합리적인 식단작성을 위한 식품폐기율 조사 연구 (Survey on Waste Rates of Foods for Menu Planning)

  • The waste rates of 98 food items after pre-preparation were surveyed to provide database for good menu planning. The waste rates turned out 0-64.27% in vegetables, 6.38-7.03% in potatoes, 6.25-68.75% in fishes and shellfishes, 16.61% in eggs, and 16.00-56.84% in fruits. Foods with high waste rates were vegetables, fishes and shellfishes. Survey results were compared with other food composition tables. Foods with 30% higher waste rate than other food composition tables were squash leaf, pacific ocean perch, sweet potato stalk, water cress, green peas, alaska pollack, bluefin tuna, beka squid, crown daisy, dodok, amaranth, beef ribs. Food which waste rates turned out to be decreased by about 30% in this study were corb shell, pomfret, sea mussel, warty sea squirt. For the menu planning, reasonaly exact waste rates for each food items are essential. Since survey results show significant deviations, there should be more studies for exact waste rates for each food.

부영양 저수지에서 국내 담수산 패류가 수질에 미치는 영향 (Effects of Domestic Freshwater Shellfishes on the Water Quality in the Eutrophic Agricultral Reservoir)

  • Water quality and plankton community dynamics after the introduction of two domestic freshwater shellfishes (Unio douglasiae Griffith & Pidgeon and Cipangoplaudina chinese malleata Reeve), were monitored daily in enclosures, which constructed in the tidal zone of eutrophic agricultural reservoir (Shingu reservoir, Korea) for one week between July 31 and August 6, 2007. This biomanipulation study to improve the water quality of eutrophic lake, comprised eight enclosures (duplicate x four kinds), enclosure had no mussels (Control), stocked only with U. douglasiae at density of 60 individuals (UD), stocked only with C. chinese malleata at density of 60 individuals (CCM), and combined-stocked with 30 individuals of UD and 30 individuals of CCM (MIX), respectively. Our results clearly indicate that UD strongly decreased the concentration of chlorophyll-a and increased the water transparency, whereas CCM and MIX (included CCM) did increase algal density or decrease transparency, due perhaps to the disturbance of C. chinese malleata. Therefore, the field application of shellfish to enhance the water quality of eutrophic agricultural reservoir, should consider the grazing characteristics of biological control agents, especially active moving animals like snail.

  • 패류건제품의 가공 및 저장중의 flavor의 형성에 관련되는 각종 질소화합물의 함량변화를 조사하였다. 홍합, 바지락 및 굴의 생시료에서는 ATP, ADP 및 AMP의 함량은 낮았고 IMP와 inosine의 함량은 높게 나타났다. TMAO함량은 생시료에서는 높았으나 배건시료에는 크게 감소하였고, TMA함량은 TMAO의 경우와 상반된 경향을 나타내었으며 열풍건조시료의 저장중에는 TMAO의 감소 및 TMA의 증가량은 적었다. 생시료중의 glycinebetaine의 함량은 참치, 고등어 등의 어류에 비하여 월등히 높은 값을 나타내었고, 자숙 및 배소에 의한 감소는 적었으며 hormalin과 trigonelline의 함량은 자숙 및 배소에 의하여 크게 감소하였다. 홍합, 바지락 및 굴에서는 각각 29종의 유리 아미노산 및 아미노산 유도체가 분석되었는데 주요 아미노산은 glycine, alanine, arginine, glutamic acid 및 lysine등이었으며 자숙후와 건조후에는 대부분의 아미노산의 함량이 크게 감소하였다.

한국 성인에 있어서 식이를 통한 비소 노출 평가 (Dietary Exposure Assessment of Arsenic in Korean Adults)

  • Objectives : Arsenic (As) is ubiquitously distributed in the environment and has been known as a human carcinogen. The main source of arsenic exposure in general population is an oral route through As-contaminated water and foods. This study was performed to estimate the daily intake of As from diet and associated factors in Korean adults. Methods : We investigated 590 adults, 249 males and 341 females, with age of 20 years and older, who had not been exposed to the As occupationally. Study subjects were interviewed for demographic characteristics, lifestyles and diets during the last 24 hours. The estimation of As intake daily was based on amount of food consumption and As concentration in each food by using database of As concentrations in 117 food species. Results : Daily As intake was estimated as $56.46\;{\mu}g$/day, $56.60\;{\mu}g$/day in male and $56.36\;{\mu}g$/day in female. As intake was not significant from sex, age group, smoking and alcoholic habits, while was by occupation with the most intake of As in fishery. The daily As intakes was positively correlated with the total food consumption, specifically related with fishes and shellfishes, seaweeds, oils, grains and flavors. About 75% of As intake from diet was contributed by seafoods, such as $32.07\;{\mu}g$/day from fishes & shellfishes and $10.05\;{\mu}g$/day from seaweeds. However, it is necessary to evaluate if the dietary As intake affects on the levels of As in the body. Conclusions : The amount of As intake daily in Korean adults was estimated as $56.46\;{\mu}g$/day, and is determined mainly by diet behavior. The seafoods, such as fishes & shellfishes and seaweeds, is major source of As exposure from diet in Korean.

