Association between nutritional status and cognitive functions of the Korean elderly

  • Nutrition is one of the factors influencing cognitive functions. But, the role of nutrition on cognitive functions within the elderly is recognized to a lesser degree. The aim of this academic endeavor was to analyze the affiliation between nutritional status and cognitive functions of the elderly in Korea. 316 subjects, of 114 male and 201 female aged above 65 years, were gathered from university hospital clinics, Elderly Welfare Centers, and Health Welfare Centers located in the district of Seoul, Gyeonggi province, and Incheon in Korea. The cognitive function was tested by the Korean-Mini Mental State Examination (K-MMSE) questionnaire. Nutrition intake was assessed by a 24-hour recall, a food frequency questionnaire (FFQ). Nutrition adequacy and quality were assessed by the Nutrition Screening Initiative (NSI) checklist, the nutritional adequacy ratio (NAR), and the mean adequacy ratio (MAR). The elderly with normal cognitive function status displayed significantly higher levels of calcium, riboflavin, thiamin, folate, vitamin C, vitamin E, vitamin B6, phosphorous, potassium, iron, niacin, zinc, animal fat, animal protein, polyunsaturated fatty acids, total protein, vegetable oil, vegetable protein, fiber than levels of the elderly with moderate cognitive impairment. The K-MMSE score positively correlated with of high consumption of pork, white radish, sea mustard, tomato, tangerine, grape, apple, and ice cream, and K-MMSE was negatively associated with high intake of potato, anchovy, fish cake, and mushroom. The findings suggest that nutritional status is affiliated with cognitive function within the elderly of Korea. The consumption of variety of foods and nutrients ensures adequate cognitive function in the Korean elderly.

Nutritional Situation in Korea (한국인영양(韓國人營養)의 현황(現況))

  • According to the dietary surveys and national food balance sheets, the dietary state of person living in Korea is ingesting a high level of grain and vegetable diet and very low animal sources. The daily calory intake is about 2,300-2,600 Cal. per head in which a total protein intake is 69-86 gm respectively. These data indicate no shortage of calory and total protein intake. However, the intake of animal protein is only 4-11 gm and the fat is 8-18 gm, both of which are far below the requirment. The low fat intake brings about a low level of fat soluble vitamins, and that V-A intake is as short as the half amount of the allowance. Riboflavine is also about a half of dietary requirment. Both thiamin and ascorbic acid intake are sufficient. The calcium intake is 0.26-0.5 gm per day which is inadequate. In fact, biochemical findings through field survey show; serum protein 6.7 gm, hemoglobin 13.1 gm and hematocrite 41.5% all of which are lower than the Kwon's report. The serum V-A and uunrinary riboflavin value are also lower than the Williams'es report. Clinically, inflamation of the eyes, cheilosis, pathological signs of tangue, xerosis of the hand and arm, or the like are frequently seen. On the other hand, there is no suitable diet available for the weaning infant and delayed weaning is a common practice. A school lunch program is still in an early stage of development. Another example can be cited that the Korean infant grows faster than the Japanese until one year of age, and no difference is noted between the Korean and the American infants up to six monthes of age, thereafter the former lags in the growth rate. This might be mainly due to the nutritional reasons as mentioned above, and in part due to the high inidence of intestinal parasitism and others.

A Food and Nutrient Intake Study of the Lactating Women in Rural Korea (농촌 수유부(授乳婦)의 식품(食品) 및 영양섭취(營養攝取)조사)

  • Almost all Korean women in rural area breast feed their children for average 18 to 24 months. Since they breastfeed their children for long period the need for the lactating mot­hers to be nutritionally refurnished becomes evidently great. However the studies on the nutrient intake level of these mothers has been very scarce. We have studied the food and nutrient intake level of 93 lactating women randomly selected from rural areas of South Korea. Thirty one well trained and experienced surveyors conducted the dietary survey by the. combination method of precise weighing and interview for two 'consecutive days. Briefly stating the findings 1) The dietary pattern of the lactating women in rural Korea was not different from the ordinary Korean diet-i.e no conscientious effort to improve the quality of the diet was apparent. 2) Consequently over 90% of the total food intake was made up with the typical rice­kimchi diet. 3) The quantity of the total food intake was greater than the national average sufficient intake of calorie was observed. 4) No milk or the milk products were consumed by the lactating women in rural Korea. 5) Average intake of protein was 88 grams. Only 5% of these was provided by the animal foods. 6) Mean daily intakes of niacin, thiamin and ascorbic acid exceeded the recommended allowances. But vitamin A intake was 1171 IU-about 33% of the RDA-and the riboflavin intake was 0.92 mg. which is about 54% of the recommended level for the lactators. 7) Average calcium intake was 490 mg.-41% of the RDA. Construction of spDbp5 Null Mutants Defective in mRNA Export (분열효모에서 spDbp5 유전자의 결실돌연변이 제조와 기능에 대한 연구)

