Serratia속의 신균주가 생산하는 단백질분해효소 (Studies on proteolytic enzyme from A New Strain in Serratia sp.)

  • Serratia sp. Y-4 was isolated from soil. Many characteristics of the strain and optimum cultivation condition for protease production were investigated.,The protease from Serratia sp. Y-4 was purified and studied for the properties of the enzyme. The isolated strain was identified to the genus Serratia. The strain was cultivated in 1%-casein, 0.5%-Na$_{3}$PO$_{4}$.7H$_{2}$O, 0.1%-NaCl, 0.05%-KCI, 0.02%-MgSO$_{4}$.7H$_{2}$O, 0.02%-CaCl$_{2}$.2H$_{2}$O, 0.02%-ZnSO$_{4}$.7H$_{2}$O, 0.02%-MnCl$_{2}$.4H$_{2}$O and 0.5%-soy bean oil at pH 7.0 for 35 hrs. The enzyme was purified about 5.89 fold from the culture broth with 31.1% recovery and 19,613 u/mg through ultrafiltration, ammonium sulfate, DEAE-sephacel and Superose-12 chromatography. The purified enzyme was identified as one band by isoelectric focusing, SDS- and native-PAGE. It has maxium activity at $37^{\circ}C$ and pH 9.0. Molecular weight of it is approx. 50 kD and pl is about 6.70. Its Km value for casein was 20 mg/ml. 5 mM-EDTA, 5mM-SDS, Ag$^{+1}$, Cu$^{+2}$, Hg$^{+2}$ and Pb$^{+2}$ inhibited the enzyme.

항암 화학요법을 받는 환자의 식욕부진 정도와 식이양상에 관한 연구 (A Study on the Anorexia and Diet Patterns in Cancer Chemotherapy Patients)

  • This study was designed to identify the severity of anorexia and the diet patterns in receiving chemotherapy. The identification of anorexia would provide useful and basic information to oncology nursing care. The subjects of this study were 102 hospitalized chemotherapy patients in a September 10, 1994. The subjects were 20 years old or above and who agreed to participate in this study and could understand the questionnaire. Three-days diet history were collected and analysed. The study subjects change, food aversions, the severity of anorexia. Data related to demographic and other mecdical characteristics such as age, diagnosis, and medication were collected by review of patient medical record. The results of this study were summarized as follows : 1) The score of anorexia was 73.7 in Anorexia Visual Analogue Scales and mean amount of fool intake per a day was 823cc. The larger the anorexia VAS score, the more severe of anorexia. 2) The food preferences of subjects were identified. Those were aversions, or dislikes the meat such as beef, pork, and chicken, and greesy or fried foods. The Caffeinated drinks such as coffee and tea were disgusted, also. The patients preferred vegetables and Korean traditional food especially kimchee and soy bean soap. 3) Those who were administered analgesics and cisplatin suffered more severe in anorexia than those who analgesics and cisplatin was not administarted. The patients with gastrointestinal cancer has more severe anorexia than those who have the other site cancer ; head and neck, genirourinary etc. The result of this study in turn provide valuable nursing practice guidelines for nutritional counseling in cancer chemotherapy patient. Nurses working with chemotherapy ward should identify the severity of anorexia and diet patterns. In conclusion, the severity of anorexia in cancer chemotherapy patients is very important problems. Health care personnels recognize the potential problems of anorexia and encourage the nutritional counseling in cancer chemotherapy patients.

콩모자익바이러스 계통의 포장전염 (Field Spread of Soy bean Mosaic Virus Strains)

  • 콩모자익바이러스(SMV) 7계통의 진딧물 전염여부를 시험한 결과 SMV 7계통 전부가 전염되었으며 SMV의 진딧물 전염에 의한 대두판별품종의 반응도 침액접종에 의하여 SMV 계통을 분류하였을 때의 반응과 일치하였다. 공시한 5종의 진딧물중에서 복숭아혹진딧물, 아카시아진딧물, Aphis citricola는 SMV 7계통을 모두 잘 전명시키는 매개충이었으나 옥수수테두리진딧물과 기장테두리진딧물은 SMV계통 G3을 전염시키지 못하는 경우도 있었다. 포장에서 SMV 계통 G2, G3, G6 및 G7을 22.5m 이랑의 1m 내에 심겨진 콩 품종 Williams에 접종한 후 80cm 떨어진 이랑의 1m내 Williams의 발병율을 조사하였다. 공시한 SMV 4계통중 6G의 전염율이 가장 높았고 조사기간에 채집된 206 마리의 진딧물중 A. citricola가 $68\%$로서 우점종이었다. Williams의 수량은 G2로 접종하였을 때 가장 낮았다.

