건시제조에 관한 기초자료로서 품종에 따른 화학성분 및 당조성의 변화와 생과 및 건시의 물성에 관하여 실험한 바 그 결과는 다음과 같다. 건조가 진행됨에 따라 가용성 tannin은 acetaldehyde, alcohol의 증가와는 반대로 급격히 감소하였으며, 이러한 변화는 경산반시와 평핵무(平核無)에서 비교적 컸다. 건조중 당조성의 변화는 sucrose가 건조초기에 급격히 감소하는 반면 glucose와 fructose는 증가하여 건시과육의 당조성은 품종에 따라서 약간 다르나 glucose와 fructose가 비슷한 함량이었으며 백분은 대부분 glucose로 구성되어 있었다. 생과와 건시의 물성을 측정해본 결과와 관능검사 결과 평핵무(平核無), 사곡시는 건시제조용 품종으로 비교적 좋았으나 장둥이, 남양수시는 건시제조용 품종으로 바람직하지 못한 것으로 나타났다.
The nutritive value and the effect of tannins on the utilization of foliage from three commonly used legumes, Acacia nilotica, Albizia procera, and Sesbania acculeata, were determined. Three mature rumen-fistulated bullocks were used to study in sacco degradability and twelve adult sheep were randomly allocated on the basis of live weight to 4 groups of 3 in each to study the in vivo digestibility of the foliages. In all foliages, the contents of crude protein (17 to 24% of DM) were high. Fibre was especially high in Albizia (NDF 58.8% of DM vs. 21% in Sesbania and 15.4% in Acacia). Contents of both hydrolysable (4.4 to 0.05%) and condensed tannins (1.2 to 0.04%) varied from medium to low in the foliages. Acacia contained the highest level of total phenolics (20.1%), protein precipitable phenolics (13.2%) and had the highest capacity to precipitate protein (14.7%). Drying in shade reduced the tannin content in Acacia and Albizia by 48.6 and 69.3% respectively. The foliages ranked similarly for each of the different methods used to estimate tannin content and activity. Acacia and Sesbania foliage was highly degradable (85-87% potential degradability of DM in sacco), compared to Albizia (52%), indicating a minimal effect of tannins in Acacia and Sesbania. Yet, in vitro, the tannins in the Acacia inhibited microbial activity more than those in Albizia and Sesbania. Following the addition of polyethylene glycol to neutralise the tannins, gas production and microbial growth increased by 59% and 0.09 mg RNA equiv./dg microbial yield respectively in the Acacia, compared to 16-17% and 0.06 mg RNA equiv./dg microbial yield in the other foliages. There was a trend for low in vivo apparent digestibility of N in the Acacia (43.2%) and Albizia (44.2%) compared to the Sesbania (54.5%) supplemented groups. This was likely to be due to presence of tannins. Consistent with this was the low N retention (0.22 and 0.19 g N/g NI) in sheep supplemented with Acacia and Albizia compared to that for the Sesbania (0.32). Similarly, a trend for poor microbial N yield was observed in sheep fed these foliages. Across the foliages tested, an increase in tannin content was associated with a reduction in ruminal fermentation, N digestibility and N retention. For overall nutritive value, Sesbania proved to be the superior forage of the three tested.
차광한 차나무 잎의 엽위별 생육특성 및 차 품질 관련 주요 화학성분을 분석한 결과는 다음과 같다. 하위엽으로 내려 갈수록 엽장, 엽폭, 백아중은 컸으나 엽수분은 감소하였다. 하위엽으로 내려갈수록 total nitrogen, caffeine, vitamin C, saponin 함량은 감소하였고, total amino acid, chlorophyll 함량은 4번 엽과 3번엽에서 각각 최대함량을 나타냈다. tannin은 $9.53{\sim}11.24%$로 1엽이 11.24%로 함량이 제일 많았고 4엽이 9.53%로 가장 적었다. fatty acid는 2엽에서 3,594mg/100g으로 함량이 가장 많았고, 5엽에서 2,782mg/100g으로 함량이 가장 적었다. 포화지방산인 palmitic acid와 steatic acid는 5엽에서 함량이 많았고, 불포화 지방산인 oleic acid, linoleic acid, linolenic acid는 2엽에서 함량이 많았다. 이상 분석 결과로부터 15일간 차광한 후 채엽한 가루녹차 원료는 5엽까지 채취하여 제다해도 품질에 있어서 큰 문제가 없다고 생각된다.
