근적외선을 이용한 사과의 당도예측 (I) - 다중회귀모델 - (Predicting the Soluble Solids of Apples by Near Infrared Spectroscopy (I) - Multiple Linear Regression Models -)

  • The MLR(Multiple Linear Regression) models to estimate soluble solids content non-destructively were presented to make a selection of optimal photosensor utilized to measure the soluble solids content of apples. Visible and NIR absorbance in the 400 to 2498 nanometer(nm) wavelength region, soluble solids content(sugar content), hardness, and weight were measured for 400 apples(gala). Spectrophotometer with fiber optic probe was utilized for spectrum measurement and digital refractometer was used for soluble solids content. Correlation between absorbance spectrum and soluble solids content was analyzed to pick out the optimal wavelengths and to develop corresponding prediction model by means of MLR. For the coefficient of determination($R^2$) to be over 0.92, the MLR models out of the original absorbance were built based on 7 wavelengths of 992, 904, 1096, 1032, 880, 824, 1048nm, and the ones of the second derivative absorbance based on 5 wavelengths of 784, 1056, 992, 808, 872nm. The best model of the second derivative absorbance spectrum had $R^2$=0.91, bias= -0.02bx, SEP=0.28bx for unknown samples.

  • The PLS(Partial Least Square) and ANN(Artificial Neural Network) were introduced to develop the soluble solids content prediction model of apples which is followed by making a subsequent selection of photosensor. For the optimal PLS model, number of factors needed for spectrum analysis were increased until the convergence of prediction residual error sum of squares. Analysis has shown that even part of the overall wavelength with no pretreatment may turn out better performing. The best PLS model was found in the 800 to 1,100nm wavelength region without pretreatment of second derivation, having $R^2$=0.9236, bias= -0.0198bx, SEP=0.2527bx for unknown samples. On the other hand, for the ANN model the second derivation led to higher performance. On partial range of 800 to 1,100nm wavelengh region, prediction model with second derivation for unknown samples reached $R^2$=0.9177, SEP=0.2903bx in contrast to $R^2$=0.7507, SEP =0.4622bx without pretreatment.

Bio-solids의 토양 안정화제 활용 가능성에 대한 연구 (A Study on Bio-solids Applicability as Soil Stabilizer)

  • Recycling of industrial products as the stabilizers can be proper handling of industrial products and has positive side in terms of recycling of wastes. In this study, the final aims were to evaluate the usability as stabilizer of Bio-solids which was generated from contaminated soil with heavy metals after primary process and to compare the treatment efficiency with slag being currently applied in many existing sites. Soluble and exchangeable forms have closely related to pollution of groundwater and plant growth and they can be used to determine the effect of the stabilization efficiency. Slag and Bio-solids were tested to investigate the capacity of stabilizing arsenic. Slag treatment process 4 (PS-ball 5%) showed higher leachate concentration rather to 0.84% compared to treatment 1 (blank) based on an average of 0.63%. The other hand treatment 4 (Bio-solids 5%) showed the lowest soluble and exchangeable forms to 0.57% when Bio-solids was applied to stabilize arsenic. Thus, the leaching of arsenic will be more reduced if the Bio-solids are used as stabilizer in stead of slag which is being currently used in many fields.

Effect of solids retention time on membrane fouling in membrane bioreactors at a constant mixed liquor suspended solids concentration

  • Membrane fouling at different solids retention times (SRT) (7, 12 and 20 days) was studied under well-controlled conditions in a laboratory-scale aerobic submerged membrane bioreactor under constant biomass concentration using a synthetic high strength wastewater. An increase in SRT was found to improve membrane performance and this correlated to changes in the total production of bound extracellular polymeric substances (EPS), and the composition and properties of bound EPS using X-ray photoelectron spectroscopy (XPS) and Fourier transform-infrared spectroscopy (FTIR) and floc sizes. A larger amount of total bound EPS was found at the lowest SRT (7 days) tested but the ratio of proteins (PN) to carbohydrates (CH) in bound EPS increased with an increase in SRT. Similarly, the quantity of soluble microbial products (SMP) decreased with an increase in SRT and the SMP PN/CH ratio increased with an increase in SRT. SMP concentrations positively correlated to the percentage of membrane pore blocking resistance. The quantity of total bound EPS and total SMP positively corresponded to the membrane fouling rate, while the PN/CH ratio in the bound EPS and SMP negatively correlated to the membrane fouling rate. The results show that both the quantity and composition of bound EPS and SMP and floc sizes are important in controlling membrane fouling.