  • To examine the main party of royal family in the Man Kyong Jeon, the authors analyzed“Jin Chan Eui Gue”, which is a historical record published in 1887(King Go-Jong). The results obtained from the study were as follows, 1. The dining tables were divided into two:fixed arranging tables(131) and taking-away tables. 2. Food and flowers were distributed to the 1238 attendants. 3. According to the status or class of the attendants, the pattern or size of table settings were differentiated in the kinds of food, hights of food, flowers china ware etc. 4. The seat of the King's Grand Mother was located facing the south. 5. Red silk table cloth was used in the main party. 6. At the main party for the King's Grand Mother, dishes were arranged in the following sequence, the first line : cakes made of flour, oil and honey etc. the second : oil and honey pastry the third : fruits the fourth : rice cake etc. the fifth : cooked meat and fried fish etc. the sixth : sliced raw fish and beverage etc. the seventh : noodles, soup and soy bean sauce the eighth : spoon and chopsticks. 7. In the arrangements of tables for the King's Grand Mother, the heights of food on the dishes were as following level, a dish : 1 chok and 5 chon (1척 5촌) 27 dishes : 1 chok and 3 chon (1척 5촌) 7 dishes : 1 chok. 한국 발효식품에 대한 생물화학적 연구 ( 제 8 보) 발효식품중의 Vitamin $B_{12}$의 함량 조사보고 (Biochemical Studies on Korean Fermented Foods. VIII Studies on Vitamin $B_{12}$ Contents of the Fermented Foods in Korea)

  • In order to know contents of vitamin B$_{12}$ in the fermented foods in Korea, the contents of this vitamin are studied on the following foods; kimchies (pickled vegetables) .................. 39 chukkals (fermented and salted sea foods) ...... 8 fermented soy-bean products .................... 5 the kimchies and fermented soybean products studied in this paper, are from individual homes and chukkals are from markets. The content of vitamin B$_{12}$ is estimated by the microbiological assay method using lactobacillus leichmannii ATCC 7830. Details for assay are indicated in the original part of this paper. The pseudo-vitamin B$_{12}$ substances as thymidine which is active to the growth of lactobacillus leichmannii, are eliminated by the alkali treatment method of sample solution. According to the results as indicated in the table, the following conclusions are summerized; 1. Vitamin B$_{12}$ contents of kimchies for winter season are 1.03 to 1.52 mcg% in average. The hobakk-kimchi which contain the highest content of vitamin B$_{12}$ is not popular one among Korean. 2. Chukkals contain much higher content of vitamin B$_{12}$ varying from 0.91 to 11.10mcg%. 3. The soybean fermented foods, as kanjang, denjang, kochojang, contain lower content of vitamine B$_{12}$ varying from 0.08 to 0.52 mcg% containing higher content of pseudo-vitamin. 4. Based on daily consumption of kimchi in winter season by Chai, the consumption of this vitamin through kimchi is about 3 mcgs daily per capita. This will be a quite source of this vitamin for Korean as vitamin C. as vitamin C.

