The purpose of this study was to investigate perception of the Food Allergy Labeling System (FALS) of school foodservice in female middle school students. The subjects were 148 female middle school students in the Incheon metropolitan area. In this cross-sectional study, data were collected using self-administered questionnaires. Only 20.9% of subjects had experience of food allergy education. There was no significant difference in food allergy knowledge by grade. The scores of perception of food allergy labeling by school foodservice were significantly higher in lower grade students (p<0.001). In all grades, highest scores were observed for 'food allergy labeling is necessary', whereas the lowest scores were for 'I check the food allergy labeling'. The percentages of subjects who wanted to participate in food allergy education were significantly different (p<0.01); 73.8% in 1st grade, 50.0% in 2nd grade, and 35.7% in 3rd grade. For desired education contents to enhance perception of FALS, 57.5% of subjects answered 'emergency management' and 23.0% said 'information of food allergy causing food'. Therefore, it is necessary to increase food allergy education and educate female middle school students according to grade in order to enhance perception of FALS.

This paper investigates the effect of an artificial intelligence attention redirection compensation strategy system on the data labeling work attention concentration by individuals with developmental disabilities. Task accuracy and task performance for each session were used as measures of attention concentration. As a result of the study, after the intervention was applied, a significant improvement in attention concentration was observed in all study subjects compared to self-serving task. These results mean that artificial intelligence technology can have a positive effect on improving the attention span of people with developmental disabilities during data labeling tasks. This study shows that the application of artificial intelligence technology can improve the quality of learning data by improving the accuracy of data labeling tasks for people with developmental disabilities, and is expected to provide important implications for vocational training programs related to data labeling for people with developmental disabilities.

Most of deep learning model training was proceeded by supervised learning, which is to train labeling data composed by inputs and corresponding outputs. Labeling data was directly generated manually, so labeling accuracy of data is relatively high. However, it requires heavy efforts in securing data because of cost and time. Additionally, the main goal of supervised learning is to improve detection performance for 'True Positive' data but not to reduce occurrence of 'False Positive' data. In this paper, the occurrence of unpredictable 'False Positive' appears by trained modes with labeling data and 'True Positive' data in monitoring of deep learning-based CCTV accident detection system, which is under operation at a tunnel monitoring center. Those types of 'False Positive' to 'fire' or 'person' objects were frequently taking place for lights of working vehicle, reflecting sunlight at tunnel entrance, long black feature which occurs to the part of lane or car, etc. To solve this problem, a deep learning model was developed by simultaneously training the 'False Positive' data generated in the field and the labeling data. As a result, in comparison with the model that was trained only by the existing labeling data, the re-inference performance with respect to the labeling data was improved. In addition, re-inference of the 'False Positive' data shows that the number of 'False Positive' for the persons were more reduced in case of training model including many 'False Positive' data. By training of the 'False Positive' data, the capability of field application of the deep learning model was improved automatically.
The objective of this study was to compare the healthy dining out attitude of restaurant diners by self-rated health status. Using healthy dining attitude and behavior questionnaire and a single question describing self-rated health status, the needs and importance of healthy dining out was detected. Mean age of the 182 respondents was 38.9${\pm}$11.37 years old and 37.4% of the respondents answered their mean monthly income was over 6,000,000won showing the subjects belonged in high income diners. The needs of healthy dining measured by five scales and offering healthy menus(3.80), labeling foods about original country(3.79), using environmentally friendly foodstuffs(3.71) and labeling nutrients on menu board(3.62) show higher score than others. A total of 76.4% of the respondents assessed their health status as 'good-rated Health' and 23.6% was 'poor-rated health'. There was no difference in frequency of eating out by self-perception of health status but, the 'poor-rated health' group need more nutrition information in restaurant specially for calorie(p<0.05), cholesterol(p<0.05), fiber(p<0.05), functional nutrients(p<0.001) showing significant differences comparing to 'good-rated health' group. In good-rated health group, selection of Korean cuisine for eating out was more frequent than the poor. The results shows the needs of healthy dining can be varied by diner's health status and therefore restaurateur should focus on understanding of the needs of diners with various health status.