Fungal Infection Occurrence on New Cultivars of Kiwifruit Correlated with Fruit Soluble Solids Content and Firmness

  • Kiwifruit is prone to damage by frost in the harvest season and the occurrence of postharvest diseases. Accordingly, new cultivars overcoming these disadvantages have been developed. Compared to existing cultivars, studies on diseases in new cultivars are very limited. Thus, goal of this study was investigation of fungal infection occurrences in new cultivars. Kiwifruit was harvested in 2014 and 2015 year, respectively. In both years, cvs. Goldone and Redvita showed more resistance against fungal infection but cv. Gamrok was more sensitive compared with cv. Hayward. Major fungi were identified as Botryosphaeria dothidea, Phomopsis sp., Alternaria alternata and Nigrospora sp. Firmness and soluble solids content were also influenced by the occurrences. This study's findings are important for providing practical information on new cultivars in the kiwifruit industry.

배추의 가용성 고형물 함량이 김치의 발효에 미치는 영향 (Effect of Soluble-Solids Contents of Chinese Cabbages on Kimchi Fermentation)

  • 김치류가 시어지는 현상은 재료 중의 발효성 당을 주로 젖산균이 발효하여 산이 과다하게 생기기 때문이므로 우선 배추의 품종별 또 재배계절별 가용성 고형물 함량을 측정하고 이들 배추를 발효하여 배추가 갖는 가용성 고형물 함량과 김치의 최종적정산도를 비교하였다. 봄배추의 가용성 고형물 함량은 $1.20{\sim}3.40^{\circ}\;Brix$로서 발효가 완전히 끝나는데 걸리는 시간은 $8{\sim}14$일로서 비교적 짧았으며 최종적정산도는 $1.17{\sim}1.66%$이었고 가을배추의 경우 가용성 고형물 함량은 $3.80{\sim}6.60^{\circ}\;Brix$로서 $37{\sim}44$일만에 발효가 끝났으며 최종적정산도는 $1.87{\sim}2.70%$였다. 따라서 발효하여 최종으로 얻을 수 있는 산도는 대체적으로 원료에 함유된 가용성 고형물 함량에 비례하며 그 관계는 Y=0.30X+0.7779이었다. 적당히 발효된 김치류의 적정산도(Y)의 범위를 $0.6{\sim}0.8%$로 하자면 위의 식에서 X(가용성 고형물의 함량)가 $0.02^{\circ}\;Brix$ 이내의 범위에 있어야 한다. 지금까지 분석된 배추의 최저 가용성 고형물 함량은 $1.20^{\circ}\;Brix$ 이어서 위 X의 범위에 드는 품종을 얻기란 현재로서는 불가능하다.

균질 처리가 막걸리 고형분의 현탁 안정성에 미치는 영향 (Effect of Homogenization on Suspension Stability of Makgeolli)

  • The effect of homogenization treatment on the suspension stability of makgeolli was evaluated. The non-soluble solids of makgeolli that were not homogenized were precipitated at 1.0-68 mm after 10 minutes of standing and 2.0-70.5 mm after 30 minutes of standing. On the other hand, in the makgeolli homogenized with a blender for more than 20 seconds, no precipitated non-soluble solids were observed during the initial 10 minutes, and when it was left still for 30 minutes, it showed precipitation of 2.0 mm (control 58.0 mm). The makgeolli treated with a high-pressure homogenizer did not show any sedimentation until 30 minutes of standing. In the sensory evaluation, the high-pressure homogenized makgeolli had a score of 3.93, whereas non-treated had a score of 2.80, which was improved by 40% by homogenization.