수종 잎식품 건조물의 급이가 고Cholesterol 혈종 흰쥐의 혈청지질에 미치는 영향 (The Effect of Dry Edible Leaves Feeding on Serum Lipids of Hypercholesterolemic Rats)

  • In other to investigate the hypolipidemic effect of dry edible leaves on serum lipids, four kinds of powdered leaves(persimmom, mulberry, perilla, and soy bean) were added to experimental diets at the levels of 5%(w/w). The diets were fed to 30 male Sprague-Dawley rats, aged 4 weeks and weighing 60$\pm$5g, for 3 weeks. Food intake was the largest in Group 1(control), with 5% of cellulose powder, while food efficiency was the highest in Group 2(persimmon). Total cholesterol level in serum was lower in Group 5(soybean) and Group 4(perilla) than the other groups. In comparison with Group 1, HDL-cholesterol level was very high in Group 4 and atherogenic index was low in Groups 4 and 5. Free cholesterol level was the highest in Group 2, and was the lowest in Group 1. Both LDL and LDL-cholesterol levels were the lowest in Group 1, while they were very high in Groups 2 and 3(mulberry). Triglyceride level was the lowest in Group 4, and the highest in Group 1. Except Group 3, all groups had lower phospholipid level than Group 1. Compared with Group 1, calcium level in serum was low in Groups 3, 4 and 5, magenesium level was low in Groups 2, 3 and 5, phosphate level was high in Group 4, and iron level was exceptionally low in Groups 4 and 5. In conclusion, Group 4(perilla) and Group 5 (soybean) showed a favorable effect in atherogenic index and serum levels of various lipids.

Effects of Concentrate Supplementation on Reproductive Performances and Semen Quality of Indigenous Rams in Bangladesh

  • The study was set for one year to measure the effects of concentrate supplementation on reproductive performances and semen quality in indigenous rams. The study was conducted at the Department of Surgery and Obstetrics, Faculty of Veterinary Science, Bangladesh Agricultural University, Mymensingh, Bangladesh during the period from May 2011 to April 2012. Forteen ram lambs (4~5 months) were randomly divided into two equal groups (n=7); supplemented vs control. The animals of control group were maintained on natural grazing. Along with natural grazing the supplemented group was on supplemented feeding. The concentrate supplementation (Wheat bran, Crushed maize, Soy bean meal, Fish meal, DCP powder, Vitamin mineral premix, Salt) was provided @ 300 g/head /day to the supplemented group. Body weight, scrotal circumference, BCS and libido index were measured weekly. Age, body weight and scrotal circumference at puberty were recorded. Semen was collected once in a weak using artificial vagina and chilled at $5^{\circ}C$ for 48h for evaluation. Concentrate supplementation did not influence (p>0.05) body condition score, age, weight, scrotal circumference at puberty and libido index. Final body weight (kg), growth rate (g/d), scrotal circumference (cm) and scrotal growth rate (mm/15d) were significantly (p<0.05) higher in supplemented group of rams compared to control. Volume, concentration, motility and membrane potentiality of spermatozoa were varied significantly (p<0.05) in supplemented and control groups. However, density, mass motility, viability and sperm with normal acrosome, midpiece and tail were not differed insignificantly (p>0.05) in different observation times. It was concluded that concentrate supplementation with free grazing improved weight and scrotal circumference gain and semen production with increased quality in indigenous ram.

유유아(乳幼兒) 및 성장기 아동을 위한 영양식품 개발에 관한 연구 -흰쥐 성장에 미치는 영향- (The Protein rich Food Mixtures for Korean Infants)

  • Korea is one of the typical rice eating countries where availability of animal protein is limited even for the growing generation. Nutritive food products for infants and children are not available commercially in large scale at the present time, although a limited amount of expensive milk products are produced. The present study deals with a pioneering attempt on a new food mixture to meet this demand. Several food mixtures, possibly produced in the country, consisting of rice, soybean, FPC, vitamin, minerals and other food additives are developed in this work Sixty female and male rats aged $30{\sim}40$ days were divided into five groups, twelve rats each. The rats had been maintained with the six different diets, as follow. F-P-4 group tended to remain the heaviest and F-R-1 the lightest in the body weight among three groups throughout the experimental period. In terms of FER (Feed Efficiency Ratio) and PER (Prortein E. R.) value, F-P-4 group kept the highest record throughout. F-P-4 group showed the highest value of nitrogen retention in the body. In comparision between F-P-4 groups and casein 20% group (standard) in all respects of this experiment, F-P-4 group which is the most superior among experimental group, revealed statisfically no significant inferior than that of standard group. This fact could be interpreted that most limiting a. a., methionine in the soy protein produced little inferiority of the experimental groups in the study.

