To investigate the effects of yellow soybean powder on serum lipid level and enzyme activities, male Sprague-Dawley(SD) rats were given hyperlipidemic diets for 6 weeks. Rats(n=8) were divided into three groups consisting the normal group(N), hyperlipidemic diets group(C) and hyperlipidemic diets and yellow soybean powder group(YSP). YSP group lowered triglyceride, total lipid, phospholpid, ester-cholesterol and free-cholesterl than control group. YSP group lowered total-cholesterol, VLDL-cholesterol and LDL-cholesterol but increased HDL-cholesterol of the serum compared to the control group. Athergenic Index(AI) and LHR(LDL-cholesterol/HDL-cholesterol ratio) of YSP group was decreased by control group (p<0.05). On the other hand, glutamic oxaloacetate transaminase(GOT), glutamic pyruvate transaminase (GTP), lactate dehydrogenase(LDHase) and alkaline phosphatase(ALP) enzymes activities were decreased by hyperlipidemic diets group (C). These results suggest that yellow soybean powder fed a lipid lowering effect in serum of rats.
The agronomic traits, such as days to flowering and maturity, plant height, 100-seed weight and seed filling period, are quantitatively inherited and important characters in soybean(Glycine max L. Merr.). A total of 126 $F_5$ recombinant inbred lines(RILs) developed from the cross of PI 171451$\times$Hwaeomputkong were used to identify quantitative trait loci(QTLs) for days to flowering(FD), days to maturity(MD), plant height(PH), 100-seed weight(SW), number of branches(NB) and seed filling period(FP). A total of 136 simple sequence repeat(SSR) markers segregated in a RIL population were distributed over 20 linkage groups(LGs), covering 1073.9 cM of the soybean genome with the average distance between adjacent markers of 7.9 cM. Five independent QTLs were identified for FD, three for MD, two for PH, three for SW, one for NB and one for FP. Of these, three QTLs were related to more than two traits of FD, MD, PH, NB and FP and mapped near the same positions on LGs H and O. Thus, these traits could be correlated with biologically controlled major QTLs in this soybean RIL population.
: In this experiment, three samples of oils were used. These oils were hydrated soybean oil, pure soybean oil and regular soybean oil. Oil was used after heating at $235-240^{\circ}C$ every four hours term and total heating hours was 16 hours. The physio-chemical analysis and sensory evaluation were performed on these oils. The hydrated soybean oil showed lower acid, peroxide and carbonyl value than the other two oils (p<0.05 or p<0.001). The other two oils were more affected in rancidity than the hydrated soybean oil. In color test, whereas L value lowed during the heating time, a and b value increased during the heating time. The tendency of high L value and low b value in a long-time heating was more apparant on the pure soybean oil and the regular soybean oil than on the hydrated soybean oil (p<0.05). In sensory evaluation, color and rancidity order increased during the heating time. The hydrated soybean oil showed color and rancidity order than the other two oils. In overall quality test, the pure and regular soybean oil that had been used for 12 and 16 hour were not preferable. The hydrated soybean oil that had been used for 16 hour were not preferable. In sensory evaluation, the hydrated soybean oil, the pure and regular soybean oil did not show a apparent difference, although the hydrated soybean oil had a little better scores on the overall quality.
The dietary fiber contents of soybean sprout and spinach were changed by heat treatment. Before heat treatment, soybean sprout and spinach had larger amount of insoluble dietary fiber than soluble, and similar proportions of insoluble v/s soluble dietary fibers. After heat treatment, the value of insoluble dietary fiber of soybean sprout and spinach was increased significantly, except for microwave heating short time treatment. It is believed that the increment of insoluble dietary fiber is due to Maillard reaction products and resistant starch after heat treatment. The change of soluble dietary fiber contents of soybean sprout and spinach were not consistent in heat treatment. It is supposed that some soluble dietary fiber was destroyed by heat treatment, and some insoluble dietary fiber was hydrolysed or destroyed to be soluble. Total dietary fiber of soybean sprout and spinach was significantly incereased by all heat treatment, except for microwave heating short time of spinach.
