Changes in Physicochemical and Antioxidant Properties of by Enzyme-Treated Super Sweet Corn Extracts (효소처리에 의한 초당옥수수 추출물의 이화학적 및 항산화 특성의 변화)

  • To improve usability of super sweet corn, extracts were prepared with hydrolytic enzyme and changes in physicochemical and antioxidant properties were analyzed. Soluble solids and reducing sugars contents were higher in all enzyme treatment groups than in the control. When enzyme treatment time increased, contents of soluble solids and reducing sugars were also increased. There was no significant difference in lightness between treatment groups, with redness showing the highest value in the control and yellowness showing the highest value in the invertase treatment group. Free sugar content in the control was the lowest. However free sugar content in the enzyme combination treatment group was increased by more than four times compared to that in the control. Contents of ascorbic acid, flavonoids and polyphenols were higher in the enzyme treatment group than in the control. In particular, the enzyme combination treatment group showed the highest content. DPPH and ABTS radical scavenging abilities were significantly higher in all enzyme treatment groups than in the control. Radical scavenging abilities of cellulase treatment group and enzyme combination treatment group showed high activity. The activity increased when enzyme treatment time increased. The combined enzyme treatment method for super sweet corn was suitable for food processing.

Characteristics of New Ever-bearing Strawberry 'Jangha' Bred for High Soluble Solids Contents (고당도 사계성 딸기 '장하' 육성)

  • 'Jangha' is a new strawberry (Fragaria ${\times}$ ananassa Duch.) cultivar, which was released by the Highland Agriculture Research Institute in 2014. The 'Jangha' cultivar originated in 2008 from a cross between 'Goha' and 'Elsinore' that showed excellent ever-bearing characteristics, including continuous flowering habit and high soluble-solids contents under long-day and high temperature conditions. This cultivar was initially named 'Saebong No. 6' after examining its characteristics and productivity in summer culture from 2010 to 2012. After two regional adaptability tests in 2013-2014, 'Jangha' was selected from Saebong No. 6 as an elite cultivar. The general characteristics of 'Jangha' include semi-spreading type, elliptical leaves, and moderately vigorous growth. The fruit are conical in shape, and red in color. 'Jangha' plants have 21.4 leaves, 55.8 fewer than 'Flamenco' plants. The soluble-solids content of 'Jangha' was 8.9%, which was 1.2% higher than that of 'Flamenco'. The average fruit weight of 'Jangha' was about 11.7g and the marketable yield was $19,013kg{\cdot}ha^{-1}$, 141% higher than 'Flamenco'. 'Jangha' is suitable for summer season cultivation as a high soluble solids contents cultivar, because it shows continuous flowering habit under long-day and high temperature conditions.

Quality Characteristics of Satuma Mandarin (Citrus unshiu Marc. var. okitsu) According to Harvest Areas and Altitude in Cheju (생산지역과 고도별 흥진조생 온주밀감의 품질특성)

  • Quality characteristics of Satsuma mandarin (Citrus unshiu Marc. var. okitsu) harvested in early December according to production areas and sea level altitude of Cheju were investigated. Soluble solids and flesh ratio were $9.06{\sim}12.98,\;77.32{\sim}81.27%$ on citrus fruits harvested in orchards located below 100 m sea level (lower area), and were $10.16{\sim}12.26,\;75.00{\sim}81.55%$ in orchards 150 m sea level altitude (higher area), respectively. Acid content of citrus juice was $0.83{\sim}1.21%$ in fruits harvested in lower area, and was $0.94{\sim}1.34%$ in higher area except Hankyung-myun area. The differences of soluble solids and acid contents by harvesting periods for 10 days were 0.91 and 0.82 for soluble solids; 0.15 and 0.13% for acid contents, respectively. In proportion to late harvesting, Brix/acid ratio and fruit quality were improving. Soluble solids of fruits harvested from lower area were higher than those of fruits from higher area, but acid contents were lower in fruits from lower area than in fruits from higher area. In sensory evaluation on fruit appearence, the differences between two altitudes were not clear, but panelists marked higher points on fruits harvested in main production areas, Seogwipo-si and Namwon-eup which are southern areas. Fruit quality harvested in Seogwipo-si areas showed better quality than fruits from other harvested areas.

