The study was conducted to investigated the effect of dietary levels of zinc (Zn) on lipid metabolism in cadmium (Cd) treated rats. Sixty male Sprague-Dawley rats weighing about 110$\pm$10g were divided into 6 groups. The Zn levels were low (0ppm), control (30 ppm) and Cd-treated groups were administrated with Cd chloride (5.0mg/kg of body weight) by oral intubation at the same time once a week. Serum total lipid, triglyceride , total cholesterol and DHL-cholesterol contents decreased significantly in low Zn group. In serum dietary high Zn group, it decreased significantly in the content of triglyceride but total cholesterol and HDL- cholesterol revealed increase slightly . Total lipid and triglyceride contents increased by Cd oral intubation, but triblyceride content of control group decreased significantly in Cd-treated groups. HDL-cholesterol content also decreased by Cd oral intubationl. Cd-treatment increased total cholesterol content in low Zn group. Liver triglyceride content increased as dietary Zn level became more increasing and total lipid was not influenced by dietary Zn levels. Liver cholesterol content was higher in low and high Zn groups than that of control group. Liver phospholipid content decreased in low Zn group . Oral intubation of Cd increased in the contents of triglyceride and total lipid. The content of liver Zn was not influenced by the dietary low Zn but that of serum showed a remarkable increased . Oral Cd intubation increased the Cd contents of liver and serum.
The effects of alcohol. extract of acacia on total cholesterol, ${\beta}-lipoprotein$ content and S-GOT activity in serum of rabbit were examined. Rabbits were divided into four groups. A : Control group B : Cholesterol group C : Cholesterol+aca. alc. ex. (A) group D : Cholesterol+aca. alc. ex. (B) group Each group had four rabbits. A Group was fed with the stock diet only for the experimental period of 28 days. B Group was fed with the stock diet containing 500mg of cholesterol. C Group was fed with the stock diet containing 500mg of cholesterol and 300mg of acacia alcohol extract. D Group was fed with the stock diet containing 500mg of cholesterol and 500mg of acacia aocohol extract. Total cholesterol ${\beta}-lipoprotein$ content and S-GOT activity in serum was determined with spectrophotometer, spectronic 20. It was confirmed that the extract of acacia alcohol inhibits the increase of total cholesterol, ${\beta}-lipoprotein$ content and S-GOT activity in serum but the statistical probability was not significant.
This study was to investigate the effect of zinc supplementation on serum cholesterol concentration of young women. Thirty healthy students were divided into Zn and placebo groups, and were orally given with zinc(50mg/day, 220mg as ZnSO4·7H2O) or placebo for 2 month (June 9-August 7, 1988). Changes of plasma zinc, serum total cholesterol, HDL-cholesterol (HDL-C), LDL-cholesterol(LDL-C) and total lipid were analyzed from the initiation to 1 month after the end of zinc supplementation at monthly interval. Plasma zinc, serum LDL-C content and LDL-C/HDL-C were significantly increased by zinc supplementation. Serum total cholesterol content tended to be increased by zinc supplementation but was not significantly different between the two groups. Serum HDL-C content was significantly decreased by zinc supplementation. Serum total lipid content was not different between the two groups during experimental period. Thus, in this study considering the effect of zinc supplementation on serum cholesterol concentration, we conclude that the effect of zinc supplementation on coronary heart disease may be negative.
The effects of root of the Bupleurum falcatum L. on the serum transaminase (SGP-T, SGO-T) activities and the content of total cholesterol in serum from normal and alloxan-diabetic rabbits were observed. The preparations were extracted by methanol, and extracted samples were orally administrated to the normal and alloxandiabetic rabbits. The transaminase activities and the content of total cholesterol in serum of normal rabbits were significantly increased by administration of the alloxan. The increased serum transaminase activities of the alloxandiabetic rabbits were significantly decreased after 96 hours by administration of the extracted samples. The increased content of total cholesterol in serum of the alloxan-diabetic rabbits were gradually decreased by administration of the extracted samples and were recovered to the control levels after 12 days. According to the above results, it would be concluded that the extract of Bupleuri Radix influences for the recovery of the increased contents of total cholesterol and serum transaminase activities by alloxan.

