The objectives of this study were to characterize the food service managements in university food services. In a survey involving university food service centers throughout the country, the importance, performance scores and policies for food service management were investigated. Of the total 40 institutions surveyed, 23 were run directly by the institution, eight by contract, and nine by rental. Data were analyzed by t-test, ANOVA using the SPSS program. Management system was evaluated separately for organization, human resources, finance, nutrition education, purchasing, quality control, sanitation and safety, and marketing for their relative importance, degree of performance, and policy establishment. It was found that the relative importance scored higher than the degree of performance and policy establishment. When rhe relative importance for the direct, contract and rental operations was compared, the rental operation scored the highest. Performance score of direct was the highest in direct operation. The findings of this research suggest that the university food service should be creative through systematic management, and further research is needed to evaluate various variables that influence productivity, such as employee morale, pleasant working environment, customer satisfaction, and introduction of TOM for university food services.
Purpose: This study empirically examines the relations among corporate performance, technology, and corporate capabilities for service companies to find factors that could affect the competitiveness of the service industry. Most study on technology in the service industry have been conducted in developed countries, and yet there exist not sufficient empirical reviews. Research design, data and methodology: This paper, using rare empirical data, examines Korea's service industry and aims to make an academic and managerial contribution to the understanding of the relation between corporate competence and performance. This study analyzes 567 Korean Domestic Companies in Non-manufacturing and Service Industry, using the 2020 Detailed Survey of Venture Businesses (2500) data. Frequency analysis, correlation analysis, and regression analysis are performed. Results: Results show, Hypothesis 1 that internal competence has positive influence on technological strength, is supported. However, Hypothesis 2 that technological strength mediates between internal competence and business performance, Hypothesis 3 that external competence has positive influence on technological strength and Hypothesis 4 that technological strength mediates between external competence and business performance are all partially supported/rejected. Conclusions: This study suggests that technological strength is an important factor that affects both market share and sales. And mediating effect of technology strength emphasized in market share. However, in managing sales, more cautious approach and a more detailed analysis are needed..
The purposes of this study were to assess the nutrition service importance and performance level in views of industrial employees and to explore the ways to improve the nutrition service quality. A survey of industrial foodservice operations scatterly located in Korea was undertaken and detailed information was collected from each, including surveys of 1,002 industrial employees. Statistical data analysis was using SAS PC 6.04 for descriptive analysis, t-test, and analysis of variance. The whole industrial employees assessed the importance and performance of the dieticians' role on nutrition service as '4.03' and '3.32' out of 5 respectively, which suggests that the industrial nutrition service needs to be improved. The variables which received higher scores than the average mean were safe meal provision, sanitation management and equipment & facilities management, whereas the score of individual nutrition counselling was low compared to other variables of nutrition service. Dietician's performance level scored by industrial employees was statistically correlated with the effect of industrial foodservice(p<0.01). The groups who scored low performance were characterized by labor work, experience with less than 10 years, single, aged below 29 years old, and female.
This research aimed at constructing consultant's competencies of having the biggest effect upon consulting performance with competencies, knowledge and attitude, clarifying the effect upon service quality and consulting performance and being useful for some researches developing future consultant's competencies and looking for service quality improvement plan. The results of the study can be summarized as follows. First, it was identified that the consultant's competencies had positive effect upon consulting service quality. Second, it was verified for service quality to have positive effect upon consulting performance. Third, consultant's competencies proved that it has positive effect upon consulting performance.
Following the idea of "what you measure is what you get," this paper discusses the necessity to improve the plan and management of Application Service Provider (ASP) service based on performance evaluation. The Balanced Scorecard (BSC) has been used as a tool for suggesting the measures that can evaluate performance of a company by considering both financial and non-financial perspectives. The current BSC does not provide techniques to formally define, verify, implement and analyze the performance measures of ASP. Therefore, we developed a methodology for strategy development of ASP service by analyzing the BSC performance measures. This methodology provides a strategy for improving ASP service. The methodology proposed in this paper provide executives with core parts for achieving vision as well as the corresponding interpretation model for developing strategy. The methodology consists of the following two phases: BSC and Importance-Performance Analysis (IPA) phase. The methodology is illustrated through a case study in each phase. The case study shows practical deployment of our methodology.
Purpose - The present study examines the effect of service employees' experienced customer incivility through their emotional exhaustion. We identified service employees' emotion regulation ability as a boundary condition (i.e., moderating variable) that decreased the positive relationship between service employees' experienced customer incivility and their emotional exhaustion. Furthermore, we also investigated the negative relationship between service employees' experienced customer incivility and their service performance via emotional exhaustion. Research design, data, and methodology - Drawing on AET (affective event theory) and COR (conservation of resources) theory, we developed three research hypotheses (i.e., mediation, moderation, and moderated mediation). Online panel survey data from 552 frontline employees at several service organizations (e.g., department stores, retail stores, hotels, restaurants, airlines, banking, insurance company, and etc) in South Korea were examined. To assess two types of validity (i.e., convergent and discriminant validity) and reliability of measurement model, we employed the CFA (confirmatory factor analysis) using M-plus 8.2 software. Internal consistency also was tested by Cronbach' α. In addition, we employed the SPSS PROCESS MACRO 2.16, which was recommended by Hayes (2013, 2015), to estimate mediation, moderation, and moderated mediation effects. Results - As predicted, the negative relationship between service employees' experienced customer incivility and their service performance was mediated by emotional exhaustion. Furthermore, service employees' emotion regulation ability also played a significant moderating role of the relationship between service employees' experienced customer incivility and emotional exhaustion, such that this relationship was less pronounced when service employees had a high level of their emotion regulation ability than when thir emotion regulation ability was low. Service employees' emotion regulation ability further moderated this mediation effect of service employees' experienced customer incivility on service performance through emotional exhaustion. These findings have theoretical implications for employees' experienced customer incivility and emotion regulation ability research and provide managerial implications for practitioners. Conclusions - This study empirically elaborated the previous model of service employees' experienced customer incivility and personal resource (e.g., emotion regulation ability) literature by presenting the findings that service employees' experienced customer incivility influences their service performance via emotional exhaustion and that emotion regulation ability effectively reduces this negative effect.
