the follow order: K-Sorbate+acetic acid, k-Sorbate, Ca-Lactate and Control. the lower of pH and the higher of total acidity, the less of reducing sugar was remained. 2. changes of total vitamin C and reduced ascorbic acid contents during the Kimchi fermentation did not differ significantly from each other. At the begining of fermentation, Kimchi samples contained 20~25mg/100g of total vitamin C and 5~14 mg/100g of reduced ascorbic acid. In the final stage, however, 15~19 mg/100g of total vitamin C and 1~3 mg/100g of reduced ascorbic acid were remained. 3. The contents of thiam in and riboflavin were 30 to 42 meg/100g and 50 to 67 meg/100g at the initial stage, respectively. They increased with the degree of maturity (approximately 2 times of the content of the initial stage) and then gradually decreased. The content of $\beta$-carotene was found to be decreased with the degree of maturity. 4. The results of sensory evaluation indicated that Kimchi added with Ca-Carbonate, Ca-Carbonate+acetic acid and Ca-lactate were better than Control.

비타민 C 및 E의 첨가 급여가 육계의 소포체 스트레스와 지방 및 포도당 대사 연관 유전자의 발현에 미치는 영향 (The Effects of Dietary Supplementation of Vitamin C or E on the Expressions of Endoplasmic Reticulum Stress, Lipid and Glucose Metabolism Associated Genes in Broiler Chickens)

  • 본 연구는 육계에서 비타민 C와 E의 첨가 급여가 소포체(ER) 스트레스 및 지방 및 포도당대사 연관 유전자들의 발현에 미치는 영향을 살펴보고자 실시하였다. 육계에 비타민 첨가 급여 후 5주령에 닭의 간을 취하여 유전자들의 발현을 real-time PCR로 비교 분석하였다. 육계의 비타민 C 및 E 첨가 급여는 HSP70, HSP90 및 HMGCR 스트레스 마커 유전자들의 발현을 감소시켰다. ER 스트레스 관련 유전자들 또한 스트레스 마커 유전자들과 마찬가지로 비타민 처리에 의하여 대조구에 비하여 낮은 발현 양상을 보여줌으로서, 대표적 스트레스 마커 유전자들과 더불어 세포 내 ER stress도 영향을 받을 수 있음을 보여 주었다. 육계의 비타민 첨가 급여는 대조구에 비하여 지방대사 연관 유전자들의 발현이 비타민 첨가구에서 감소함에 따라 지방대사에도 영향을 미치고 있음을 보여주었다. 비타민의 첨가 유무와 관계없이 간세포 내부로 포도당을 운반하는 운반체인 GLUT 단백질들의 발현에는 큰 영향을 주지 못하였다. 본 연구의 결과는 육계에 사료 내 비타민 C 또는 E의 첨가급여가 닭의 스트레스 정도를 완화시킬 수 있으며, 또한 지방합성 대사에도 영향을 미칠 수 있음을 세포 수준의 관련 유전자들의 분석을 이용하여 검증할 수 있음을 보여 주었다.

The Effects of Dietary Turkish Propolis and Vitamin C on Performance, Digestibility, Egg Production and Egg Quality in Laying Hens under Different Environmental Temperatures

  • In this study, the effects of propolis and vitamin C (L-ascorbic acid) supplementation in diets were investigated on feed intake (FI), body weight (BW), body weight gain (BWG), feed conversion rate (FCR) and digestibility and on egg production and qualities (weight, mortality, shell thickness) in laying hens exposed to heat stress. A total of 150 Hyline White Leghorn, aged 42 weeks, hens was divided into five groups of 30 hens. Chicks were randomly divided into 1 positive control, 1 control and 3 treatment groups. The chicks were kept in cages in temperature-controlled rooms at $22^{\circ}C$ for 24 h/d (positive control, Thermoneutral, TN group) or $34^{\circ}C$ for 9 h/d from 08.00-17.00 h followed by $22^{\circ}C$ for 15 h (control, heat stress, HS group) and fed a basal diet or basal diet supplemented with vitamin C (250 mg/kg of L- ascorbic acid/kg of diet) or two levels of propolis (2 and 5 g of ethanol extracted propolis/kg of diet). Increased FI (p<0.05) and improvement in FCR (p<0.05), hen day egg (p<0.05) and egg weight (p<0.05) were found in Vitamin C and propolis-supplemented laying hens reared under heat stress conditions. Mortality rate was higher in the control group than TN, vitamin C and propolis groups (p<0.05). Digestibility of dry matter, organic matter, crude protein and ether extract improved with increasing of both dietary vitamin C and propolis (p<0.05). Vitamin C or propolis supplementation did not affect either the percentage shape index, yolk index or haugh unit and albumen index (p>0.05). However, the egg shell thickness and egg shell weight appeared to be increased in Vitamin C and propolis groups in comparison to HS group birds (p<0.05). In conclusion, dietary supplementation of laying hens with anti-oxidants (vitamin C and propolis) can attenuate heat stress-induced oxidative damage. These positive effects were evidenced by increased growth performance and digestibility, improvement of egg shell thickness and egg weight in comparison to non-supplemented birds. Moreover, supplementation with propolis (5 g/kg diet) was the most efficient treatment.

