To study the nutritional value of warty sea squirt, Styela clava, which is one kind of urochoda and it has been used as special seafood stuffs by Korean, the seasonal variations of nutrient was investigated. The moisture content was ranged from 83.6% to 86.8% in experimental period. Maximun glycogen content showed up in June (3.7g/100g sample). The protein(N$\times$6.25) and lipid content varied with glycogen whereas ash content was not changed remarkably, showing 2.8$\pm$0.3%. Predominant minerals in edible portion and integuments were sodium, potassium, calcium and magnesium in order. Predominant constitutiional amino acids were asparagine, glutamic acid, taurine, aspartic acid, lysine and glycine and amino acids occupied 50% of the total amino acid. Porportion of nonpolar lipid to total lipid increased from April to early June while polar lipid level decreased. The neutral lipid was composed of triglyceride(59.32%) and free sterol(23.52%), and followed by diglycerides, monoglycerides, esterified sterols and hydrocarbon, free fatty acid. The phospholipid was mainly composed with phosphatidyl choline(49.7%), and phosphatidyl ethanolamine(33.0%). The major fatty acids of the total lipid in warty sea squirt were C20 : 5(17%), C22 : 6(13.76%), C16 : o(13.91%) and C16 : 1(12.52%).
The purpose of this study was to investigate the nutritional intake and dietary habits of women divers in Tongyoung area and to support the guideline for the improvement of their dietary life style by a validation of a Computerized Semi-quantitative Food Frequency Questionaire. Compared to the women at Jeju Island, the Tongyoung divers showed similar heights (154.6 $\pm$ 0.8 cm), weights (53.5 $\pm$ 1.0 kg) and BMIs (23.3 $\pm$0.4) , but they showed especially high levels of body fat (33.8 $\pm$ 0.8) . Their dietary habits showed they usually skipped lunch, but ate too much food at once, which may represent the dietary habits shown by obese people. Over 40% of the divers were taking some nutritious food or complementary food for health, without realizing the efficacy of these foods. The analysis of nutritional intake showed that all of average daily nutrients intakes of those below 50 years were higher than those of the Korean RDA. In the case of those above 50 years, it was shown that the average daily nutrients intakes were also higher than those of the Korean RDA except for energy (94.5%) and calcium (82.1%) . However, some individual divers showed lower nutrients intakes than 75% of RDA for calcium, iron, Vitamin A and Vitamin B$_2$. Also, excessive intakes of phosphorous and sodium could be a dietary problem. There was no correlation between BMI or percentage of body fat and energy, CHO, protein or fat. These results can provide the nutritional information for this special community, women divers, to improve their health.
This study is based on data from the food consumption survey on 727 members of 125 farm households from 7 different provinces. The survey was conducted in May, 1975 in cooperation with the O.R.D. The results obtained in this study are summarized as follows. 1. The average consumption of the basic food groups per capita per day was 563 g for cereals and grains(398g of rice and 129g of barley), 87.6g for meats and legumes, 317.8g for fruits and vegetables, 25.7g for milks and small fishes, 9.1g for fats and oils, and 45.1g for other group. 2. The average daily consumption of calories and nutrients was 2256 cal and 11.7g for animal proteins, 70.5g for total proteins, 21.6g for fats, 537.4mg for calcium, 18.1mg for iron, 5375lU for vitamin A, 1.27mg for thiamine, 1.05mg for riboflavin, 15.5mg for niacin, 77.7mg for ascorbic acid. When these figures are compared with the recommended allowances for Korean, the calories and nutrients intakes were satisfactory, except for the intakes of animal protein which was below two third of the recommended allowance. 3. The diets of the projected villages differed from those of the non-projected villages in the following respect: (a) The amounts of animal proteins and fats were larger in the projected villages than in the non-projected villages. (b) The percentage contribution of fats to the total amount of calories from three nutrients, carbohydrates, proteins and fats was higher in the projected villages than in tile non-projected villages. (c) The percentage contribution from carbohydrates to the total amount of calories was higher in the non-projected villages than in the projected villages. 4. Certain physical and clinical symptoms were observed among the people in the rural areas, which can be related to the shortages of animal proteins and fats in their diets. It is recommended to pay special attention to the nutrition of school children in the Korean rural areas.
