Hot water-soluble crude polysaccharide (HCAP-0) that was obtained from the fruits of Capsicum annuum showed potent anti-complementary activity. The activity was unchanged by pronase digestion, but decreased by periodate oxidation. The HCAP-0 was fractionated by DEAE ion-exchange chromatography to give two major fractions, HCAP-II and III. These two fractions were finally purified by gel filtration to give HCAP-IIa, HCAP-IIIa1, and IIIa2 fractions that had high anti-complementary activities. The HCAP-IIIa1 and IIIa2 consisted of homogeneous polysaccharides. The anti-complementary activities were unaffected by treatment with polymyxin B, indicating that the modes of complement activation were not due to preexisting lipopolysaccharide. The molecular weight and sugar content of HCAP-IIIa2 had potent anti-complementary activity. The highest yields were 55 kDa and 75.9%, and the molar ratio of galactose (Ara:Gal, 1.0:4.6) was higher than other sugars. The crossed immuno-electrophoresis showed that both classical and alternative pathways were activated by HCAP-IIIa2.
Sweetener is one of the additives that makes you feel sweet. Artificial sweeteners and sugar are typical examples, and sweetness proteins with sweetness characteristics have been widely studied. These studies elucidated the transformation lettuce cells with Agrobacterium method for stable production of natural sweet proteins, brazzein, thaumatin, and miraculin. In this paper, we report use of a plant expression system for production of sweet proteins. A synthetic gene encoding sweet proteins was placed under the control of constitutive promoters and transferred to lettuce. High and genetically stable expression of sweetener was confirmed in leaves by RT-PCR and Western blot analysis. Sweet proteins expressed in transgenic lettuce had sweetness-inducing activity. Results demonstrate recombinant sweet proteins correctly processed in transgenic lettuce plants, and that this production system could be a viable alternative to production from the native plant.
In this study, cucumber Jangachi using Sake cake was prepared and its quality characteristics verified. After preparing various cucumber Jangachi with different salt concentrations, physicochemical characteristics, hardness and sensory evaluation were investigated. Five samples (0%, 3%, 6%, 9% and 12% brine) were used and designated as treatment plots (CJ0, CJ3, CJ6, CJ9 and CJ12, respectively). Higher concentration of brine was associated with reduced pH of cucumber Jangachi and higher total acidity. Salinity decreased significantly as storage period increased. On day 0, it shows similarity to the concentration of brine, whereas it was reduced after day 28. The soluble solid content increased significantly as the storage period increased and decreased slightly after 21 days. Regarding concentration of brine, a higher concentration shows a tendency to increase but the gaps are insignificant. Reducing sugar content increased significantly as the storage period increased. The hardness increased in all treatment plots up to the 14th day, decreased until day 21, and increased thereafter. Following the sensory evaluation, saltiness was not detected in the plots, and CJ6 showed the highest texture score ($4.46{\pm}1.41$). For overall acceptability, CJ6 showed the highest score ($4.33{\pm}1.13$). According to the above results, salinity content of cucumber Jangachi using Sake cake decrease to 0.69~1.52% in 0%, 3%, 6%, 9%, and 12% brine by the 28th day. Despite decreasing salinity, texture and overall acceptability scores were higher than the above results. Thus, we conclude that it is possible to produce low salt cucumber Jangachi of high quality using Sake cake instead of high salt one.

Bamboo sprout powder was added to Jeonbyeong dough for improving its quality and functional properties. Crude protein and ash content increased as the amount of bamboo sprout powder increased, while the crude fat content was decreased. As the content of bamboo sprout powder increased, total amino acid content also increased. As bamboo sprout powder content increased, Hunter's L, a and b values decreased whereas sugar-free content increased. The addition of bamboo sprout powder to Jeonbyeong increased its dietary fiber contents. The sensory score of Jeonbyeong containing 300 g of bamboo sprout powder showed the highest score among all other tested Jeonbyeong. Based on the results, the addition of bamboo sprout powder could improve the quality and sensory characteristics of Jeonbyeong.
In this study, substrate removal characteristics were analyzed to reduce the cost of external carbon dosage at Sudokwon Landfill Site Management Corporation in Korea by utilizing oxygen uptake rate (OUR) and nitrate uptake rate (NUR) tests. To estimate and evaluate the substrate removal characteristics obtained by the batch tests, the lab-scale MLE process was operated. By-products of J Co. (sugar manufactory) and S Co. (fine chemical industry) were selected as the concerned carbon sources through a comparison of carbon and nitrogen contents. MeOH was tested as a control experiment. Until the steady state, the fraction of $RBDCOD_{OUR}$ concentration to COD concentration of J Co., S Co. by-products and MeOH increased and reached levels of 98%, 82%, and 100%, respectively. During the 20th operating day, the fraction of $RBDCOD_{NUR}$ concentration to COD concentration was 95%, 81%, and 83%, respectively. These fractions of $RBDCOD_{NUR}$ concentration to $RBDCOD_{OUR}$ concentration increased according to acclimation periods and reached levels of 99%, 97%, and 81%, respectively, on the 20th day. The results obtained from the lab-scale MLE process operation using the concerned carbon sources as external carbon were similar to that observed by OUR and NUR tests.
