넙치(Paralichthys olivaceus), 참돔(Pagrus major) 및 조피볼락(Sebastes schlegeli)의 이화학적 성분 특성 (Physicochemical Properties of Olive Flounder Paralichthys olivaceus, Red Seabream Pagrus major and Jacopever Sebastes schlegeli)

  • 넙치, 참돔 및 조피볼락을 이용하여 새로운 가공식품을 개발하기 위한 기초적인 자료를 얻기 위해 이화학적 특성을 조사한 결과를 요약하면다음과 같다. 넙치, 참돔 및 조피볼락의 일반성분의 경우 수분함량은 각각 78.3, 73.2 및 79.2%, 조단백질함량은 14.8, 19.2 및 18.5%, 조지방함량은 1.5, 6.4 및 1.2%, 조회분은 0.6, 1.1 및 0.6%였다. pH는 각각 6.41, 6.32 및 6.53이었으며, 염도는 각각 0.6, 0.7 및 0.6이었다. 색차의 경우 넙치, 참돔 및 조피볼락의 명도(L값)는 각각 42.47, 41.70 및 43.09, 적색도(a값)는 각각 -3.07, 0.24 및 -1.87, 황색도(b값)는 각각 3.86, 6.25 및 3.59, 색차(${\Delta}E$값)는 각각 54.57, 55.40 및 53.83이었다. 넙치, 참돔 및 조피볼락의 총아미노산 함량은 각각 13,003.7, 17,126.0 및 16,398.3 mg/100 g이었고, glutamic acid가 각각 1,694.7(13.0%), 2,496.1(14.6%) 및 2,089.5(12.7%) mg/100 g으로 가장 많은 함량이었다. 시료의 총유리아미노산 함량은 각각 173.0, 195.5 및 162.9 mg/100 g이었으며, 넙치 및 조피볼락은 lysine이 각각 30.4(17.6%) 및 43.3(26.6%) mg/100 g, 참돔은 alanine이 40.2(20.6%) mg/100 g으로 가장 많은 함량이었다. 무기질의 경우 모든 시료에서 K이 각각 383.8, 404.3 및 335.8 mg/100g으로 가장 많았다. 넙치의 경우 포화지방산, 단일 불포화지방산 및 다가 불포화지방산이 각각 29.3, 19.1 및 51.1%, 참돔의 경우 각각 14.5, 15.7 및 69.8%, 조피볼락의 경우 각각 12.7, 15.0 및 72.3%를 차지하였다. 넙치, 참돔 및 조피볼락에서 n-3계 지방산인 ${\alpha}$-linolenic acid는 각각 0.7, 1.0 및 0.7%, EPA는 각각 6.8, 7.1 및 6.7%, DHA는 각각 15.2, 15.2 및 17.1%를 차지하였다. 관능검사 결과 넙치, 참돔 및 조피볼락의 색 및 냄새에서는 유의적인 차이가 없었으나, 맛 및 조직감에서는 유의적인 차이가 있었다.