오디(Morus alba) 와인의 최적 발효조건 및 발효 특성 (Optimum Fermentation Conditions and Fermentation Characteristics of Mulberry (Morus alba) Wine)

  • 오디 와인의 제조를 위한 최적 발효 조건을 선정하였으며, 발효 중 이화학적 특성 및 anthocyanin 색소의 함량 변화를 조사하였다. 오디 원료의 일반 성분은 수분 83.75%, 조단백질 1.95%, 조지방 0.22%, 회분 0.97%이었으며, pH 4.56, 적정산도 0.50%, 가용성 고형분 13.0 $^{\circ}Brix$, 색도는 명도(L) 8.96, 적색도(a) 6.55, 황색도(b) 4.96으로 나타났다. 주요 유리당으로 fructose와 glucose가 검출되었으며, 주요 유기산으로 citric, malic, succinic acid가 검출되었다. 시험에 사용한 4종 효모 모두 오디 과즙에서 정상적인 알코올 발효를 하였으며, Saccharomyces cerevisiae KCCM 12224로 발효한 오디 와인의 에탄올 생성량과 적색도가 각각 11.0%와 3.60로서 가장 높았다. 가용성 고형분 24 $^{\circ}Brix$$26^{\circ}C$에서 발효시 에탄올 생성량, 적정산도 및 적색도 등에서 우수한 특성을 나타냈다. 오디와인의 발효 초기 주요 유리당은 sucrose, fructose 및 glucose 이었으며, 발효기간에 따라 현저히 감소하였다. 유기산 중 citric acid의 함량은 발효 기간 중 비슷하게 유지되었고, malic acid는 감소하였으며, lactic acid와 succinic acid는 증가하였다. 오디 와인의 주요 anthocyanin 색소는 cyanidin-3-glucoside(C-3-G)와 cyanidin-3-rutinoside(C-3-R)가 검출되었으며, C-3-G의 함량은 발효 초기 195.95mg%에서 발효 2일째 15.37 mg%로 급격한 감소를 보였으며, C-3-R은 발효 기간중 점차 감소하여 발효 10일째 45.53 mg%를 나타냈다. 이상의 결과로부터, 오디 와인 제조를 위하여 오디 마쇄액에 $K_2S_2O_5$ 200 ppm을 처리하고, 설탕으로 24 $^{\circ}brix$로 보당한 후 S. cerevisiae KCCM 12224 배양액 3%(v/v)를 접종하여 $26^{\circ}C$에서 8일 동안 발효하는 것이 최적 조건인 것으로 나타났다.

유기재배 블루베리의 이화학적 품질특성 (Physicochemical Characteristics of the Organically Grown Blueberry)

  • As consumers are aware of their health and are more conscious of environmental conditions, there is an increasing demand for agri-foods obtained from organic agricultural practices. The present study aimed to investigate the physicochemical quality characteristics of blueberries. The weight, length, moisture contents, color (Hunter L, a, b), soluble solids contents, pH, and acidity were measured for their quality characteristics. In addition, ABTS radical scavenging activity was analyzed for antioxidant activities of organically and conventionally grown blueberries. Organically grown blueberries showed a greater weight, soluble solid contents, and pH than conventionally grown ones. Especially, organically grown blueberries showed significantly (p<0.05) higher weight and pH. Moisture contents of organically and conventionally grown blueberries were similar. L and b values of organically grown blueberries were higher than those of conventionally grown blueberries. ABTS radical scavenging activities of organically grown blueberries (36.4%) were higher than those of conventionally grown ones (36.4%), but the difference was not significant. Further studies are recommended to evaluate other differences between organically and conventionally grown blueberries.

추출 조건이 홍미삼(紅尾蔘)의 가용성 물질의 용출률에 미치는 영향 (Effect of Extracting Conditions on the Soluble Solid's Yield of Korean Red Ginseng)

  • 본 연구는 홍미삼으로부터 홍삼엑기스를 제조할 때 추출용매와 온도 그리고 추출시간의 변화가 추출과정중 원료삼의 팽윤성과 흡수성 그리고 홍삼엑기스의 고형분 수율의 차이를 비교한뒤 이들의 관계를 통계적으로 분석함으로서 추출조건에 따른 이들 성질을 예측코져 하였다. 홍미삼의 팽윤율과 흡수율은 에탄올의 농도가 높을수록 현저히 감소되었으며, 온도의 상승으로 흡수율은 증가되었으나 평형시의 팽윤율에는 영향을 주지않았다. 한편 가용성 물질이 용출율은 에탄올의 농도가 높을수록 감소되어었으며 온도상승에서는 반대로 증가되었다. 또한 각 추출조건에서 추출시간에 따른 팽윤율과 흡수율 그리고 용출율은 높은 상관관계를 갖는 대수함수적 관계를 가지고 있었다. 따라서 이들의 관계식으로부터 주어진 에탄올의 농도와 추출시간에서의 이들의 성질을 예측할 수 있었다.
