마늘 부산물을 사료에 첨가 급여한 계육의 총페놀함량, 전자공여능 및 이화학적 특성 (Effects of Dietary Supplementation of Garlic by-products on Total Phenol Contents, DPPH Radical Scavenging Activity, and Physicochemical Properties of Chicken Meat)

  • 본 시험은 육계에 마늘 부산물을 급여하여 5주간 사육한 계육의 TBARS, WHC, 전단력, pH, 총페놀함량, 전자공여능, 육색, 관능검사 및 지방산조성을 조사하였다. 실험구는 마늘 부산물을 첨가 급여하지 않은 처리구를 대조구, 마늘 부산물 1% 급여구는 T1, 마늘 부산물 2% 급여구는 T2 그리고 마늘 부산물 5% 급여구는 T3 등 4개 처리구로 나누어 사양하였다. 계육의 TBARS, pH는 마늘 부산물 급여구에서 대조구보다 유의적으로 낮았고, 급여량이 증가할수록 더욱 낮아지는 결과를 보임으로 마늘 부산물의 급여는 계육의 저장성 개선에 도움이 되리라 생각된다. 보수성은 대조구보다 T2와 T3에서 높았다(p<0.05). 총 페놀함량과 전자공여능은 대조구보다 마늘 급여구에서 높아졌으며 마늘 부산물 급여량이 증가함에 따라 특히 T3에서 함량이 다소 증가하였다. 육색 중 적색도를 나타내는 CIE $a^*$값은 대조구보다 마늘 급여구에서 높았고, 마늘급여량에 의한 처리구간의 유의적인 변화 없이 마늘 부산물 1% 급여구부터 적색도를 높이는 결과이었고(p<0.05), CIE $L^*$값과 CIE $b^*$값은 처리구간에 유의성이 없었다. 지방산 조성 중 linoleic acid와 linolenic acid는 마늘 부산물 급여구에서 증가하였으나 palmitic acid는 감소하였다(p<0.05). 결론적으로 마늘 부산물의 급여는 pH와 TBARS가 낮아지고, 총페놀함량이 높아지고 전자공여능이 향상됨으로 계육의 저장성 개선에 도움이 되리라 생각된다.

  • 토양에서 phenol 분해균주를 65주 분리, 동정하였다. 균주의 형태, 생화학 및 형질특성 46항목을 parameter로 하여 simple matching(Ssm)지수 산출방법으로 유사도지수를 구하고, 비가중평균결합법(unweight pair group method with arithmethic average)으로 dendeogram을 작성하였다. 분리균주는 70% 유사도에서 3개의 major cluster와 3개의 minor cluster로 분류되었으며, 우점종으로는 Azotobacter Peudomonas 및 Flavobacterium 속으로 나타났다.

감자에서의 페놀화합물에 대한 연구 (A Study on The Phenolic Content of Potatoes)

  • Lasoda와 Sebago 두 종류의 감자를 사용하여, 조리 조건을 달리 하여 conventional oven에 $218^{\circ}C$에서와 microwave oven에서 구어내어 껍질을 베끼고 cortex 부분만 취하여 전체 phenol을 분석하였다. 또한 chlorogenic acid와 caffeic acid를 표준으로 하여 thin-layer chromatography로 감자의 phenol화합물을 분석 하였다. Phenol양은 구운 감자보다 생 감자에 더 많았고, Sebago 보다 Lasoda에 많았다. 수분손실은 conventional oven에서 구운 감자에 컸고, microwave oven에서 구운 Lasoda에는 phenol양이 많았다. 또한 phenol양이 많은 Lasoda가 chlorogenic acid도 많았다.