무증자 발아현미를 이용한 단양주와 이양주의 이화학적 특성 (Physiochemical properties of danyangju and iyangju prepared using uncooked germinated brown rice)

  • 본 연구에서는 발아현미를 이용해 단양주와 이양주를 제조하고 이화학적 특성을 비교 분석하였다. 미생물 생균수인 단양주 세균수는 발효 1일차에 2.6×108 CFU/mL로 최대치를 나타낸 후 계속 감소하여 7일차에는 4.5×106 CFU/mL로 최소치를 나타내었다. 이양주의 세균수는 발효 1일차에 5.0×108 CFU/mL로 증가하였으며 이후 발효가 진행됨에 따라 감소하여 7일차에는 9.4×106 CFU/mL 가장 낮은 값을 나타내었다. 단양주 효모수는 발효 1일차에 2.5×108 CFU/mL로 증가하였으며 발효가 진행됨에 따라 7일차에 2.2×106 CFU/mL로 감소하였다. 이양주 효모수는 발효 1일차에 2.7×108 CFU/mL으로 최대치를 나타내었으며 발효가 진행됨에 따라 감소하여 7일차에는 1.1×104 CFU/mL로 가장 낮은 값을 나타내었다. 색도에서 단양주와 이양주 모두 발효 기간이 경과될수록 백색도(L)가 감소하였고, 이양주의 경우 적색도(a)와 황색도(b)의 값이 단양주에 비해 조금 더 빨리 증가하는 경향을 보였다. 당도는 단양주와 이양주 모두 발효 3일차까지 급속도로 증가 후 지속적으로 증가하는 경향을 보였다. 환원당은 단양주와 이양주 모두 발효 1일차에 감소하는 경향을 보였으며 이후 증가하였다. 단양주와 이양주 7일차에는 0일차보다 단양주는 5.17배 이양주는 13.08배 증가하였다. 고형분 함량은 발효가 진행됨에 따라 단양주는 6.44배 이양주는 5.50배로 모두 증가하는 것으로 나타났다. pH는 단양주의 경우 발효 3일차까지 감소하였으며 발효 후반부에는 완만하게 증가하여 유지되는 경향을 보였다. 이양주의 경우 발효 초기 감소하였다가 발효 후반부에서 완만하게 증가하였다. 산도는 단양주의 경우 발효 3일차까지 증가하였으며 이양주의 경우 발효 1일차까지 급격히 증가하다 유지되는 경향을 보였다. 알코올 함량의 경우 단양주와 이양주 모두 3일차까지 급격히 증가하는 추세를 보였으며 단양주보다 이양주가 알코올 함량이 높았다. DPPH는 단양주와 이양주에서 모두 5일차까지 증가하다가 7일차에는 더 이상의 증가는 없었다. 총 폴리페놀 함량은 발효 전과 비교하여 7일차에 단양주는 3.83배 이양주는 3.03배로 모두 증가하는 경향을 보였으며 이양주의 7일차가 단양주보다 높은 경향을 보였다. GABA 함량은 발효가 진행됨에 따라 증가하였으며 단양주의 경우 GABA의 증가하는 폭이 미비한 반면 이양주의 GABA 함량은 발효 전에 비해 약 10배 이상 큰 폭으로 증가하였다.

  • 넙치 육에 혼합야채류(양파, 샐러리, 당근, 마늘)를 넣고 잘 혼합한 후, 혼합부재료(빵가루, 계란, 타임분, 블랑소스, 생크림, 소금, 후추)를 첨가하여 잘 버무린 반죽을 성형하는 등의 공정을 거친 후 넙치 steak 제품을 제조하였다. 최종 제품 Steak-1(성형된 육을 올리브유를 두른 프라이팬에서 2분간 구운 후 폴리에틸렌 필름에 넣어 진공포장하여 7일간 동결 저장한 것을 전자레인지로 해동 및 데우는 공정을 거친 제품)과 Steak-2(성형된 육을 폴리에틸렌 필름에 넣어 진공포장하여 7일간 동결 저장한 것을 해동 후 올리브유를 두른 프라이팬에서 2분간 구운 제품)에 대하여 각각 이화학적 성질과 관능적 평가를 살펴보았다. Steak-1 및 Steak-2 두 제품 모두에서 생균수가 검출되지 않았으며, 일반성분의 경우 수분(69.0% 및 69.2%), 조단백질(21.9% 및 21.4%) 및 조회분(1.9% 및 1.8%)은 함량 차이가 거의 없었으나, 조지방(5.3% 및 7.8%)은 Steak-2 제품의 값이 높았다. TBA 값의 경우는 Steak-1(0.110)에 비해 Steak-2(0.069)의 값이 낮았으며, 아미노질소 함량은 Steak-1이 0.20 mg/100 g, Steak-2가 0.25 mg/100 g 으로 차이가 거의 없었다. Steak-1 및 Steak-2 두 제품의 색차의 경우 명도(L값)는 각각 45.55 및 46.11, 적색도(a값)는 각각 1.20 및 1.78, 황색도(b값)는 각각 8.52 및 9.59 그리고 색차(${\Delta}E$값)는 51.35 및 52.09로 차이는 거의 없었다. 조직감의 경우 Steak-1 보다 Steak-2의 조직감이 더 단단하였다. Steak-1 및 Steak-2의 유리아미노산은 arginine 함량이 가장 많았고, 다음이 glutamic acid, alanine 및 lysine 순이었다. 총유리아미노산 함량은 Steak-1이 346.4 mg/100 g, Steak-2가 240.5 mg/100 g이었다. 관능검사 결과 Steak-2가 Steak-1 보다 관능평가 점수가 높게 나왔으나 큰 기호도의 차이는 없었다는 것이 관능검사요원들의 지배적 의견이었다. 따라서 넙치 steak를 제조하여 판매할 경우 굽기공정 까지 완료하여 단가가 높은 제품을 구입할 것인지 단가는 낮지만 최종공정인 굽기공정을 가정에서 수행해야 하는 제품의 선택은 소비자의 판단에 맡기는 것이 바람직하다고 판단되었다.

흑대추와 일반 건조대추의 추출 및 유산발효과정 중 특성 변화 (Comparison of Property Changes of Black Jujube and Zizyphus jujube Extracts during Lactic Acid Fermentation)