곰취 (Ligularia fischeri)는 전국의 심산수림이나 비옥 습윤한 초생지에 자생하는 다년생 초본으로 chamomile, jacobine및 ameleme등의 약리성분이 함유되어 있으며 잎의 생즙과 가열즙은 항암효과가 우수한 것으로 알려져 있다. 따라서 본 연구에서는 이러한 곰취의 식품화 이용가치를 증진시키고 이를 이용한 가공식품제조에 관한 연구를 수행하였다. 곰취의 품질특성을 조사한 결과 섬유소의 경우 0.56 g/100 g 함유되어 있으며, 수렴작용을 가지고 있는 배당체 tannin은 33.3 ppm/g 함유되어 있는 것으로 나타났다. 무기질 중에는 Fe 함량이 309.26 mg/kg 으로 가장 높게 측정되었다. 식품이용화 가치를 판단하기 위해서 곰취를 생잎, 나물과 샐러드로 제조해서 관능검사를 시행한 결과 나물에 대한 전반적인 선호도가 다른 군에 비해 높게 나타났으며, 20대 보다는 30대, 40대 이상에서 전체적인 선호도가 높게 나타났다. 곰취 분말을 이용하여 garlic bread 및 rolling snack을 제조하여 그 특성을 조사하였다. 그 결과 경도는 강력분을 사용한 garlic bread가 rolling snack보다 더 높았고, 색도 측정 결과 rolling snack이 garlic bread 보다 L 값은 높고 a 값은 낮게 나타났다. 그리고 곰취를 이용한 제품에 대한 관능검사는 garlic bread에서 rolling snack보다 그 기호도가 더 좋았으며, 20, 30대 보다는 연령층이 높은 40, 50대에서 선호도가 더 높게 나타났다. 따라서 이러한 결과를 바탕으로 제품을 개발한다면 곰취의 식품으로서의 이용화가치가 한 층 더 높아질 것으로 기대된다.
Tannins are phenolic compounds that precipitate proteins and composed of a very diverse group of oligomers and polymers. Tannins are potential biological antioxidants, which are widely believed to be an important line of defense against oxidative damage and may participate in the prevention of cancer and cardiovascular disease. Persimmon(Diospyros kaki L.) has been cultivated in East Asia and is a good source of nutritional antioxidant vitamins, carotenoids and tannins. In general persimmon peel was regarded as a waste matter, although based on recent studies, the peel contains more carotenoids and polyphenols than pulp. Several investigation conducted in experimental animals have reported that dietary persimmon fruit and peel effectively lowered the levels of plasma total cholesterol and LDL-cholesterol. We conducted experiments to investigate in vitro antioxidative activities of persimmon peel powder (PP) and its soluble tannin extract (ST) and their dietary effects on productive performances and physiological responses in poultry. The PP and ST exhibited in vitro antioxidative activity in SOD - like activity model. The yolk color and eggshell color were significantly improved by the addition of PP and ST into layer diets. The contents of total cholesterol, triacylglycerol and phospholipid of liver in the groups fed diets containing PP and ST tended to be reduce as compared with those of control. With adding of PP and ST, Haugh unit was increased after 7 and 14 days of storage. In conclusion, PP and ST can be used as valuable feed additives for reducing hepatic lipid contents without harmful effects on overall productive performances and physiological responses in laying hens.
Changes in chemical components of green tea leaves at different cooking conditions-blanching and frying-were surveyed as a method of utilizing low graded green tea leaves which missed appropriate plucking times. There was no significant difference in protein content during cooking. But contents of chlorophyll, tannin, vitamin C and caffeine were decreased during cooking, contents of chlorophyll and caffeine showed a greater decrease in frying than blanching. Content of total amino acid of green tea leaf was 15.8% and blanching showed bigger diminution of its content in comparision with frying during cooking.
Persimmon vinegar was clarified with 400mg/L chitosans of two different molecular weights (MW 150 and 37 kDa), and its quality changes were investigated during storage at room temperature for 6 months. No significant changes in pH, acidity, and tannin content were observed. However, turbidity and browning slightly increased while protein content slightly decreased. Soluble solids content slightly decreased when treated with high MW chitosan. Color L* value decreased while a* and b* values increased with storage periods. The major organic acid in the persimmon vinegar after 6 months storage was acetic acid with minor lactic, malic, tartaric, galacturonic, and succinic acids. Overall, the quality of persimmon vinegar clarified by chitosan treatment, irrespective of molecular weight, was more stable without noticeable changes during storage than that of control group without chitosan treatment.
Possibility of utilization of fig as a source of vinegar was tested. Alcohol fermentation was conducted by inoculation of Saccharomyces bayanus into fig juice. After 5 days of fermentation at 27oC, fig wine with alcohol content of 13.6%. Then fig vinegar was produced by cultivation of Acetobacter sp. E which was isolated from fig vinegar. Optimum concentration of alcohol, starter content and fermentation temperature for the acid production were 8~9%, 5% and 27~30oC, respectively. More acetic acid was produced by adding 0.5% of yeast extract and 0.01% of Ca pantothenate. Adjustment pH of culture broth with acetic acid and shaking cultivation method were not effective in higher yield of acid production. Addition of sulfite up to 50 ppm did not inhibit for acetic acid fermentation. Addition of 1% bentonite or 1% kakishibu was more effective for the clarification of fig vinegar than any other clarifying agents tested. During aging and racking, acidity, absorbance and tannin content of fig vinegar decreased, while redness and yellowness increased. Aged and racked fig vinegar showed higher sensory score than non aged one in the aspects of color and overall acceptability.
The effect of homobrassinolide (HBL) on the nutrient value of Curcuma longa L. (turmeric) rhizome grown in Nizamabad, Telangana State, India was studied. Application of homobrassinolide (HBL) as foliar spray to turmeric plants on the 20th, 40th and 60th day from sowing resulted in enhanced chemical composition of turmeric rhizome. Application of homobrassinolide (HBL) resulted in enhanced total sugars, principal ingredient curcumin, total poly phenol content, total flavonoid content, total tannin content, crude fat, crude fibre and essential oils (turmerone, zingiberene, cineole and p-cymene) present in the turmeric rhizome indicating the ability of homobrassinolide (HBL) as a potential plant growth regulator (PGR).