The purpose of this study was to investigate school dietitians' perception on nutrition labelling of processed and packaged foods in the Incheon area. This study was carried out through a self-administered questionnaire and the subjects were 203 school dietitians. The results were summarized as follows. Most of the subjects checked nutrition labeling of processed and packaged foods when they purchased these foods for school lunch. However, the main reason for their checking nutrition labeling of processed and packaged foods was not for nutrition but for food safety. There were significant differences in the subjects' understanding and trust on nutrition labeling of processed and packaged foods by employment school. The scores of the subjects' satisfaction, understanding and trust on nutrition labeling of processed and packaged foods were not high. There were significant differences in the subjects' perception and concern about content information on nutrition labeling of domestic processed and packaged foods by employment school. Most of the subjects answered that it is almost necessary or very necessary to implement nutrition labelling of processed and packaged foods. Also their most preferred method of nutrition labelling was to label nutrient content. As the most important nutrient and functional component necessary for nutrition labelling, they answered energy, mineral such as calcium and iron, protein, total fat, cholesterol, vitamin, sodium and dietary fiber in order. As the major prerequisite task for the implementation of nutrition labelling, they answered formulation of nutrition labelling-related rules, and education and motivation for consumer, Therefore, it is necessary to activate the mandatory nutrition labelling of the processed and packaged foods and to prepare its consumer education program for school dietitian.
This study aims to examine the effect that the degree of knowledge about country-of-origin labeling on country-of-origin labeling work performance, which is a culinary staff task. This study is also intended to analyze differences in knowledge depending on hours of origin labeling education, and the moderating effect of education hours in the relationship between knowledge and performance. This study targeted culinary staff members working in ten five-star hotels in Seoul. A total of 205 self-administered questionnaires were distributed from November 14th to 27th, 2014, and 240 questionnaires(98.4%) were used for analysis after the exclusion of 4 with unreliable responses. Based on the data collected, frequency analysis, reliability test, exploratory factor analysis, simple regression analysis, t-test and moderating regression analysis were conducted using SPSS 18.0 program. The study findings are as follows. Culinary staff knowledge of origin labeling had a significantly positive effect on job performance and the degree of knowledge was higher in the group that attended one to two-hour periods of education. This suggests a differences in knowledge depending on the hours of education, which then had a moderating effect on the relationship between knowledge and performance. In conclusion, in order to improve knowledge of country-of-origin labeling and the level of performance, there is a need to increase education hours and enable culinary staff memebers to learn more knowledge and apply it to actual tasks. Based on these results, the limitation of the study and the direction of future research were also discussed.
Consumers empty perfectly safe to intake perishable foods everyday if they are older than what prints on expiration date. The variation in expiration dating is freshness labeling represented in various terms such as sell by, package, best before, and so on. Regardless of the terms used and meanings are attached, consumers tend to conceive of freshness labeling on food as end of its shelf-life. Consequently, the food waste becomes a big issue for businesses in food sector. In an effort to demonstrate flexibility on this, KFDA(Korea Food & Drug Administration) introduced "best before" date in domestic market place to reduce food waste, based on the food safety test conducted by KCA(Korea Consumer Agency 2009). The results indicated freshness labeling on food should not be considered as the end of its life. Current study examined the underlying mechanisms(i.e. risk perception, self-construals, and indecisiveness) that influence consumers' intention on prolonged consumption of food beyond its stamped date when the KCA test results are shown to them. In addition, the moderating effect of regulatory focus is tested in the causal relationships between underlying mechanisms and different groups of prolonged consumption intention. Study participants are divided into three groups of prolonged consumption intention: no-change, moderate-change, and wide-change. The group with moderate-change in intention being as our point of reference, logistic regression analyses are conducted on 276 sample population. The results indicated that consumers with high source credibility risk are likely to show wide-change in intention on prolonged consumption while physical risk did not show significance. The consumers with independent self-construal are likely to show no-change in intention on prolonged consumption while interdependent self-construal did not show significance. Indecisiveness showed association a group with wide-change in intention on prolonged consumption. The moderating effect of regulatory focus showed valid results in most situations; the promotion-focused consumers showed wide-change in intention, while prevention-focused consumers showed no-change in intention. Furthermore, the moderating effect of promotion-focus showed a dominant position over the causal effect of indecisiveness in which decisive consumers(i.e. no-change in intention); if they are promotion-focused they tend show for the wide-change in intention instead. It is important to note that for those promotion-focused consumers(or situations), promotion-related arguments are more effective, while for those prevention-focused consumers(or situations) prevention- related arguments are more effective means of persuasion.