  • 본 연구에서는 포제법(炮製法) 중 가장 대표적인 구증구포(九蒸九炮)법을 응용하여 steam, 건조, 저온 숙성 과정을 통해 만들어진 흑대추를 활용하여 추출 및 발효과정에 일어나는 주요 특성 변화를 건대추와 비교 분석하였다. 대추의 구증구포 과정을 통해 만들어진 흑대추를 활용하여 추출 및 유산발효를 진행하고, 이러한 과정 중에 나타나는 약리활성 성분의 변화를 건대추와 비교함으로써 흑대추 추출물의 효능을 확인하여 기능성식품 소재로 활용하기 위한 기초자료를 확보하고자 하였다. AOAC법을 이용하여 일반성분을 분석한 결과, 조단백질의 함량에는 유의적인 차이가 없었으나, 수분과 조지방, 조회분의 함량은 흑대추가 건대추보다 더 높은 것을 확인하였다. TLC와 HPLC를 이용하여 당 분석을 하였고, 건대추와 흑대추 모두 fructose, glucose, sucrose로 조성되어 있었고, 각 함량은 건대추는 5.60, 6.30, 9.04 g/100 g이었고, 흑대추는 9.76, 12.76, 2.95 g/100 g으로 건대추는 sucrose의 함량이 fructose와 glucose에 비해 높은 반면, 흑대추는 상대적으로 더 낮은 sucrose 함량을 나타냈다. 이러한 결과는 흑대추 제조를 위한 구증구포 과정 중 sucrose의 분해에 의한 것으로 판단된다. 유용성분이 추출될 수 있는 최적조건을 선정하기 위해 16개의 조건에서 추출수율을 측정하여 반응표면분석법(RSM)으로 최적 조건을 선정하였다. 건대추와 흑대추의 추출수율에 대한 회귀식의 결정계수값 $R^2$은 각각 0.3518, 0.3870으로 모델식이 적합하지 않았고, 이러한 결과는 추출조건에 따라 수율의 차이가 크지 않고, 추출 용매의 에탄올 비율이 증가할수록 수율이 증가하다가 80% 이상이 되면 수율이 급격히 감소하는 것이 원인인 것으로 판단된다. 따라서 Jeong 등(15)의 추출조건을 응용하여 건대추와 흑대추 추출물을 제조하였다. 추출물을 YL-3로 유산발효를 진행한 결과, 두 추출물 모두 배양 8시간 후부터 대수증식기가 시작되었고 24시간 배양 후 대수증식기가 종료되었다. 두 추출물의 초기 pH는 차이가 있었으나 8시간 배양까지 일정하게 유지되고 12시간 후부터 72시간까지 감소하는 유사한 변화 패턴을 보였고, 본 연구에서 사용한 건대추와 흑대추의 일반성분 함량 차이와 단당류 및 이당류 조성비의 차이가 유산균의 생육에 영향을 거의 미치지 않았음을 확인할 수 있었다. 대추 추출물의 유산발효에 의한 기능성 성분의 변화를 분석하고자 폴리페놀과 플라보노이드, free 라디칼 소거능을 측정하였다. 발효 전 건대추와 흑대추의 페놀성 물질의 함량을 분석한 결과 흑대추가 건대추에 비해 폴리페놀과 플라보노이드 함량이 유의적으로 높았으며, 발효 후 건대추의 폴리페놀 함량은 감소하였지만 플라보노이드 함량은 높은 증가율을 보였고, 흑대추는 발효 후 두 물질 모두 증가하였다. 이 결과를 통해 발효에 의한 페놀성 물질의 증가 가능성을 확인하는 것과 동시에 항산화 활성 및 생리기능의 향상을 예측할 수 있었고, 발효가 폴리페놀이나 플라보노이드 이외에도 많은 유효성분의 함량에 영향을 줄 것으로 기대되며 이와 관련된 연구가 지속되어야 할 것으로 생각된다. DPPH에 의한 라디칼 소거능 측정 결과, 흑대추의 발효 전 전자공여능은 74.72%로 건대추보다 더 높았고, 발효에 의한 DPPH free 라디칼 소거능의 유의적인 증가 효과는 없었다. 흑대추의 AEAC값이 1.06 mgAAeq/g으로 건대추에 비해 ABTS free 라디칼 소거능이 더 높았으나, 두 추출물 모두 발효에 의한 ABTS free 라디칼 소거능의 증가 효과는 없었다. 본 연구를 통해 구증구포에 의한 유용성분의 증가효과를 확인하였고, 건대추에 비해 영양성분 및 기능성 물질의 함량이 높은 흑대추를 주원료로 하여 유산균 발효공정을 도입함으로써 기능성물질의 증가 효과를 얻고 다른 대추 가공품과 차별화를 두고 제품의 품질을 향상시킬 수 있을 것으로 생각되며, 흑대추를 이용한 기능성 발효식품 개발에 이용될 수 있을 것으로 판단된다.

High Resolution HC$_3$N Observations toward the Central Region of Sagittarius B2

  • The wall shear stress in the vicinity of end-to end anastomoses under steady flow conditions was measured using a flush-mounted hot-film anemometer(FMHFA) probe. The experimental measurements were in good agreement with numerical results except in flow with low Reynolds numbers. The wall shear stress increased proximal to the anastomosis in flow from the Penrose tubing (simulating an artery) to the PTFE: graft. In flow from the PTFE graft to the Penrose tubing, low wall shear stress was observed distal to the anastomosis. Abnormal distributions of wall shear stress in the vicinity of the anastomosis, resulting from the compliance mismatch between the graft and the host artery, might be an important factor of ANFH formation and the graft failure. The present study suggests a correlation between regions of the low wall shear stress and the development of anastomotic neointimal fibrous hyperplasia(ANPH) in end-to-end anastomoses. 