단체급식소의 운영방식에 따른 이용고객의 급식 서비스 인식도 조사 (The Analysis of Customers Perception on Foodservice Quality according to the Types of Foodservice)

  • This research was conducted to analyze the difference of perception of employee-feeding foodservice according to the types of foodservice. To survey the perception of employee-feeding foodservice among customers, the questionnaire consisted of the perception of employee-feeding foodservice. The questionnaires were sent to randomly selected customers of employee-feeding foodservice 120 each at two public organizations, two companies and two colleges, SPSS was used for descriptive analysis, computing Cronbach's Alpha value and Anova test. 678 of users of self-managed foodservices, and 660 of contracted foodservices, total 1,338 answered for the survey. Among them 67.9%(69.9% at self-managed foodservices, 65.9% at contracted foodservices) were male and 32.1%(30.1% at self-managed foodservices, 34.1% at contracted foodservices) were female. As for the age group, twenties were the major with 48.5% at self-managed foodservices, 56.2% at contracted foodservices. For the reason of visiting cafeteria low price was answered by 40.9% at self-managed foodservices, while approachable location were ranked first by 45% at contracted foodservices. Foodservice perception evaluation of foodservice in four categories showed significant differences: quality of the foods(p<0.001), sanitation(p<0.05), tangibility(p<0.001), empathy(p<0.05). Among the four categories tangibility(2.80$\pm$0.69) showed the highest perception at self-managed foodservices, while at contracted foodservices quality of foods (2.82$\pm$0.61) was with highest recognition.

단체급식소의 운영방식에 따른 이용고객의 급식 서비스 만족도 조사 (The Analysis of Customers Satisfaction with Foodservice Quality according to the Types of Foodservice)

  • This research was conducted to increase the customer satisfaction through the evaluation of their satisfaction in employee-feeding foodservice operations according to the types of foodservice. The questionnaires were distributed to randomly selected customers of employee-feeding foodservice 120 each at two public organizations, two companies and two colleges. SPSS was used for descriptive analysis, Cronbach's Alpha value and Anova test. Six hundred seventy eight respondents in self-managed foodservices and 660 in contracted foodservices were participated for the survey. On average, the number of male respondents(67.9%) was more than twice than the number of female respondents(32.1%). As for the age group, twenties were the major with 48.5% at self-managed foodservices, 56.2% at contracted foodservices. With the marital state of the users, 57% at self-managed foodservices, 61.2% at contracted foodservices were single, showing higher proportion of non-married users at contracted foodservices. In all categories comprising the foodservice satisfaction, significant differences were shown in the quality of foods(p<0.001), tangibility(p<0.05) and empathy(p<0.05) according to the types of foodservice. Responsiveness(2.9$\pm$0.87) was ranked for the highest degree of satisfaction and reliance(2.32$\pm$0.76) was the lowest at self-managed foodservices. The result at contracted foodservices showed the same categorical order with responsiveness(2.9$\pm$0.87) ranked at the first and reliance(2.32$\pm$0.76) at the last.

초.중등학교 교사의 학교급식 만족도에 대한 위탁운영 및 직영 형태간 비교 (Comparisons of Teachers' Satisfaction with School Lunch Program in Middle and Elementary Schools run by Foodservice Management Type)

  • Teacher's satisfaction with school lunch programs run by foodservice(FS) management types were surveyed with questionnaire at 5 middle and 4 elementary schools. The 88 middle and 104 elementary school teachers who participated and schools' FS management were of 5 types : self/conventional, contracted/conventional, contracted/commissary and contracted/dosirak delivery. Most teachers knew correctly their schools' present FS management types and thoroughly understood the main reasons for needing school lunch program with proper nutrition, better taste and balanced diets in addition to the first reason its less work than preparing homelunches. Teacher's satisfactions with their present school FS were high in self/conventional and contracted/conventional and was very low in contracted/commissary and contracted/ dosirak Taste, hygiene, nutrition and dining facilities in turn were pointed out to be improved : firstly hygiene in the self and firstly taste in the contracted. Particularly dining-rooms were found to have narrow space, uncomfortable chairs and tables, unclean, and having unpleasant smells. Teachers observed that the overall students' food habits such as eating more various foods and better table manners through that school lunch programs, particularly the self-managed types were improved. Conclusively most teachers emphasized school lunch programs to be continued and preferred self-managed types and contracted/conventional types as the second best in having less work to manage, better, taste, nutrition and hygiene, less cost and better nutrition education in turn. And they thought school founders should handle the finances needed to newly establish or repair the school FD facilities, otherwise provided with the partial aid of student's parents.