  • We constructed the null mutants of fission yeast Schizosaccharomyces pombe spDbp5 gene that is homologous to DEAD-box RNA helicase DBP5 in budding yeast Saccharomyces cerevisiae, which plays important roles in mRNA export out of nucleus. A null mutant in an $h^+/h^+$ diploid strain was constructed by replacing the spDbp5-coding region with an $ura4^+$ gene using one-step gene disruption method. Tetrad analysis showed that the spDbp5 is essential for vegetative growth. The haploid spDbp5 null mutants harboring pREP81X-spDbp5 plasmid showed extensive $poly(A)^+$ RNA accumulation in the nucleus and decrease in the cytoplasm after repression of spDbp5 expression. These results suggest that spDbp5 is also involved in mRNA export from the nucleus.

  • A methanol-assimilating yeast for the production of Single Cell Protein was isolated from the soil and identified. Methanol as a sole carbon source was used in this study. The strain was identified as Candida boidinii which grew best at the initial concentration of methanol at 2% , with the addition of 0.5% methanol at every 12 hours, The Single Cell Protein production was maximal after 72 hours of incubation at pH 5.0, $30^{\circ}C$. Thiamin and biotin were stimulated the growth of this yeast at the levels of $1000{\mu}g/{\ell}$ and $10{\mu}g/{\ell}$respectively.

The Characteristics of Infants' Temperament, Maternal Feeding Behavior and Feeding Practices in Picky Eaters (까다롭게 먹는 아기의 기질, 어머니의 식행동과 식사 지도 방법의 특성)

  • The purpose of this study was to determine the characteristics of infants' temperaments, maternal feeding behaviors and feeding practices in picky eaters. Participants were 83 infants (aged 12 - 24 months) from 'A' hospital (Seoul) and 'B' public health center (Kyunggido). Mothers completed questionnaires that assessed their own feeding behavior, feeding practices, infants' temperament and infants' feeding behavior. Picky eaters' demographics were not significantly different from non-picky eaters after adjusting sex and age. The average of thiamin, niacin and vitamin E intakes of picky eaters were below $75\%$ Korean RDA, whereas vitamin A intakes exceed $120\%$ RDA in both groups. Activity level of infants' temperament and disinhibition of maternal feeding behavior in picky eaters were significantly higher than those in non-picky eater. All constructs of infants feeding behavior were significantly associated with certain constructs of infants' temperament, maternal feeding practice and maternal feeding behavior. The pickiness of infants feeding behavior was positively correlated with activity level of infants' temperament, pickiness and disinhibition of maternal feeding behavior and negatively correlated with adaptability of infants' temperament. Findings suggest that maternal feeding behavior and feeding practices as well as infants' temperament should be addressed in nutrition education for picky eaters.

Setting Instructional Goals for Nutritional Education Program Through an Analysis of Problems Identified in Junior/senior High School Students (중 고등학생 대상 영양교육 목표 설정을 위한 영양 관련 문제점 분석)

  • For the purpose of developing 'Web-Based Nutritional Education Program', this study analyzed nutritional problems of junior/senior high school students and set appropriate instructional goals for nutritional education program. Survey questionnaires were distributed from October 21,2002 to October 26, 2002 to a total of 564 students at three junior high schools and five senior high schools located in Seoul. The total number of questionnaires collected and used in our study was 479, which is 84.9% of the total questionnaires distributed. According to the survey results, three student groups (male and female students at junior high schools and female students at senior high schools) had lower than an ideal body weight. In case of their Basal Metabolic Indices (BMI), the female students and junior high school students showed a tendency to be underweight, while the other three student groups were within the normal range. The result of the survey showed that all four groups of students showed a deficiency in nutrient intake of calories, calcium and thiamin when compared with Korean RDA. Particularly, in the case of the female students at senior high schools, the deficiency of iron intake was a problem. The survey about food attitudes and food habits of the students showed that the senior high school students had more problems when compared with their junior high school counterparts (p < .001). Therefore, the instructional goals of nutritional education program were set as follows: 1) To improve the level of understanding and the perception of junior and senior high school students about the importance of a dietary lifestyle. 2) To change food attitudes and nutritional knowledge related to individual dietary 1ifestyle, so as to maintain good health through the enhancement of the students' physical activities. We found out that it is critically important to factor in the existing problems of food attitudes and food habits, as well as nutrient intake among junior and senor high school students when setting objectives for nutritional education programs. Comparison of Diet Quality and Diversity according to Obesity Type among 19-64 year old Korean Adults (한국성인의 비만유형에 따른 식사의 질과 다양성 비교)