Use of Response Surface Methodology for Optimization of Clarified Mixed Apple and Carrot Juice Production (반응표면 분석을 이용한 사과.당근 혼합주스의 청징공정 최적화)

  • Response surface methodology was used to investigate the quality of clarified mixed apple and carrot juices using ultrafitration. Apple and carrot juices were blended at the ratio of 1:3, 1:1, and 3:1. A three-variable, three-level central composite design was employed where the independent variables were the blend ratio, temperature and average transmembrane pressure (ATP). With increasing temperature and pressure, flux linearly increased regardless of blending ratio. Blend juice with 75% apple showed the highest soluble sugar and total sugar content in apple and carrot blend juices. Soluble solid contents were more affected by blending ratio than temperature and ATP. Total sugar contents were greatly affected by temperature; increasing temperature led to higher total sugar content up to $25^{\circ}C$. Higher carrot ratio led to higher vitamin C content. In general, higher acidity was achieved by higher apple content and acidity was increased with increasing temperature. Turbidity increased for all samples as APT increased, with the blending ratio of 1:1 (apple:carrot) showing the highest turbidity. Viscosity was greatly changed in the blending ratio of 3:1 (apple:carrot) juice. The polynomial models developed by RSM were satisfactory to describe the relationships between the studied factors and the responses. Analytical optimization gave $flux=0.216\;L/m^2.h$, soluble $solids=10.39^{\circ}Brix$, total sugar=71.32 mg/mL, vitamin C=315.18 mg%, acidity=7.78 mL, turbidity=0.017, and viscosity=1.44 cp, when using a $temperature=44.97^{\circ}C$, ATP=113.57 kPa, and blend ratio=28.50%.

Freshness Extension of ‘Fuji’Apple to Packaging materials (포장재가 ‘후지’사과의 신선도에 미치는 영향)

  • This study was measured weight loss, total ascorbic acid, titratable acidity, and soluble solids content to investigate the effect of EPS(expanded polystyrene foam, foaming rate 55 times V/W) box, LDPE film pouches and double wall corrugated fiberboard box during storage at 20$\^{C}$. Weight loss of apple packed with corrugated paperboard box after 40 days storage was 5.7%, arid those of LDPE, CE(zeolited coated film) film and EPS box were 0.2-0.5%. Ascorbic acid content of apple packed with LDPE, CE, EPS was higher than that of control. Titratable acidity and total soluble solid content of control were changed 40% and 10%, but the EPS were changed 27% and 4%, respectively. Overall appearances of ‘Fuji’apple packed with LDPE, CE and EPS were better than that of control.

The Correlation and Comparison of Quality Characters of Several Tomato Cultivars Grown by Hydroponics (수경재배한 토마토의 품종별 품질특성 비교 및 품질특성간 상관관계)

  • This study was conducted to compare the quality characters of 15 different tomato cultivars ('Dotearang Dia', 'Super Dotearang', 'Super sunroad', 'Hoyong', 'Mirokku', 'Baccuhs', 'Mascara', 'Poseidon', 'Radido', 'Madison', 'Rapsodie', 'Solomon', 'Amaral', 'Picasso', 'Tymaxx') and find out the correlation among the quality characters in order to get basic informations for exporting tomato. The $a^*/b^*$ value of fruit surface showed from 2.8 to 4.8, but there was no significant difference in fruit surface color value, such as $a^*$, $b^*$ and $a^*/b^*$ among the cultivars. The respiration and ethylene production rate also were not shown any significantly difference among cultivars. The firmness of fruit was higher in 'Picasso', 'Tymaxx' and 'Madison' cultivars. The contents of soluble solids was higher in 'Hoyong' and 'Dotearang Dia' cultivars. The vitamin C content was higher in 'Super Sunroad' and 'Dotearang Dia' cultivars. The titratable acidity was higher in 'Hoyong' cultivars. The sugar/acid ratio that depended on soluble contents was lower in 'Amaral', 'Picasso', 'Tymaxx' cultivars that showed lower soluble contents. Conclusionally, The firmness that was one of the most important quality character in exporting tomato was higher in European cultivars, but soluble solide and vitamin C content were higher in Japanese cultivars. The significant correlation coefficient values were determined (more than p = 0.05) between $a^*/b^*$ and other quality characters. The results suggested that surface color was the most suitable character represented tomato qualities. The high coefficient value (r = 0801) between $a^*/b^*$ and the contents of soluble solids. The firmness and the contents of soluble solids that is the most important factor for exporting showed significant negative correlation (r = -0.611).

