Non-destructive quality prediction of domestic, commercial red pepper powder using hyperspectral imaging

  • We analyzed the major quality characteristics of red pepper powders from various regions and predicted these characteristics nondestructively using shortwave infrared hyperspectral imaging (HSI) technology. We conducted partial least squares regression analysis on 70% (n=71) of the acquired hyperspectral data of the red pepper powders to examine the major quality characteristics. Rc2 values of ≥0.8 were obtained for the ASTA color value (0.9263) and capsaicinoid content (0.8310). The developed quality prediction model was validated using the remaining 30% (n=35) of the hyperspectral data; the highest accuracy was achieved for the ASTA color value (Rp2=0.8488), and similar validity levels were achieved for the capsaicinoid and moisture contents. To increase the accuracy of the quality prediction model, we conducted spectrum preprocessing using SNV, MSC, SG-1, and SG-2, and the model's accuracy was verified. The results indicated that the accuracy of the model was most significantly improved by the MSC method, and the prediction accuracy for the ASTA color value was the highest for all the spectrum preprocessing methods. Our findings suggest that the quality characteristics of red pepper powders, even powders that do not conform to specific variables such as particle size and moisture content, can be predicted via HSI.

  • 건조방법을 달리한 께묵(Hololeion maximowiczii) 뿌리의 색도변화에 대해서 조사하였다. Hunter value에서 분말의 경우에는 HADB가 더 진한 편이었으나 용액의 경우에는 HADB가 제일 연한 색깔을 띄었다. 수용액 색소의 420nm에서의 흡광도는 FD group이, 자외부에서 흡광도는 HADB group이 가장 강하였다. 께묵의 색소는 분말상태에서보다 용액상태에서 더 불안정하였으며, 색소분해에 대한 활성화에너지는$(90{\sim}100^{\circ}C)$ 약 20.9kcal/mole이었다.

Studies on Structure and Color of the White Antheraea pernyi, Silkworm Cocoon

  • Traditional Antheraea pernyi silkworm cocoon is tawny color. The white Antheraea pernyi silkworm cocoons studied here by IR and UV are new breeds of recent breeding. We discovered that the main body of the first grade structure of silk protein in the new white is as same as the one in the traditional tawny Antheraea pernyi silkworm cocoon, yet there are small quantities of cross-linked polymer of gentisic acid and silk protein in the white silkworm cocoons. In spite of the least surviving quantity of the polymer, the white silkworm cocoons are most white and its white color is similar to white Bombyx mori silkworm cocoon.

자두 Nectar의 퇴색(褪色)에 미치는 영향인자(影響因子) (Factors Affecting Color Loss in Plum Nectar)

  • 자두넥타의 가공(加工) 저장시(貯藏時) 색깔을 안정화(安定化) 할 수 있는 방법(方法)을 마련하기 위(爲)한 기초실험(基礎實驗)으로 자두넥타로부터 색소(色素)를 추출(抽出) 정제(精製)하여 그 구성성분(構成成分)으로 anthocyanin 0.62 mg/g fruit, total phenolics 4.69 mg/g fruit을 얻었고 이 색소(色素)는 525nm 부근(附近)에서 최대흡광도(最大吸光度)를 가졌다. 자두넥타의 퇴색(褪色)에 가장 중요(重要)한 영향인자(影響因子)가 되는 것은 온도(溫度)이며, 실온(室溫)에서 500 시간(時間)에 half life를 가지던 자두색소(色素)는 $80^{\circ}C$에서는 $20{\sim}30$시간(時間)으로 격감(激減)하였다. color loss는 pH 에도 크게 영향을 받았고 산도(酸度)가 증가(增加)함에 따라 색소(色素)의 안정도(安定度)가 증가(增加)하였다. Ascorbic acid, Cu 또는 Fe과 같은 금속이온의 첨가농도(添加濃度)가 증가(增加) 할수록 색소(色素)의 half life가 감소(減少)하며 열처리(熱處理)로 손상(損傷)된 자두넥타의 혼입량(混入量)이 증가(增加) 할수록 퇴색속도(褪色速度)가 증가(增加)하고 탄수화물(炭水化物), 분해대사물(分解代謝物)인 hydroxymethyl furfural의 함량(含量)이 증가(增加)될수록 색소손실율(色素損失率)이 증대(增大)되었다. 발효균주(醱酵菌株)의 배양(培養)에 따라 발효(醱酵)가 진행(進行)되는 동안 색소손실량(色素損失量)은 증가(增加)하였으며 추출색소(抽出色素)의 spectrum도 상이(相異)한 결과(結果)를 보여 주었다.

Use of tar color additives as a light filter to enhance growth and lipid production by the microalga Nannochloropsis gaditana

  • The spectral composition of light can affect the growth and biochemical composition of photosynthetic microalgae. This study examined the use of light filtering through a solution of soluble colored additives, a cost-effective method to alter the light spectrum, on the growth and lipid production of an oleaginous microalga, Nannochloropsis gaditana (N. gaditana). Cells were photoautotrophically cultivated under a white light emitting diode (LED) alone (control) or under a white LED that passed through a solution of red and yellow color additive (4:1 ratio) that blocked light below 600 nm. The specific growth rate was significantly greater under filtered light than white light ($0.2672d^{-1}$ vs. $0.1930d^{-1}$). Growth under filtered light also increased the fatty acid methyl ester (FAME) yield by 22.4% and FAME productivity by 80.0%, relative to the white light control. In addition, the content of saturated fatty acids was greater under filtered light, so the biodiesel products had better stability. These results show that passing white light through an inexpensive color filter can simultaneously enhance cellular growth and lipid productivity of N. gaditana. This approach of optimizing the light spectrum may be applicable to other species of microalgae.