대학급식소 운영체제에 대한 소비자와 학교당국의 태도 (Customers and Administrators' Attitudes Concerning Operation Format in University Foodservices)

  • Contract Managed foodservice has been expanded rapidly in university foodservice operations. The purposes of this study were to examine customers and administrators' preference concerning operation format, the decision making components for operation format, and administrators' attitudes concerning contract managed and self-operated foodservice. Two types of questionnaires were developed and implemented. Customer and administrator's questionnaires were distributed to 900 university students and 27 administrators respectively, and 831 customers and 24 administrators were responded with a response rate of 92.3% and 88.8% respectively. Statistical data analysis was completed using the SPSS programs for descriptive analysis, $x^2$-test, ANOVA, and T-test. The results of this study can be summarized as follows 1. In deciding foodservice operation format, the components customers considered were the ability to provide variety of meal items, aesthetic and safe food(62.6%), the ability to provide a food with competetive low price(22.1%), and the ability to provide adequate service and nutrition information. On the contrary, the components administrators considered were the ability to provide variety of meal items, aesthetic and safe food(66.7%), the ability to relieve administrators of managerial burden of the foodservice operation(12.5%), and the ability to invest facility(8.3%). 2. The average score of attitude on contracted and self-operated management activities were 3.41, 3.10 respectively. University administrators evaluated that contractors performed financial management activities more effectively. 3. University administrators with contracted or self-operated foodservice favored their own current operation format.

N, N-dimethylformamide 취급근로자의 유해위험 정보 인식도 조사 (A study on chemical hazard communication for workers exposed to N, N-dimethylformamide)

  • Object: we investigated some factors which can affect workers' comprehension of chemical hazard information and their actions to protect themselves from the hazard. Method: Comprehension score of chemical hazard information and the rate of wearing personal protective equipment (PPE) was surveyed for the 109 workers from 15 factories who were exposed to N, N-dimethylformamide. Difference of the worker's comprehension score of hazard information was analyzed by education interval, work duration and the way of occupational safety and health management between self-managed or sub-contracted. Result: Mean comprehension score of N, N-dimethylformamide hazard, which was given as a short quiz composed of 10 "true" or "false" problems, was 65%. Mean percentage of wearing PPE was improved as the education program was done within a month but decreased after 6 months. Eighty seven % of workers got the chemical hazard information from the material safety data sheet placed at workplace. Conclusion: Education interval and comprehension score affected the rate of wearing PPE. The way of occupational safety and health management self-managed or sub-contracted did not affect the workers' comprehension score on hazard information nor the rate of wearing PPE.

중.고등학교 급식 운영특성에 따른 종합적 품질경영(TQM)에 근거한 HACCP 시스템 활동 및 위생관리 수행수준 분석 -서울, 경기, 인천, 강원, 충청지역 중.고등학교를 중심으로- (Analysis of TQM-based HACCP System and Safety Management Performance in Middle and High School Foodservice Operations - Seoul, Gyeonggi, Incheon, Kangwon and Chungcheong Areas in Korea -)

  • The following study was taken in the Seoul, Gyeonggi, Incheon, Kangwon, and Chungcheong areas to analyze the performance levels of safety management by characteristics of school foodservice. The following results were obtained from a survey conducted on 2,271 middle and high school dietitians in 808 schools. Out of the 808 schools surveyed, 513 schools (63.5%) were self-operated and 295 schools (36.5%) were managed by a contract. Regarding the performance level of the hygiene duties, contract-managed schools were rated as 4.02 points while self-operated schools were rated relatively higher (4.16 points). The self-operated schools had an average score of 3.60 points for the TQM-based HACCP system, and the areas that scored lower than the average were strategies, human resources, data and analysis. The average score of the contract-managed schools was 3.42 points, and such areas as leadership, human resources, data and analysis, and customer satisfactory level scored below the average. For the analysis of CCP performance level, the contract-managed schools scored 4.28 points while self-operated schools scored 4.34 points. Overall, the hygiene duties, CCP performance level, and TQM-based HACCP system performance of the contracted schools were lower than those of the self-operated schools. Therefore, it is advised that the contract-managed schools consider new measures to strengthen their performance level for improved safety of school foodservice.