Product-related services in manufacturing industry are different from typical services in service industry. The purpose of this study is to investigate the role of communication in linking IT and product-related logistics service in manufacturing industry. The relationships among IT, communication, logistics service and business performance are explored using a path analysis. The empirical research reveals that higher degree of IT usability leads to increased communication, and in turn, communication affects logistics service, and ultimately business performance. In addition, this study shows communication plays an intermediate role in linking IT to logistics service.
Purpose - Understanding how service convenience drives shopping performance is imperative for retailers such as department and large discount stores. Retailers have to enhance shopping productivity by reducing the costs of shopping, as convenience triggers customers' perceived shopping value, leading to customer satisfaction, and ultimately patronage behavior. Consumers, generally considering time as a scarce resource, are more sensitive to the time costs of tasks in regard to shopping trip, differently from forming perceptions of convenience in time orientation. Therefore, this study attempts to examine the moderating effects of consumers' time orientation on the relationships among service convenience of retailers and shopping performances such as shopping value and service performances. Research design, data, and methodology - The department and discount store chains were chosen as the point of analysis in this study. Data were collected from a survey of real-life consumers and all respondents were screened to ensure only those who had visited in the department and discount store chains within past six month prior to the day of data collection. Out of 600 self-reported surveys that were distributed, a total of 530 responses were returned and after excluding 20 incomplete responses, the final sample size was 510. The three hypotheses were proposed and tested in this study. The one hypothesis was on the moderating effects of time orientation for the effects of service convenience on shopping value (hedonic and utilitarian shopping value). The other two hypotheses were on the comparisons between high and low time-oriented customers with the effects in shopping value from service performance. Hierarchical moderated regression analysis was used to test the hypotheses. Results - The results suggest that the effect of service convenience on utilitarian shopping value and the positive effect of utilitarian shopping value on customer satisfaction are greater in low time orientation than high time orientation customers. Conversely, when customers are highly oriented toward time, the effects of hedonic shopping value on customer satisfaction and revisit intention are greater than for customers who are lowly oriented toward time. Conclusions - This study has two-fold significance. First, this study contributes to the consumer behavior and services marketing literature by incorporating customers' time orientation into the service convenience-shopping performance. Although the effect of service convenience on shopping performance might differ from customers' perceptions concerning shopping, there has been little investigation or comparison between customers' perception on time. This study is a first attempt to consider how the effects of service convenience on shopping value and service performance vary with differing levels of customers' time orientation. This study advances prior studies by showing that the service convenience-shopping value and service convenience-service performance relationships vary across different combinations of the customer's time orientation. The findings of this study suggest that the retailers need to enhance the experiential aspects of the stores for their high time-oriented customers. Conversely, for the low time-oriented customers, the retailers should boost the visual distinctiveness and ease of store navigation.

Smart phones have brought rapid changes in this competitive world. Smart phone application developers are trying their best to consider the customer requirements in the most efficient way while considering all its attributes. However smart phone service quality has been given less consideration comparatively during the last few years. This paper proposes a measurement method for improving service quality of smart phone application. This method combines the service quality performance model (SQPM) and process capability index (PCI). The service quality performance model is used to identify service items that require improvement. Process capability index is used as a measure for prioritization of those improvements. Case study was carried out to search out important communication application service attributes. customer satisfaction level data was collected for users who used the application service. A total of twenty four service attributes were found during this survey. Using the joint approach of SQPM and PCI, five significant service attributes were prioritized for service quality improvement.

Cloud computing systems' performance is still a central focus of research for determining optimal resource utilization. Running several existing benchmarks simultaneously serves to acquire performance information from specific cloud system resources. However, the complexity of monitoring the existing performance of computing systems is a challenge requiring an efficient and interactive user directing performance-monitoring system. In this paper, we propose an effective multivariate control framework for monitoring cloud systems performance. The proposed framework utilizes the hardware cloud systems performance metrics, collects and displays the performance measurements in terms of meaningful graphics, stores the graphical information in a database, and provides the data on-demand without requiring a third party software. We present performance metrics in terms of CPU usage, RAM availability, number of cloud active machines, and number of running processes on the selected machines that can be monitored at a high control level by either using a cloud service customer or a cloud service provider. The experimental results show that the proposed framework is reliable, scalable, precise, and thus outperforming its counterparts in the field of monitoring cloud performance.
