Assessment of Sanitary Management Practices of School Foodservice Operations in Seoul (서울지역 학교급식 위생관리 실태평가)

  • Sanitary management practices were assessed to insure the safety of school foodservice, to prevent the outbreak of foodborne illness, and to improve the quality of school foodservice. To accomplish these objectives, a survey was conducted and analyzed on elementary and high school foodservice operations located in Seoul area. A Questionnaire from based on HACCP standards was developed and used for self-reported evaluation of the school foodservice managers on their sanitary management practices. The results were analysed by examining their activities and identifying weaknesses in those activities. The questionnaire was composed of three sectors with all 53 questions; 33 questions for time-temperature management, 5 for personal hygiene and 15 for equipment/facility sanitation. Five-point-scale was used on the questionnaire answers. Among the schools responded,253 (98.4% of the total) were elementary schools and 19 (1.6%) were high schools. Among the three sectors, personal hygiene performance was mostly well conducted by marking average 4.06$\pm$0.57. Equipment/facility sanitation came next by marking average 3.84$\pm$0.53. Time-temperature marked average 3.45$\pm$0.46. “Storage after cooking (2.03$\pm$0.94)”was identified as the least managed activities because the school foodservice operations were not equipped well with hot holding and/or cold holding. “Separate use of sink per usage (3.03$\pm$1.10)” and “proper location of hand washing facility (3.07$\pm$1.13))” were identified as the least practiced activities in equipment/facility sanitation sector. To enhance these practices, proper number of sinks and hand washing facilities should be equipped first within the kitchen area.

STUDIES ON THE PROCESSING AND UTILIZATION OF SARDINE PROTEIN CONCENTRATE (정어리 분말단백질 가공 및 이용에 관한 연구)

  • Since 1976 the catches of sardine increased rapidly in Korea. However due to the poor facilities of preservation, most sardine landed was used only for fish meal as feeds. The aims of this study are to investigate the processing of sardine as a protein. concentrate and to solve related problems under our particular circumstances. Using the ethyl alcohol and isopropyl alcohol, the storage effect for further processing, the optimum processing conditions of sardine protein concentrate and amino acid composition of the product were determined. The utilization of sardine protein ,concentrate as a supplement of bread and noodles was also studied. Chopped sardine meat could be stored in isopropyl and ethyl alcohol without significant deterioration as a raw material for tile further processing. High qualify sardine Protein concentrate could be produced by the method, that is five times five minutes extraction with isopropyl or ethyl alcohol at $80^{\circ}C$ under adequate mixing. In the first step of the extraction, the solvent was added as much as 10 times tile sample amount and the equal volume of additional solvent was also used for the second to fifth step extraction. In the products extracted using isopropyl alcohol and ethyl alcohol, the yields of sardine protein concentrate were $21.2\%$ and $20.3\%$ respectively, and the dry basis contents of protein in the two products were $80.5\%$ and $75.8\%$, the lipid being $0.22\%$ and $0.27\%$ respectively. Isoproyl alcohol was superior to superior alcohol for the extraction of fresh sardine. In amino acid composition of sardine protein concentrate, no difference was found between the products of isopropyl and ethyl alcohol extraction except a little difference in the amount of amino acid between them. In the supplementation of bread and noodles, taste panel showed that supplemented bread and noodles were well accepted when $3\%$ of wheat flour was replaced by sardine protein concentrate.

A Study on the Full-scale Soil Washing Process Improved by Multi-stage Continuous Desorption and Agitational Desorption Techniques to Remediate Petroleum-contaminated Soils (현장규모의 유류오염토양 세척공법에 다단연속탈착 및 교반탈착기법을 이용한 세척공정 성능향상에 관한 연구)