쌀빵에 대한 인식 및 학교급식 적용 가능성 분석: 교육청 학교급식 담당자를 중심으로 (Perception of School Foodservice Officials on Rice Bread as School Foodservice Menu)

  • 본 연구에서는 교육청 학교급식 담당자를 대상으로 쌀빵을 학교급식에 적용하는데 있어서의 가능성 타진을 목적으로 학교급식 담당 실무자의 입장에서 쌀빵에 대한 인식 및 학교급식에의 적용가능성에 대해 분석 조사하였다. 응답한 33부의 설문지를 분석한 결과는 다음과 같다. 첫째, 조사대상자의 대부분(93.9%)은 여자였으며, 교육청 근무경력은 평균 2년 3.5개월, 학교급식관련 근무경력은 평균 8년 8.4개월이었다. 교육청 관할 하에 있는 학교로는 시 도 교육청 그룹에서는 초등학교의 경우 농어촌형 직영 272.3개교, 중학교의 경우 농어촌형 직영 115.5개교, 고등학교의 경우 농어촌형직영 73.0개교로 가장 많은 유형으로 나타났다. 지역교육청의 관할 하에 있는 학교 유형으로는 초등학교의 경우 도시형 직영 23.3개교, 중학교에서는 도시형 직영 11.6개교, 고등학교의 경우 도시형 위탁 5.3개교로 가장 높은 값으로 나타났다. 둘째, 교육청의 학교급식 지원 분야에 대해 복수응답하게 한 결과, 응답한 교육청 모두에서 저소득층 급식비를 지원하고 있었고 식품비 분야에서는 친환경농산물 12개청(50.5%), 우리농산물 5개청(20.8%), 지역농산물 4개청(16.7%)순으로 지원하고 있었다. 시 도 교육청에서는 저소득층 급식비(중앙값 839.0개교)에, 지역교육청에서는 지역농산물 식품비(중앙값 37.5개교)에 가장 많은 학교를 지원하고 있었다. 지원 금액으로는 시 도 교육청이 저소득층 급식비에 평균 168억원, 지역교육청이 급식종사자 인건비가 평균 10억 5천만원을 지원하고 있었다. 셋째, 학교급식에서의 쌀 이용현황을 살펴보면 초등학교에서는 평균 91.26%가 정부미, 40.64%가 지역쌀을 사용하고 있었고, 중학교와 고등학교 역시 정부미와 지역쌀을 주로 사용하고 있는 것으로 나타났다. 쌀 이용 증진에 대한 교육청의 관심도는 평균 5.00점(Likert 7점 척도)이었고 쌀 이용을 위한 교육청의 지원의지는 평균 4.66점으로 관심이 있다고 조사된 반면, 교육청이쌀 이용 증진을 위한 방안 및 정책을 시행한 경험은 평균 3.31점으로 나타나 상대적으로 정책 시행 경험이 적은 것을 알 수 있었다. 넷째, 학교급식에 쌀빵 메뉴 적용을 위한 방안 및 정책에 대해 교육청의 인식을 조사한 결과, 관심도는 평균 4.35점, 쌀빵 지원의지는 평균 4.14점, 급식에 쌀빵 적용의 바람직성은 4.71점, 급식에 쌀빵 적용 실현가능성은 4.69점으로 높은 점수를 나타낸 반면, 쌀빵 적용 방안 및 정책의 시행 경험은 2.18점으로 낮은 수준으로 조사되었다. 쌀빵을 학교급식에 적용하기 위한 바람직한 지원방법은 '관련 조리기기 지원'(예: 오븐) 19명(57.6%), '보조금 지급', '납품가 할인' 각 9명(27.3%), '현물(쌀빵)제공' 8명(24.2%)의 순으로 조사되었다. 