쌀밥, 오곡밥의 대량생산 표준레시피 개발 (Standardization of the Recipe for the Large-scale Production of Salbob and Ogokbob)

  • The principal objective of this study was to develop a standardized recipe for the large-scale production of Salbob and Ogokbob. The recipe was standardized as follows: we collected and recorded the amount of ingredients and production procedures currently being used by cooks in the contracted foodservice management company and hotel-based Korean restaurants. According to the food preferences of Koreans, we selected 2 kinds of rice; Salbob and Ogokbob. We developed a revised recipe and an evaluation form. We conducted a sensory evaluation with 30 panels, using a JAR (just-about-right) scale. We developed a standardized recipe for both kinds of rice. Yield, portion size, temperature, preparation time, equipment, cost, ingredients, weight of ingredients, method, and critical point were all components accounted for in the developed recipe. The factor method and the percentage method were proposed techniques for adjusting the recipe, and a direct measurement table for Salbob and Ogokbob was also devised.

We collected and recorded the quantities of ingredients and production procedures currently used by cooks in the contracted foodservice management company and in hotel-based Korean restaurants. According to the food preferences of Koreans, we selected 3 rices; Bibimbab, bean sprout bab, and fried rice. We then developed a revised recipe and evaluation form. 부산지역 생선횟집을 중심으로 생선 매운탕 소비실태 및 최적 조리법 확립 (A Study on Preference to Korean Spicy Fish Soups by Questionnaire Methods in Busan and Development of a Standardized Recipe)

  • 1. 생선매운탕 소비실태조사에서는 응답자의 93%가 생선회 먹은 후 식사로 먹는 것으로 나타났으며, 주로 횟집에서 이용하는 것으로 나타났다. 생선 매운탕의 맛은 집집마다 다르다고 응답하였으며, 얼큰한 맛을 응답자의 56%가 원하고 있었으며, 감칠맛과 시원한 맛을 원하는 것으로 나타났다. 또한 생선 매운탕의 표준 조리법의 개발의 필요성을 응답자의 89%가 인식하고 있었다. 2. 맛의 평가를 100점으로 가정할 때, 생선 매운탕 C는 $80.9{\pm}15.9$점으로 가장 높은 점수를 나타내었으며, D, B의 생선 매운탕은 각각 $75.7{\pm}17.1$, $75.7{\pm}17.2$로 나타났으며, 생수를 이용한 생선 매운탕 A가 $61.8{\pm}22.8$로 가장 낮은 점수를 받았다. 시원한 맛의 정도는 야채(콩나물, 양배추, 양파) 육수를 이용한 생선 매운탕 D 가 가장 시원한 맛이 좋다고 응답하였으며, 다음으로는 생수를 이용한 생선 매운탕 A, 멸치+다시마 육수를 이용한 생선 매운탕 B, 생선뼈+머리 육수를 이용한 생선 매운탕 C 순서로 시원한 맛이 가장 좋다고 응답한 수가 가장 높게 나타났다(39명, 13.73%). 감칠맛을 느끼는 순서는 연령과 성별에 상관없이 모두 CBDA 순(134명, 47.2%)이 가장 많은 응답을 나타났다. 보편적으로 맛이 좋다고 느끼는 순서도 감칠맛 과 마찬가지로 CBDA순(109명, 37.2%)으로 나타났다. 3. 영양성분분석결과는 각 조리법에 따른 차이는 미미하게 나타났으며, 기호적인 측면에서 가장 좋은 점수를 받은 생선 매운탕 C 즉, 머리뼈 등의 잡뼈를 이용하여 육수를 만들고 매운탕으로 조리하는 조리법이 가장 적합한 것으로 나타났다.

부산지역 낙지볶음의 표준조리법 개발 및 영양소 분석 (The Standardized Recipe and Nutrient Analysis of Stir-fried Whip-arm Octopus in Busan)

