Electrochemical Properties on High Temperature Operating Battery by Electrolyte and Salts in Electrodes (고온 작동형 전지의 전해질 및 전극내 첨가염 변화에 따른 전기화학적 특성 연구)

  • Thermally activated batteries have good stability, reliability and long shelf life. Due to these characteristics and operational mechanism, thermal batteries are usually applied to military power sources. Especially, Li/$FeS_2$ thermal batteries, which are used mostly in these days, use LiCl-KCl and LiBr-LiCl-LiF as electrolytes. The electrochemistry of thermal batteries have been researched for long time, however, electrochemical study using impedance spectroscopy was not published so much. Through this research, microscopic electrochemical research was investigated with electrochemical impedance spectroscopy(E.I.S). Electrolyte effects on Li/$FeS_2$ thermal battery was researched changing electrolytes, LiCl-KCl and LiBr-LiCl-LiF. Additionally, the salts, which are added to electrolytes, effects on thermal battery were researched. It is expected that the impedance spectroscopy analysis is applicable to not only thermal battery electrochemical study effectively, but also, thermal battery developments.

  • Effects of various formulation factors using $L_8$ orthogonal arrays with the stability of doxorubicin hydrochloride injections(DHls) were investigated. The degradation of DHI may be occured by pH, temperature, light and metal ions. It is known that DHI should be stored on refrigerated condition of $4{\sim}8^{\circ}C$ because of its unstability on the room temperature. The employed factors were sodium chloride as isotonic solution, sodium bisulfite or sodium pyrosulfite as an antioxidant, disodium edetate as a chelating agent, methyl parahydroxybenzoate as a dissolution time shortening agent, and hydrochloric acid or citric acid as a pH adjusting agent at $22^{\circ}C$. From the results of $L_8$ orthogonal arrays, an optimal formula, including sodium chloride, disodium edetate, sodium bisulfite and hydrochloric acid, was obtained and the shelf-life of the formula was determined as 560 days approximately.

  • Prostaglandin $E_1\;(PGE_1)$ was formulated as two self-microemulsifying drug delivery systems (SMEDDS) composed of Cremophor $EL^{(R)}$ or Cremophor $ELP^{(R)}$ as a surfactant, ethanol as a cosurfactant and Labrafac $CC^{(R)}$ as an oil to develop liquid preparation for the treatment of erectile dysfunction. In pseudo-ternary phase diagram, viscous gel area and microemulsion area were defined. In the measurement of viscosity, the viscosity of two formulations increased gradually upon the addition of water and it decreased from the water contents over 40%. With excessive water, the present systems formed a microemulsion spontaneously. From these results, rte could expect that the present liquid $PGE_1$ SMEDDS formulations might stay within the urethra in the viscous state when contacting the moisture of the urethra and can be easily eliminated by urination. In long-term stability study, we could select one formulation more stable at the shelf storage condition of $4^{\circ}C$.

Effect of Liposome on the Stabilization of Ascorbic Acid (Ascorbic Acid 의 안정성에 대한 Liposome 의 효과)

  • To overcome unstability of ascorbic acid, liposome was used to encapsulate it. Ascorbic acid was encapsulated with 46.8% efficiency inside soybean phosphatidyl choline liposomes by the dehydration-rehydration method. Stability of encapsulated ascorbic acid in liposome was enhanced compared to that in free aqueous solution. For example, most of ascorbic acid in acetate buffer (pH 5.0) was oxidized after 7 days, however, that in liposome was remained as reduced form with 22.8% after 40 days at same conditions. These results mean that encapsulation of ascorbic acid in liposome could provide protection tool for improvement in shelf life.

Processing and Quality of Seasoned Low-salt Fermented Styela plicata Supplemented with Fermentation Alcohol (발효주정 첨가 오만둥이(Styela plicata) 양념젓갈의 제조 및 품질)

  • To develop a value-added low-salt fermented seafood with a long shelf-life, we prepared seasoned low-salt fermented Omandungi Styela plicata supplemented with fermentation alcohol (SOE). The SOE was produced by washing and dewatering shelled Omandungi, followed by cutting and salting for 24 h at 0±1℃. The salted Omandungi was seasoned and fermented with garlic, ginger, monosodium glutamate, red pepper, sesame, sorbitol, and sugar, for 7-8 days at 0±1℃. After adding 3-5% fermentation alcohol, the seasoned fermented Omandungi was packed in a polyester container. The salinity, volatile basic nitrogen content, and viable cell count of SOE were 4.8%, 22.1-22.2 mg/100 g, and (1.2-1.9)×103 CFU/g, respectively. Compared with the control, addition of 3-5% fermentation alcohol inhibited the decrease in freshness, texture degradation, and growth of residual bacteria. Additionally, the SOE showed good storage stability and organoleptic qualities when stored at 4±1℃ for 40 days. The total amino acid content of SOE was 2,186.0 mg/100 g, mainly comprising glutamic acid, aspartic acid, lysine, and phenylalanine. The free amino acid content was 189.0 mg/100 g, and mainly included taurine, glutamic acid, methionine, alanine, and proline.

