오디분말을 첨가한 옐로우 레이어 케이크의 저장 중 품질 특성 (Quality Characteristics of Yellow Layer Cake with Mulberry Powder during Storage)

  • This study was carried out to investigate the quality characteristics of yellow layer cake mulberry powder. After making yellow layer cake with mulberry powder, water activity, crumb texture, crumb color, and sensory tests were investigated. After 1 day of storage, Aw of control with weak flour did not show any significant difference, whereas those with 1, 3. 5% mulberry powder showed a significant decrease in Aw. During storage, the Aw values of yellow layer cakes containing mulberry powder were consistent. Hardness, springiness, cohesiveness, and gumminess of the yellow layer cakes containing mulberry powder all decreased compared to those of control. Hardness, springiness, cohesiveness, and gumminess all increased with storage time. Further a higher percentage of mulberry powder was associated with a lower L value, but higher a value. b values were lower in the 1% and 3% mulberry powders, but 5% showed a slightly higher b value. An increase in storage time was associated with decreased L and b values and increased a value. The micrographs of yellow layer cakes with mulberry powder showed a slightly coarser porosity than that of controls. The results of the sensory test showed that the over-all acceptability of 1% mulberry powder cake was the best.

대추가루 첨가 비율에 따른 약편의 품질 특성 (Quality Characteristics of Yakpyun by the Addition of Jujube Powder)

  • This study investigated yakpyun processing using jujube powder. The yakpyun was prepared with rice, jujube powder, makkolli, sugar, and salt. The yakpyun is made with various amounts (0, 2, 4, 6, 8%) of jujube powder. The effect of adding jujube powder on the quality characteristics of yakpyun were examined through SEM, mechanical tests, and sensory evaluation. The moisture contents of yakpyun were significantly reduced with increasing amounts of jujube powder. As the content of jujube powder increased, the lightness (L) decreased while redness (a) and yellowness (b) increased significantly (p<0.05). In texture profile analysis, hardness increased with increasing jujube powder content from initial production to three days of storage. In the structure of yakpyun examined through SEM, when more jujube powder was added, rougher surfaces were found more often (bigger holes between granules). The results of the sensory evaluation showed that the highest scores for overall acceptability were highest scores for yakpyun containing 6% level jujube powder. In conclusion, an addition of 6% jujube powder was optimal.

물성조절 고령친화식품의 이화학 및 감각특성 분석 - 효소 처리 및 재구성 식품 중심으로 - (Physicochemical and sensory characteristics of enzymatically treated and texture modified elderly foods)

  • 본 연구에서는 육류와 어류의 효소 처리 및 재구성에 의해 물성 조절 고령친화식품을 이용하여 이화학적 및 감각특성과 기호도 분석을 통해 다각적으로 고령친화식품의 개발 방향성을 연구하였다. 효소 처리 고령친화식품의 이화학적 성분 분석 결과 가용성 고형분, 염도, pH에서 효소 처리와 대조군 사이의 유의적인 차이가 나타나지 않았다. UDF 기준에 따른 경도 측정 결과 대조군인 CBS, CSS 모두 일반식에 해당하는 경도를 나타내었고, ESS는 UDF 2단계, ESS는 UDF 1단계에 해당하는 경도로 측정되었다. 재구성 고령친화식품인 TES, TMR의 경우 모두 UDF 2단계 기준에 해당하는 경도를 나타내었다. 소비자 조사에서 외관과 경도, 씹힘성에서 효소 처리 시료가 대조군 보다 낮은 강도를 나타내며 효소 처리를 통한 경도 저하 효과를 확인할 수 있었다. 재구성 시료 모두 낮은 경도와 씹힘성을 나타내고, 7점대의 높은 목넘김성으로 평가되어 연하 및 저작장애 고령자를 대상으로 한 고령친화식품으로서의 조건에 부합하는 결과를 나타냈다. 향후 고령인구의 증가와 함께 고령자의 먹는 즐거움과 더불어 기능적, 영양적으로 충족되는 고령친화식품이 개발되어 앞으로 다가올 초고령화 시대에 대비해야 할 것이다.

수입쌀과 국산쌀(추청벼)로 제조한 백설기의 품질 특성 비교 (A comparative study on quality characteristics of Baiksulgi(traditional Korean rice cake) made of imported and domestic rices(Chuchung byeo))