당뇨병 환자에 있어 식이섭취량, 혈장 지질과산화 및 Vitamin C의 농도 (The Dietary Intake, Plasma Lipid Peroxidation and Vitamin C in NIDDM Patients)

  • The increased oxidative stress may play an important role on the pathogenesis of diabetes and diabetic complications, and the blood level of vitamin C and lipid peroxidation in NIDDM patients may be used as an indicator for oxidative stress. However there is only scanty evidence on the blood level of vitamin C in NIDDM patients with or without diabetic complications. The study population consisted of 90 NIDDM patients(diabetes without complication, 48, and diabetes with complications, 42) and 41 normal subjects. The 42 diabetic complications were divided into 3 groups : 15 diabetic nephropathy, 18 diabetic neuropathy, 9 diabetic retinopathy. The anthropometric data and blood biochemical data were studied. The dietary intake was determined by 24 hour recall methods and food frequency questionnaire. The plasma concentrations of MDA and vitamin C were determined by fluorophotometer and HPLC respectively. 1) In blood lipoprotein study, diabetes with complication had higher level of TG than diabetes without complications, while no significant differences in total cholesterol, HDL, and LDL were shown. Diabetic neuropathy had the highest TG level among diabetic complication groups. 2) The intakes of vitamin B complexes(vitamin B$_2$, vitamin B$_{6}$, not vitamin B$_1$) and antioxidant vitamins(vitamin A and vitamin E, not vitamin C) and certain minerals such as iron and calcium in diabetes were not sufficient but the intakes of energy, protein, niacin, and phosphorus in diabetes were sufficient. The dietary intakes between diabetes with-and without complications were not significantly different. Among diabetic complications, the diabetic retinopathy had the lowest intake of vitamin B$_2$ and B$_{6}$(p < 0.05). the diabetic neuropathy or nephropathy consumed extremely low amount of vitamin A. 3) The MDA concentrations of NIDDM was significantly higher than that in controls(p < 0. 05) while no significant difference in the MDA concentration between with and without complications was shown. Although there were no statistical differences, the diabetic nephropathy and diabetic neuropathy showed the higher concentration of MDA than the diabetes without complications or diabetic retinopathy. 4) The plasma concentration of vitamin C in controls was higher than that in diabetes(p < 0.05) while the plasma vitamin C in diabetes with and without complications were similar. In diabetic complications, no differences in plasma vitamin C concentration of three groups were shown. This study showed that the oxidative stress in NIDDM patients was highly increased and the vitamin C reserve was significantly depleted, as compared with normals, although their intakes of vitamin C met korean RDA, which means that diabetes need more vitamin C intake to decrease oxidative stress in NIDDM patients.nts.

Effects of Vitamin C or E on the Pro-inflammatory Cytokines, Heat Shock Protein 70 and Antioxidant Status in Broiler Chicks under Summer Conditions

  • The present study was carried out to investigate the effects of dietary antioxidants on pro-inflammatory cytokines, heat shock protein (HSP) and antioxidant status in broiler chicks under summer conditions. A total of 162, 3-d-old broiler chicks were randomly assigned to a basal diet (CON) and the basal diet supplemented with vitamin C (200 mg/kg diet, VCD) or vitamin E (100 mg/kg, VED) until 35 day of age. All birds were exposed to summer diurnal heat stress at average daily fluctuations of temperature between $32^{\circ}C$ to $34^{\circ}C$ at day to $27^{\circ}C$ to $29^{\circ}C$ at night for the entire feeding periods. There was no significant difference in body weight, feed to gain ratio and the relative organ weight except the thymus in response to dietary vitamin C or E supplementation. However, the mRNA expression of interleukin (IL)-$1{\beta}$, IL-6, interferon (IFN)-${\gamma}$, Toll like receptor (TLR)-4 and HSP70 in the liver of birds fed diet containing vitamin C significantly (p<0.05) decreased compared with those in birds fed basal diet. Dietary vitamin E also showed a significant (p<0.05) decrease in the mRNA expression of IL-6 and HSP70 compared with a basal diet. Total antioxidant status (TAS) in serum of birds fed vitamin C supplemented diet was significantly (p<0.05) higher with than that in birds a basal diet. Lipid peroxidation in serum and liver resulted in a significant (p<0.05) decrease in response to dietary vitamin C or E supplementation. In conclusion, dietary supplementation with antioxidant vitamins, especially vitamin C resulted in a significant decrease in the mRNA expression of pro-inflammatory cytokines and HSP70, and higher antioxidant parameters than that of birds on the basal diet under summer conditions.

풋고추의 유통과정중 Vitamin C 함량의 변화 (Studies on the Changes of Vitamin C content in the Hot Green Pepper Fruits during the Circulation Periods)

  • This study was carried out to observe the changes of Vitamin C content and to preserve the quality for the circulation periods of hot green pepper fruits wrapped with polyethylene film under the indoor temperature, as well as to find the proper time for harvest of hot green pepper fruits as a hot taste food and vegetable. the results obstained were as follows: 1. The consignment rate of hot green pepper fruits was highest, 60.2% on the 25th day after flowering, the nest 25.4% on the 20 th day, 10.3% on the 30th day and 4.1% on the 35th day. 2. the content of Vitamin C I each pepper fruits was highest o the 30th day, considerably high on the 25th day and 20th day. 3. The total content of Vitamin C in each part of hot green pepper fruits; the content in pericarp was much higher than in placenta and seed, and that of hydro type Vitamin C was almost the same. 4. The reduction rate of vitamin C during circulation periods was highest on the 3rd day; 42% in pericarp, 50% in placenta, 65% in seed. But in the package wrapped up with polyethylene film, the reduction rate in the same period was 5% in pericarp, which was very low in reduction, and those in placenta and seed were almost the same as in the unwrapped state.