30523 T00401030523 ^x Air pressure decay(APD) rate and ultrafiltration rate(UFR) tests were performed on new and saline rinsed dialyzers as well as those roused in patients several times. C-DAK 4000 (Cordis Dow) and CF IS-11 (Baxter Travenol) reused dialyzers obtained from the dialysis clinic were used in the present study. The new dialyzers exhibited a relatively flat APD, whereas saline rinsed and reused dialyzers showed considerable amount of decay. C-DAH dialyzers had a larger APD(11.70${\pm}$1.32mmHg/min)compared to CF dialyzers(4.32${\pm}$0.55mmHg/min)(p<0.05). However, there was no observable difference in the UFR between the two dialyzers. Neither APD nor UFR showed any significant increase with an increasing number of reuses for up to more than 20reuses. A substantial number of failures observed in APD(larger than 20mmHe/min)on the reused dialyzers(2 out of 40 CP and S out 26 C-DAK) were attributed to the Possible damage on the fibers. The CF 15-11 HFDs which failed APD test did not show changes in the UFR compared to normal dialyzers indicating that APD is a more sensitive test than UFR test to evaluate the integrity of the fibers. 30527 T00401030527 ^x For quantitative measurement of reflected light from a clinical diagnostic strip, a prototype old reflectance photometer was designed. The strip loader and cassette were made to obtain more accurate reflectance parameters. The strip was illuminated at 45˚c through optical fiber and the intensity of reflected light was determined at rectanguLat angle using a photodiode. The kubelka-munk coefficient and reflection optical density were determined ar four different wavelengths(500,550,570 and 610nm) for blood glucose strip. For higher concentration than 300mg/41 about glucose, a saturation state of abforbance was observed at 500,550 and 570nm. The mice were divided into two groups. One group was injected with Photofrin II, intravenously (2.5mg/kg body weight). The other group received no Photofrin II. Mice from both groups were irradialed for approximately 15 minutes at 100,300, or 500 mW/cm2 with the argon (488nm/514.5 nm), dye(628nm) and gold vapor (pulsed 628 nm) laser light. A photosensitizer behaved as an added absorber. Under our experimental conditions, the presence of Photolfrin II increased surface temperature by at least 40% and the temperature rise due to 300 mW/cm2 irradiation exceeded values for hyperthermia. Light and temperature distributions with depth were estimated by a computer model. The model demonstrated the influence of wavelength on the thermal process and proved to be a valuable tool to investigate internal temperature rise. 30536 T00401030536 ^x We investigated the structural geometry of thirty-eight Korean femurs. The purpose of this study is to identify major geometrical differences between Korean femurs 3nd others that we believe belong to Caucasians so that we would be able to get insights into the femoral component design that fits Asians including Koreans. We utilized computerized tomography (CT) images of femurs extracted from cadavers. The CT images were transformed into bitmap data by using a film scanner, and then analyzed by using a commercially available software called Image v.1.0 and a Macintosh IIci computer.The resulting data were compared with already published data. The major results