퀴놀린-페놀 혼합용액의 습식산화 (Wet Co-Oxidation of Quinoline and Phenol)

  • 퀴놀린 습식산화는 $225^{\circ}C$$250^{\circ}C$에서 수행되었다. $250^{\circ}C$에서의 습식산화에서 퀴놀린은 30 min 내에 완전히 분해되었으며 총 유기탄소(TOC)는 120 min 내에 63% 감소하였다. 반면에 $225^{\circ}C$에서의 습식산화에서는 TOC는 240 min 동안 13% 감소하였다. 퀴놀린 산화 중 니코틴산과 초산이 주 중간생성물로 생성되었다. 균일촉매 $CuSO_4$ 또는 쉽게 산화되는 페놀을 첨가하여 온화한 반응조건인 $200^{\circ}C$에서의 퀴놀린 습식산화도 수행하였다. $CuSO_4$를 0.20 g/L 사용한 촉매 습식산화는 $250^{\circ}C$ 습식산화에서와 비슷한 퀴놀린 및 TOC 제거속도를 보였다. $200^{\circ}C$에서의 퀴놀린과 페놀 혼합물 습식산화에서는 퀴놀린과 페놀의 분해 개시에 필요한 자유라디칼이 생성되는 유도기간이 나타났다. 주어진 퀴놀린 초기농도에서 페놀 초기농도를 증가시킴에 따라, 퀴놀린과 페놀 분해를 위한 유도기간은 짧아졌고 습식산화 180 min 동안의 TOC 감소율은 60%에서 75%까지 증가하였다. 유도기간의 감소율은 퀴놀린에 대한 페놀 초기농도비를 증가시킴에 따라 감소하였다. 반면에 퀴놀린과 페놀 혼합물 습식산화에서의 페놀분해는 페놀 습식산화에서 보다 긴 유도기간을 필요로 하였고 서서히 진행되었다.

자생 산사(Crataegus pinnatifida BUNGE)씨의 추출 용매에 따른 항산화 활성 (Antioxidative Activity of Feral Haw (Crataegus pinnatifida BUNGE) Seed Extracts Using Various Solvents)

  • The purpose of this study was to examine the antioxidative activity of feral haw (Crataegus pinnatifida BUNGE) seed extracts using 70% methanol, 70% ethanol, chloroform:methanol (CM, 2:1, v/v), n-butanol and ethyl acetate (EA). The total phenol content of the five extracts ranged from 37.29 mg/g to 55.53 mg/g. Moreover, the content was high in the 70% methanol and, 70% ethanol extracts, but low in the n-butanol extract. On the contrary, the total flavonoid content decreased in the order of n-butanol (2.93 mg/g), EA (2.67 mg/g), 70% methanol (1.00 mg/g), 70% ethanol (0.88 mg/g) and CM (0.67 mg/g) extracts. The $NO_2$ radical scavenging activity, antioxidant activity by ${\beta}$-carotene bleaching assay and, superoxide dismutase (SOD) like ability decreased in the order of 70% methanol, 70% ethanol, CM, EA and, n-butanol extracts; further, a similar tendency was also observed in the total phenol contents. Overall, these results indicated that the antioxidative activity of feral haw seeds was closely related to the total phenol and flavonoid contents. Therefore, haw seeds might be usefully applied to natural antioxidants as well as functional foods.

조미 콩 스낵 개발 및 생리활성물질 분석 (Development of Soybean Snacks and Analysis of Bioactive Compounds)

  • The purpose of this study was to analyze the bioactive compounds of soybean snacks and to carry out a sensory evaluation of those variations which had various seasoning mixing ratio. Five soybean snacks were developed for these experiments. Proximate composition, the contents of total phenol compounds and isoflavone, and sensory characteristics of the soybean snacks were measured. There were significant differences in amounts of isoflavones and total phenolic compounds of soybean snacks($p$ <0.05). The seasoned soybean snacks had a higher level of daidzein and genistein contents than did control group. The total phenol compound contents of the control group was 210.3 mg gallic acid equivalents/100 g, whereas those for individual soybean snacks(A~E) were 152.3, 160.2, 162.4, 158.4 and 164.6 mg gallic acid equivalents/100 g, respectively. In sensory evaluation, there were significant differences($p$ <0.05) in taste, texture, and overall acceptability of the soybean snacks.

