The Extension of Tofu Shelf-Life with Water-Soluble Degraded Chitosan as Immersion Solution (수용성 키토산분해물질을 침지액으로 이용한 두부의 저장성 증대)

  • For the effect of water-soluble degraded chitosan on the shelf-life of tofu, sterilized distilled water, 0.5% degraded chitosan, 0.5% fumaric acid and 0.5% lactic acid used as an tofu-immersion solutions were investigated by microbial counts, pH, and turbidity during the periods of storage at $4^{\circ}C$. After 2 weeks storage, total aerobic microbial counts in tap water and sterilized distilled water used as an immersion solution were $3.8\;{\times}\;10^8$ and $1.8\;{\times}\;10^8\;CFU/mL$, respectively. In 0.5% fumaric acid and 0.5% lactic acid immersion solutions, the microbial counts were around $10^7\;CFU/mL$ after 2 weeks while the microbial population in 0.5% water-soluble degraded chitosan were, however, $1.6\;{\times}\;10^5\;CFU/mL$ after 2 weeks and $1.7{\times}10^7\;CFU/mL$ after 3 weeks. The lag phase of initial contaminated microbes in 0.5% degraded chitosan solution was longer than those of other treatments. The addition of 0.5% fumaric acid and 0.5% lactic acid decreased the initial pH to pH 5.0, while those of tap water, sterilized distilled water and 0.5% degraded chitosan stabilized the immersion solution at around pH 7.2. All initial pH values were decreased during storage and then slowly increased as storage time was increased. The turbidities in all treatments were increased during storage, but the addition of 0.5% degraded chitosan showed the lowest change, compared to other treatments, showing that the water-soluble degraded chitosan has a good antimicrobial effect and has a potential use to extend the shelf-life of tofu product.

Antioxidant Activity and Quality Characteristics of Stew Sauce Mixed with Smilax china L. Extract During Storage (토복령 추출물을 첨가한 소스의 항산화 활성 및 저장 중 품질 특성)

  • This study investigates the effects of a China root (Smilax china L.) extract on the chemical and microbiological characteristics and antioxidant activity of the sausage stew sauce and the soft-tofu stew sauce over a 5-week storage period. Commercial sauces were obtained from the market, and samples were prepared using four different concentrations of the China root extract (0% (control), 0.5%, 1.0%, and 1.5%) and stored at $5^{\circ}C$ and $20^{\circ}C$. Over the 5-week storage period, pH and salinity showed slight changes in both the sausage and soft-tofu stew sauces, but there was no significant difference (p<0.05) regardless of the extract amount and temperature. At 5 weeks, there were significant decreases in the total microbial count in groups with the China root extract (p<0.05) for both the sausage and soft-tofu stew sauces at $5^{\circ}C$. Over the whole storage period, no coliform, yeast, and mold were detected in any sample. S. aureus counts were not detected in 1.0% and 1.5% China root groups at $5^{\circ}C$, but 1.00-1.60 log CFU/g was found in the control and 0.5% groups. DPPH radical scavenging activity at 5 weeks showed an increase with an increase in the amount of the China root extract in both sauces. These results indicate that the China root extract inhibited microbial growth during storage as well as scavenging activity and thus that it can be considered to prolong the shelf life of commercial sauces.

Development of Shelf-life Prediction Model of Tofu Using Mathematical Quantitative Assessment Model (수학적 정량평가 모델을 이용한 두부의 유통기한 예측 모델의 개발)

  • 식물성 단백질의 주요 공급원이며 우리나라 전통식품 중의 하나인 두부의 유통기한을 정량적으로 예측할 수 있는 수학적 모델을 개발하고자 온도와 초기균수에 따른 두부 부패세균의 성장 실험 결과를 데이터베이스화하여 이를 바탕으로 균의 성장을 정량적으로 평가할 수 있는 수학적 모델을 개발하였다. 근의 증식 지표인 최대증식속도상수(k), 유도기(LT), 세대시간(GT)은 온도에 지배적인 영향을 받았으며, 초기균수에 따른 유의 적 인 차이 는 없었다(p<0.05). 최대증식속도상수와 온도 및 초기균수의 상관관계를 나타내는 수학적 정량평가모델인 square root model을 이 용하여 두부 부패 세균의 성장을 정량적으로 예측할 수 있는 모델$({\surd}{\kappa}=0.016861(T+6.87095))$을 개발하였으며 실험치와 예측치의 상관계수는0.969이었다. 이 예측 정량평가모델로부터 예측한 최대증식속도상수와 두부의 관능적 부패시 점을 반영 한 Gompertz 변형 모델을 이용하여 두부의 유통기한을 예측할 수 있는 모델$(Spoilage-critrion(hr)=\frac{2{\times}Ln2+Ln[(Nmax/No)-1])}{k}$을 개발하였다

Study on the Potential Hazard Analysis by Physicochemical Quality and Microbiological Safety Comparison of Commercial Sauces in South Korea (시판 소스의 이화학적, 미생물적 품질 특성 조사를 통한 잠재적 위해도 연구)

  • The quality of commercial sauce products was evaluated through pH, soluble solid content, salinity, water activity and microbial analyses. The pH of sauces was 2.38~5.30, soluble solids were between 6.03 and 71.67, and distributions of salt were 0.23~5.00% in 32 commercial sauce products. In addition, water activity of vinegar red pepper sauce and spicy soft tofu stew stock were determined 0.773 and 0.988, respectively. Yeast, mold, Staphylococcus aureus, E. coli and coliform were not detected in any sauces. Higher level of total viable cells (TVC) resulted in pH over 4.2. TVC of shelf-stable sauces was 1.0~3.6 log CFU/g. TVC of seven sauce products was classified as non-potentially hazardous foods by temperature controlled for safety standard (TCS), even though levels were over acceptable guidelines of the USDA (3 log CFU/g). These results indicate that the standard and classification of commercial sauce products should be modified and controlled strictly.
