포장식품의 레토르트 공정 (Retort Processing of Packaged Foods)

  • Packaged food products often undergo retort processing, a thermal processing in a pressurized vessel called a retort, to ensure their microbiological safety or shelf-stability under normal non-refrigerated conditions of storage and distribution. Retort processing is generally aimed to accomplish commercial sterility of packaged foods with acceptable nutritional and sensorial qualities. Fundamental principles on retort processing, such as thermal resistance kinetics of target microorganism, heat penetration theory, and methods for evaluating process sterility and food quality loss, were reviewed. Factors affecting process severity, heat transfer mechanism, and heat penetration efficiency were summarized. General features of retortable packaging formats including metal cans, glass jars, and plastic packages were also briefly reviewed.

  • The use of micro bubbles in industrial fields has been increasing in the recent years., particularly micro-bubble sterilization and water purification effects. Various methods have been developed for the generation of micro-bubbles. Depending on the method of generating bubbles, the micro-bubbles can be roughly classified into saturation molding, cavitation and rotation flow types. The objective of this study was to use ventilated tube type as a method of generating micro-bubbles in order to purify large amount of water quality such as lakes and reservoirs. This method shows a difference in efficiency in which micro-bubbles are generated depending on the contact ratio of gas to liquid. The study also investigated the optimal gas liquid contact ratio by applying various orifice methods and investigated the optimum condition of micro-bubble generation by gas Based on this, a technology to develop a micro-bubble generator with a venturi type nozzle shape that has a high water purification effect was developed.

급식소 HACCP 관리항목에 대한 영양사의 중요성 인지도 평가 (Evaluation of Dietitians' Perception of Importance about HACCP Guidelines in Foodservice Facilities)

  • The purpose of the study was to evaluate the perception of importance about HACCP guidelines of dietitians. A questionnaire was developed to achieve research objectives and sent to random samples of 500 dietitians by a mail ; 418(84%) responses were analyzed. The respondents used three-point-scale to rate their perception of importance about HACCP from 1-"will be necessary" to 3-"very important". All statistical analyses were conducted using SAS package(version 8.12) for Windows. Means and standard deviations were computed for all variables. One-way analysis of variance and Duncan's multiple range test were used to assess differences in the perception of importance about HACCP guidelines among business and industry, health care and school foodservice managers. The study results were summarized as follows. Dietitians especially had lower perception of importance on the contents of Critical Control Points(CCPs), such as; adequate thawing methods and keeping records(1.95) and correct cleaning and sterilizing for raw vegetables and fruits(1.93). The rates of perception of importance about HACCP guidelines were significantly different from 19 of the 37 contents among business and industry, health care and school foodservice(p<.05 or p<.01 or p<.001). Generally, the item related to purchasing and inspection management had the highest perception level score and the item related to pre-preparation management had the lowest perception level score in foodservice production process(p<.001). Results indicate that there is a need for increased education of dietitians about HACCP principles and appropriate practices.

오존발생기 구동장치의 주파수제어에 관한 연구 (Frequency control method of ozonator power supply)

  • 선박 내 공기정화나 음료수 살균용으로 제작된 세라믹 방전판 상하면에 패턴된 전극간에 일어나는 연면 코로나 방전을 이용한 오존발생기 구동장치의 주파수제어 특성에 대하여 분석하였다. 고압변압기의 2차측 권선 자체의 인덕턴스와 세라믹 방전판 전극 자체의 용량간의 공진도를 주파수제어를 통하여 제어하여 최고 5배의 전류제어범위를 실현하였다. 기존의 전압제어 및 단속제어방식에 비하여 주파수제어 방식은 28 mg/W의 오존발생 효율과 40% 의 입력전압 변동에 대하여 3.4 % 이내의 방전전류 안정도를 갖는 것으로 측정되었다.