수박(Citrullus vulgaris L.) 외피의 항산화 활성 탐색 (Screening of Antioxidant Activity from Exocarp of Watermelon (Citrullus vulgaris L.))

  • Watermelon (Citrullus vulgaris L.) is a summer fruit typical to help fatigue systemic absorption is getting better. The goal of this study is to screen antioxidant activity to ensure the possibility as a functional material for exocarp of watermelon. Watermelon was extracted with 70% methanol, 70% ethanol, chloroform:methanol (CM, 2:1, v/v). Total phenol contents were 12.01 mg/g, 8.89 mg/g, 3.53 mg/g in the 70% methanol, 70% ethanol, CM, in that order, respectively. Total flavonoid content, DPPH radical scavenging activity, ABTS radical scavenging activity, ferric reducing antioxidant power (FRAP), ${\beta}$-carotene bleaching assay were 70% methanol extract remarkably higher than the other extracts. And these results showed the same trend of total phenol content. From the above results shows that watermelon was effective on the antioxidative activity.

유자 분말을 첨가한 초콜릿의 제조 및 항산화 특성 (Preparation of Chocolate Added with Yuza (Citrus junos Seib ex TANAKA) and Its Antioxidant Characteristics)

  • The objective of this study was to evaluate the antioxidant activity of yuza chocolate,and to determine the optimum ratio of yuza powder for its preparation. Yuza peel and flesh powders were added to chocolate at weight percentages of 0, 3, and 6%, respectively. Color values (L-value, redness, and yellowness), total phenol content, total antioxidant capacity, DPPH radical scavenging activity, and sensory characteristics were then measured in the samples of yuza-containing chocolate. As the amount of yuza powder increased, total phenol content, antioxidant capacity, and radical scavenging activity increased. Depending on the level of yuza powder, significant differences (p <0.05) were shown in aroma, taste, bitterness, and overall acceptability however, there were no significant differences in texture. In terms of sensory acceptability, the addition of 3% yuza peel powder to chocolate was optimal.

Determination of Total Phenol Content and Selected Phenolic Metabolites Analysis of Rice (Oryza sativa L.) Genetic Resources

  • The study of total phenol (TP) content from 700 rice varieties was evaluated using the UV-Vis spectrophotometric method. The calibration curve of serial diluted gallic acid as a standard of this study showed the acceptable performances (R2 = 0.999, mean accuracy 90%) and the mean of % relative standard deviation (%RSD: 0.07%) within the range of 7.8 to 1000 ppm concentrations. The mean value of total phenol content from 700 rice varieties was 2723.15 ㎍/g ranged from 55.48 ㎍/g to 9922.23 ㎍/g and the mean %RSD was 2.5%. Furthermore, this study aim was to analyze and profile individual phenolic compounds in the rice genetic resources to construct an integrative database for development of new rice variety with high functionality for health and understanding of phenolics characteristics in the rice grain. Herein, we analyzed selected 100 rice varieties based on high TP content and identified total 15 phenolic compounds by LC-ESI-MS/MS. Among selected 100 rice genetic resources, the phenolic metabolites consisted of higher amount of flavonoid (catechin) and phenolic acid mainly protocatechuic acid. Further research of more selected rice genetic resources would be continued to provide for an integrative phenolics profile of different rice genetic resources.

Adsorption of Phenol on Mesoporous Carbon CMK-3: Effect of Textural Properties

  • Mesoporous carbon CMK-3s with different textural properties have been used for the adsorption of phenol to understand the necessary physicochemical properties of carbon for the efficient removal of phenol from contaminated water. The kinetic constants (both pseudo-second order and pseudo-first-order kinetics) increase with increasing pore size of carbons. The maximum adsorption capacities correlate well with micropore volume compared with surface area or total pore volume even though large pore (meso or macropore) may contribute partly to the adsorption. The pore occupancies also explain the importance of micropore for the phenol adsorption. For efficient removal of phenol, carbon adsorbents should have large micropore volume and wide pore size for high uptake and rapid adsorption, respectively.
