Changes of Physicochemical Properties of Soaked Glutinous Rice During Preparation of Yu-Kwa (유과제조시 찹쌀의 침지중 이화학적 성분변화에 관한 연구)

  • Physico-chemical characteristics of glutinuous rice during soaking treatment at different temperature for Yu-Kwa (Korean traditional glutinous rice cake) processing were determined. Crude fat and protein contents of soaked glutinous rice decreased up to 30% to 50%, respectively, compared to raw rice, but there was a little difference in soaking periods. As the soaking period increased pH of soaking solution was decreased from 6.4 to 3.3, while Brix was increased from 0.5 to 13.6. Titration acidity of soaking solution and soaked rice were increased to 22.9 and 3.4, respectively, as the soaking period increased to 9 days at $20^{\circ}C$ soaking, but it was increased rapidly to 29.8 and 4.0, respectively, at $30^{\circ}C$. The three kinds of free sugar such as glucose, sucrose and maltose were detected. Glucose was the major produced free sugar during soaking, sucrose was not detected after 1 day soaking period. Characteristics of amylographic viscosity on soaked rice showed that there are no difference in pasting temperature by the soaking time and temperature, but the maximum viscosity was drastically increased on $1{\sim}2\;day$ soaking period and decreased rapidly after $2{\sim}3\;day$.

  • For the purpose of enhanceing soybean-sprouts quality, the optimum conditions for ozone treatment of soybean during soaking before cultivation at 18~2$0^{\circ}C$ were evaluated with ozone concentration, treatment time and treatment frequency by response surface methodology. Germination rates of cleaned soybean by ozone water in the conditions of solubilized-ozone concentrations of 0.15 to 0.35ppm, ozone-treatment frequency of 1.5 to 2.3 times and ozone-treatment time of 30 to 36min. increased 18.8 to 24.0% for the control products. And, length of hypocotyl in conditions of 0.12 to 0.33ppm, 1.7 to 2.7 times and 45 to 90min. were also increased by 69.36 to 79.40%. On the other hand, weight of roots with ozone treatment were decreased in the conditions of solubilized ozone concentrations of 0.1 to 0.2ppm and ozone-treatment time of 30 to 57min. But, ozone-treatment frequency did not affected root growth. Putrefaction rates of the control were 5 to 15%, but those of ozone-treated samples during cultivation did not show. The overall optimum conditions for above 16% germination rates, above 9% hypocotyl yields compared to the control samples and below 98% of the control root weight were solubilized-ozone concentrations of 0.25 to 0.30ppm, ozone-treatment time of 43 to 49min. and ozone-treatment frequency of one time.

Effect of GA3 Treatment on the Flowering in Tuber of Zantedeschia 'Black Magic' (GA3 처리가 유색칼라 괴경의 개화에 미치는 영향)

  • Tubers(4-5cm diameter) of Zantedeschia 'Black Magic' were used to study the induction of flowering in GA3 soaking times and concentration. The GA3 soaking were 10 seconds and 30 minutes at the GA3 concentrations of 50, 100, 250, and 500 mg·L1. The time to emergence in GA3 treatment were 1.1~4.0 days shorter than control Growth characteristics were good in GA3 treatment but that was no significance in GA3 soaking time and concentration. When GA3 soaking time and concentration were increased, days to flowering was shorter, but flower stalk length, flower stalk width, flower length, flower width were no difference. The number of flower per tuber was most as 4.0~4.3 in 250~500 mg·L1 GA3 concentration and that was about 2 times compared to control. The normal flower ratio and bulb enlargement were similar compared with GA3 soaking time and concentration. GA3 250~500 mg·L1 treatment is necessary for improvement of number of flowers per bulb.

Effects of 5-Aminolevulinic Acid on Growth and Inhibition of Various Plant Species

  • The purpose of this study is to investigate the positive or negative effects of 5-aminolevulinic acid(ALA) on the growth of several crops and weeds, by applying a seed soaking treatment, foliar treatment, and application timing, while comparing biological activity between ALA produced by chemical synthesis (Synthetic-ALA) and extracellularly-accumulated ALA by overexpressing the hemeA gene isolated from Bradyrhizobium japonicum(Bio-ALA). Seed soaking treatment of ALA in barley (five cultivars) and wheat (five cultivars) had not shown positive effects at lower concentrations, 0.05 to 0.5 mM as well as negative effects at higher concentrations, 1 to 30 mM. In rice, there also was no positive effect by seed soaking treatment of ALA at lower concentrations, although the rice became damaged by an application of 5 and 10 mM ALA. Growth in barley cultivars, Ganghossalbori, Naehanssalbori, Songhakbori, Saessalbori, and Daehossalbori were increased up to 14%, 19-51 %, 17-64%, 18-23%, and 22-38% by ALA foliar application at lower concentrations, 0.05 to 0.5 mM, respectively. On the other hand, the growth in barley cultivars was inhibited by ALA foliar application at higher concentrations. Barley responded more positively to ALA foliar application than wheat and rice. The growth stimulation caused by ALA seed soaking treatment was less than by ALA foliar treatment. ALA treatment at the 1.5-leaf stage increased growth of barley by 19-58%, while pretreatment to seeds, post-emergence treatment at 3 days after seeding, 3-leaf stages, and 5-leaf stages had not shown positive effects. Thus, the positive effects of ALA on barley were dependent greatly upon the timing of application and its concentration. Monocots weeds were more sensitive to ALA foliar treatment than dicotyledonous weeds. A monocot weed, Setaria viridis L. was the most susceptible plant to ALA while a dicotyledonous weed, Plantago asiatica L. was the most tolerant. No significant difference in biological activity between bio-ALA and synthetic ALA on barley, wheat, rice, and weed, Ixeris dentate tested was observed. Thus, ALA produced by microorganisms would be a potent substance to be used effectively in agricultural production.