Biotechnological Approaches in Sericultural Science and Technology of Uzbekistan

  • Biotechnological researches in Central Asian Research Institute of Sericulture were developed since 1981 when laboratory of artificial diets for mulberry silk­worm was created. The researches were directed not only to creation of accessible artificial diets (AD) for off-season mass rearing of economical beneficial insect and for industrialization of sericulture but also to obtaining of easy reproducible source of animal proteins, carbohydrates, lipids, enzymes, enzymes inhibitors and other metabolites - bioresource for manufacture of oriental medicine preparations. Space experiments with silkworms became possible with use of AD. These experiments used mulberry silkworm as high effective board test organism with outstanding developmental, reproductive and transgenic properties having impor­tant significance in future of cosmonautics. Introduction to practice of bioprotective and ecologically pure method of drying and sterilizing of green cocoons and by-products of silk manufacture allows to increase efficiency of cocoons reeling technology as well as to preserve nativity of biological active substances in mulberry silkworm pupae that is unachievable by traditional methods of raw material processing. New spheres of application of two important silk proteins - fibroin and sericin in medicine, cosmetics, for bio- and nanotechnology are opening with use of biotechnological approaches. At present the achievements and experience of R & D in these fields are used in creation of modern pests biocontrol agents. Wound Healing Effect of 525 nm Green LED Irradiation on Skin Wounds of Male Sprague Dawley Rats

  • Many methods exist that promote wound healing, including light therapy, which consists of light beams that assist the human body in treating and sterilizing wounds, as well as regenerating cells. Irradiation with specific wavelengths of either laser or LED light has been shown to induce beneficial proliferation of fibroblasts that, depending on the size of the wound, can be effective in promoting wound healing. The experiments in this study utilized 8 week old 250~300 g Male Sprague Dawley Rats (ILAR Code: NTacSam:SD) and included a non-irradiation group and a 525 nm green LED irradiation group (n of each group = 7). In experiments animals were allowed to rest for 24 hours after wounds had been excised, which was followed by non- irradiation or 525 nm green LED irradiation therapy one hour per day for 9 days. Immunohistochemical staining was conducted for cytokeratin in order to precisely measure the defect size. In addition, Masson's trichrome staining was utilized in order to compare levels of collagen between the 525 nm green LED irradiation group and the non-irradiation group. Animals exposed to 525 nm green LED irradiation (p<0.05) healed at a faster rate and had increased collagenosis compared with the non-irradiated control group. Thus, treatment with 525 nm green LED irradiation had a beneficial effect on wound healing and should be considered as a possible alternative to low power laser treatment.

자작나무와 단풍나무류(類)의 수액채취(水液採取) 및 이용(利用) (Utilization and Tapping of the Sap from Birches and Maples)

  • This study was carried out to improve the method of tapping sap from Betula platyphylla Sukatschev, Betula costata Trautv., Betula schmidtii Regel, Betula davurica Pallas, Betula ermanii Cham, Acer mono Maxim and Acer pseudo-sieboldianum Kom and to use it to natural drinks. The mal or results are as follows: 1. It is no difference of the amount of sap by tapping methods and species of trees. The larger D.B.H. is, the more amount of sap can be gotten. So we thought that the best tapping method is hole-drilling to prevent trees from damage. 2. Sap contains sugars and mineral materials. Birches have glucose and fructose, much more mineral materials than maples. Sugar of maples is mainly sucrose. 3. We assume that mineral materials of birches are effective to urination, to make a stong dody and sucrose of maples is effective to recover from one's fatigue by controlling the blood sugar. 4. In vacuum packing after sterilizing the sap in low temperature, it could be stored more 1 year. So, it is possible that sap will be commercialized.