This retrospective study was conducted to investigate the growth of children and their care person's weaning behaviors and its relation between the growth and care person's attitude and behaviors about weaning. 272 subjects who had child under 2 years old at that time were randomly selected and answered the special questionnaire. Results were as follows: Using to Kaup index, 13.4% of children were estimated undernutrition, 60.6% were normal and 26.0% were estimated overnutrition. 97.6% of respondant (children's mother) were recognized the need of weaning and the first prurpose of weaning was supplement of nutrients, and the next one was to set up normal food habits. 39.1% of subjects were used normal adult foods as weaning food. 60.9% of subjects were proepared special foods (making at home or buying commercial weaning food). The socioeconomic status was major factor to influence mother's behaviors about weaning. Vegetable and meat gruel was the most commen weaning food and the next one was fruits puree and rice with soup. The correlationship were found between Kaup index and the score of mother's weaning behaviors, between momer's eductional level and the score of weanig behaviors. 96% of subjects wanted nutritional education about weaning. They wanted to know about desirable weaning process and correct informations of commercial weaning foods mid the convenient cooking methods. According to the difference of socioeconomic status subjects were wanted different eductional methods. Upper socioeconomic group wanted special books about weaning and lower class wanted to be educted through the mass media especially television programs.
Following the previous report (Part I: For Sea-divers and Hwa-Jeon-Min) authers have conducted another nutrition survey for Buddhists (male and female) in a temple 'Soo Duk Sa' locating in ChungNam province. The following results were obtained: 1. Cereals, green vegetables and potatoes were staple foods for the Buddhists (male and female) and no any animal foods were eaten by them during the survey period. 2. Carbohydrate intake was very high and the calorie derived from it occupied approximately 80% of tatal calorie intaken. 3. All the nutrients except carotene, niacin and iron are low in their amounts of intake. Especially, protein and riboflavin intakes are low. 4. Buddhists are prohibited to eat animal foods. Therefore, nutrition education and guidance are needed for them to supplement the protein and some other problems.
This paper describes and assesses the parameterisation of MP, the microplankton compartment of the carbonnitrogen microplanktondetritus model. The compartment is 'the microbial loop in a box' and includes pelagic bacteria and protozoa as well as phytoplankton. The paper presents equations and parameter values for the autotroph and microheterotroph components of the microplankton. Equations and parameter values for the microplankton as a whole are derived on the assumption of a constant 'heterotroph fraction'. The autotroph equations of MP allow variation in the ratios of nutrient elements to carbon, and are largely those of the 'cellquota, thresholdlimitation' algal growth model, which can deal with potential control of growth by several nutrients and light. The heterotroph equations, in contrast, assume a constant elemental composition. Nitrogen is used as the limiting nutrient in most of the model description, and is special in that MP links chlorophyll concentration to the autotroph nitrogen quota.