  • In accompany with the transfer of US army bases, recent surveys reported serious contamination of soils by the release of petroleum from storage facilities and heavy metals accumulated in rifle-ranges. These problems have made an increased concerns of cleanup technology for contaminated soils. In this study, a full-scale soil washing process improved by multistage continuous desorption and agitational desorption techniques was examined for petroleum-contaminated soils obtained from three different remedial sites that contained 29.3, 16.6, and 7.8% of silt and clay, respectively. The initial concentrations of total petroleum hydrocarbon (TPH) were 5,183, 2,560, and 4,860 mg/kg for each soil. Pure water was applied to operate washing process, in which water used for washing process was recycled 100% for over 6 months. The results of full-scale washing tests showed that the TPH concentrations for soils (> 3.0 mm) were 50${\sim}$356 mg/kg (85.2${\sim}$98.2% removal rates), regardless of the contents of silt and clay from in A, B and C soil, when the soils were washed at 3.0 kg/$cm^2$ of injection pressure with the method of wet particle separation. Based on the initial TPH concentration, the TPH removal rates for each site were 85.2, 98.2 and 89.9%. For soils in the range of 3.0${\sim}$0.075 mm, the application of first-stage desorption technique as a physical method resulted 834, 1,110, and 1,460 mg/kg of TPH concentrations for each soil, also additional multi-stage continuous desorption reduced the TPH concentration to 330, 385, and 245 mg/kg that were equivalent to 92.4, 90.6, and 90.1% removal rates, respectively. The result of multi-stage continuous desorption for fine soil (0.075${\sim}$0.053 mm) were 791, 885, and 1,560 mg/kg, and additional agitation desorption showed 428, 440, and, 358 mg/kg of TPH concentrations. Compared with initial concentration, the removal rates were 92.0, 93.9 and 92.9%, respectively. These results implied we could apply strategic process of soil washing for varies types of contaminated soils to meet the regulatory limit of TPH.

Heating Performance Analysis of the Heat Pump System for Agricultural Facilities using the Waste Heat of the Thermal Power Plant as Heat Source (발전소 폐열을 이용한 농업시설용 히트펌프시스템의 난방 성능 분석)

  • In this study, the heating performance and the energy saving effect of the heat pump system using hot waste water(waste heat) of the thermal power plant discharged from a thermal power plant to the sea were analyzed. The greenhouse area was $5,280m^2$ and scale of the heat pump system was 120 RT(Refrigeration Ton), which was divided into 30 RT, 40 RT and 50 RT. The heat pump system consisted of the roll type heat exchangers, hot waste water transfer pipes, heat pumps(30, 40, 50 RT), a heat storage tank and fan coil units. The roll type heat exchangers was made of PE(Poly Ethylene) pipes in consideration of low cost and durability against corrosion, because hot waste water(sea water) is highly corrosive. And the heating period was 5 months from October to February. During the heating performance test(12 hours), the inlet water temperature of evaporator was changed from $32^{\circ}C$ to $26^{\circ}C$, and heat absorption of he evaporator was changed from 175 kW to 120 kW. The inlet water temperature of the condenser rose linearly from $15^{\circ}C$ to $50^{\circ}C$, and the heat release of condenser was reduced by 40 kW from 200 kW to 160 kW. And the power consumption of the heat pump system increased from 30 kW to 42 kW. When the inlet water temperature of condenser was $15^{\circ}C$, the heating COP(Coefficient Of Performance) was over 7.0. When it was $30^{\circ}C$, it dropped to 5.0, and when it was above $40^{\circ}C$, it decreased to less than 4.0. It was analyzed that the reduction of heating energy cost was 87% when compared to the duty free diesel that the carbon dioxide emission reduction effect was 62% by recycling the waste heat of the thermal power plant as a heat source of the heat pump system.

A study on Establishment and Management of the CCTV in Operating Room (수술실 CCTV 설치 및 운영에 대한 고찰)

  • Recently, medical accidents related to surgical procedures have increased. In addition, the media reported that some of these accidents were involved in health crimes. Patient-advocate groups have called for mandatory establishment and management of CCTV in operating rooms. There is a lot of discussion among the interested parties, so it is necessary to review the relevant laws and regulations. The purpose of this study is to identify the characteristics of CCTV in operating rooms and to review legislations related to establishment and management of the CCTV in operating rooms. Medical institutions use CCTV for management of facilities and patient safety and install it in operating rooms optionally. The Constitution guarantees the privacy and the privacy of correspondence of every citizen, but it can be limited by the law for public welfare. Currently, however, there is no existing law about establishment and management of the CCTV in operating rooms and it can be defect of legal system. Under the current legislations, it is likely that the Self-determination can be violated due to the characteristic of healthcare provider when CCTV is mandatorily installed in operating room. In addition, the regulations on access and leakage of confidential information known by operator are insufficient. So that, the safety of the visual data might be threatened. Furthermore, unless the period and the place of storage of the visual data are clearly defined, it is highly unlikely to meet the original purpose of patient safety and prevention of medical accidents. This study is meaningful as there is few previous study on this topic although the need for legal review about this is growing and several bills are being proposed. It is expected that the results of this study can be utilized as basic data for enactment or amendment of the laws and regulations about establishment and management of CCTV in operating rooms.