우리나라 남해안산 패류의 중금속 함량 (Heavy Metals in Shellfishes Around the South Coast of Korea)

  • 1999년 2월부터 2000년 11월까지 남해안의 패류양식장에서 채취한 굴(Crassostrea gigas), 진주담치(Mytilus edulis), 바지락(Ruditapes philippinarum) 및 피조개(Scapharca broughtonii)의 수은, 카드뮴, 납 및 크롬 등 중금속 함량을 정량하고 굴과 진주담치간의 중금속 함량을 비교하였다. 남해안 11개소의 패류 양식장에서 채취한 굴의 중금속 함량은 평균치로 수은이 0.008 ${\mu}g/g$, 카드뮴이 0.519 ${\mu}g/g$, 납이 0.220 ${\mu}g/g$ 그리고 크롬이 0.153 ${\mu}g/g$이었고, 12개소에서 채위한 진주담치의 함량은 각각 0.008, 0.257, 0.214 및 0.178 ${\mu}g/g$이었다. 전남 고흥군 나로도 연안에서 채취한 바지락의 중금속 함량은 평균치로 수은이 0.009 ${\mu}g/g$, 카드뮴이 0.232 ${\mu}g/g$, 납이 0.107 ${\mu}g/g$ 크롬이 0.364 ${\mu}g/g$이었고, 경남 남해 강진만에서 채취한 피고개의 함량은 각각 0.007, 0.559, 0.149 및 0.116 ${\mu}g/g$이었다. 굴, 진주담치, 바지락 및 피조개에서 검출된 중금속의 함량은 최고치인 경우에 있엇도 우리나라의 해산 패류 중 중금속 허용기준치 및 미국의 패류에서의 중금속 농도 권고치를 초과하지 않았다. 동일한 지역에서 같은 시기에 채취한 굴과 진주담치는 수은의 함량은 거의 차이가 없었으나 카드뮴은 굴이 진주담치보다 약 2배의 축적율을 나타내어 품종에 따른 차이가 뚜렷하였다.

패류로부터 젖산 세균의 분리 및 특성 (Identification and Characteristics of Lactic Acid Bacteria Isolated from Shellfishes)

  • Lactic acid is an important product arising from the anaerobic fermentation by lactic acid bacteria (LAB). It is used in the pharmaceutical, cosmetic, chemical, and food industries as well as for biodegradable polymer and green solvent production. The poly lactic acid (PLA) is an important material for bio-plastic manufacturing process. For PLA production by new LAB, we screened LAB isolates from shellfish. A total of 28 LAB were isolated from various shellfishes. They were all Gram positive, oxidase and catalase negative. Based on API 50CHL kit, 7 strains among the 28 isolates were identified as Lactobacillus plantarum, 6 strains as Lactobacillus delbrueckii, 5 strains as Leuconostoc mesenteroides, 3 strains as Lactobacillus brevis, 2 strains as Lactococcus lactis, 1 strain as Lactobacillus salivarius, 1 strain as Lactobacillus paracasei, 1 strain as Lactobacillus pentosus, 1 strain as Lactobacillus fermentum and 1 strain as Pediococcus pentosaceu. Also, we examined the amount of total lactic acid produced by these new strains by HPLC analysis with Chiralpak MA column. One strain E-3 from Mytilus edulis was indentified as Lactobacillus plantarum and found to produce 20.0 g/L of D-form lactic acid from 20 g/L of dextrose. Further studies are underway to increase the D-lactic acid production by E-3.