  • This study was carried out to investigate the quality characteristics of Baiksulgis made of imported rice(Thai and Chinese rice, harvested in 1998) and domestic rice(Chuchung byeo, harvested in 1998 and 1997). Moisture content, color value, yields of reducing sugar by $\beta$-amylase reaction, texture and sensory properties of Baiksulgis were measured. Moisture contents of rice flour and Baiksulgi made of Korean rice harvested in 1997 were highest and those of Thai rice were lowest among the samples. This tends were also seen during storage. Lightness and redness of Baiksulgi made of Thai rice were lowest and yellowness of Baiksulgis made of Korean rice harvested in 1997 and Chinese rice were higher than those made of other rices. Yield of reducing sugar by $\beta$-amylase reaction was highest in Baiksulgi made of Korean rice harvested in 1998 and lowest in Baiksulgi made of Thai rice. And the value decreased less than half of initial value after 24 hour storage. Adhesiveness of Baiksulgi made of Thai rice was zero and cohesiveness, chewiness and gumminess of that were very low. This results showed that Baiksulgi made of Thai rice was lack of chewy texture and this trend was more apparent as the storage time increased. In sensory tests, Baiksulgi made of Chinese rice had most yellowish color and that made of imported rice such as Chinese and Thai rice had more coarse texture than that made of domestic rices. off odor was lowest in Baiksulgi made or Korean rice harvested in 1997 and sweet taste was lowest in that made or Thai rice. Hardness adhesiveness, moistness and chewiness of Baiksulgi made of domestic rices were much higher than those made of impoted rices, and these results showed that Baiksulgi made of domestic rices had acceptable texture. Baiksulgi made of Thai rice showed the lowest acceptability due to lack of above textural characteristics and it was needed to add the material to modify the texture of that.

백복령 분말 함유 어묵의 텍스처 및 관능적 특성 (Texture and Sensory Characteristics of Fish Paste Containing White Poria cocos Wolf Powder)

  • 백복령 분말을 0, 1, 3, 5, 7%를 함유한 어묵을 제조하여 수분함량, 색도와 절곡검사, 기계적 texture, 관능검사, 기호도 검사 등의 특성을 조사하였다. 백복령 분말을 첨가한 백복령 어묵의 수분함량은 모든 시료가 37%대의 수분을 함유하고 있어 고른 분포를 띄었다. 색도 변화에서 어묵의 L값은 백복령 분말 첨가량이 증가할수록 감소 하였으나, a과 b값은 백복령 분말의 첨가량이 증가할수록 증가하였다. 어묵의 유연성을 나타내는 절곡검사에서는 모든 시료에서 AA로 측정되어 백복령 분말의 첨가에 관계없이 우수한 것으로 나타났다. 백복령 분말을 첨가한 백복령 어묵의 기계적 texture는 파쇄성은 백복령 분말 첨가량이 증가할수록 증가하였으나, 탄력성은 감소하였다. 어묵의 관능검사에서는 어묵의 색상, 향미, 경도, 응집성는 백복령 분말의 첨가량이 증가할수록 높게 나타났으나, 매끄러운 정도와 느끼한 맛은 백복령 분말의 첨가량이 증가할수록 감소하였다. 어묵의 기호도 검사에서는 3WPWP군이 외관의 기호도, 향미의 기호도, 맛의 기호도, 질감의 기호도, 전반적인 기호도 등의 모든 항목에서 가장 높은 평가를 받았다. 따라서 백복령을 첨가한 건강기능성 백복령 어묵의 가공 적성에 적절한 백복령의 첨가량은 3%가 적당하다고 사료되며 백복령을 함유한 고품질의 어묵의 제조 가능성을 확인하였다.

재료 구성을 달리하여 제조한 Natto 의 품질특성 (Quality Characteristics of Natto Made by Different Ingredients)

  • Natto, Traditional Japanese food fermented by Bacillus Natto, has been well known for a good nutritional food. However it has particular flavor, so most Koreans are not fond of it. That is the reason why, garlic(2%) and ginseng(2%) were added to make Natto, acceptable to Koreans. General soybean Natto($S_1$), 2% garlic Natto($S_2$), 2% ginseng Natto($S_3$) and blacksoybean Natto($S_4$) were prepared. The proximate composition revealed the most moisture content in $S_2$among the all samples. The most crude protein, crude fat and ash were found in $S_4$. The non-fibrous and fiber contents were the most in $S_1$and $S_3$. In the texture characteristics, hardness and gumminess were the highest in $S_4$. The highest springness and cohesiveness were found in $S_1$. Adhesiveness and chewing were the best in $S_2$and $S_3$. The minerals composition revealed the most calcium content in $S_3$among the all samples. Fatty acid compositions were mainly consisted of linoleic acid(46.91~48.47%). In the sensory evaluation, $S_3$showed the best preference, appearance and color. In the aspects of taste and texture, $S_4$was mostly preferred. Flavor and viscosity of $S_2$were the best among the all samples. The general soybean Natto($S_1$) without any addition showed low values in most examinations and tests. In the sensory evaluation, $S_3$has the best overall acceptability among the all experimental Nattos.