Microbiological Hazard Analysis and Verification of Critical Control Point (CCP) in a Fresh-Cut Produce Processing Plant -Case Study of a Fresh-Cut Leaf Processing Plant- (신선편이 농산물 가공업체의 미생물학적 위해 요소 분석 및 중점 관리 지점(CCP)의 검증 -신선편이 엽채류 가공업체를 대상으로-)

  • The objectives of this study were to analyze environmental microbial contamination levels by sampling the surfaces of processing lines and equipment and to verify CCPs of the HACCP plan in a fresh-cut produce processing plant The level of airborne microorganisms in the processing plant was $10^1$ log CFU/plate/15min. Total plate counts and coliform groups of the processing facilities were 1~2 log CFU/100 $cm^2$. No E. coli or S. aureus were detected in the processing plant. However, total plate counts on the cutting board for raw materials and on the spin-dryer were $4.20{\pm}2.12$ log CFU/$cm^2$ and $4.57{\pm}0.92$ log CFU/$cm^2$, respectively. These levels were higher than the safe microbial level, and therefore, the chance of cross-contamination during processing was increased. According to the results of microbiological analyses, total aerobic bacteria and coliform groups of the samples were increased after the second washing and spin-drying steps, due to cross-contamination from the spin-dryer. Thus, an effective method that can be used for microbial control during the washing and drying steps is needed for microbial control in fresh-cut produce processing plants. The results of a verification study also suggest that modification of the HACCP plan is needed along with additional CPs, which were identified as a second washing, spin drying, and the cold storage of final products.

The Prototype and Structure of the Water Supply and Drainage System of the Wolji Pond During the Unified Silla Period (통일신라시대 월지(月池) 입·출수 체계의 원형과 구조)

  • This research explored the relationship between the water quality issue of Wolji Pond (Anapji Pond) with the maintenance of the channel flow circulation system. The water supply and drainage system closely related to the circulation system of pond has been reviewed, rather than the existing water supply and drainage system that has been analyzed in previous studies. As a result of reviewing the water supply system, it has been learned that the water supply system on the southeastern shore of Wolji Pond, being the current water supply hole, has been connected to the east side garden facility (landscaping stone, curved waterway, storage facility of water) between the north and south fence and the waterway. This separate facility group seems to have been a subject of the investigation of the eastern side of Wolji Pond, with the landscaping stones having been identified in the 1920's survey drawings. The water supply facility on the southeastern shore, being the suspected water supply hole, seems to have some connection with the granite waterway remaining on the building site of Imhaejeon (臨海殿) on the southern side of Wolji Pond. It is inferred that it provides clean water, seeing that the slope towards the southwestern shore of Wolji Pond becomes lower, the landscaping stones have been placed in the filter area, and it is present in the 1920's survey drawings and the water supply hole survey drawing of 1975. The water drainage facility on the northern shore is composed of five stages. The functions of the wooden waterway and the rectangular stone water catchment facility seem not to be only for the water drainage of Wolji Pond. In light of the points that there are wood plugs in the wooden waterway and that there is a water catchment facility in the final stage, it is judged that the water of Balcheon Stream (撥川) may be charged in reverse according to this setup. Namely, the water could enter and exit in either direction in the water drainage facility on the northern shore It also seems that the supply to the wooden waterway could be opened and shut through the water catchment facility of rectangular stone group as well. The water drainage facility on the western shore is very similar to the water drainage facility on the northern shore, so it is difficult to avoid the belief that it existed during the Silla Dynasty, or it has been produced by imitating the water drainage facility on the northern shore at some future point in time. It seems to have functioned as the water drainage facility for the supply of agricultural water during the Joseon Dynasty. The water supply and drainage facilities in Wolji Pond have been understood as a systematized distribution network that has been intertwined organically with the facility of Donggung Palace, which was the center of the Silla capital. Water has been supplied to each facility group, including Wolji Pond, through this structure; it includes the drainage system connecting to the Namcheon River (南川) through the Balcheon Stream, which was an important canal of the capital center.