This study was carried out to determine the changes in quality during the drying process and the optimum drying condition for utilizing soybean curd residue. The quality criteria for soybean curd residue were acid value, peroxide value, fatty acid composition and microbial concentration. The acid values of soybean curd residue were 7.5, 4.5 and 5.9 KOH mg/g upon 12 hour drying with open-air sun, ambient-air blast and warm-air blast, respectively. The numbers of total aerobic bacteria and molds increased remarkably during drying with open-air sunlight, ambient-air blast and warm-air blast except for hot air blast. Among different drying methods, the hot air blast drying(1kg of sample) was the most effective methods, which completed in three hours. Also, the drying method demonstrated a typical drying curve ; settling down, constant rate drying and falling rate drying period were shown within one hour, from one and three hours and after three hours, respectively. Moreover, there was significant variation in the constant drying period for the quality of soybean curd residue.
The effect of field sanitation using ecological characters of the pathogen was investigated for controlling Phomopsis seed decay in soybean. Field sanitation which was eliminated the inoculum by removing host debris, abscised petioles and cotyledones out of field, reduced remarkably infection percentage of pods and seeds by Phomopsis spp. as compared to the inoculated field. Neverthless, seed infection was 28.7% in the sanitized field. The fields sanitized by benlate application around the soybean plants also decreased seed infection with Phomopsis spp. Total seed infection including that with miscellaneous pathogens occurred as much as 75∼79% to the no application and their control values were 34∼42% over the routine application schedule. Even though it was not satisfactory, field sanitation seemed to be effective in controlling Phomopsis seed decay when infection pressure was low level. Diaporthe phseolorum va. sojae, D. phaseolorum var. caulivora and Phomopsis longicolla were mostly identified from soybean seeds and Colletotrichum truncatum, Cercospora kikuchiana were also isolated in sequence. Field sanitation did not significantly increase in soybean yield over the no application, while routine application schedule did in field.

The aim of this study was to evaluate different herbicides in corn-soybean intercropping for optimum growth, yield and nutritive value of forage under Korean environment conditions. Herbicidal treatments were randomly applied over five plots, viz. (1) Control treatment: no herbicide; (2) Alachlor; (3) Simazine; (4) Pendimethalin and (5) Mixture of alachlor and simazine herbicides in RCBD have three replications. Results depicted that treated herbicides exhibited significant effect over control of weeds. Simazine herbicide alone or mixed with alachlor had adverse effects on soybean but enhanced (p<0.05) corn production in terms of survivability, dry matter and digestible nutrients yield. Corn-soybean coupling and total dry matter yield were greater (p<0.05) in pendimethalin. Simazine-alachlor mixture reduced (p<0.05) soybean height. Conclusively, simazine could not be suitable for corn soybean intercropping because of having an adverse effect on soybean component. Pendimethalin could maintain growth and yield of corn and soybean both components. Effect of alachlor was comparable to that of pendimethalin.
Web blight symptoms were frequently observed on soybean plants grown in a farmer's fields located in Jincheon in Korea during a disease survey in August, 2005. Incidence of the disease was $5-20\%$ infected plants in two of four soybean fields investigated. A total of 31 isolates of Rhizoctonia sp. were obtained from leaves, leaf petioles, and pods of diseased soybean plants. The isolates were identified as Rhizoctonia solani AG-l(IA) by anastomosis test and based on the morphological and cultural characteristics. Three isolates of R. solani AG-l(IA) were tested for pathogenicity to five cultivars of soybean by artificial inoculation. All the isolates induced blight symptoms on the leaves of soybean and formed sclerotia on the lesions, which were similar to those observed in the field. The pathogenicity tests revealed that all the soybean cultivars tested were susceptible to the pathogen. There was no difference in the pathogenicity among the isolates. The present study first reveals that R. solani AG-l(IA) causes web blight of soybean in Korea.
