Quality characteristics of home-made doenjang, a traditional Korean soybean paste (가정에서 제조된 전통된장의 품질특성)

  • To assess the quality characteristics of home-made Doenjang prepared by traditional methods, general components, organic acids, amino acids and fatty acid composition of Doenjang were investigated. The contents of moisture, crude protein, crude lipid, salt and the titratable acidity(as milliliter of 0.1 N NaOH consumed) of Doenjang were 57.3%, 11.6%, 8.3%, 13.9%, and 11.8, respectively. There were wide variation in the contents of crude protein and salt among all samples. The average content of amino type nitrogen was 308.4mg%(w/w), however, it ranged from 202.3 to 416.3 mg% in which the contents some samples were 1.3∼2.1 folds greater than others. Hunter color values of L(lightness), a(redness) and b(yellowness) were 37.3, +19.6, and +17.5, respectively. Browning index value(expressed as optical density at 425 nm) of water-soluble compound(2.23) was more than 5.7 times higher than that of water-insoluble compound(0.39). The contents of free and total amino acids were 2908.9 and 9019.3 mg%, respectively, and the range of free amino acids(1.8∼6.2 times) were much wider than the range of total amino acids(1.2∼2.0 times). Glutamic acid was most abundant in free and total amino acids as 576 and 1,126 mg%, respectively. The main organic acid was lactic acid as 326.8 mg% ranging from 59.4 to 613.4 mg%. Linoleic acid(49.24%) showed the highest content in total fatty acids. Unsaturated fatty acid comprised 81.97% of total fatty acids and polyunsaturated fatty acid ranged from 51.79 to 62.97%.

An Experimental Study on Water-Purification Properties in Cement Bricks Using Effective Micro-Organisms and Zeolite (유용 미생물과 제올라이트를 이용한 시멘트 벽돌의 수질 정화 특성에 관한 실험적 연구)

  • The purpose of this study is to use organisms or micro-organism functions for eco-friendly water-purification of cement bricks, utilizing bioremediation. Many researches have been performed in the past to improve water quality by using effective micro-organisms in construction materials. In order to purify water using micro-organisms, this research used soybean paste bacteria, an effective micro-organism that was identified through 16S rDNA sequence analysis performed in Daegu S. Environment Protection Institute in addition to Natto bacteria that was studied in the previous research. With these effective micro-organisms with water-purification ability, this study examined their water-purification possibility on cement bricks. This study used Zeolite to immobilize micro-organisms to bricks, and confirmed that the micro-organisms were attached on Zeolite from SEM analysis. The experimental results showed that specific micro-organisms can be used to effectively remove contamination an used to develop eco-friendly construction materials. The study on micro-organisms for material purification shows great promises as a future research topic.

Effect of Dietary Herb Extract Mix on Antioxidative Activity of Chicken Thigh Meat (약용식물 추출물 급여가 닭 다리육의 항산화 기능에 미치는 영향)

  • This study was performed to investigate the effect of dietary medicinal herb extract mix (MHEM, mulberry leaf : Japanese honeysuckle : goldthread=48.5:48.5:3.0) on antioxidative activity of chicken thigh meat. The dietary treatments consisted of a corn-soybean meal basal diet (control), basal diet with 0.3% and 1% MHEM. At the end of the feeding trial, thigh meat samples were collected and stored in a refrigerator at $4^{\circ}C$ to be analyzed on day 0, 3, 7 and 14. The MHEM did not affect proximate composition of the thigh meat. Total phenol contents of the thigh meats in treatment groups were higher than that of the control (p<0.05). 1,1-Diphenyl-2-picrylhydrazyl radical scavenging activity were higher in dietary treatment group. 2-Thiobarbituric acid reactive substances values of the treatment group were lower than that of control at day 7 and 14 and the added level also affected the inhibition of lipid oxidation of thigh meat. In sensory test, panelists preferred treatment group at day 7 and 14. Therefore, results indicate that dietary MHEM added to chicken may retard the oxidative deterioration of chicken thigh meat during cold storage.