Shiitake mushroom contained numerous nutrients, special flavor (lenthionine) and taste. In Asia, they are thought to have numerous medical properties f3r several diseases such as diabetes, anemia, tumors. Phosphates are known to increase hydration and water binding, stabilize meat emulsions, improve juiciness and tenderness, provide mineral supplementation, and maintain flavor of processed meat products. A lexicon f3r describing the texture and flavor of cooked pork patties were developed. (omitted)
This study was intended to provide basic information for nutrition education and meal planning by evaluating the nutritional status, food habits, and food preference of elementary school children with school lunch program and without school lunch program(lunch box). The subjects of this study consisted of 266 elementary school children aged from 10 to 12(136 male, 130 female) in Ulsan the area. The survey was conducted by questionnaires and data were analyzed by SPSS program. The average body weight was $38.4{\pm}6.9kg$ for boys and $36.8{\pm}7.4kg$ for girls and the average heights was $141.3{\pm}5.6cm$ for boys and $141.2{\pm}5.7cm$ for girls. These values were lower than that of the Korean reference. 56.0% of the subjects skip breakfast 1 to 2 times a week, 58.2% of the subjects had prejudice for special food, such as bean, anchovy, and pork. The food habit scores of the subjects was divided into poor(11.7%), fair(63.5%), and good(24.8%). The average score of girl's was significantly(p<150) higher than that of the boy's. Compare to 1/3 of RDA for children, the average intake of nutrients provided lower amounts of all nutrients. Therefore Calcium and vitamin A intakes were especially lower than the others. Therefore the importance of milk and green vegetables must be emphsized to them through nutrition education. Children preferred ssalbab to jabkogbab and liked beef-based soup, and baechu kimchi. There were significant differences in food habit scores with gender, parent's education, and exercise. The results of this study indicate that nutrition education and menu planning program should be applied to elementary school children who are served by the school lunch program.

Onto the world-fastest ageing of society, the world-lowest fertility rate prompted a development of various policies and programs for a betterment of the population in Korea. Since the vulnerability of young children of low socio-economic class to malnutrition was clearly shown at the in-depth analysis of the 2001 Korea National Health and Nutrition Examination Survey data, an effort to devise supplemental nutrition care program for pregnant/breastfeeding women, infants and preschool children was initiated. The program was designed to offer nutrition education tailored to fit the needs of the participants and special supplementary foods, using USDA WIC program as a benchmark. Based on the dietary intake of those age groups, target nutrients were selected and their major food sources were searched through nutrient content of foods and dietary pattern analysis. As a result, we developed 6 kinds of food packages using combinations of 11 different food items. The amount of each item in a food package was determined to supplement the intake deficit in target nutrients. Nutrition education in $NutriPlus^+$ aims to improve the nutrition knowledge, attitude, and dietary behaviors of the participants, and is provided through group lessons, individual counseling sessions and home visits. Breastfeeding is promoted with top priority in education for the health of both mother and baby. The eligibility guidelines were set for residency, household income, age, pregnancy/breastfeeding and nutritional risk such as anemia, stunting, underweight, and/or inadequate nutrient intake. Income eligibility was defined as household income less than 200 percent of the Korean poverty guidelines. A pilot study to examine the feasibility of program implementation was run in 3 public health centers in 2005 and expanded to 15 and 20 in the following 2 years. The result of 3-year pilot study will be reported separately along with the ultimate nationwide implementation of the $NutriPlus^+$ in 2008.
This study investigated dietary behavior and nutrient intake in children with developmental disorders as compared with non-disabled children and assessed the relationship between dietary behavior and nutrient intake. The survey was conducted on 118 students ($4^{th}$ and $5^{th}$ grade) of four special education schools and 244 students of an elementary school (control group). The survey was carried out using a questionnaire and an interview. Of the disabled children, children with a mental disorder comprised 72.9% and those with emotional disorders including autism comprised 26.3%. The average percentages of height and weight to standards for age were significantly lower in the disabled female children as compared with the non-disabled female children. Scores for table utensil handling skills, eating behavior, and an unbalanced diet were lower in the disabled children compared with those in the non-disabled children. Dietary behavior scores were not significantly different by either gender or age in the disabled children. Mean energy intake was less than the estimated energy requirement in both groups. Nutrients taken at less than the recommended intake level were calcium, iron, vitamin A, and folate in both groups. Food behavior score at mealtime, personal hygiene score at mealtime, and an unbalanced diet score were significantly correlated with iron and vitamin A intake in disabled male children. Personal hygiene score at mealtime was significantly correlated with calcium, iron, and vitamin A intake, and unbalanced diet score was significantly correlated with iron and vitamin A intake in disabled female children. Although the nutritional status of disabled children with developmental disorders was appropriate in general, improvement in their dietary behaviors through education and practice would allow them to eat balanced diets with essential nutrients.