show that the geometry of the Korean femurs is significantly different from that of Caucasians: (1) the anteversion angle and the canal flare index are greater by the amount of approximately 8˚ and 0.5, respectively, (2) the shape of the isthmus cross section is more round, and (3) the distance between the teaser trochanter and the proximal border of the isthmus is shelter by about 15 mm. The results suggested that the femoral component suitable for Asians should be different from the currently-used components designed and manufactured mostly by European or American companies. 30537 T00401030537 ^x It is well known that nonlinear propagation characteristics of the wave in the tissue may give very useful information for the medical diagnoisis. In this paper, a new method to detect nonlinear propagation characteristics of the internal vibration in the tissue for the low frequency mechanical vibration by using bispectral analysis is proposed. In the method, low frequency vibration of f0( = 100Hz) is applied on the surface of the object, and the waveform of the internal vibration x (t) is measured from Doppler frequency modulation of silmultaneously transmitted probing ultrasonic waves. Then, the bispectra of the signal x (t) at the frequencies (f0, f0) and (f0, 2f0) are calculated to estimate the nonlinear propagation characteristics as their magnitude ratio, w here since bispectrum is free from the gaussian additive noise we can get the value with high S/N. Basic experimental system is constructed by using 3.0 MHz probing ultrasonic waves and the several experiments are carried out for some phantoms. Our department has developed an information system for routine hematology using down-sized computer system. We have used an IBM 486 compatible PC with 16MB main memory, 210 MB hard disk drive, 9 RS-232C port and 24 pin dot printer. The operating system and database management system were SCO UNIX and SCO foxbase, respectively. For program development, we used Xbase language provided by SCO foxbase. The C language was used for interface purpose. To make the system use friendly, pull-down menu was used. The system connected to our hospital information system via application program interface (API), so the information related to patient and request details is automatically transmitted to our computer. Our system interfaced with fwd complete blood count analyzers(Sysmex NE-8000 and Coulter STKS) for unidirectional data tansmission from analyzer to computer.   • The wall shear stress in the vicinity of end-to end anastomoses under steady flow conditions was measured using a flush-mounted hot-film anemometer(FMHFA) probe. The experimental measurements were in good agreement with numerical results except in flow with low Reynolds numbers. The wall shear stress increased proximal to the anastomosis in flow from the Penrose tubing (simulating an artery) to the PTFE: graft. In flow from the PTFE graft to the Penrose tubing, low wall shear stress was observed distal to the anastomosis. Abnormal distributions of wall shear stress in the vicinity of the anastomosis, resulting from the compliance mismatch between the graft and the host artery, might be an important factor of ANFH formation and the graft failure. The present study suggests a correlation between regions of the low wall shear stress and the development of anastomotic neointimal fibrous hyperplasia(ANPH) in end-to-end anastomoses. 