A simple, reproducible , and accurate enzymatic method using a cholesterol assay kit was developed to quantify total cholesterol content in egg yolk. Total egg yolk lipid was extracted with hexane : isopropanol(3 : 2, v/v) mixture. Samples containing various amount of the total lipid(0-3mg) in optically identifical culture tubes were reacted for 10 min in a water bath (37$^{\circ}C$) with the enzyme solution (5ml) from the cholesterol assay kit. Cholesterol content of the reaction mixturesin culture tubes was spectrophotometrically determined by two different ways : (1) using the culture tube as a curvette(designate culture tube method ; CTM) and (2) the quartz cvette containing the reaction mixture transferred from the culture tube (designate standard cvette method, SCM). CTM revealed lower cholesterol content in 0.1-1.0mg lipid sample range that SCM did, but not significant. For more than 2.0mg lipid sample, CTM gave significantly (p<0.01) lower cholesterol content relative to that by SCM, suggesting that SCM give a false positive result from the sample containing more than 2 mg lipid due to the interference of absorbance by lipid dispersed in the reaction solution . Cholesterol content of less than 1.0mg lipid sample by CTM was proportional to the amount of lipid used, but its linear relationship was not seen in more than 2mg lipid sample. Thus, to determine the appropriate lipid amounts (mg) analyzed . A constant level (41$\mu\textrm{g}$/mg) of cholesterol concentration was observed from the sample containing 0.1-1mg lipid. after which the cholesterol level was dropped to less than 41$\mu\textrm{g}$ /mg. Cholesterol concentration in egg yolk samples quantified by CTM was in accordance with that by GC method. These results suggest that CTM is an useful method for the quantification of cholesterol in egg yolk lipid and other lipids as well.
Changes in total lipid content, total cholesterol content and fatty acid composition of preterm milk were investigated during early lactation. Milk samples were collected from Korean mothers of 16 premature(34 to 36 weeks gestation age) infants on day 2 to 5(colostrum) and at 6 weeks(mature) postpartum. We estimated the lipid nutrition of preterm milk by comparing with the lipids of term milk. The total lipid content of preterm colostrum was significantly lower than the lipid content of preterm mature milk(p<0.001). Lipid content, determined gravimetrically in colostrum and matured milk, was 1.50g/이 and 3.2g/dl, respectively. Also the total cholesterol content(mg/dl) in preterm milk tends to increase from 14.16mg/dl to 15.20mg/dl, while the total cholesterol(mg/g lipid) concentration higher significantly in colostrum(12.36mg/g) than in mature(5.73mg/g)(p<0.001). The total unsaturated fatty acid contents in preterm milk were higher in colostrum than in mature milk and the total saturated fatty acids were higher in mature milk. The average DHA contents of colostrum and matured milk was 0.64%, 0.53% and the P/M/S ratio of preterm milk were 0.63 : 1.05 : 1.00, 0.47 : 0.79 : 1.00, respectively. Also, $\omega$6/$\omega$3 ratio of preterm milk were 2.35 in colostrum and 5.81 in mature. Therefore, colostrum in preterm milk contained higher amounts of $\omega$3 PUFA than mature milk. The levels of total lipid in preterm milk were higher than term milk. Also, preterm milk is richer in cholesterol, and long chain polyunsaturated fatty acid than term. It appears that the milk secreted by mothers who delivered prematurely differs from milk in several important respect. These components may serve as precursors for membrane, myelin development in the preterm infants. Therefore, it would be necessary to study further into the machanism of how the gestation age might affect to the lipid composition in human milk. These data may provide a basis for better construction of infant formaulas to provide more adequately for the lipid requirements of the Korean premature infant.