In this research, mulberry fruit was processed into mulberry fruit syrup (MFS) using sugar and then used as stabilizer for anthocyanine pigment in yanggeng. MFS was added to the yanggeng in order to make mixture ratio of 0%, 5%, 10%, 15% and 20%. The resulting sensory and physicochemical aspects, as compared between the various MFS ratio were investigated. The yanggeng L and b values decreased with increasing ratio of MFS. With addition of MFS the sensory evaluation results for, taste, color, flavor, texture and overall acceptability improved. The yanggeng prepared using MFS found to possess more effective antioxidants behavior as observed by in vitro evaluating 1,1-diphenyl-2-picrylhydrazyl(DPPH) radical scavenging and superoxide radical activities. The $IC_{50}$ of the antioxidant was found to be proportional to the mulberry fruit syrup concentration in the yanggeng.

Surface color is the most important quality factor for the grade evaluation of cherry tomato. Color is one of the representative indicators for the maturity which is closely related to the internal quality of cherry tomato, such as firmness, sugar content, and acidity. This study was carried out to investigate the relationship between surface color and internal quality of cherry tomatoes harvested from both hydroponic and soil culture at different ripening stages. To calculate the color values of cherry tomatoes an automatic color imaging system was constructed. A specially designed image processing algorithm for the color measurement was developed. The color values of L*, a*, b* were calculated from the initial color values of RGB and then compared with the internal quality. Statistical analyses indicated that the internal quality was more highly correlated with the surface color than size of cherry tomatoes. Color image features were also investigated to detect external damage of cherry tomatoes. The value of (R value - R mean value)/R mean value was the most effective image feature for the detection of damaged areas on the surface of cherry tomatoes. The results of this study demonstrated the feasibility of color sorting process as an alternative of the conventional drum type size sorting system for cherry tomato industry.
This study was carried out to investigate the availability of sorbitol and maltitol as alternative sweeteners for replacement of sucrose in sponge cake. Physical characteristics of batter such as specific gravity, pH of cake batter and volume, texture of sponge cake were analyzed lst specific gravities of batters contained 10~40% of sorbitol and maltitol were lower than that of the sucrose. 2nd specific gravity of batters showed the same results as the lst specific gravity. pH of the cake batters contained sorbitol and maltitol revealed high value compared to the control. As the amount of replacement increased, pH value showed higher. In terms of cake volume, as the amounts of sorbitol and maltitol were increased, the volume was larger than that of the control. Up to 20% of replacement, the cake contained sorbitol showed higher volume than that containing maltitol, but the cake contained maltitol showed higher volume in above 30% In terms of texture of sponge cake, the control showed the highest in hardness, as the amounts of sorbitol and maltitol were increased, hardness value has lowered compared to the control on the same storage day. In this study, addition of sorbitol and maltitol to sponge cake showed good results.
Root chicory (Cichorium intybus L. var. sativus) is potential alternative medicinal and sugar crop which accumulates a high amount of linear polyfructan, inulin in its roots. A problem in root production is that over-wintered stock plants often flower. Once the plant becomes reproductive, stem elongation and root growth slows and floral buds arise from every node, rendering the plants useless for propagation. The objectives of this research was to examine the effectiveness of manipulating environmental factors containing photoperiod, temperature and number of leaf states. The experiment was performed in growth chamber to create two photoperiods (8 h, and 16 h) with three temperature regimes (5$^{\circ}C$/3$^{\circ}C$, 1$0^{\circ}C$/8$^{\circ}C$ and 15$^{\circ}C$/13$^{\circ}C$ day/night temperature) for a total of six treatments on three type of true-leaf stage of plant. Data of bolting rate, shoot and root length, shoot and fresh weight was invetigated in each treatments. This is the first report on changes in bolting rate and shoots and roots production during a whole growing season and differences in the effect of cold and photoperiod treatment depending on the true-leaf stage of plant.
Background: Ginseng is one of the most valuable herbal supplements. It is challenging to perform quality control of ginseng products due to the diversity of bioactive saponins in their composition. Acid or alkaline hydrolysis is often used for the structural elucidation of these saponins and sugars in their side chains. Complete transformation of the original ginsenosides into their aglycones during the hydrolysis is one of the ways to determine a total saponin group content. The main hurdle of this approach is the formation of various by-products that was reported by many authors. Methods: Separate HPLC assessment of the total protopanaxadiol, protopanaxatriol and ocotillol ginsenoside contents is a viable alternative to the determination of characteristic biomarkers of these saponin groups, such as ginsenoside Rf and pseudoginsenoside F11, which are commonly used for authentication of P. ginseng Meyer and P. quinquefolius L. samples respectively. Moreover, total ginsenoside content is an ideal aggregated parameter for standardization and quality control of ginseng-based medicines, because it can be directly applied for saponin dosage calculation. Results: Different hydrolysis conditions were tested to develop accurate quantification method for the elucidation of total ginsenoside contents in herbal products. Linearity, limits of quantification, limits of detection, accuracy and precision were evaluated for the developed HPLC-MS method. Conclusion: Alkaline hydrolysis results in fewer by-products than sugar elimination in acidic conditions. An equimolar response, as a key parameter for quantification, was established for several major ginsenosides. The developed approach has shown acceptable results in the analysis of several different herbal products.