쌀빵을 학교급식에 적용할 때의 장점으로는 다수가 '쌀 소비 촉진' 24명(72.7%)이라고 응답하였고, '영양적우수성' 18명(54.4%), '건강 지향적인 학교급식 이미지 제고' 17명(51.5%), '제공메뉴의 다양성' 12명(36.4%) 등의 의견이 있었다. 반면, 장애요인으로는 '조리시설(오븐 등)의 부족' 24명(72.7%), '비교적 높은 원가' 18명(54.5%), '식단 적용의 한계', '제한적인 조리방법'은 각 13명(39.4%), '급식정책의 미흡' 5명(15.2%), '업체의 홍보부족' 4명(12.1%) 등의 순으로 응답하였다. 다섯째, 교육청의 학교급식에서의 쌀 이용에 대한 의견과 쌀빵 적용에 대한 의견과의 상관성을 분석한 결과, 학교급식에서의 쌀 이용 증진에 대한 '관심'과 '지원의지'는 매우 유의한 상관관계가 있었으며(p<0.001), 또한 '관심'과 '지원의지'는 쌀 이용을 증진시키기 위한 방안 및 정책을 시행한 '경험'과 관련성이 있다고 조사되었다(각 p<0.05, p<0.01). 또 학교급식 메뉴에의 쌀빵을 적용하는 것에 있어서도 쌀빵 적용에 대한 '관심'과 '지원의지'는 유의한 상관관계가 있었으며(p<0.001), 쌀빵 적용의 '바람직성'과 '지원의지', 쌀빵 적용의 '실현가능성' 역시 매우 유의한 상관관계를 보여주었다(p<0.001). 쌀 이용에 대한 관심이 적은 그룹과 관심이 많은 그룹 간에는 학교급식 메뉴에 쌀빵을 적용하는 것에 대한 인식의 모든 항목에서 유의한 차이가 없다고 나타났으며, 쌀 이용 증진을 위한 지원의지가 높은 그룹과 낮은 그룹 간에는 쌀빵 적용을 위한 정책을 시행한 경험에 대한 문항을 제외하고는 유의한 차이를 보였다. 또한 쌀 이용 증진을 위한 정책을 시행한 경험 여부에 따른 두 그룹 간 학교급식 메뉴의 쌀빵 적용에 대한 인식을 비교한 결과, 쌀빵 적용에 대한 관심, 지원의지, 정책 시행 경험 문항에 있어서 경험 많은 군이 경험 적은 군에 비해 유의하게 높은 점수를 보여주었다(p<0.01). 이상의 연구 결과는 쌀빵을 학교급식에 적용 및 확대하는데 앞서 정책실행의 주체가 되는 교육청 담당자들의 인식을 파악한 것으로 앞으로의 쌀빵 적용 증진 계획을 효율적으로 세우는 것에 도움이 될 것이라고 판단된다. 연구결과와 같이 대부분의 교육청 급식 담당자들이 쌀 소비 촉진 및 영양과 건강증진 등의 이유로 쌀뿐만 아니라 쌀빵을 학교급식에 적용하는 것에 의지와 관심이 높음을 알 수 있었으나 실제로 실행에 옮기는 경우는 상대적으로 적은 것을 파악할 수 있었다. 따라서 앞으로 쌀빵을 학교급식에 확대 적용하기 위해서는 교육청 담당자들의 이런 의지와 관심을 더욱 확고히 하고 현실적인 지원, 예를들어 오븐 및 현물 지원 등의 적극적인 지원 방안이 수립되어야 한다고 사료된다. 본 연구는 조사대상자인 교육청 급식담당자의 표본수 확보에 한계를 보였고, 아직까지 상용화 및 급식현장에서 제공되는 비율이 미미한 쌀빵이 조사의 주제어였기에 응답자의 인지도 및 인식 부족이 연구의 한계점으로 작용하였다. 향후 급식현장에서의 목소리를 담아낼 수 있는 영양(교)사, 학생을 대상으로 하는 쌀빵관련 연구가 진행된다면 쌀빵 사용 확대에 현실적인 지원책 마련에 일조할 것으로 사료된다.