  • The purpose of this study was to develop the standardized recipe and to analyze the nutrients of stir-fried whip-arm octopus as one of the kind of traditional local foods in Busan. The standardized recipe was developed by using cookbooks, home recipes, and the recipes by commercial food restaurants. The nutrient was analyzed by using an AOAC method. Sensory evaluations were made on nine sensory attributes by a 12-member panel. As the results, the whip-arm octopus was recorded as a food source for health, rejuvenation in Jasanobo. Since early 1900, the stir-fried method has been used for cooking with the ship-arm octopus. The main ingredients were whip-arm octopus, onion, large green onion as the local stir-fried whip-arm octopus in Busan. The ingredients of soup were shrimp, little neck clam, and water. Seasoning sauce was mixed with red pepper powder, soy sauce, sesame oil, chopped garlic, chopped onion, and sugar. The seasoning sauce was fermented for three days. The results of sensory scores were salty seasoning 3.66/5.00, taste 3.75/5.00, thickness 3.84/5.00, and smell 4.09. Nutrient retention per 100g of the stir-fried whip-arm octopus was 67.54kcal, protein 6.43g, fat 1.66g, Ca 28.06mg, Fe 2.56mg, cholesterol 68mg, and taurin 51mg. Fatty acid consists of various unsaturated fatty acids such as linoleic acid(46.24%) and oleic acid(33.67%).

한국음식의 조리법 표준화를 위한 연구(I) -탕반류- (Standardization of the Recipe for Preparation of Korean Foods (I) -For the Focus on Soups-)

  • This study attempted to standardize recipe for preparation of Korean foods such as Kalbi tang (beef rib soup), Yukgaejang (Hot meat soup), and Seolnong tang (meat soup). We examined food amount included in recipes which were used by 3 groups such as cookbooks, food service institutions, and restaurants. 1. The first step in standardizing recipe, we analyzed cooking methods from 3 sources, then investigated to them about soups. Kalbi tang was investigated from 10 kinds of cookbooks, 9 places of food service institutions, and 3 places of restaurants. Yukgaejang was investigated from 13 kinds of cookbooks, and 18 places of food service institutions, and Seolnong tang was examined from 7 kinds of cookbooks, 5 places of food service institutions, and 2 places of restaurants. 2. The product which was made by standardized recipe was evaluated suitable for using by sensory panels, the recipe adjusted to the quantities and modified. When the testing was compeletly, the total yield volumn and portions by ten persons were determined as well as material weights and procedures, and the recipe was ready to be set up. For examples, standardized recipes for preparations of Kalbitang, Yukgaejang, and Seolnong tang were as followed; Yield volumn after cooking was 6.5 kg, optimum service temperature was 70$^{\circ}C$, preparation time was 6 or 10 hours for 10 persons, and service volumn per one person was 650 g, and it was presented weight of food materials, procedures, as well as references and cautions. We have in hand try to standardize recipe for preparation about several foods, for the sake of setting up it about Korean foods especially on the focus of soups. We expect that it will be general use of education for cooks as well as application in food service institutions, and does us good of cooking, saving times, economical benefits by regulating materials.

냉면 육수 조립법의 표준화 연구 (Development of a Standardized Recipe for Korean Cold Noodle Stock)

  • This study was conducted to develop a standardized Korean cold noodle stock recipe which can be used in food service establishments. The qualities of three kinds of stock made of beef rib only(B group), beef rib added with chicken(BC group), and beef rib added with chicken and vegetable(BCV group) were investigated by using sensory evaluation and instrumental analyses for free amino acids and nucleotides during heating (2, 3, 4, and 6 hr) at 90$\pm$ 5$\^{C}$ The highest amino acid contained in B, BCV, and BCV groups was arginine followed by alanine, glycine, and glutamic acid. B and BC groups was extracted to the best contents of amino acids by heating for 4 hours but BCV group for 3 hours. Nucleotides were extracted from B and BC group between 3 and 4 hours of heating but in BCV group between 2 and 3 hours. In sensory evaluation, BCV group obtained the highest score for overall preference. In the measurement of color difference, BCV group was the lowest in L value(lightness) but the highest in b value(yellowness).

한국음식의 대량생산 표준레시피개발에 관한 연구(I) -탕반류- (Standardization of Recipes for Large Quantity Production of Korean Foods (I) -With the Focus on Soups-)

  • The objective of this study was to standardize recipes for large quantity production for Korean foods such as Yukkaejang (spicy beef and vegetable soup), Sagol-woogeojitang (bone soup with young cabbage), Kalbitang (beef short-ribs soup) and Seolleongtang (beef and bone soup). We examined the ingredients and the amounts in recipes that were used by 3 groups such as foodservice management companies, commercial restaurants and cookbooks. We analyzed cooking methods from 5 foodservice management companies, 3 commercial restaurants and 2 kinds of cookbooks. Each soup that was made by a standardized recipe was evaluated by consumer sensory panels. The total yield volume and portions for 100 persons were determined as well as ingredients, weights and methods. The standardized recipes were as followed; yield volume after cooking was 38-40kg, optimum service temperature was 78-82$^{\circ}C$, preparation time was 4-16 hours for 100 persons, and one portion was 380-400g, and we recorded the weight of foods and methods, as well as reference and garnishes. We expect that the standardized recipes for large quantity production will be necessary for use by cooks as well as by food preparation in foodservice institutions.

