Development of Grilled-type Shrimp Flavor by Maillard Reaction and Sensory Evaluation

  • A grilled-type shrimp flavor was developed through the Maillard reaction to reduce or mask fish odor or off-flavor in seafood. Model systems were created by using enzymatic hydrolysate of shrimp and adding precursors to increase flavor quality and stability. Amino acid precursors such as cysteine and methionine, sugar precursors such as glucose, xylose, ribose, and sucrose, and one particular compound of glucosamine were tried and their flavor qualities were tested by sensory evaluation. Also, the optimum reaction condition was investigated using the pH values of pH 5, 6, 7, and 8 with reaction times of 1 hr, 2 hr and 3 hr after the best precursors were determined. The best condition of the precursors for grilled-type shrimp flavor was the mixtures of methionine, threonine, xylose, and glucosamine. The optimum reaction condition was at pH 8.0 and 2 hr reaction time.

  • Boiled-type shrimp flavor was developed using Maillard reaction to reduce or mask fish odor or off-flavor in seafood. Model systems were created using enzymatic hydrolysate of shrimp and adding precursor compounds to increase flavor quality and stability. Amino acid precursors of cysteine and methionine and sugar precursors such as glucose, xylose, ribose and sucrose were tried and their flavor qualities were tested by sensory evaluation. After the optimal precursors were determined, the optimum reaction condition was investigated using pHs of 5, 6, 7, and 8 and reaction times of 1, 2 and 3 hours. The best precursors for boiled-type shrimp flavor were methionine and sucrose. The optimum reaction condition was pH 8.0 and a one hour reaction time.

새우 및 게로 만든 소스의 품질 특성 (The Quality Characteristics of Sauce Made with Shrimp or Crab)

  • The purpose of this study was to evaluate sensory characteristics, and to investigate nutrients and taste compounds in sauce made with shrimp or crab. Shrimp sauce fumed out to have better appearance, color, flavor and texture, and the taste of crab sauce was more excellent. In three kinds of shrimp sauces made with different thickeners, sauces used with rice and roux were evaluated to have a good taste and flavor. The major amino acids were -aminobutyric acid, alanine, ${\alpha}$-aminoadipic acid and citruline in shrimp sauce, and taurine, alanine, ${\alpha}$-aminoadipic acid and citruline in crab sauce. The major fatty acids of both samples were palmitic acid and oleic acid, and also palmitoleic acid and linoleic acid were much detected in shrimp and crab sauce. The content of crude protein was 1.62∼2.44%, and that of crude lipid was 0.92∼1.52% in the two sauces. The major minerals were potassium and sodium in shrimp and crab sauce.

볶음 과정중 첨가한 옥수수 기름이 마른 새우 향기성분 형성에 미치는 영향 (Effects of Added Corn Oil on the Formation of Volatile Flavor Compounds in Dry Shrimp During Roasting Process)

  • 건조새우를 볶는 과정 중에 옥수수기름의 첨가에 따른 향기성분변화를 검토하고자 건조새우와 건조새우 중량에 옥수수 기름을 각각 10%, 25%씩 첨가한 시료를 18$0^{\circ}C$에서 7분간 가열하였다. 마른새우 및 가열한 3개 시료의 향기성분을 연속수증기증류방법으로 추출하였다. 확인된 향기성분은 14개의 aldehyde와 pyrazine과 pyridine이 각 7개 그리고 5개의 alcohol과 3개의 pyrrole 등 총 52개 이었다. 확인된 모든 성분중에서 그 함량과 향기성분의 수가 가장 많은 것은 aldehyde류이었다. 기름을 첨가하여 가열한 시료에서는 지방산 사슬에서 기인된 heptenal, trans-2-heptenal, nonanal, trans-2-decenal, trans, cis-2,4-decadienal, trans, trans-2,4-deca-dienal과 1-octen-3-ol, 2-pentylfuran 등의 지질 분해산물이 관찰되었다. 새우의 독특한 향기성분을 나타내는 함질소 화합물인 pyrazine, pyridine, pyrrole 등은 마른 새우에서는 검출되지 않았으나 가열하여 볶은 새우에서 확인되었으며 옥수수 기름을 10 g 첨가하여 볶은 시료에서 그 함량이 가열한 시료보다 조금 더 증가하였으며 259의 기름을 첨가한 시료에서 가장 많이 나타났다. 이 결과는 첨가된 옥수수 기름에서 기인된 aldehyde류가 시료의 아미노산과 반응하여 바람직한 함질소 향기성분 생성에 기여한 것이라고 할 수 있다.