Application of an Electric Field Refrigeration System on Pork Loin during Dry Aging

  • This study aimed to investigate the effect of an electric field refrigeration (EFR) on the quality characteristics of pork loin including dry aging loss, pH, water holding capacity (WHC), cooking loss, color, shear force, thiobarbituric acid reactive substances (TBARS), and microbial growth during dry aging (0, 1, 2, 3, 4, 7, and 9 wk) in comparison with a commercial refrigerator (CR). Total plate counts (TPC) of the CR group approached 8.07 Log CFU/g at 2 wk of dry aging, thus indicating meat spoilage. Cooking loss, lightness, and shear force of EFR were significantly decreased (p<0.05) at subsequent aging weeks in both the EFR and CR. Aging loss, TPC, TBARS levels increased at subsequent aging weeks; however, pH values were not influenced by aging. At the same aging weeks (1 or 2 wk), the EFR group displayed significantly lower values (p<0.05) of aging loss, pH, TPC, and TBARS levels than the CR group. No significant differences in WHC, cooking loss, and shear force was observed until 2 wk of aging between the EFR and CR groups. The present results show that application of the EFR system improves the tenderness, color, and lipid oxidation stability of pork loin and extends its shelf life in comparison with a commercial refrigeration.

  • Many consumers are concerned about the high levels of salt intake owing to the accompanied risk of chronic diseases. Due to this dietary concern, the food industry has recommended the reduction of salt content in many products. However, the addition of salt to meat products improves their quality and sensory properties, including saltiness, color, juiciness, and texture. Because quality deteriorations could induce decreased sensory scores owing to salt reductions, the challenges involved in improving the quality of reduced-salt meat products have been addressed. During the development of low-salt meat products, it is important to reduce sodium content and address the problems that arise with this reduction. Modified salt, organic acids, amino acids, nucleotides, hydrocolloids, high-pressure, ultrasound, electric pulsed field, and irradiation have been suggested as strategies to replace or reduce sodium content, and sensory scores could be improved by these strategies. Therefore, when developing a low-salt meat product, several perspectives must be considered and the latest technologies that could resolve this problem should be adopted.

  • The stability of vitamin A, $B_1,\;B_2,\;B_6$, C in aqueous multivitamin solutions was carried out by means of estimation of reaction velocity and the results are described in this paper. The stability of vitamin A, $B_1$ and C due to thermal degradation method in aqueous multivitamin solutions was evaluated at 40, 50, 60 and $70^{\circ}C$ up to 40 days. The shelf-lives of vitamin A, B₁ and C in this preparation, calculated using the Arrhenius equation, were 1493, 449 and 639 days at $25^{\circ}C$ respectively. Examination was made on the effect of initial concentration of vitamin $B_2$$(C_0)$ on light fading of vitamin $B_2$ in aqueous multivitamin solutions and it was found that the fading progressed according to the following formula : $-{\frac {dc}{dt}}=K_c\;{\frac C{C_0}}$ where Kc is apparent light-fading rate constant relate to $C_0$. Photodecomposition of vitamin $B_6$ in aqueous multivitamin solutions was apparently first order kinetics and was stable in polyethylene>brown color>glass container to sunlight. Photodecomposition of vitamin $B_6$ in four seasons also investigated.

  • At the department of prosthodontics, the elderly patients with severely atrophied alveolar ridge who have been wearing complete dentures for a long period frequently visit the clinic. In general, the open-mouth impression technique for manufacturing a mandibular complete denture to secure primary support on buccal shelf area has been prevalent. In addition, for securing retention and stability of mandibular denture, we should consider diagnosis, oral function, denture border, occlusal plane, teeth arrangement, and patient training, etc.. But in edentulous patients with severe alveolar bone atrophy, it may hardly secure retention and stability of mandibular complete denture. To promote these, some of clinicians are making an attempt manufacturing the mandibular complete dentures using closed-mouth impression technique based on several reports that compare various impression techniques including open-mouth and closed-mouth impression technique. This case report suggests closed-mouth impression technique may promote retention and stability of mandibular complete denture and compares between the two impression techniques clinically.

Effect of Packaging Method on the Storage Stability of Filleted Mackerel Products (포장방법이 고등어제품의 저장성에 미치는 영향)

  • To improve the individual packaging method and extend the shelf life of mackerel (Scomber japonicus), salted and unsalted mackerel fillets were packaged in laminated plastic film bag (Nylon/PE: $20{\mu}m/40{\mu}m,\;12{\times}15$ cm) filled with $CO_2$ gas, in vacuum, and stored at O and/or $5^{\circ}C$. The other samples were packaged in plastic foam trays, overwrapped with oxygen permeable film (control), and stored at same temperature. Volatile basic nitrogen (VBN), trimethylamine (TMA), histamine (HM) and viable cell counts (VCC) were progressed with the increasing of storage time, but thiobarbituric acid (TBA) values decreased gradually after reaching at a maximum peak in 5-9 days. Judging from 4 chemical components, VBN was the most available component in quality judgement of mackerel fillets and its upper limiting content was 25 mg%. Regression equation for shelf life prediction of mackerel fillets with sensory evaluation and VBN component was determined.