겔화제를 달리한 발사믹 식초 젤리의 품질 특성 (Optimization and Quality Characteristics of Balsamic Vinegar Jelly with Various Gelling Agents)

  • 본 연구에서는 젤리의 제조시 발사믹을 첨가하였을 때 표준화된 발사믹 젤리의 세부적인 재료 및 제조방법의 기초자료를 제시하고 발사믹 젤리를 제조하여 이용 가능성을 알아보고자 하였다. 발사믹 젤리의 수분함량이 가장 높은 것은 젤라틴 첨가군, 색도의 명도 L값은 감자전분 첨가군, 적색도 a값은 젤라틴 첨가군, 황색도 b값은 한천 첨가군이 가장 높은 값을 나타내었다. 발사믹 젤리의 pH는 젤라틴 첨가군이 가장 높게 나타났으며, 발사믹 젤리의 당도는 칡전분 첨가군이 가장 높은 값을 나타내었다. 발사믹 젤리의 텍스처 측정결과 겔화제의 종류에 따른 유의적 차이가 있는 것은 경도와 씹힘성 그리고 검성으로 나타났다. 발사믹 젤리의 관능검사 중 정량적 묘사분석에서는 보라색의 강도와 광택감, 투명도, 쫄깃한 정도에서 젤라틴군이 가장 높게 평가되었으며, 기호도 검사에서는 외관과 맛, 텍스처, 전체적인 기호도는 젤라틴 첨가군, 발사믹의 향은 칡전분이 가장 높게 평가되었다. 이상의 연구결과를 통해 발사믹 식초 젤리 제조 시 젤라틴을 첨가한 젤리가 전체적인 기호도에 긍정적인 영향을 미치며, 젤라틴을 첨가한 발사믹 식초 젤리의 관능적 및 기계적인 품질 특성의 향상이 가장 적절한 첨가 수준이라고 사료된다.

Development of Cooked Rice with Garlic and Astragalus membranaceus Extract for the Health-Friendly Ready-To-Eat Product as Cook-Chill Type

  • Medicinal cooked rice with Astragalus membranaceus extract and garlic was developed as a ready-to-eat product. The response surface methodology was used to examine the effect of garlic and Astragalus membranaceus extract addition on the color, texture, and sensory properties to optimize the product. The product was also analyzed for microbiological, sensory, and physical property changes during storage.As for the color, taste, and overall acceptability, the sensory scores increased with the increase of Astragalus membranaceus extracts (p<0.05). The sensory scores for the product ranged between 9.17~9.92 and foodborne microorganism such as Bacillus cereus, Salmonella, Staphylococcu aureus, and Eschericha coli were not detected after 13 storage days. Therefore, the possible shelf life was evaluated for up to13 days of storage. When considering health and convenience are important factors in the development of new food products, the medicinal and biological effects of garlic and Astragalus membranaceus could be useful for providing healthy diet options for senior consumers. The results of sensory and microbiological tests showed the potential for the commercialization of ready-to-eat cook-chill product as an alternative of cooked rice for Asian populations and Korean senior consumer market.

WPC 분말이 첨가된 설기떡의 품질 특성 (Quality Characteristics of Seolgiddeok added with Whey Protein Concentrate (WPC) Powder)

  • The effects of substituting whey protein concentrate (WPC) powder for rice flour in the preparation of seolgiddeok were determined by objective and subjective tests. Milk whey is drained from milk curd as a by-product of the cheese manufactureing process. Whey protein is known as a good nutritional source and is a functional material for many processed foods. WPC contains more than 80% whey protein. The moisture content decreased gradually during storage and the decrease in moisture was less in the control than in the WPC powder substituted groups. The color lightness (L) decreased significantly as the amount of WPC powder increased, wherease redness (a) and yellowness (b) both increased. Texture analyses revealed that the hardness, chewiness, gumminess and adhesiveness of seolgiddeok tended to increase in proportion to the amount of WPC powder in the formula. Seolgiddeok gelatinization was investigated by amylographing. Initial pasting temperature, peak viscosity, hot pasting viscosity and breakdown were low in seolgiddeok prepared with WPC powder substituted for rice flour. Setback had the lowest value in the control. Sensory evaluations revealed that, seolgiddeok prepared with 3% WPC powder had the highest overall acceptability score. These results indicated that WPC seolgiddeok with 3% WPC powder has the best quality.

자색고구마 가루 첨가 발아현미 쿠키의 제조조건 최적화 (Optimization of Brown Rice Cookies using Purple Sweet Potato)

  • The aim of this study was to use purple sweet potato powder to develop a recipe for a nutritional cookie with an optimal composition of ingredients and texture, in order to acquire strong preference responses by all age groups in sensory tests. Wheat flour was partially substituted with purple sweet potato powder to reduce the wheat flour content of the cookies. Measurements were made and analyzed according to the Response Surface Methodology technique, which showed 16 experimental points including 3 replicates for the purple sweet potato powder, sugar, and butter. The compositional and functional properties of the sample were measured, and the values obtained were applied to a mathematical model. A canonical form and perturbation plot showed the influence of each ingredient on the final product mixture. The results of sensory evaluations showed very significant values for flavor (P<0.0071), texture (P<0.0306), taste (P<0.0190), and overall quality (P<0.0142). Instrumental analysis showed significant values for hardness (P<0.0027), yellowness (P<0.0061) and spread ratio (P<0.0001). The optimal compositional ratios were determined to be 21.75 g for the purple sweet potato powder, 37.05 g for the sugar, and 60.59 g for the butter.