쿡췰(Cook/Chill)시스템을 이용한 고등어조림의 HACCP 레시피 개발 및 생산과정의 품질평가 (The Development of HACCP-Based Standardized Recipe and the Quality Assessment of Cook/Chilled Soy Sauce Glazed Mackerel)

  • The purposes of this study were to develop Hazard Analysis Critical Control Point-based standardized recipe applicable to cook/chilled soy sauceglazed mackerel and to evaluate the qualities related to the product flow of this item. After conducting experimental cooking, preliminary test, and analysis of recipes, critical control points were identified, control methods were determined, and HACCP-based recipe was standardized. At each critical control point, time-temperature profile was recorded and microbiological analysis (total aerobic plate counts, psychrotrophic plate count, coliform, and fecal coliform count), chemical analysis (pH, acid value and volatile based nitrogen (VBN)) and sensory evaluation of the item were done. Time-temperature data showed that the time the menu item had passed through temperature danger zone (5∼60$^{\circ}C$) during all phases was 60 min. At rapid cooling, but after cooling at room temperature, the temperature of this menu item did not drop below the ambient temperature. The results of microbiological test were negative throughout all phases following cooking and the results of chemical analysis did not change significantly in terms of storage periods except for VBN which increased on 7th day significantly(p<0.05). After steam/convection oven reheating and microwave oven reheating, the sensory score of the only appearance decreased significantly related to the storage time of overall quality profiles. But significant differences were not detected according to two reheating methods. In conclusion, this HACCP-based recipe was considered as an effective tool for assuring microbial as well as sensory quality of this cook/chilled item.

  • 최근 산업 자동화 분야에서는 확장성을 고려한 표준화된 소프트웨어 기반 모션 제어 시스템 개발 방법과 다품종 소량 생산을 위한 다양한 동작 모드 지원에 대한 요구가 증대되고 있는 추세이다. 소프트웨어 기반 모션 시스템은 단일 장비 상에서 다양한 동작 모드 전환이 용이하게 하지만 다중 동작 모드를 쉽게 정의하는 도구와 동작 모드 변경에 대한 표준화된 동작 절차가 정의되어 있지 않은 상태에서 다중 동작 모드를 지원하는 모션 제어시스템을 구성하는 것은 쉽지 않다. 본 논문에서는 PLCopen 표준 호환 모션 블록들을 이용해 다중 동작 모드를 구성하고 모드 변경을 외부에서 구동하기 위한 프로토콜을 포함하는 모션 레시피 개념을 제안한다. 제안된 모션 레시피 개념은 IEC 61131-3 표준 호환 통합개발 환경인 Beremiz의 기능을 확장하여 구현하였으며, 실제 테스트베드 상에서 그 동작을 검증하였다.

Quality Characteristics of Orange Sauce according to Sugar Contents for Recipe Standardization

  • This research examined the quality characteristics of orange sauce samples prepared with different sugar contents in order to create a standardized recipe.In the foodservice industry, attempts have been made to make superior sauces, often resulting in error. In this study, different sugar contents were examined for orange sauce to determine why varied results occur during its preparation as well as the best methodology for preparing orange sauce. Quality characteristics such as color differences, spreadability, and pH were analyzed, as well as sensory evaluations of taste, texture, color and overall acceptability. The pH values of the orange sauce samples ranged from 3.6 to 3.63 and after the initial simmering of ingredients, the weight reduction rates of the sauces were 88, 75, 64, 63, and 64% for sugar contents of 200, 300, 400, 500, and 600 g respectively. Hunter's color L, a, and b values of the samples changed according to the sugar contents after simmering (1st sauce). The L and b values showed similar patterns, where increasing sugar content resulted in higher values; however, in the 2nd sauce, the pattern was reversed. This indicates that the color of the sauce was affected by sugar caramelization during the reduction process; however, the final color was modified by the additions of mayonnaise and butter as well as by aeration. In the sensory evaluation the sample containing 30% sugar (500 g) had significantly higher acceptability scores (p<0.05) for color, mouth feel, appearance, taste, and overall acceptability. Finally, the optimal ingredient ratios of the standardized orange sauce recipe were determine as: 48% total liquid consisting of orange juice and mandarin and orange fruit; 30% sugar; 10% mayonnaise and 11% butter.