Breeding of New Cultivar 'Hongsil' in Forcing Culture of Strawberry for Export (수출용 촉성재배 딸기 신품종 '홍실' 육성)

  • The 'Hongsil' strawberry ($Fragaria{\times}ananassa$ Duch.) is a new cultivar released by Gyeongsangnam-do Agricultural Research & Extension Services in 2015. This cultivar originated from a 2011 cross between '802a312' and 'Okmae' and exhibited suitable fruit characteristics for export due to the high soluble solids content and firmness of the fruit. The breeding line '1116-74-15' was selected as an elite line after examining its characteristics and productivity from 2013 to 2014. A field trial of this line was conducted on a farm in 2015, and it was registered as 'Hongsil' thereafter. The 'Hongsil' strawberry demonstrates intermediate plant type and moderate vigor in growth. It is suitable for forcing culture due to its early flower bud differentiation and low chilling requirement. The soluble solids content of 'Hongsil' is $10.0^{\circ}Brix$, which is approximately $0.4^{\circ}Brix$ higher than that of 'Seolhyang' The Fruit firmness of 'Hongsil' is $13.1g{\cdot}mm^{-2}$, similar to that of 'Maehyang'. Fruits of 'Hongsil' are long conical having a red skin color and marketable yield is $4,269kg{\cdot}10a^{-1}$ which is 16% higher than that of 'Maehyang'. The 'Hongsil' cultivar is sensitive to powdery mildew, and it therefore warrants further investigation regarding disease control.

Quality of Sweet Corn Stored at Different Temperatures and Duration (저장온도와 기간에 따른 단옥수수의 품질변화)

  • To find out the optimum storage temperature and duration, changes in the content of sugars and soluble solids and flavor rate of two sweet corn hybrids (Great Bell and Golden Cross Bantam) and a super sweet corn (Crisp Super Sweet 720) were observed after storing at -20, 0, 5, 10, 15, 20, and 25$^{\circ}C$ for 1,3,5, and 7 days. At the temperatures below 10$^{\circ}C$, contents of soluble solids and total sugars and flavor rate were not changed significantly, but at the temperatures higher than 15$^{\circ}C$ they decreased as storage temperatures increased and duration extended. Storage duration conserving flavor seems to be 7 days at temperatures below 10$^{\circ}C$, 3 days at 15$^{\circ}C$, and 1-2 days at 25$^{\circ}C$. When corn was frozen, flavor rate was a little low compared with corn stored at 0$^{\circ}C$ although sugar content was higher. Both soluble solids and total sugar contents were positively correlated with flavor rate of cooked corn.

Optimum Fermentation Conditions and Fermentation Characteristics of Mulberry (Morus alba) Wine (오디(Morus alba) 와인의 최적 발효조건 및 발효 특성)

  • For the development of mulberry wine, we investigated its optimum fermentation conditions as well as quality changes during fermentation. The physicochemical characteristics of the mulberry fruit used in the study were pH 4.56, 0.50% titratable acidity, and 13.0 $^{circ}Brix$ soluble solids. The mulberry wine fermented with Saccharomyces cerevisiae KCCM 12224 (Sc-24) at 24 $^{circ}Brix$ soluble solids and $26^{circ}C$ showed excellent characteristics in terms of ethanol production, titratable acidity, and redness. The sucrose, fructose, and glucose contents of the mulberry wine drastically decreased with fermentation time. The citric acid content was maintained during the fermentation period, and malic acid decreased, but lactic and succinic acids increased. The cyanidin-3-glucoside content, a major anthocyanin pigment, of the mulberry wine drastically decreased from 195.5 mg% at the initial stage of fermentation to 15.37 mg% at 2 days of fermentation. However, cyanidin-3-rutinoside decreased gradually. In summary, a mulberry wine of high quality was made by fermentation for 8 days at $26^{\circ}C$ using mashed mulberry fruit containing $24^{\circ}Brix$ soluble solids, after adding 200 ppm $K_2S_2O_5$ and inoculating with 3%(v/v) Sc-24.