Quality and Antioxidant Characteristics of Soft Tofu Supplemented with Red Ginseng Extract during Storage (홍삼 추출물을 첨가한 연두부의 저장 중 품질 및 항산화 특성)

  • To develop tofu enhanced nutrition, storage stability and bioactivity, the soft tofu supplemented with red ginseng extract was prepared. Then, quality characteristics including storage stability, physical and chemical property, antioxidative activity, and sensory evaluation were measured. The pH and acidity of control tofu without red ginseng extract were not different from those of tofu supplemented with red ginseng extract during storage. The aerobic bacteria in the control tofu were detected from 10 days of storage whereas the number of total aerobic bacteria was reduced or not detected in the tofu added red ginseng extract during storage. The lightness and redness of the tofu supplemented with red ginseng extract were lower than those of control, but yellowness was higher. The addition of red ginseng extract did not also affect the texture of tofu, and increased lipid peroxidation inhibition and DPPH radical scavenging activity. Although the soft tofu manufactured with red ginseng extract showed a lower sensory preference in supplementation over 0.20% due to color, there was not much difference found until 0.18% red ginseng extract addition.

Preparation of Natto(Unripe Chungkukjang) Using Small Soybeans and Bacillus subtilis KCCM 11315 (소립콩과 Bacillus subtilis KCCM 11315 균주를 이용한 생청국장의 제조)

  • This study was carried out to investigate the optimum conditions for the preparation of natto(unripe Chungkukjang) using Sowonkong(small soybeans) and Bacillus subtilis KCCM 11315. The changes in the contents of amino-type nitrogen, ammonia-type nitrogen, total acidity and total sugar, and those in the pH, browning materials and microbial growth were determined during fermentation and aging of natto(unripe Chungkukjang). The amounts of amino-type nitrogen and ammonia-type nitrogen were increased gradually during the fermentation at $40^{\circ}C$ for 72 hours, but those of total acidity and total sugar were decreased. The pH was gradually alkalized, and more water soluble browning materials were produced during fermentation. The number of viable cells was the highest at the 36 hours of fermentation. The content of ammonia-type nitrogen was significantly decreased during aging at $4^{\circ}C$ for 48 hours. In view of the results as above, it seems possible to conclude that the natto(unripe Chungkukjang) fermented by Bacillus subtilis KCCM 11315 at $40^{\circ}C$ for 36 hours and then aged at $4^{\circ}C$ for 48 hours was suitable for manufacturing natto(unripe Chungkukjang).

Pigment Content in Meju Fermented by a Monascus Species with Different Materials (Monascus속 곰팡이를 이용한 메주의 재료에 따른 색소함량)

  • The pigment content in meju fermented by a Monascus species with different materials was studied. The relations between growth of M. pilosus and pigment production were positive and the correlation coefficient associated with this relationship was determined to be : r = 0.9879. Pigments produced by M. purpureus and M. pilosus were composed of 9 and 8 bands, respectively. One kind of them was yellowish, whereas the others were reddish. Total pigment levels in rice meju fermented by M. purpureus and M. pilosus were 335.25 and 1428.90$\mu\textrm{g}$/g, respectively. Pigment levels in the mejus fermented at 3$0^{\circ}C$ showed higher than those at 20 and 4$0^{\circ}C$. The order of pigment content in meju was polished rice > germinated brown rice > wheat > brown rice > waxy brown rice > germinated waxy brown rice. Pigment production by M. pilosus was higher than that of M. purpureus. Pigment content in rice meju prepared by adding 10% seed culture was highest, and pigment content of granulated rice was higher than that of powdered rice. Pigment production was not desirable in soybean meju fermented by seed culture, whereas the pigment levels in meju by adding 10% powdered rice and 10% powdered rice seed meju increased by 23.0 ~75.0 $\mu\textrm{g}$/g.

Preparation and Characteristics of Snack Using Conger Eel Frame (붕장어 Frame을 이용한 스낵의 제조 및 특성)

  • Fish-frames, which are left after obtaining fillets or muscle during fish processing, consists of useful food components, such as muscle, collagen, calcium, eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA). This study was carried out to prepare snack using conger eel frame (SF) for human consumption and also to elucidate food component characterization of the snack. The results of volatile basic nitrogen suggested that conger eel frame was a suitable material for preparing snack. Based on the results of sensory evaluation and costs, starch syrup was an optimal sweetener for preparing snack using conger eel frame. The starch syrup-treated SF appeared safe because the moisture content and peroxide value were below the safety limits described in the guideline of Korea Food and Drug Administration (KFDA). Starch syrup-treated SF was similar in the pattern of fatty acid composition to soybean oil, whereas EPA and DHA were detected in SF. The total content of amino acid in starch syrup-treated SF was 23.9% based on 100 g of raw material. The maj or amino acids were aspartic acid, glutamic acid, glycine and alanine. The total contents of calcium and phosphorus in starch syrup-treated SF were 4.9% and 2.8%, respectively. The Ca/P of starch syrup-treated SF was 1.9, which is a good ratio for absorption of calcium. The SF made with starch syrup was superior in EPA and DHA compositions, total amino acid, calcium and phosphorus contents to commercial snack using eel frame.