진주담치와 굴 통조림의 저장기간에 따른 마비성 패류독의변화 (Changes in the Toxicity of Paralytic Shellfish Posion during Storage of Canned Blue Mussel (Mytilus Edulis) and Oyster (Crassostrea Gigas))

  • 마비성패류독은 매년 4월과 5월 초에 정점을 이루어서 국민보건을 위협하고 있고 수산물 수출에도 타격을 주고 있다. 현재 수출 주력 상품으로 국과 진주담치 통조림이 있는데 독력이 낮은 제품은 통조림 제조 과정에서 대부분의 독이 파괴되나 독력이 높은 원료로 제조한 통조림은 잔존독이 문제가 되고 있다. 그러므로 독화된 진주담치와 굴로 제조된 통조림을 상온에서 2년과 저장하면서 독력 변화를 측정하여 식품위생 대책을 세우는 데에 필요한 자료를 제공하고자 한다. 진주담치와 굴 통조림을 2년간 상온에서 저장한 결과 두 시료간의 독소 잔존력의 차이는 없었다. 보일드 통조림과 훈연기름담금 통조림은 2년후에 독소의 불활성화가 어느 정도 인정되었으나 초유지 통조림인 경우 2년 후에도 초기 독력을 유지하였다. 원료의 최초 독력이 높은 경우 제조된 통조림에 독소가 잔존하고 이들 독소를 장기 저장(2년)으로 제거할 수 없었다.

한국 남해안 일대의 해수 및 해산물에서 Vibrio vulnificus의 분리연구 (Studies on the Isolation of Vibrio vulnificus from Sea Water and Marine Products in the Southern Sea of Korea)

  • Authors studies on the isolation of V. vulnificus from sea water, sea mud fishes, shellfishes and algae at the seasides of Pusan, Masan, Chungmu and Ulsan in Korea in 1985. Authors carried out test for isolated strains to bacteriological test, hemolysis test about erythrocytes of various animal, sensitivity test of various chemotherapeutic agents and serological test with antiserum of V. vulnificus. The resultls obtained were as follows: 1. V. vulnificus was isolated 15 strains from 399 total specimens: 110 cases of sea water, 40 cases of sea mud, 90 cases of fishes, 60 cases of shellfishes and 79 cases of various algae, respectively. 2. Nine strains were isolalted from sea water, 4 strains were isolated from sea mud and 2 strains were isolated from fishes, respectively. 3. Two strains among 15 strains isolated were lactose positive reaction. 4. All strains isolated were grown in concentration of $0.5%{\sim}7.0%$ NaCl, but were not grown 0% and 8.0% NaCl. 5. Hemolysis reaction about various erythrocytes was sensitived to guinea pig, human and rabbit erythrocytes, but was not sensitived to sheep erythrocytes. 6. Sensitivity test using with chemotherapeutic agents of "BioLab" Microbial Sensitivity Test Discs were generally sensitived to amikacin, ampicillin, clindamycin, erythromycin, gentamycin, kanamycin, streptomycin, tetracyclin and tobramycin, and were moderate to penicillin, but were resistant to methicillin and lincomycin, respectively. 7. The distribution of serotypes of V. vulnificus isolated were on antiserum of $0.1{\sim}07$ of V. vulnificus: 1 case of 01 and 2 cases of 07, respectively.

식품의 잔류농약 및 유해중금속의 오염인식도 -대전지역을 중심으로- (The Recognition Level of Food Contamination with Residual Pesticides and Hazardous Heavy Metals in Taejon Area)

  • This study was to investigate the recognition level of food contamination with residual pesticides and hazardous heavy metals from 365 male and female adults in Taejon area using questionnaires. Among the recognizing level of residual pesticides in overall foods, 69.1% were 'serious', 25.6% were 'average' and 5.3% were 'not serious'. Over 94.7% of the subjects recognized residual pesticides pollution infoods. for hazardous heavy metals in food, 47.8% responsed as 'serious', 40.5% as 'average' and 11.8 as ' not serious' . Over 88.3% of the subjects recognized contaminated pesticides seriously in fruits, 72.1% in vegetables and 51.7% in cereals, whereas 55.7% of the subjects recognized hazardous heavy metal contamination seriously in fruits, 53.4% in vegetables, 40.8% in fishes and shellfishes and 35.0% in seaweeds. The subjects recognized residual pesticides contamination more seriously in overall foods, cereal, potatoes and starches, bean, vegetables and fruits, whereas hazardous heavy metal contamination was recognized more seriously in fishes and shellfishes, and seaweeds food groups. Comparisons were shown based on individuial's occupation. Farmer, forester, iner and fisher showed the lowest recognizing level of food contamination in most food groups. The mean score of the dietary effect by mass media's information on food contamination from residual pesticides and hazardous heavy metals were 3.51±0.96 out of 5 points. By Duncan's multiple range test, sex, age, marriage, food cost per month, concerns about health and nutrition knowledge showed significant differences in the mean effect score at p<0.05. According to a pesticides contamination in several food groups were affected by food cost per month, mass media's information on food contamination, health status, and concerns about health, But a recognition level of hazardous heavy metals in food were affected by income and, food cost per month mass media's information on food contamination, health status, concern about health and nutrition knowledge. People who need to take extreme precautions of food contamination were in order of producers, government officials, homemakers, the consumer's association and consumers.
