A Study on Yeast and Mold Contamination of Fermented Milk Products in Korea (우리나라 유산균 제품의 Yeast, Mold 오염에 관한 조사연구)

  • This Study was carried out to investigate yeast and mold contamination in fermented milk products produced by 9 different domestic manufacturers from October 20. to December 5. 1980 The results obtained in the study were as follows 1) pH values of the products were ranged from pH 3.14 to pH 4.20 and average of sour milk drinks was pH $3.66\pm 0.19$ and fermented milks pH $3.74\pm 0.11$. Therefore the difference of pH average among sour milk drinks and fermented milks was statistically significant. (p<0.01) 2) In case of yeast contamination, yeast was found on all the four producted at the same date. From this result, it seemed that yeast contamination occured during the manufacturing progress. 3) Degree of contamination by the indicator organisms was E. coli positive, 3.7%: over 1,000 yeasts/ml, 14.8% over 10 molds/ml, 0.9%. 4) In the range of over 1,000 yeasts/ml, degree of contamination by yeast was 8.4% in fermented milk and 16.7% in sour milk drink. 5) Yeasts in product C increased to the spoilage number within 5 days and in H increased within 10 days at 5C. At 15$\circ$C, yeast increased to the spoilage number within 15 days in product A.D. 6) It seems that the yeast number of initial contamination should be important than the increase rate as criteria on the fermented Milk products.

The Effect of Taste Preference on Anthropometric Measurements and Nutrient intakes in Children (맛 선호도가 학령기 아동의 체위 및 영양소 섭취량에 미치는 영향)

  • This study investigated the effect of taste preference(sweet, sour, salty, hot) on anthropometric measurements and nutrient intakes of 256 primary school children in Kwangju. There was no significant difference in the anthropometric measurements according to the sweet taste preference. Height, weight, triceps, abdomen, and chest circumferences of the group preferring a sour taste, however, were significantly lower than those of the other groups. The height of the group preferring a salty taste was significantly shorter than that of the other groups and there was a tendency toward high systolic blood pressure and diastolic blood pressure. The waist circumference of the group not preferring the hot taste was larger than those of the other groups. There was no significant difference in the energy intake according to the sweet taste preference. The protein intake of the group preferring a sweet taste as significantly lower than that of the other groups. The fiber intake of the group preferring a sour taste was significantly higher than that of the other groups. There were no significant differences in the nutrient intakes according to the salty taste preference. The energy intake of the group preferring a hot taste was lower than that of the other groups. The results show that children's taste preferences influence anthropometric measurements and nutrient intakes. These results suggest that children's eating behaviors are in needs of correction. The findings of this study should be applied to nutrition education to ensure better physical fitness of children.

This report is divided into two chapter, the first chapter presents to specific diseases according to runnings of Five Tastes, the second chapter shows the pathological process how the human body would change and what kind of disease attacts human body as result of taking Five Tastes. So this section is important remarkably as a viewpoint of food and medicines.

Effects on Microbial Activity and Substrate Removal in Industrial Wastewater with Fluoride Content (산업폐수에서 불소함유가 미생물활성도 및 기질제거에 미치는 영향에 관한 연구)

  • Fluoride can be easily found in semiconductor and display industry. However, there is a lack of research for its effects on the related wastewater treatment. The objective of this study is to evaluate the microbial inhibitory effect by fluoride injection. The research entailed the assessment of removal efficiency of $TCOD_{Cr}$ according to the fluoride concentration and also the Specific Oxygen Uptake Rate (SOUR) was measured. The laboratory scale reactor was prepared and operated with the fluoride concentrations of 0, 10, 50, 100, and 200 mg/L based on concentrations frequently occurring in the wastewater. The results from this study showed that, as the fluoride concentration increase, the Specific Substrate Utilization Rate (SSUR) tend to decrease as expected. Also, the increase in fluoride concentrations resulted in the decrease in SOUR. It is determined that fluoride injection affects the microbial activity. Especially, The addition of above 200 mg/L fluoride into reactor caused rapidly decreased SSUR and SOUR due to the inhibitory effects of fluoride.

Quality Test of the Sweet-and-Sour Porks and Deep-Frying Oil from the Chinese Restaurants in Seoul (서울 지역 중화 요리점의 탕수육 및 튀김유의 품질 측정)

  • In this study, we determined the fat content, total fatty acid composition, trans fatty acid (tFA) content, and acid value of twenty samples of sweet-and-sour pork and fifteen samples of used frying oils collected from Chinese restaurants in Seoul. After the extraction of crude fat by the Folch method, the total fat content of the twenty sweet-and-sour porks ranged from 9.93 to 20.04%. The total unsaturated fatty acid content ranged from 50.05 to 81.22%, which mostly consisted of oleic and linoleic acid, while those of total saturated fatty acids were 18.06~49.26%. The tFA content of all of the twenty sweet-and-sour porks tested was less than 0.24 g per 100 g of food. The acid values of the fat extracted from the twenty sweet-and-sour porks ranged from 0.44 to 4.37. In the used frying oils, the ranges of the major compositional fatty acids were as follows: palmitic acid, 4.47~20.28%; oleic acid, 23.43~77.45%; linoleic acid, 5.6~53.06%; stearic acid, 1.81~7.38%. The tFA content in all of the fifteen used frying oils was less than 0.98 g per 100 g of fat, while the acid values of the fifteen used frying oils ranged from 0.27 to 2.41.