Jar Fermenter에 의한 홍국의 배양, 색소특성 및 안정성 (Characteristics and Stability of Pigments Produced by Monascus anka in a Jar Fermenter)

  • Monascus anka가 생산하는 색소는 균체외 적색색소(ERP)와 황색색소(EYP) 그리고 균체내 적색색소(IRP) 와 황색색소(IYP)로 분리되었고 각각의 색소는 특징적인 absorption spectrum을 나타냈다 분리된 4종의 색소의 안정성을 검토한 결과, 암조건, 자외선 그리고 형광하에서는 비교적 안정하였지만 일광하에서는 색소가 급격히 퇴색하는 경향을 나타내 저장시 광차단이 필요함을 알 수 있었다. pH에 대해서는 각 색소가 pH 2.0~12.0 범위에서 비교적 안정하였다. 온도의 영향은 60~8$0^{\circ}C$에서는 비교적 안정하였으나 그 이상의 온도에서는 안정성이 떨어지는 것으로 나타났다. 8종의 유기산 중에 tartaric acid와 citric acid가 홍국색소의 안정성을 저해하는 것으로 나타났고 propionic, formic, acetic, butyric, malonic, malic acid는 비교적 안정하였다. 홍국색소의 변색에 가장 큰 영향을 미치는 금속 이온은 Cu$^{2+}$이었다.

  • This study aimed to search for separate and identify of Quercus acutissima CARRUTHERS tannins. Tannins were extracted with methanol and ethylacetate from acorn powder and identified TLC, UV spectrum, HPLC, IR, GC/MS, and $^{1}H$ NMR. Three spots($R_{f}$ 0.94, 0.84 and 0.29) detected on TLC. These spots gave dark blue color fairly on spraying with 0.3% potassium ferricyanid${\cdot}$0.3% ferricchloride reagent, and these tannins identified as gallic acid, caffeic acid and ellagic acid by UV spectrum, HPLC, IR, GC/ MS, and $^{1}H$ NMR.

가열조건에 따른 마른김의 색택 변화 연구 (Color change of dried laver according to heating conditions)

  • To verify the color change in dried laver postproduction during the heating process, chromaticity elements were compared via a spectrophotometer across various heating conditions within the visible light spectrum. In general, the moisture reduction rate increased with rising temperature and time. Surface image comparisons revealed an expanded area of light reflection on the heat-treated dried laver sample due to surface roughening from shrinkage. No statistically significant differences in chromaticity values were observed in the measurements of brightness (L*), redness (a*), and yellowness (b*). Reflectance spectrum measurements in the visible light region confirmed high reflectance under red wavelength conditions. In particular, a significant increase in reflectance at 700 nm compared with untreated samples was noted. The correlation between the increase in 700 nm reflectance of dried laver samples and heating conditions ranged from 0.7471 to 0.7793, suggesting its potential use as an indicator for comparing color changes in dried laver based on heating conditions.

새싹보리 클로로필의 색 안정화 (Color Stability of Chlorophyll in Young Barley Leaf)

  • To improve the color stability of chlorophyll in young barley leaf used as functional green biomaterial, the absorption spectrum, color values, and antioxidative activities of young barley leaf (YBL) treated with zinc ion solutions were investigated. The small pieces of fresh YBL in aqueous solution mixtures were autoclaved twice at $110^{\circ}C$ for 30 min (pH 5). Distilled water (BLA), 0.01% zinc chloride (BLAZ), 0.01% zinc citrate (BLAC), and 0.01% zinc lactate (BLAL) solutions were used. Treated YBL powders were extracted with 80% EtOH for 4 h. Chlorophyll a and b contents differed with different treatments. BLA decreased chlorophyll a and b contents, whereas others were maintained. Absorbance spectrums of chlorophyll at 400~700 nm showed different maximum peak wavelengths. After heating in acidic and neutral solutions (pH 3, 5, and 7), the colors of YBL and BLA changed from green to olive green, whereas BLAZ, BLAC, and BLAL remained green color. The antioxidative activities showed higher values in YBL extract than in treated extracts. From the above results, autoclaved YBL in zinc solution would increase the color stability and maintain green color regardless of acid and heat treatments.

제주산 감귤 품종별 carotenoid, 색도, UV 스펙트럼, 유기산 및 유리당 함량 (Carotenoid, Color value, UV Spectrum, Organic Acid and Free Sugar Contents of Citrus Varieties Produced in Cheju)

  • Total carotenoid contents, color values and spectrum characterization in the range of UV of fruit juice and organic acid and free sugar contents determined by HPLC were investigated on 10 varieties of Cheju citrus fruits. Carotenoid contents of juice were 0.47-9.20$\mu\textrm{g}$/ml which showed higher with Dangyooja while showed lowest content with Meiwa Kumquat. Lightness (L) of juice was highest in Meiwa Kumquat, and in the order of Sankyool, Navel orange and Hungjin. Redness(a) and yellowness(b) were in the order of Dangyooja, Natsudaidai, Sambokam and Kinkoji. The maximum absorption wavelengths if citrus Juices were variable at 269.5-285.5nm according to varieties and it was observed that were changed by mixing with Juices of other varieties. Major organic acids of citrus juice were citric and malic acid, and citric acid was 64.4-95.1% of total organic acids. Ascorbic acid was high in Navel orange, Sudachi and Dangyooja, and low in Meiwa Kumquat and Hungjin. Major free sugars were sucrose, glucose and fructose. Sucrose was 49.2-75.2% of total free sugars, and high in Sankyool and Meiwa Kumquat. Glucose and fructose were high in Meiwa Kumquat and Navel Orange.