BACKGROUND/OBJECTIVES: The aim of this study was to investigate the perception of sugar reduction, nutrition education, and frequency of snacking in children according to the self-perceived dietary preferences for sweet taste by mothers in Busan. SUBJECTS/METHODS: A total of 277 mothers were surveyed, and their perceptions of sugar reduction and the frequency of snacking in children were assessed using a questionnaire. The subjects were classified into either a sweet (n = 91) or an unsweet (n = 186) group according to their self-perceived preferences for a sweet taste. RESULTS: In the sweet group, the results for sweet products were sweetened ice (86.8%), confectionery (74.7%), processed milk (73.6%), carbonated beverages (71.4%), and fermented milk (53.9%). In the unsweet group, the results were sweetened ice (88.7%), carbonated beverages (78.5%), processed milk (75.8%), confectionery (69.4%), and fermented milk (50.5%). The necessity of sugar intake reduction was high in both groups (sweet = 89.0%, unsweet = 82.8%). Beverage purchases after identifying the nutrition labeling was significantly lower in the sweet group than in the unsweet group (P < 0.05). The reasons for the beverage purchases instead of water were "habitually" (50.5%) and "like sweet taste" (25.3%) in the sweet group (P < 0.01). Snacking in children was significantly higher in the sweet group based on the increased frequencies of carbonated drinks (P < 0.01), fast food (P < 0.001), candy and chocolate (P < 0.05), crackers (P < 0.01), ramen (P < 0.01), and fish paste/hotdogs (P < 0.01). The frequency of purchase education after identifying the nutrition labeling was significantly lower in the sweet group than in the unsweet group (P < 0.01). CONCLUSIONS: These findings suggest that a perception of sugar reduction and practical nutrition education aimed at reducing the sugar intake are necessary to improve dietary habits.
This study aims to examine the knowledge level of culinary staff members regarding the restaurant country- oforigin labeling system by developing a scale to investigate and evaluate such knowledge levels. The empirical study targeted culinary staff members with over 7 years of experience in 10 luxury hotels in Seoul who were approached through the convenience sampling method, which was conducted for 14 days from November 14th to 27th, 2014. A total of 192 self-administered questionnaires were collected, of which 186 questionnaires(93%) were used for the final analysis. For investigation and analysis, a frequency analysis was carried out to look into population statistics and the level of knowledge using the SPSS 18.0 statistics program. One-way ANOVA and t-test were carried out to investigate differences in knowledge levels of restaurant country-of-origin labeling system with reference to academic background, job position, and hotel management type. As the result, the average correct answer rate of the culinary staff members for a total of 21 questions was 39.85% and there were no significant differences based on the academic background. However, the correct answer rate was higher for respondents that held high positions and had independently managed hotels, suggesting that knowledge varied depending on job position and management type. In conclusion, it is suggested that in order to improve the level of knowledge of the restaurant country-of-origin labeling system among culinary staff members there is a need to enhance training and continuous supervision to apply the knowledge to work in future. In addition to this, this study discussed the limits of the study and the orientation of further research.
This study compared nutrition knowledge, dietary behaviors, and checking behaviors of food and nutrition labels between Korean and Chinese university students to obtain useful data for development of an education program for healthy dietary life. The data were collected by a self-administered questionnaire in Korea and China. Frequencies, t tests, ${\chi}^2$ tests, Cronbach's ${\alpha}$, and Pearson's correlation coefficient analysis were conducted by SPSS Win. V.21.0. The levels of nutrition knowledge and dietary behaviors were not high. Korean students showed higher percentage of correct answers about nutrition knowledge and levels of dietary behaviors than Chinese students. The means of degree of checking contents of food labels were 3.46 points for Korean students and 3.11 for Chinese students. Both groups of students showed the highest degree of checking milk and dairy products. The degree of understanding nutritive component labeling of Chinese students was higher than that of Korean students. Both groups of students showed higher than normal levels of confidence about nutritive component labeling and necessity of education on food and nutrition labels. The most preferred method of education on food and nutrition labels was broadcast media for both groups of students. In addition, there were significant correlations among nutrition knowledge, dietary behaviors, checking degree of food labels, checking degree of nutritive component labeling, and experience of nutrition education.
