Quality Characteristics of Brown rice Jeung-pyun (현미가루를 대체하여 제조한 현미증편의 품질특성)

  • The optimal replaced percentage of brown rice Jeung-pyun was investigated in this study. A specific volume of brown rice Jeung-pyun resulted in no difference. The pH of Jeung-pyun (5.10-5.39) was higher than that of Jeung-pyun dough (4.96-5.17). The lightness darkened to 55.39-63.56, as the replaced amount of brown rice flour was increased. Furthermore, redness and yellowness increased to 3.24-4.15 and 4.45-10.12, respectively. The microstructure examined by scanning electron microscopy became enlarged and irregular as the amount of replaced rice increased. The gelatinization of 30-40% brown rice powder was approximately 1.93-2.20. The mechanical textures of hardness, gumminess, chewiness, and fracturability were high as additional ingredients and the storage period increased, whereas adhesiveness, springiness, and cohesiveness were low. The results of a sensory evaluation revealed that the 30% added brown rice Jeung-pyun was highly assessed as the most appropriate percentage of added brown rice Jeung-pyun.

  • To select kernels for breeding that have required constituent content from either naturally distributed samples or artificially mutated ones, it is necessary to process batch samples in a short time. The constituent content of single-kernel grains such as wheat and rice has been determined using conventional bench type NIR instruments; however, it takes a lot of time and effort. Shizuoka Seiki (Fukuroi-city, Japan) and NFRI (National Food Research Institute) of MAFF (Ministry of Agriculture, forestry and Fisheries of Japan) have jointly developed a continuous high-speed single-kernel brown rice sorting machine based on rice protein content. It consists of several sections such as a feeding mechanism, measuring unit, sorting mechanism and controlling PC. The feeding mechanism picks up single-kernel brown rice from the hopper (maximum of 5kg storage capacity) and sends it to the measuring unit. A spectrum of the brown rice is obtained in the measuring unit, which consists of a near-infrared array sensor. The brown rice is then sorted in the sorting mechanism based on its protein content estimated by the controlling PC. In the present study, measuring speed was approximately 500ms for the full spectrum range and overall sorting speed was approximately 2.8s for one kernel. Accuracy of estimation was approximately SEP=0.5% of dry matter protein content for nonglutinous rice.

Comparison of Superoxide Dismutase and Peroxidase Activities in Rice Varieties

  • Fifty-four Korean native and 28 foreign varieties harvested in 1998 and 1999 were examined for superoxide dismutase (SOD) and peroxidase (POD) activities. The SOD and POD activities of leaves extracts in Korean native and foreign rice varieties showed variation at the heading stage. The activities of SOD and POD changed with growth stage. In comparison of storage duration, the SOD and POD activities of the extract from three months stored seeds in Korean native (CV=53.3%) and foreign rice (CV=57.9%) varieties were higher than that of stored rices for a year in seed extracts although the activities among varieties did not show significant variation. Also, the averaged activity of foreign rice varieties (SOD=12.9%) was relatively higher than that of korean native rice varieties (SOD=10.7%). The test of activity at the enzymatic level related to antioxidative activity suggests that the rice varieties with higher antioxidative potentials can be developed and also may provide information with rice breeder to breed rice variety with a high antioxidative activity.

  • This study was conducted to decide several design criterion for clean-washed rice processing system development. A Computer simulation was used to predict and analyze the mass balances and moisture changes of the process of clean-washed rice processing system. The following results were obtained from this study. 1. In order to attain the processing capacity of 1,000kg/h of the clean-washed rice processing system, that of the system was designed as 1,400kg/h which was based on the safety factor of 40% and handling capability of mass variations occurred during processing. 2. It was analyzed that the proper time required for aqueous cleaning process should be within one minute. 2. It was analyzed that the proper time required for aqueous cleaning process should be within one minute. 3. The final moisture content of clean-washed rice was controlled being 15%(w.b.) for the sake of safe storage. 4. It was proven that the optimum drying time was three minutes for the clean-washed rice dried by a rotary dryer.