크릴반응향의 휘발성 향기 성분 및 데리야끼소스의 적용 (Headspace Volatile Compounds of Krill Reaction Flavor and Its Application to Teriyaki Sauce)

  • 본 연구는 크릴육으로 크릴반응향을 만들어 휘발성 향기 성분을 살펴보고 이를 데리야끼소스에 적용하여 데리야끼소스의 기초자료를 마련하기 위한 연구이다. 따라서 본 연구를 위해 먼저, 반응향 제조에 크릴육을 이용하였고 이의 가수분해물을 이용해 Grilled-type과 Boiled-type으로 나누어 실험하였다. 또한, 반응향의 휘발성 향기성분을 알아보기 위하여 반응액 20 mL로 휘발성 성분을 포집하고 이것을 GC-MSD로 분리 동정하였다. 제조되어진 3가지 데리야끼소스를 10가지 항목인 삶은 야채향, 삶은 감자향, 삶은 새우향, 구운 새우향, 비린 향, 톡쏘는 향, 탄 향, 달콤한 향, 화학취, 진흙냄새와 좋아하는 정도에 대한 순서를 살펴보았으며 그 연구 결과는 다음과 같다. 크릴육의 Grilled-type에는 35개, Boiled-type에서는 33개의 휘발성 성분이 분리 동정되었다. Grilled-type에서는 황함유화합물, aliphatic compounds, alcohol류, ketone류, pyrazine류, other aromatic compounds의 순으로 휘발성 성분이 많았고, Boiled-type에서는 aldehydes, furans, other nitrogen- containing compounds의 순으로 휘발성 성분이 많았다. 데리야끼소스의 관능검사 결과는 boiled shrimp, roasted shrimp, sweet한 항목에서 유의적인 차이가 나타났다. 이상의 결과로 크릴을 이용하여 크릴반응향을 만들어 이를 적용한 데리야끼소스의 제조 가능성이 있는 것으로 나타났다.

새우젓의 정미성분에 관한 연구 (THE TASTE COMPOUNDS FERMENTED ACETES CHINENSIS)

  • In Korea fermented fish and shellfish have traditionally been favored and consumed as seasonings or further processed for fish sauce. Three major items in production quantity among more than thirty kinds which are presently available in the market are fermented anchovy, oyster and small shrimp. They are usually used as a seasoning mixture of Kimchi in order to provide a distinctive flavor. Fermented small shrimp, Acetes chinensis is most widely and largely used ana occupies an important position in food industry of this country. But no study on its taste compounds has been reported. This study was attempted to establish the basic data for evaluating taste compounds of fermented small shrimp. The changes of such compounds during fermentation as free amino acids, nucleotides and their related compounds, TMAO, TMA, and betaine were analysed. In addition, change in microflora during the fermentation under the halophilic circumstance was also investigated. The samples were prepared with three different salt contents of 20, 30 and $40\%$ to obtain the proper degree of fermentation at a controlled tempeature of $20{\pm}2^{\circ}C$. The results are summarized as follows: Volatile basic nitrogen increased rapidly until 108 days of fermentation and afterwards it tended to increase slowly. Amino nitrogen also increased rapidly until 43 days of fermentation and then increased slowly. Extract nitrogen increased and marked the maximum value at 72 day fermentation and then decreased slowly. ADP, AMP and IMP tended to degrade rapidly while hypoxanthine increased remarkably at 27 day fermentation but slightly decreased at 72 day fermentation. It is presumed that the characteristic flavor of fermented small shrimp might be attributed to the relatively higher content of hypoxanthine. In the free amino acid composition of fresh small shrimp abundant amino acids were proline, arginine, alanine, glycine, lysine, glutamic acid, leucine, valine and threonine in order. Such amino acids like serine, methionine, isoleucine, phenylalanine, aspartic acid, tyrosine and histidine were poor. In small shrimp extract, proline, arginine, alanine, glycine, lysine and glutamic acid were dominant holding $18.5\%,\;14.6\%,\;10.8\%,\;8.7\%,\;8.1\%\;and\;7.7\%$ of total free amino acids respectively. The total free amino acid nitrogen in fresh small shrimp was $63.9\%$ of its extract nitrogen. The change of free amino acid composition in the extract of small shrimp during fermentation was not observed. Lysine, alanine glutamic acid, proline, glycine and leucine were abundant in both fresh sample and fermented products. The increase of total free amino acids during 72 day fermentation reached approximately more than 2 times as compared with that of fresh sample and then decreased slowly. Fermented small shrimp with $40\%$ of salt was too salty to be commercial quality as the results of organoleptic test showed. It is found that 72 day fermentation with $20\%\;and\;30\%$ of salt gave the most favorable flavor. It is convinced that the characteristic flavor of fermented small shrimp was also attributed to such amino acids as lysine, proline, alanine, glycine and serine known as sweet compounds, as glutamic acid with meaty taste, and as leucine known as bitter taste. The amount of betaine increased during fermentation and reached the maximum at 72 day fermentation and then decreased slowly TMA increased while TMAO decreased during fermentation. The amount of TMAO nitrogen in fermented small shrimp was $200mg\%$ on moisture and salt free base. Betaine and TMAO known as sweet compounds were abundant in fermented small shrimp. It is supposed that these compounds could also play a role as important taste compounds of fermented small shrimp. At the initial stage of fermentation, Achromobacter, Pseudomonas, Micrococcus denitrificans which belong to marine bacteria were isolated. After 40 day fermentation, they disappeared rapidly while Halabacterium, Pediococcus, Sarcian, Micrococcus morrhuae and the yeasts such as Saccharomyces sp. and Torulopsis sp. dominated. It is concluded that the most important taste compounds of fermented small shrimp were amino acids such as lysine, proline, alanine, glycine, serine, glutamic acid, and leucine, betaine, TMAO and hypoxanthine.