Studies on the Natural pH Adjusters for Kimchi (김치용 천연 pH 조정제 연구)

  • The buffer activities of 72 species of natural pH adjusters in Chinese herb medicine materials of food materials by 100% acetic acid$({\mu}{\ell})$ titration until pH 4.0 in the $100m{\ell}$ of 1 % solution of the pH adjuster were evaluated for their abilities to retard acidification of Kimchi. There were 14 species above 100 of buffer activity such as Glycerehizae Radix(150), Siler divaricatum Benthan et Hooker etc. among selected Chinese herb medicine materials. In selected Chinese herb medicine materials, the buffer activities of Erillae Herba+Glycyrehizae Radix, Erillae Herba+Dioscoreae Rhizoma, Erillae Herba+Glycyrehizae Radix, Erillae Herba+Dioscoreae Rhizoma, Erillae Herba+Puerariae Radix, Chrysanthenum sinense+Puerariae Radix, Alismatis Rhizoma+Angelicae gigantis and Dioscoreae Rhizoma+Puerariae Radix were above 150 by same amount blending each other. Species and buffer activities of natural pH adjusters, which are higher buffer capabilities in mushroom, bean and vegetable classes were mungbean(207). soybean(160), pease(190), fungus(225), Garland chrysanthemum(200), amaranth(175), wild sesame leaf(200), parsley(202) and green pepper(257) etc. Species and buffer activities of higher buffer capabilities of natural pH adjusters of natural blending pH adjusters which is synergistic effect or natural blending pH adjusters which is synergistic effect mixing with radish juice were mung bean+peas(272), mung bean+soy bean(282), fungus+parsley(302), Garlan chrysanthenum+amaranth(300), Garland chrysanthenum+wild sesame leaf(277), amaranth+green pepper(300) and amaranthe+parsley(280) etc and those mixing with cabbage juice were peas+fungus(202), Garland chrysanthenum(207) and fungus+parsely (205) etc.

Chemical Changes of the Deep Fat Frying Oils Used Commercially (일반시장에서 튀김식품에 사용된 기름의 화학적 변화)

  • In deep-fat frying, the fats and oils are used over and over again, and moisture and air are mixed in to the hot oil. Many reports related to these fats and oils have been established that thermal and oxidative decomposition products and polymers formed under the conditions of deep fat frying are harmful to health. This work was carried out with 3 domestic frying oils and 6 used oils commercially, and that there were difficulties in finding a good definition between fresh oil and used oil with adding unheated oil. As starting materials, commercially used soybean oil and rapeseed oil already passed over induction period in the lipids oxidation standard. From the qualitative point of view, they were inferior to domestic frying oils. Free fatty acid and peroxide value of heated oils were increased gradually by the time pass whereas iodine value were decreased. After adding unheated oil to the heated oil, these values were restored to that of initial levels. On the other hand, content of polar components in the heated oil were directly related to the heating time. This result showed that polar compounds may be a clear indicator of used oils. Fatty acid composition in the used oils, unsaturated fatty acids such as linoleic and linolenic acid decreased while saturated fatty acid content increased with heating.

Isoflavones Contents and Physiological Activities of Soybeans Fermented with Aspergillus oryzae or Bacillus natto (Aspergillus oryzae 또는 Bacillus natto 발효콩의 Isoflavone 함량과 생리활성)

  • This study investigated the isoflavone contents and physiological properties of non-fermented soybean (NF) and the fermented soybeans prepared with Asp. oryzae (AO) and B. natto (BN). The total isoflavone contents (daidzin, genistin, daidzein and genistein) of NF, AO and BN were 81.8 mg/100 g, 130.7 mg/100 g and 139.5 mg/100 g, respectively. Especially, the total phenol contents of NF, AO and BN were 2.1%, 4.3% and 7.6%, and the total flavonoid contents were 1.3%, 1.6% and 2.7%, respectively. The nitrite-scavenging abilities of NF, AO and BN were 34.4%, 55.2% and 92.5%, respectively. Antimicrobial activity of BN was shown to be the strongest to Bacillus cereus, Staphylococcus aureus and Escherichia coli. The SOD-like activity was the strongest in AO, whereas the electron donating ability was the strongest in BN. Antioxidant activity of AO at concentration of 0.02% was stronger than BN or NF.