Evaluation of Sustainability for Olive Flounder Production by the Systems Ecology I. EMERGY Analysis of Olive Flounder Production (시스템 생태학적 접근법에 의한 넙치생산의 지속성 평가 I. 넙치생산에 대한 EMERGY 분석)

  • Olive flounder is one of the most important aquaculture species in Korea. Interest in the aquaculture of olive flounder has increased recently because of its good growth characteristics and high market price, However, the productivity of olive flounder aquaculture depends on economic inputs such as fuels, facilities, and labor, In this study, EMERGY concepts was used to compare the environment and economy of two olive flounder production methods, fishing fisheries and aquaculture, and to evaluate the sustainability of olive flounder production, EMERGY spelled with an 'm' is a universal measure of real wealth of the work of nature and society made on a common basis. Calculations of EMERGY production and storage provide a basis for making choices about environment and economy following. the general public policy to maximize real wealth, production and use. EMERGY flows from environment were $94.13\%$ for olive flounder fishing fisheries, and $2.20\%$ for aquaculture. EMERGY yield ratio, environmental loading ratio and sustainability index were 17.05, 1.02 and 274 for fishing fisheries and 0.06, 44.41 and 0.023 for aquaculture, respectively. These ratios indicate that the fishing fisheries will yield more net EMERGY, while the aquaculture requires a lower investment of EMERGY.

  • The following conclusions have been obtained with special reference to the walnut marketing system in Cheonwongun districts 1. The marketing channel of walnut in the producing areas was mainly depended on the individual selling by 89.58%. and sale through farmer's coops and forest owner's association by 10.42%, and share of walnut through fatmer's coops was 84.58%. 2. The market structure in assembling stage of walnut can be represented as oligopoly considering the market share of 86.26% derived by CR3 method. 3. Direct selling from producers to consumers would be recommendable to reduce marketing margin considering the 77.20% of sale's dependency on assembler-commisioner. 4. Two major reasons to follow the marketing channel of assembler-commissioner were the convieniency (45.00%) and dealing with small quantity of walnut (20.00%). Let the walnut producers follow the institutional marketing channels such as farmer's coops and forest owner s association, special actions including better conveniency, smaller quantity and the procedures should be improved. 5. Farmer's share of walnut was estimated as 54.93% and total marketing margin was 45.0% of which 36.70% destined to the retail stage. 6. The price index in November was the lowest(83.63) due to the flood and hunger sale and the index in April was the highest(115.74). To cope with the severe price fluctuation and to stabilize seasonal walnut price, sale's in advance, credit supply and provision of storage facilities must be considered in policy-making decision for forest farmers.

Estimation of sediment deposition rate in collapsed reservoirs(wetlands) using empirical formulas and multiple regression models (경험공식 및 다중회귀모형을 이용한 붕괴 저수지(습지) 비퇴사량 추정)

  • As facilities such as dam reservoir wetlands and agricultural irrigation reservoir wetlands are built, sedimentation occurs over time through erosion, sedimentation transport, and sediment deposition. Sedimentation issues are very important for the maintenance of reservoir wetlands because long-term sedimentation of sediments affects flood and drought control functions. However, research on resignation has been estimated mainly by empirical formulas due to the lack of available data. The purpose of this study was to calculate and compare the sediment deposition rate by developing a multiple regression model along with actual data and empirical formulas. In addition, it was attempted to identify potential causes of collapse by applying it to 64 reservoir wetlands that suffered flood damage due to the long rainy season in 2020 due to reservoir wetland sedimentation and aging. For the target reservoir, 10 locations including the GaGog reservoir located in Miryang city, Gyeongsangnam province in South Korea, where there is actual survey information, were selected. A multiple regression model was developed in consideration of physical and climatic characteristics, and a total of four empirical formulas and sediment deposition rate were calculated. Using this, the error of the sediment deposition rate was compared. As a result of calculating the sediment deposition rate using the multiple regression model, the error was the lowest from 0.21(m3km2/yr) to 2.13(m3km2/yr). Therefore, based on the sediment deposition rate estimated by the multi-regression model, the change in the available capacity of reservoir wetlands was analyzed, and the effective storage capacity was found to have decreased from 0.21(%) to 16.56(%). In addition, the sediment deposition rate of the reservoir where the overflow damage occurred was relatively higher than that of the reservoir where the piping damage occurred. In other words, accumulating sediment deposition rate at the bottom of the reservoir would result in a lack of acceptable effective water capacity and reduced reservoir flood and drought control capabilities, resulting in reservoir collapse damage.