  • Objectives: This study was performed to compare the diet quality and diversity according to types of obesity categorized by body mass index and waist circumference among Korean adults aged 19-64 years. Methods: This study used the data of the 5th Korea National Health and Nutrition Examination Survey (KNHANES-V) and included 11,081 study participants. Type of obesity was categorized into 4 groups (Type 1: BMI obesity + abdominal obesity; Type 2: BMI obesity only; Type 3: abdominal obesity only; Type 4: Normal). To compare the diet quality and diversity according to obesity type, ANCOVA (Analysis of covariance) was used with stratification of age groups (19-44 years, 45-64 years). Results: With regard to comparative analysis of diet quality, there were significant differences between diet qualities in energy, protein, thiamin, riboflavin, niacin, phosphorous and iron and type of obesity in the 19-44 age group, while there were significant differences between diet qualities on protein, vitamin C, phosphorous and type of obesity in the 45-64 age group. There was no significant difference between diet diversity score and type of obesity in Korean adults. Conclusions: This study showed that in Korean adults, diet qualities of some nutrients were different among obesity types, while diet diversity was not. These observations should be considered in an effort to improve intake of over-and deficient nutrients and in further studies to evaluate the effects of nutrient quality on obesity.

A Comparison of the Dietary Habit and Nutrient Intakes of Korean Farmers according to Different Family Patterns and Farming Types

  • The purpose of this study was to compare the dietary habit and nutrient intakes of Korean farmers according to their different family patterns and farming types. Food and nutrient intakes were obtained by food frequency method. The subjects(male 35%, female 65% : mean age, $48{\pm}11 years)$ were compared 46% of nuclear family, 59% of 3-4 person of family size ; 50% of middle-scale farming ; 54% of rice farming. Sixteen percent were over 60 years old group. In aspects of dietary habit, farmers of medium size farming and 10-20 years of farming experience frequently skipped meals. But their appetite was better than small farm famers. Dinner irregularity was more frequent in their group of 3-4 person families. The numbers of food intake were significantly different according to family pattern. Nuclear family groups consumed more kinds of foods. The mean energy intake was 2000Kcal/day, with PFC ratio of 19 : 16 : 65. The energy and nutrient intakes showed the same tendency as the food variety. Intakes of calcium and iron were lower than the Korean RDA. Families with over 5 people consumed higher amounts of protein and minerals. Intakes of thiamin, niacin, and vitamin E were better in large families and large-scale farming groups. As compared with the PMS ratio, the level of monounsaturated fatty acids as higher than saturated FA. The lipid intake was also better in large families and large-scale farming. The results suggest that dietary habit and nutrient intakes were different by family pattern and farming types.

A Study on nutrition Knowledge, Nutritional Attitudes, Dietary Behavior and Dietary Intake by Weight Control Attempt among Middle School Female Students (대전 지역 여중생들의 체중조절 여부에 따른 영양지식, 식태도, 식행동 및 영양소 섭취 실태에 관한 연구)

  • The purpose of this study was to investigate weight control attempts and related factors among 209 middle school female students in Daejeon. Variables examined were body satisfaction, beliefs regarding weight control, body image, nutrition knowledge, nutritional attitudes, dietary behavior and dietary intake. A cross-sectional survey was employed, and data was analyzed using t-test and chi-square teat (at $\alpha$=0.05). The average height, weight, and body fat (%) of subjects were 160.2cm, 52.4kg, and 25.9%, respectively. Those who attempted weight control were 61.7% of the samples, suggesting that weight control was quite popular among adolescents. Students in the weight control attempt group were more satisfied with their body size (p<0.001), and showed more distorted body image than those in the no weight control attempt group (p<0.001). Most of beliefs regarding weight control were also different in the two groups. The attempt group believed more strongly in the advantages of weight control, and believed less strongly in the harmful effects or difficulties associated with weight control. Although there were no differences in nutrition knowledge in the two groups, nutritional attitudes were slightly more favorable in the attempt group (p<0.01). In contrast, eating behaviors, such as those related to caloric intake (p<0.001), body image (p<0.001), and specific situations (p<0.01) were more desirable in the no-attempt group than in the attempt group. In addition, dietary intake of the attempt group was less adequate than that of the no-attempt group for nutrients such as iron (p<0.01), vitamin A, thiamin, riboflavin, and vitamin C(p<0.05). This study suggests that adolescents who attempt control weight have a more distorted body image and inadequate diet and showed more undesirable eating behaviors. Students should be taught and practice desirable methods of weight control. Educational programs should also include strategies for changing beliefs regarding weight control, as well as modifying diets and eating behaviors.