Changes in Temperature during Storage of Lunch-Box and Effects of the Heat Insulator Use on the Lunch-Box Freshness (도시락 보관중 온도변화와 신선도 유지를 위한 단열재 사용효과)

  • This study was executed to investigate proper storage conditions for freshness of lunch-box and prevention of lunch-box borne illness. When boiled rice was put into the empty lunch-box without cooling, temperature of the lunch-box was $70^{\circ}C$ to be able to destroy vegetative cell of microoganism in the lunch-box. Temperature of the side-dish canister that is placed on the hot lunch-box was increased from $15^{\circ}C$ to $53^{\circ}C$. The use of the insulator(one to two layer) between the lunch-box and side-dish canister was effective in insulation of the heat that is conducted from the hot lunch-box to the side-dish canister. The insulation layer(asbestos) was also effective to inhibit the decrease of pH value and growth of microoganisms in the toiled rice and side-dish during storage of the lunch-box. The number of microoganisms in the lunch-box covered without cooling was less than in the case of lunch-box covered after cooling; however, the amount of generation in condensed water that is responsible for swelling of boiled rice in the lunch-box occurred much more in the one than in the other, and was a little generated in the case of high temperature storage, insulator use, and when covering the lunch-box after cooling, and pre-evaporation by stirring boiled rice in the cooking pot before filling it. In addition, inserting the heat insulators on and bottom of the lunch-box the boiled rice can be eaten without coldness in winter season.

  • Polished rice was stored for 24 weeks at $28^{\c수분함량이 16.0% after infestation with rice weevil (Sitophilus oryzae), inoculation with a storage mold, or both treatment. The moisture contents of stored rice with and without rice weevil were 16.6%-17.3% and 13.70%-14.1% respeotively. Fungal numbers were $4.3{\times}10^{6}$/g to $7.2{\times}10^{6}$/g with insects while no fungal growth occurred without them. There were considerable differences between rice weevil infested- and non-infested rice in rice kernel hardness, 1000 kernel weight, maximum viscosity on amylogram, reducing sugar content, fat acidity, and n-hexanal content in head space gas.

The Studies on Real Condition of Mycotoxin Contamination in the Fields before Harvest and by the Storage of Rice Straw using as Roughage in Korea (국내 조사료용 볏짚의 수확 전 작물포 및 수확 후 저장에 따른 곰팡이독소 오염 실태 연구)

  • The studies were conducted to investigate real condition of mycotoxin contamination in the fields before harvest and by the storages of rice straw used as roughage in Korea. It was found mycotoxin contamination before harvest of rice straw that the rice plants were detected deoxynivalenol at the initial growth, ochratoxin A and deoxynivalenol at the middle growth, and deoxynivalenol and zearalenone at the harvest periods in the fields. Also, the rice plants were contaminated by various fungi such as Fusarium sp., Fusarium proliferatum, Penicillium sp., Gibberella sp., Gibberella zeae, Mucor circinelloides and Aspergillus oryzae. The levels of fungal contamination were $10^{3-4}$ cfu/g at the initial growth, and $10^{4-5}$ cfu/g at the middle growth and harvest periods. All storage types of rice straw were contaminated with zearalenone, deoxynivalenol and ochratoxins A. The samples of rice straw contaminating mycotoxins were account for 3% in bundle rice straw, and 38% in both types of square rice straw and rice round bale silage, respectively. When 105 samples of rice bale silage were analyzed for mycotoxins depending on the regional area, mycotoxin contamination was found in 46% of total samples in Korea. Regional contaminations of mycotoxins were respectively 48, 33, 40, 50 and 57% of samples in Gyeonggi, Gangwon, Chungcheng, Yeongnam and Honam area. Rice round bale silage was contaminated by three kinds of mycotoxins (zearalenone, deoxynivalenol and ochratoxinsA) in the all of area without Chungcheong area where was contaminated zearalenone and deoxynivalenol. Ochratoxins A, deoxynivalenol and zearalenone were respectively determinated with the average levels of 2.6, 413 and $338{\mu}g/kg$ in rice round bale silage for the overall area, even if it was some difference depending on each regional area. Therefore, the above results clearly show that the rice straws were exposed to the contamination by mycotoxin and mycotoxigenic fungi before harvest in the fields, and mycotoxin contamination was not dependent on the regional area or the storage types such as bundle rice straw, square rice straw and rice round bale silage.