Properties of Acorn Mook with Various Soaking Conditions (수침조건에 따른 도토리 묵의 품질 특성)

  • This study was to examine the characteristics in the texture of acorn Mooks (acorn starch jelly) with different conditions to prepare acorn starch. By texture profile analysis, hardness and chewiness with 50% deformation were increased with increasing soaking days. Hardness of acorn Mook, measured by texture analyzer, showed significantly difference between the samples, and was closely related to the content of non-starchy substances and their intrinsic viscosity. The observation of microstructure through a scanning electron microscope (SEM) showed that acorn Mook showed finer and more fibrous structure than control(0-0), sample without soaking of acorn and sediments. Sensory characteristics of acorn Mook were affected by soaking treatment. The result of acceptance test on acorn Mooks indicated that the color and hardness increased with the increase of soaking days of acorn nuts and soaking times of sediments. There was a little difference between the samples in astringency taste. Their overall acceptability also increased except for 4-2 sample (i.e., soaking of acorn, 4 days; soaking of sediments, 2 times) and 4-3 sample (i.e., soaking of acorn nuts, 4 days; soaking of sediments, 3 times). As the results, the color, light brown, and the taste, a little astringency with consistency, were important factors of acorn Mook.

Studies on Distribution of Toxic Element in Commercial Plywood treated with CCA Preservative by the Soaking Method (침지법(浸漬法)에 의한 CCA처리합판(處理合板)의 약제분포(藥劑分布)에 관한 연구(硏究))

  • The purposes of this study were, first, to investigate retention levels of toxic elements and oxide individual plies for each panel and, second, to examine disproportioning of individual toxic elements Thirty five water gum plywood panels were treated with a copper-chromium-arsenic preservative (CCA) by the soaking process as the treament time were applied. Such individual plies at a distance of 2.5cm, 7.5cm from the edge were assayed for CuO, $CrO_3$, and $As_2O_5$ on the basis of copper, chromium and arsenic content by Atomic Absorption Spectrophotometry. In these experiments, 12mm thickness plywood panels made of water gum, which were selling, were selected for the preservative treatment. Treating solutions were prepared for 10%, dilute solution of copper-chromium-arsenic preservative and then 1, 3, 6, 12 and 24 hours soaking trements in CCA preservative were applied. The results obtained are as follows: 1. The retention of total oxide in the face and back plies (1+7) retained more than the retention of total oxide in the other plies. The total oxide retention for the individual plies except the face and back plies (1+7) was showed in the following orders; cross plies (3+5), cross plies (2+6), core ply (4). 2. The retentions of total oxide increased as the increase of treatment time. The CCA treated plywood retained high levels of total oxide retention in the face and back plies (1+7). 3. All the retentions in the face and back plies (1+7) is over 5Kg/$m^3$, New Zealand Timber Preservation Standards Specification, and after 6 hours, the retentions in the cross plies (3+5) is over 4. The relative penetration of copper, chromium, and arsenic were not affected by the treatment time. The proportion of arsenic decreased in relation to both copper and chromium and the proportion of copper increased in relation to both chromium and arsenic. 5. A disproportioning of copper, chromium occurred with longer distance from edge, and with longer distance from edge the leachability resistance of CCA treated specimens decreased. After 6 hours (soaking time), the proportion of active elements at a distance of 2.5cm from the edge was consistent. And after 24 hours-soaking, the proportion of active elements at a distance of 7.5cm from the edge was consistent.