COVID-19 시대 온라인 수업 날 점심을 스스로 차리는 고등학생의 식생활 (Lunch Eating Pattern and Dietary Habits of High School Students Attending Online Classes during the COVID-19 Pandemic)

  • The COVID-19 pandemic has led to the curtailing of school meal services. This study aimed to compare the diets of students attending online classes who prepared their own lunch under these circumstances, with those of their counterparts who had their lunch prepared for them. In December 2020, a survey was conducted on 204 students (75 male and 129 female) at a high school in Gyeonggi-do. The results showed that more girls prepared their own lunch than boys (53.5% vs. 36.0%, respectively, P<0.05). Further, more participants with working mothers prepared their own lunch compared to those with unemployed mothers (60.8% vs. 23.0%, respectively, P<0.001). Lunch was prepared either by parents (47.5%), themselves (47.1%), or others (5.4%). A comparison of the Nutrition Quotient (NQ) was carried out between the subjects who prepared their own lunch and those who ate lunch prepared by their parents. The students who prepared their own lunch had significantly lower total (P<0.05), balance (P<0.01), and environment (P<0.01) sectors of NQ-A than their counterparts. Especially, subjects whose parents prepared their lunch had bean·tofu·soy milk more frequently (P<0.01), tended to eat vegetables more frequently (P=0.059), and skipped breakfast less frequently (P<0.01). In conclusion, this study suggested that high school students who have to prepare their own lunch at home during the COVID-19 pandemic are the newly emerging nutritionally vulnerable group. This study may provide the basic information necessary for preparing measures to maintain the diet quality of high school students during the COVID-19 pandemic and similar situations in the future when school meal services may not be available.

면역분석기법을 이용한 서부경남 시판 메주 및 된장에서의 Aflatoxin 생성균 검색 (The Screening of Aflatoxin Producing Fungi from Commercial Meju and Soy Bean Paste in Western Gyeongnam by Immunoassay)

  • 일반적으로 메주나 된장 등의 한국 전통발효식품에는 Aspergillus aryzae나 A. nigar 등과 같은 곰팡이독소를 생성하지 않는 균이 주로 서식하는 것으로 알려져 있다. 그러나 때로는 A. flavus나 A. paraciticus와 같은 유해곰팡이가 오염되어 발효나 저장 중에 aflatoxin이 축적될 수 도 있다. 따라서 이들 전통발효식품에서의 aflatoxin 생성균의 검색이 이들 식품의 안전성 확보를 위해 매우 중요하다고 생각된다. 본 연구에서는 면역분석기법을 이용하여 서부경남 시판메주 및 된장에서 aflatoxin 생성균을 검색하였다. 시료로는 서부경남 9개 지역으로부터 메주 10개와 된장 20개를 수집하였고, 수집된 시료로부터 메주에서는 24개 그리고 된장에서는 22개의 Aspergillus속 균을 분리하였다. 분리균들은 SLS 배지에 접종하여 $25^{\circ}C$에서 15일간 배양한 다음, 배양액을 ethyl acetate로 추출하고, DC-ELISA법으로 배양물중의 AFB$_1$을 측정하였다. 그 결과 메주로부터 분리된 균주 중에는 6균주가, 된장에서 분리된 균주에는 2균주가 AFB$_1$을 생산하는 것으로 확인되었다. 메주에서 분리된 6균주의 AFB1 생성량은 평균 54.6$\pm$38.7ng/ml 이었고, 된장에서 분리한 2균주는 평균 11.1 $\pm$ 8.6 ng/ml 의 AFB$_1$을 생산하였다. 그 중 분리균 No. M-5-4는 98.26 ng/ml의 AFB$_1$을 생산하여 가장 높은 생성능을 보였다. 아울러 TLC에 의해 aflatoxin생성능을 재확인 한 결과 DC-ELISA의 결과와 유사하였다. 이상의 결과로 미루어 보아 식품의 안전성과 한국에서의 전통발효식품산업에의 HACCP 시스템 도입을 위해 발효식품에서의 유해곰팡이독소 생성균의 검색은 필요하다고 사료되는 바이다.