30523 T00401030523 ^x Air pressure decay(APD) rate and ultrafiltration rate(UFR) tests were performed on new and saline rinsed dialyzers as well as those roused in patients several times. C-DAK 4000 (Cordis Dow) and CF IS-11 (Baxter Travenol) reused dialyzers obtained from the dialysis clinic were used in the present study. The new dialyzers exhibited a relatively flat APD, whereas saline rinsed and reused dialyzers showed considerable amount of decay. C-DAH dialyzers had a larger APD(11.70$\pm$1.32mmHg/min)compared to CF dialyzers(4.32$\pm$0.55mmHg/min)(p<0.05). However, there was no observable difference in the UFR between the two dialyzers. Neither APD nor UFR showed any significant increase with an increasing number of reuses for up to more than 20reuses. A substantial number of failures observed in APD(larger than 20mmHe/min)on the reused dialyzers(2 out of 40 CP and S out 26 C-DAK) were attributed to the Possible damage on the fibers. The CT images were transformed into bitmap data by using a film scanner, and then analyzed by using a commercially available software called Image v.1.0 and a Macintosh IIci computer.The resulting data were compared with already published data. The major results show that the geometry of the Korean femurs is significantly different from that of Caucasians: (1) the anteversion angle and the canal flare index are greater by the amount of approximately 8˚ and 0.5, respectively, (2) the shape of the isthmus cross section is more round, and (3) the distance between the teaser trochanter and the proximal border of the isthmus is shelter by about 15 mm. Stimulus patterns of our stimulator were designed to simulate electromyographic activity monitored during locomotion of normal subjects. Muscle types of the lower extremity were classified according to their mechanical property of contraction, which are slow muscle (msoleus m.) and fast muscle (medial gastrocneminus m., rectus femoris m., vastus lateralis m.). Optimal parameters of electrical stimulation for slow muscles were 20 Hz, 0.2 ms square pulse. For fast muscle, 40 Hz, 0.3 ms square pulse was optimal to produce repeated contraction. Higher stimulus intensity was required when synergistic muscles were stimulated simultaneously than when they were stimulated individually. Electrical stimulation for each muscle was designed to generate bipedal locomotion, so that individual muscles alternate contraction and relaxation to simulate stance and swing phases. Portable electrical stimulator with 16 channels built in microprocessor was constructed and applied to paraplegic patients due to lumbar cord injury.