세포내 염색체의 분산에 관한 연구 -적혈염용액의 광조사 처리에 의한 염색체의 분산- (The Study on Scattering of Chromosomes in Cells -Scattering of Chromsomes by Treatment with Potassium Ferricyanide Solution under Light-)

  • In counting chromosome number and karyotype study, it is necessary to let chromosomes on metaphase by pretreatment before fixation. For this purpose, colchicine, or 8-oxyquinoline are generally used. The author found out that chromosomes could be scattered by illuminating cyanoferrate complex solution in which root-tips were sunk. As materials, 8 sorts of plant such as Allium fisturosum, allium tuberosum Rottler, Triticum vulgare were used. Their root-tips were sunk on the bottom of beaker in potassium ferricyanide solution $3{\times}10-4M$ and illuminated through the solution by sterilizing lamp for 1~2 hours in dark room, keeping 10 cm distance from light source to the surface of solution and 2cm depth of solution. Then again, they were illuminated to the light which was somewhat weaker intensity than the former (distance, 16cm; depth, 3cm) for 1.5~2 hours after immersed in 1/100N-HCl and washed in water for each 5minutes. By such methods chromosomes could be scattered. About the mechanism of scattering, it is supposed that CN and Fe(CN)x ions $(x {\leq}5)$ which were gradually produced in the process of photodissociation acted together on the scattering of chromosomes.

Surface Treatment of Eggshells with Low-Energy Electron Beam

  • Background: Salmonella enteritidis (SE) was the main cause of the pandemic of foodborne salmonellosis. The surface of eggs' shells can be contaminated with this bacterium; however, washing them with sodium hypochlorite solution not only reduces their flavor but also heavily impacts the environment. An alternative to this is surface sterilization using low-energy electron beam. It is known that irradiation with 1 kGy resulted in a significant 3.9 log reduction (reduction factor of 10,000) in detectable SE on the shell. FAO/IAEA/WHO indicates irradiation of any food commodity up to an overall average dose of 10 kGy presents no toxicological hazard. On the other hand, the Food and Drug Administration has deemed a dose of up to 3 kGy is allowable for eggs. However, the maximum dose permitted to be absorbed by an edible part (i.e., internal dose) is 0.1 Gy in Japan and 0.5 Gy in European Union. Materials and Methods: The electron beam (EB) depth dose distribution in the eggshell was calculated by the Monte Carlo method. The internal dose was also estimated by Monte Carlo simulation and experimentation. Results and Discussion: The EB depth dose distribution for the eggshells indicated that acceleration voltages between 80 and 200 kV were optimal for eggshell sterilization. It was also found that acceleration voltages between 80 and 150 kV were suitable for reducing the internal dose to ≤ 0.10 Gy. Conclusion: The optimum irradiative conditions for sterilizing only eggshells with an EB were between 80 and 150 kV.

멸치액젓의 위생적 품질향상을 위한 감마선 조사기술 이용 (Sanitation and Quality Improvement of Salted and Fermented Anchovy Sauce by Gamma Irradiation)

  • 멸치 액젓의 새로운 위생화 방법으로 감마선 조사기술을 이용하였고, 산업적 생산에 응용하고자 기존의 가열살균 및 정밀여 과방법과 비교하여 미생물학적, 이화학적 및 관능적 품질변화를 조사하였다. 감마선을 조사한 멸치 액젓은 미생물 제어에 효과적 인 것으로 나타났으며 조사선량이 증가함에 따라 색이 밝아지는 등 외관적으로 긍정적인 효과를 보였다. 또한 저장 기간 중 pH, 염도 및 점도 등의 변화 없이 품질이 유지되었고, 색, 향, 맛 및 종합적 기호도 등 관능적 측면에서도 대조구와 가열살균 시험구에 비해 높은 선호도를 나타내어 정밀여과 시험구와 마찬가지로 우수한 품질을 나타내었다 감마선 조사구 중 5kGy의 선량을 적용할 때 미생물학적 및 관능적 품질이 가장 적합한 것으로 나타났다. 따라서 멸치액 젓 에 감마선을 조사함으로써 가열살균 및 정밀여과 방법과 비교할 때 품질의 변화 없이 우수한 멸치 액젓을 생산할 수 있었으며, 산업적 대규모 생산에 새로운 위생화 기술로서 이용할 수 있는 가능성을 제시하였다.