Effects of Sour Tastes on Blood Components in Anemic mice - Animal Experiment for Nursing Intervention of Female Anemia - (신맛(酸味)이 용혈성 빈혈흰쥐의 혈액성분에 미치는 효과 - 여성빈혈의 간호중재개발을 위한 동물실험 -)

  • Many women in the world have suffered from anemia produced by menstruation, pregnancy and delivery. In the theory of oriental medicine, a sour taste is believed to have a tonic effect on the blood. Thus this paper is to investigate the effect of sour tastes on the improvement in anemia-induced female mice, using citric acid and Fructus schizandrae(五味子). The method used in this experiment was the change of RBC, WBC, Hemoglobin, Hematocrit, Fe, and TIBC in the blood of female mice who were fed citric acid and Fructus schizandrae(五味子). The results obtained were as follows ; 1. Compared with the control group (anemia- induced group without treatment), the mean number of RBC in the blood of mice was significantly increased only in evaluating the change of sample group fed Fructus schizandrae (五味子) 500mg/kg. 2. Compared with the control group (anemia- induced group without treatment), the mean number of WBC in the blood of mice was not significantly larger in both sample groups fed citric acid and Fructus schizandrae(五味子). 3. Compared with the control group (anemia- induced group without treatment), the mean number of Hemoglobin in the blood of mice was significantly larger only in evaluating the change of the sample group fed Fructus schizandrae(五味子). 4. Compared with the control group (anemia- induced group without treatment), the mean percentage of Hematocrit in blood of mice was significantly increased only in evaluating the change of sample group fed Fructus schizandrae(五味子) 500mg/kg and sample group fed Fructus schizandrae(五味子) 250mg/kg for 3days. 5. Compared with control group (anemia- induced group without treatment), the mean volume of Fe in serum of mice was significantly increased only in evaluating the change of sample group fed Fructus schizandrae(五味子) 500mg/kg. 6. Compared with control group (anemia- induced group without treatment), the mean TIBC in serum of mice was significantly increased only in evaluating the change of sample group fed Fructus schizandrae(五味子) 500mg/kg and sample group fed Fructus schizandrae(五味子) 250mg/kg for 7days. According to these results, a sour taste is presumed to have a general tonic effect on anemia, but more study must be taken on the effects of citric acid in improving female anemia.

Studies on Thermophilic Flat-sour Bacteria in Soymilk: Isolation, Indentification and Determination of Heat Resistance (두유내의 고온성 Flat-sour 변질균의 분리.동정 및 열저항성에 관한 연구)

  • For the optimization of thermal processing conditions in soymilk process, 4 strains of thermoresistant flat-sour bacteria were isolated from soymilk. The isolates were aerobic spore-forming rods, and grew at $-65^{\circ}C$. Based on the morphological and physiological properties, all of the isolated strains were identified as Bacillus stearothermophilus. The heat resistance of spores of 3 isolates and Bacillus stearothermophillus ATCC 12980 as a reference was determined in soymilk(pH 7.0) and pH 7.0 buffer solution. For each of the spores studied, linear regression equations with standard error were presented for the thermal destruction at 110, 115, 121, and $125^{\circ}C$. It was not obvious that the components of soy milk increased the heat resistance of spores. Between the strains studied, variability was noted in the D values at the different temperature, and no one strain was consistently the most heat resistant at all the given temperatures. The average D value for the 4 strains was 77.27, 20.20, 2.76 and 1.39 min at 110, 115, 121 and $125^{\circ}C$, respectively, and the average z value was $8.36^{\circ}C$.

On Chemical Characteristics of Sour Doenjang (Fermented Soybean Paste) (저장 유통중 시어진 된장의 화학적 성분 연구)

  • Doenjang (fermented soybean paste) is one of the korean traditional fermented soybean product which is consumed with cooked rice as a soup or paste. During the fermentation, soybean protein hydrolyzed into amino acids and various peptide, and various organic acids by mirobes related and enzymes produced by meju fermentation. Some commercial products locationally samples give more sour taste than normal due to abnormal fermentation which the reasons are not clear. Three samples that gave sour taste organoleptically were collected and analyzed their characteristics such as pH, moisture content, acidity and microbial counts. The pH of the sour sample were lower than the normal with higher acidity as pH 5.39 (normal) to pH 4.36 (S2) and 15.80 ml of(0.lN NaOH consumed) to 21.80 ml (S1) respectively. Salt and moisture contents were different with sour and normal Doenjang as 16.38% (normal) to 8.92% (S3) in salt and 55.94% (normal) to 49.34% (S1) in moisture content. Total viable counts were $4.1{\times}10^8$ (normal) to $8.0{\times}10^5$ (S2), and $3.4{\times}10^8$ (normal) to $8.0{\times}10^5$ (S2) in acid producing microbes at BCP plate. Yeast and mold were not detected. The composition of acids as mainly lactic acid and acetic acid of sour Doenjang. Total free amino acids content were lower the sour Doenjang than the normal.

A Study on the Taste Thresholds in Patients with Dentures (총의치(總義齒) 장착환자(裝着患者)의 미각역치(味覺閾値)에 관(關)한 연구(硏究))

  • Recognition thresholds for representatives of the salt, sweet, bitter, and sour modalities of taste were determined in 25 patients with dentures. The following results were obtained. (1) Recognition thresholds for the taste of NaCl(salt) and Sucrose(sweet) were essentially unchanged with or without the dentures in place. (2) Recognition thresholds for HCl(sour) and Urea(bitter) increased after the patients inserted their dentures. The amount of increase was 59.4% and 112.5% for HCl and Urea, respectively. (3) Recognition thresholds for all four taste modalities inpatients with ill-fitting dentures were not significantly changed with or without dentures in place. (4) Recogniton thresholds for all four taste modalities in Korean were greater than those of Pfaffamann's.