Soyfoods have potential roles in the prevention and treatment of chronic diseases, most notably cancer, osteoporosis, and heart disease. There is evidence that carcinogenesis are supressed by isolated soybean derived products in vivo such as a protease inhibitor, phytic acid, saponins and isoflavones. It is believed that supplementation of human diets with soybean products markedly reduces human cancer mortality rates. Especially, recent papers recognize the potential benefit of soybean isoflavone components for reducing the risk of various cancers. Isoflavones exhibit a multitude of medicinal effects that influence cell growth and regulation, which may have potential value in the prevention and treatment of cancer. In addition to potential biological effects, soybean isoflavones have the important physiological functions such as the induction of Bradyrizobium japonicum nod genes and the responses of soybean tissues to infection by Phytophthora megasperma as well as biochemical activities such as antifungal and antibacterial actions. Genistin, daidzin, glycitin and their aglycone (genistein, daidzein, glycitein) are the principal isoflavones found in soybean. Malonyl and acetyl forms have also been detected but they are thermally unstable and are usually transformed during the processing in glucoside form. Most soy products, with the exception of soy sauce, alcohol-extracted soy protein concentrate, and soy protein isolate, have total isoflavone concentrations similar to those in the whole soybean. Soybean-containing diets inhibit mammary tumorigenesis in animal models of breast cancer, therefore, it is possible that dietary isoflavones are an important factor accounting for the lower incidence and mortality from breast cancer. Of the total soybean seed isoflavones, $80\~90\%$ were located in cotyledons, with the remainder in the hypocotyls. The hypocotyls had a higher concentrations of isoflavones on a weight basis compared with cotyledons. Isoflavone contents were influenced by genetics, crop years, and growth locations. The effect of crop year had a greater impact on the isoflavone contents than that of location. The climate condition might be the attribution factor to variation in isoflavone contents. Also, while the isoflavone content of cotyledons exhibited large variations in response to high temperature during seed development, hypocotyls showed high concentration in isoflavone content. So, it is concluded that one of the factors affecting isoflavone content in soybean seeds is temperature during seed development. High temperature, especially in maturity stage, causes lower isoflavone content in soybean seed. It is also suggested that there may exist a different mechanism to maintain isoflavone contents between cotyledon and seed hypocotyls. In a conclusion, soy foods may be able to have a significant beneficial impact on public health.

Background: Maize fodder is being used as staple feed for livestock but it lacks protein and essential amino acids; lysine and tryptophan. Intercropping maize with leguminous soybean crop is promising technique under limited land resources of South Korea but it can only give considerable advantages when adequate distance is provided between corn and soybean rows. Main aim of present study was to find-out adequate distance between corn and soybean seeding rows for optimum growth, yield and nutritive value of intercropped forage. Methods: Different interrow distances between corn and soybean were evaluated under four treatments, viz. 1) Corn sole as positive control treatment 2) Zero cm between corn and soybean (control); 2) Five cm between corn and soybean; 3) 10 cm between corn and soybean, with three replicates under randomized block design. Results: Findings depicted that height and number of corn stalks and ears were similar (P > 0.05) among different treatments. Numerically average corn ear height was decreased at zero cm distance. Dry matter percentage in all components; corn stalk, corn ear and soybean was also found not different (P > 0.05) but dry matter yield in component of corn ear was lower (P < 0.05) at zero cm distance as compared to that of 5 and 10 cm interrow distances. In case of nutritive value, total digestible nutrient yield in intercropped corn was also found lower (P < 0.05) at zero cm distance than that of 5 and 10 cm interrow distances between corn and soybean seeding rows. Substantial decrease in dry matter yield of maize ear at zero cm distance might be attributed to factor of closed interrow spacing which made interplant competition more intensified for light interception, necessary for photosynthetic activity. Lower dry matter yield in ear also reduced total digestible nutrients in intercropped maize because it was determining factor in calculation of digestible nutrients. The optimum yield and nutritive value of forage at wider interrow distance i.e. 5 cm between corn and soybean might be due to adequate interseed distance. Conclusion: Conclusively, pattern of corn and soybean seeding in rows at 5 cm distance was found suitable which provided adequate interrow distance to maintain enough mutual cooperation and decreased competition between both species for optimum production performance and nutritive value of intercropped forage.