Effects of Lactic Acid Bacteria Inoculants on Fermentation of Low Moisture Fresh Rice Straw Silage at Different Storage Periods

  • The purpose of this study was to analyze the effectiveness of different storage periods of lactic acid bacteria (LAB)-fermented low moisture fresh rice straw silage. The low moisture fresh rice straw sample was inculcated with LAB and stored for different storage periods such as 45, 90, and 365 days, respectively. The low moisture fresh rice straw (LMFRS) silage inoculated with LAB exhibited reduction in pH throughout the fermentation as compared with the control (P<0.05). The lactic acid content was increased at the late fermentation period (90 and 365 days, respectively) in LAB inoculated LMFRS silage as compared with the control (P<0.05). In contrast, the acetic acid and butyric acid concentrations were slightly reduced in the LAB inoculated LMFRS silage sample at 90 and 365 days fermentation, respectively. Meanwhile, the non-inoculated LMFRS silage showed higher amounts of acetic acid and butyric acid at an extended fermentation with low bacterial population as compared with the LAB inoculated LMFRS silage. However, lactic acid concentration was slightly high in the non-inoculated LMFRS silage at early 45 days fermentation. Additionally, the nutrient profile such as crude protein (CP), acid detergent fibre (ADF), neutral detergent fibre (NDF), and total digestibility nutrients (TDN) were not significantly different in control and LAB inculcated samples during all fermentation. Though, the microbial population was greater in the LAB inoculated LMFRS silage as compared with the control. However, the massive population was noted in the LAB inoculated LMFRS silage during all fermentation. It indicates that the inoculated LAB is the main reason for increasing fermentation quality in the sample through pH reduction by organic acids production. Overall results suggest that the LAB inoculums are the effective strain that could be a suitable for LMFRS silage fermentation at prolonged days.

Effects of Rice Bran Extracts on Oxidative Stability of Corn Oil (옥수수유의 산화안정성에 대한 미강 추출물의 효과)

  • Rice bran contains high amounts of fiber and various phytochemicals, including vitamin E, ${\gamma}$-oryzanol, and phenolic acids. The oxidative stabilities of corn oil added with three rice bran extracts from two rice cultivars (Dasan 1 and Ilpum) were evaluated. The three rice bran extracts were unsaponifiable matter of rice bran (USM), methanolic extract of rice bran oil (MEO), and methanolic extract of defatted rice bran (MEDR). Each sample was stored at $50^{\circ}C$ for 24 days. Oxidation of these samples was determined every 3 days by measuring the peroxide value (POV) and conjugated diene value (CDV). Vitamin E content was analyzed on day 0 and day 24. The results show that the POV and CDV values of samples increased gradually during the storage period. The order of oxidative stability was shown as BHT> MEDR> MEO> USM> control, regardless of cultivars. In the case of vitamin E, ${\alpha}$-T, ${\gamma}$-T, ${\alpha}$-T3, and ${\gamma}$-T3 contents decreased by 89%, 31%, 83%, and 32% after storage for 24 days, respectively. In conclusion, MEDR showed higher oxidative stability and may have potential as a source of natural antioxidants in the oil industry.

Physical Properties on Waxy Black Rice and Waxy Rice (찰흑미와 일반찰벼의 물리적 특성)

  • This study was comparised physical properties of waxy black rice and waxy rice. In case of physical properties of kernels, weight, length, length/width ratio and volume of waxy black rice were higher than those of waxy rice but width and density were very similar. Moisture gain of kernels of waxy black rices was increased continuously to 40 min. at various soaking temperatures ($20{\sim}50^{\circ}C$) and the water uptake rate constants ($k_0$) of waxy black rices during storage at $20{\sim}50^{\circ}C$ were also increased. The water uptake rate constant ($k_0$) of waxy rice ($0.058\;min^{-1/2}$) was the more fast than that of waxy black rice ($0.033\;min^{-1/2}$) during storage at $4^{\circ}C$. Also hardness reduced rate constant($-k_0$) of waxy rice ($0.048\;min^{-1}$) were the more fast than that of waxy black rice ($0.022\;min^{-1}$) about two times.