  • Volatile flavor compounds in Korean salt fermented shrimp on the market were analyzed by vacuum simultaneous distillation solvent extraction/gas chromatography/mass spectrometry/olfac tometry(V SDE/GC/MS/O) and aroma extract dilution anlaysis(AEDA). A total of 32 volatile com pounds were detected by GC/O analysis. Of these, 18 were positively identified, and composed of S containing compounds(5), aldehydes(4), ketones(3), N containing compounds(3), ester(1), alcohol(1) and aromatic hydrocarbon(1). Predominant odorants(Log3FD$\geq$4) in salt fermented shrimp were 2,3 butanedione(sour/buttery), 1 octen 3 one(earthy/mushroom like), dimethyl trisulfide(cooked cabbage /soy sauce like) and 2 acetylthiazole(grainy/nutty). Predominant free amino acids were aspartic acid, glutamic acid(sour and umami taste), arginine, methionine(bitter) and lysine(sweet and bitter) in evaluation of taste value.

GC Olfactometry를 이용한 새우의 휘발성성분 특성평가 (Flavor Characteristics of Volatile Compounds from Shrimp by GC Olfactometry (GCO))

  • 새우를 육과 껍질 부분을 분리하지 않는 것과 폐기되고 있는 껍질부분만을 모아 SDE 장치를 이용해서 휘발성 성분을 조사해 본 결과, 각각 26개와 46개의 성분이 분리된 것을 알수 있었다. 휘발성 성분의 양에서도 껍질 부분을 처리한 시료에서 훨씬 더 많은 것을 볼 수 있었다. 시료를 마쇄하는 전처리 공정을 거치면서 추출율을 살펴보면 SSW의 경우에는 눈에 띄게 휘발성 성분의 양이 늘어난 것을 알 수가 있었다.. GC-MSD로 분리.동정 한 결과, pyrazines이 9종, acids S종, aldehydes 3종, alcohol 4종, pyridines 2종로 나타났다. SSW를 AEDA법으로 단계적으로 희석하여 GCO를 통해 sniffing test를 실시한 결과, 낮은 온도에서는 진한 새우 새우냄새가 지배적이었고, 온도가 올라갈수록 불쾌한 기름 냄새가 났다. GC-FID에서는 검출되지 않는 영역에서도 고소한 향이나 부드러운 향성분이 log$_3$ FD3이상의 높은 향 인지도를 나타내었다.

Development of Reaction Flavors with Enzymatic Hydrolysate of Krill Euphausia superba in Ramen Sauce

  • Antarctic krill Euphausia superba is an excellent potential source of food protein. We used enzymatic hydrolysate of Antarctic krill and 10 other precursors to seek the optimum krill reaction flavor and apply to ramen sauce. Krill concentrate and powder were compared by sensory evaluation. The krill powder performed better preference, and was added to ramen sauce, which itself performed better than a commercial shrimp flavored sauce. In total, 47 and 39 volatile compounds were identified from krill concentrate and powder, respectively. Both products contained many aldehydes and sulfur-containing compounds. The whisky flavor of aldehydes lowered the shrimp flavor of the krill concentrate. Sulfur-containing compounds were found in krill powder, confirming the results from sensory evaluation.

Effect of Irradiation Dose and Storage Time on the Free Radical Concentrations in Gamma-reradiated Dried Seasoning Powder

  • Electron spin resonance (ESR) spectroscopy was used to investigate the effect of irradiation dose and storage time on the free radical concentrations in gamma-irradiated dried seasoning powder. Seasoning powders of dried squid flavor, shrimp flavors, kimchi flavor, spicy beef soup flavor and soy sauce flavor were irradiated with doses of 0, 1, 3, 5, 7 and 9 kGy at room temperature using a Co-60 irradiator. Characteristic signals of free radicals were observed in all the irradiated samples of this experimental while these signals were not detected in non-irradiated samples. Since the free radical concentrations linearly increased with the applied doses (1~9 kGy), highly positive correlation coefficients ($R^2$ = 0.9285~0.9965) were obtained between irradiation doses and free radical concentrations during all the storage times. Free radical concentrations of the irradiated flavored seasoning powder did not change even at 16 weeks of storage at room temperature, while those of dried squid, shrimp and spicy beef soup flavors decreased until 2 weeks of storage after irradiation with 5 kGy or over, and these of soy cause flavors slowly decreased until 8 weeks of storage after irradiation with 3 kGy or over. Although the free radical concentrations decreased with storage times, the characteristic signals of the irradiated seasoning powders of dried squid, shrimp, spicy beef and soy sauce flavors were observed even after 16 weeks of storage at room temperature.