Physicochemical Treatment for the Reduction of Fusarium spp. Infested in Adlay (Coix lacryma-jobi L.) Seeds (율무 종자 오염 Fusarium 속 진균 저감화를 위한 이화학적 처리)

  • Background : The aim of the present study was to identify an effective physicochemical control method to reduce Fusarium species infestation in adlay (Coix lacryma-jobi L.) before and after harvesting. Methods and Results : We observed that prochloraz emusifiable concentrate and hexaconazol prochloraz emusifiable concentrate strongly inhibited the mycelial growth of 10 Fusarium species. Strong growth inhibitions and cell lysis were observed following treatment with 4% NaOCl solution. The total number of fungi detected were lower follwing treatment with thiophanatemethyl triflumizole wettable powder ($1.1{\times}10^4CFU/g$), hexaconazol prochloraz emulsifiable concentrate ($1.2{\times}10^4CFU/g$), carboxin thiram dustable powder ($1.6{\times}10^4CFU/g$) and prochloraz emulsifiable concentrate ($1.7{\times}10^4CFU/g$) than in the non-treated control ($7.7{\times}10^4CFU/g$). The reduction of Fusarium fungi varies with the concentration and soaking time of NaOCl solution. Fungal detection was not observed after soaking in NaOCl solution for 24 h and harmful effects were not observed for plant growth by NaOCl after soacking for 6 - 12 h. Conclusion : Soaking seed for 6 - 12 h in 4% NaOCl could be an effective method of disinfectant treatment for the control of Fusarium fungi in adlay seeds.

The Effect of Soaking and Fumigation Treatments on Bending Properties and Hardness of Pine Wilt Disease Infected Wood (침전·훈증처리 소나무재선충병 피해목의 휨강도성능 및 경도에 관한 연구)

  • This study used pine wilt disease damaged trees as raw materials. The damaged woods were subjected to soaking treatment using wood vinegar, nematicide and sea water, fumigated treatment using fumigation, and the bending strength and hardness of the timber were measured at different points of time after the treatment. In soaking treatment, the highest bending strength was obtained from wood vinegar (100 fold dilution)-soaked specimens of Pinus densiflora and the nematicide-soaked specimens of Pinus thunbergii. The highest hardness in cross section was gained from the nematicide-soaked specimens of Pinus densiflora and Pinus thunbergii, the highest hardness in radial section was obtained from the nematicide-soaked specimens of Pinus densiflora and wood vinegar (100 fold dilution)-soaked specimens of Pinus thunbergii, and the highest hardness in tangential section was obtained from the nematicide-soaked specimens of Pinus densiflora and Pinus thunbergii, and there were not significantly different among the treatments. When fumigated treatment was applied, bending strength, hardness was somewhat lower in the control but were not significantly different between the treatments.

Characteristics Changes of Floury-type Rice depending on Water Immersion and Heat Treatment Time

  • In the production of rice flour, wet milling is a method of milling rice after soaking it in water, and it takes a lot of time and cost from milling to drying. To overcome this problem, the floury type rice was developed for dry milling and it is known to have round starch granules, low content of damaged starch after milling, and a starch structure similar to wheat. Because of its unique properties different from normal rice, it is necessary to research on processing and characteristics of floury-type rice to expand its utility in the food industry. Therefore, this study aimed to prepare the pregelatinized floury type rice (Baromi2) by autoclave and investigate their physicochemical properties. As the heat treatment time increased, the brightness decreased from 83.8 to 76.8, however, both redness and yellowness increased from 0.57 to 4.5 and from 14.58 to 21.13, respectively. Despite of same treatment time, soaking in water (10 min) before autoclaving increased the solubility and swelling power of Baromi2 over 2 times. The peak viscosity of native Baromi2 was over 2000 RVU, on the other hand, there was a significantly decrease to less than 1000 RVU of pregelatinized Baromi2. Heat treatment without immersion caused partial gelatinization of starch, resulting that some starch granules maintaining their integrity. Whereas there were no starch granules in heat treatment with soaking in water due to complete gelatinization. This study would be helpful to the suggestion of using heat-treated floury-type rice as an intermediate material in the food industry in the future.

Study of geotechnical properties of a gypsiferous soil treated with lime and silica fume

  • The gypsiferous soils are significantly sensitive to moisture and the water has a severe destructive effect on them. Therefore, the effect of lime and silica fume addition on their mechanical properties, when subjected to water, is investigated. Gypsiferous soil specimens were mixed with 1, 2 and 3% lime and 1, 3, 5 and 7% silica fume, in terms of the dry weight of soil. The specimens were mixed at optimum moisture content and cured for 24 hours, 7 and 28 days. 86 specimens in the sizes of unconfined compression strength test mold were prepared to perform unconfined compressive strength and durability tests. The results proved that adding even 1% of each of these additives can lead to a 15 times increase in unconfined compressive strength, compared with untreated specimen, and this increases as the curing time is prolonged. Also, after soaking, the compressive strength of the specimens stabilized with 2 and 3% lime plus different percentages of silica fume was considerably higher than before soaking. The durability of the treated specimens increased significantly after soaking. Direct shear tests showed that lime treatment is more efficient than silica fume treatment. Moreover, it is concluded that the initial tangent modulus and the strain at failure increased as the normal stress of the test was increased. Also, the higher lime contents, up to certain limits, increase the shear strength. Therefore, simultaneous use of lime and silica fume is recommended to improve the geotechnical properties of gypsiferous soils.