The content of total lipid, cholesterol and fatty acid in Korean styled various beef broths was examined before and during toiling to determine the influence of cooking time. The values obtained from the broths of brisket, ox-tail and small-intestine were determined by using G. C. The highest total lipid value among small-intestine, brisket and ok-tail was in the small-intestine. The content of total lipid in the boiled meat decreased during cooking with the exception of the brisket. Total lipid content found in the broth of brisket meat increased until 6hr and thell decreased at cooking time of 8hr and 10 hr. The highest total lipid contents in the broths of brisket, ox-tail and small-intestine were found when the cooking time were 6 hr, 10 hr and 4 hr, respectively. The main fatty acids found in the broths of brisket, ok-tail and small-intestine were $C_{14}$, $C_{16}$, $C_{18}$, $C_{18:1}$, and $C_{18:1}$. The content of $C_{18:1}$ and $C_{18:2}$ from the brisket meat increased until 4hr's cooking, especially $C_{18:2}$ increased significantly until 6 hr cooking. The highest ratios of unsaturated to saturated fatty acid (UNS/S) in the meat of brisket and ox-tail were found in the 2hr and 4hr cooking, respectively. The ratios of UNS/S in the broths of both of brisket and small-intestine, and ok-tail were highest in the 4 hr and 2 hr cooking, respectively. The content of total cholesterol (TC) was the highest in the small-intestine and the highest percentage of ester cholesterol was 5.4 in the brisket. The content of TC in small-intestine, brisket and ox-tail was decreased significantly after 2 hr cooking. Precentage of the ester in the brisket was the highest when the cooking time was 8 hr. Only trace amount of total cholesterol was found in the broth.
Effects of Acanthopanax EtOH Extract (AEE) on the serum total cholesterol content of normal and cholesterol administered rabbits were investigated as a series of studies on pharmacological action, especially blood pressure to Korean Acanthopanax. AEE was administered orally(100mg/kg/day) and subcutaneously (30mg/kg/day) in both normal and cholesterol administered rabbits for 36 days. In this experiment the results obtained by comparing with values of the corresponding control group were as follows; 1) In the normal rabbits, long-term administration of AEE for 36 days did not entirely influence the serum total cholesterol content measured at 12th, 24th and 36th day and also not affect the original blood pressure and changes of blood pressure to norepinephrine, angiotensin and acetylcholine recorded at 36th day. 2) In the cholesterol administered rabbits, hypercholesteremia was induced by oral administration of cholesterol(300mg/kg/day) with feed. The rise rate of serum total cholesterol content was not modified at 12th day, whereas significantly inhibited at 24th and 36th days after begining this examination in both groups orally and subcutaneously administered AEE. Original blood pressure was declined and depressor action of acetylcholine was weakened in only group admininstered orally AEE of cholesterol-fed groups. Changes of blood pressure to norepinephrine and angiotensin in these all cholesterol-fed groups, and to acetylcholine in subcutaneous group of these cholesterol-fed groups were not affected significantly by AEE.
The effect of cooking(boiling, steaming and baking0and drying on the cholesterol content and formation of oxidized cholesterols in quid(Japanese flying squid, Todarodes pacificus) was studied. Cholesterol content of live squid meat varied with the portion sampled, and results from spectrophotometric assay ranged from 263.2mg/1..g(mantle) to 315.8mg/100g(tentacle). The cholesterol levels analyzed by gas chromatography(GC) for squid samples were lower by 7% of total cholesterol for live squid meat and 24% for processed meat than those results by spectrophotometric assay. Cooking resulted in the decrease of the initial total cholesterol content of raw meat from 10%(boiling for 5min.) to 25%(steaming for 5min.) The amounts of cholesterol remaining after baking were 68% for microwave oven samples and 64% for convection oven samples. Drying of raw tissue caused the greater reduction in cholesterol content than cooking but showed no significant difference in samples stored for 6 weeks at 4$^{\circ}C$ and 2$0^{\circ}C$. Raw squid meats contained essentially no oxidized cholesterols, while the 22-hydroxychoesterol was detected in frozen meats. The additional oxidized cholesterols as cholestane-triol was indentified with 22-hydroxycholesterols in cooked samples. Sun dried meat stored at 4一 and 2$0^{\circ}C$ for 6 weeks had the three kinds of oxidized cholesterols such as 22-hydroxycholesterol, cholesta-3,5-dien-7-one and cholestane-triol.
Total and esterified cholesterol content was determined in the rat administered animal and vegetable proteins for 16 weeks. The cholesterol biosynthetic activity of the liver was also measured in these rats by the $acetate-C^{14}$ incorporation rate. The results obtained were as follows. (1) Serum total cholesterol content was increased by the administration of animal proteins and decreased by that of vegetable proteins. (2) Liver cholesterol content was increased by animal proteins and decreased by at of vegetable proteins. (3) Cholesterol biosynthetic activity of the liver was increased by the animal proteins and decreased by the vegetable proteins.
