통배추김치에 관한 연구 -대구지역을 중심으로 담그는 방법과 기호에 관한 실태조사- (Studies On Whole Chinese Cabbage Kimchi -An Investigation on the Method of Making Kimchi and a Taste in the Taegu Area-)

  • The purpose of this study was to investigate the method of making whole Chinese cabbage Kimchi, the family's taste in Kimchi and the reason for disliking the taste of Kimchi in the Taegu area. The results were as follows; 1) Most housewives learned the method of making the Kimchi from their mothers. Method was as follows; First, scatter salt on the whole Chinese cabbage and soak that for 3∼6 hours. After, wash the whole Chinese cabbage 3 times. Then, add red pepper powder, garlic, ginger and salted fermented anchovy as basic seasoning. Be sure to, mix the red pepper powder and salted fermented anchovy until they taste hot and salty. Store the whole Chinese cabbage until they ferment. Afterwards store the whole Chinese cabbage in the refrigerator. 2) It was the whole Chinese cabbage Kimchi that most family members preferred. 3) Among the family members, the old age group preferred newly made Kimchi because of the cool and fresh taste. The adult group preferred fresh taste, also smell and peculiar taste of the seasoning were important. The adolescent group preferred fresh taste and sour taste. 4) It shows that most of the family likes Kimchi, and among the family members, about 25% of the sons and daughters dislike Kimchi. And it shows that all family members dislike salty taste. 5) The older housewives’ Kimchi was preferred over the younger housewives’ Kimchi.

부산지역 낙지볶음의 표준조리법 개발 및 영양소 분석 (The Standardized Recipe and Nutrient Analysis of Stir-fried Whip-arm Octopus in Busan)

  • The purpose of this study was to develop the standardized recipe and to analyze the nutrients of stir-fried whip-arm octopus as one of the kind of traditional local foods in Busan. The standardized recipe was developed by using cookbooks, home recipes, and the recipes by commercial food restaurants. The nutrient was analyzed by using an AOAC method. Sensory evaluations were made on nine sensory attributes by a 12-member panel. As the results, the whip-arm octopus was recorded as a food source for health, rejuvenation in Jasanobo. Since early 1900, the stir-fried method has been used for cooking with the ship-arm octopus. The main ingredients were whip-arm octopus, onion, large green onion as the local stir-fried whip-arm octopus in Busan. The ingredients of soup were shrimp, little neck clam, and water. Seasoning sauce was mixed with red pepper powder, soy sauce, sesame oil, chopped garlic, chopped onion, and sugar. The seasoning sauce was fermented for three days. The results of sensory scores were salty seasoning 3.66/5.00, taste 3.75/5.00, thickness 3.84/5.00, and smell 4.09. Nutrient retention per 100g of the stir-fried whip-arm octopus was 67.54kcal, protein 6.43g, fat 1.66g, Ca 28.06mg, Fe 2.56mg, cholesterol 68mg, and taurin 51mg. Fatty acid consists of various unsaturated fatty acids such as linoleic acid(46.24%) and oleic acid(33.67%).

참치 자숙액 가수분해물을 이용한 건강 기능성 조미 소스의 제조 (Preparation of Functional Seasoning Sauce Using Enzymatic Hydrolysates from Skipjack Tuna Cooking Drip)

  • 참치가공 부산물의 효율적 이용을 위하여 건강 기능성이 고려된 참치 자숙액 조미 소스의 제조를 시도하였고, 그 특성에 대하여도 살펴보았다. 참치 조미 소스는 단백질이 11.8%로 시판 조미 소스의 약 2배에 해당하였고, pH, brix 및 염도는 각각 $577,348^{\circ}$ 및 11.9%이었다. 관능검사 결과, 참치 조미 소스는 시판 조미 소스에 비하여 맛, 냄새 및 색조에 있어 차이가 없었다. ACE 저해능은 참치 조미 소스가 시판 조미 소스(9.9 mg/mL)에 비하여 37% 정도 높았고, 항산화능은 20 mM ascorbic acid에 비하여는 약하였으나 인지는 되었다. 참치 조미 소스는 총 유리아미노산 함량이 1,905.2 mg/100 mL로 시판 조미 소스(712.7 mg/100 mL)에 비하여 약 2.7배 높았으며, 주요 유리아미노산은 taurine, glutamic acid, histidine 및 anserine이었다. 참치 조미 소스는 total taste value가 58.65로 시판 조미 소스의 34.30에 비하여 맛의 강도가 훨씬 강하리라 추정되었고, 맛에 크게 기여하는 주요 아미노산으로는 glutamic acid 및 histidine 등이었다. 총 아미노산 함량은 참치 조미 소스가 10,965 mg/100 mL로 시판 조미 소스의 4,818 mg/100 mL에 비하여 높았고, 참치 조미 소스의 주요 구성 아미노산으로는 glutamic acid, proline, histidine 및 glycine 등이었다. 참치 조미 소스의 섭취에 의한 무기질 강화 효과는 기대하기 어려우리라 판단되었다.

  • This study developed a natural seasoning (NS) and characterized its food components. Hydrolysate from Alaska Pollock Theragra chalcogramma heads and sea tangle Laminaria japonica byproduct were obtained by incubating them with Neutrase for 4 h. NS was prepared by mixing sorbitol 2%, salt 2%, ginger powder 0.04%, garlic powder 0.2%, onion powder 0.2% and inosine monophosphate (IMP) 0.1% based on concentrated hydrolysates from Alaska pollock head and sea tangle byproduct before vaccum filtering. The proximate composition of NS was 82.7% moisture, 9.0% crude protein, and 5.1% ash. It had a higher crude protein content than commercial anchovy sauce (CS), it was lower in moisture and ash. The 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity and angiotensin-I converting enzyme (ACE) inhibiting activity of NS were 90.1% and 88.9%, respectively, which were superior to those of CS. The free amino acid content and total taste value of NS were 1,626.0 mg/100 mL and 165.86, respectively, which were higher than those of CS. According to the results of taste value, the major free amino acids were glutamic acid and aspartic acid. In the sensory evaluation, the color and taste of NS were superior to those of CS. No difference in fish odor between NS and CS was found.

근적외선 분광분석법에 의한 고춧가루의 원산지 및 고추씨 혼입 판별 (Discrimination of Geographical Origin and Seed Content in Red Pepper Powder by Near Infrared Reflectance Spectroscopic Analysis)

  • Red pepper powder (Capsicum annum L.) is an important seasoning as a kimchi ingredient in korea and most korean consumer tend to eat the korean red pepper powder as the better than other oriental country such as China. Near infrared reflectance spectroscopy (NIRS) was applied for discrimination according to geographical origin (Korea, China) of red pepper powder. The objective of this study is to determine if NIR technique could be used to discriminate between the korean red pepper powder and non-korean red pepper powder according to seed content and maxing ratio in red pepper powder by using the new method. Rapid, precise and nondestructive analysis method for determination of the geographical origin of red pepper powder by near infrared spectroscopy and chemometrics were performed. It has been observed discriminant analysis with PLS is adequate to determinate the geographical origin of red pepper powder. It tend to difficult the discrimination of geographical origin according to increase the seed content of red pepper powder. The accuracy of discrimination in mixed red pepper powder was range from 95.2% to 100%.

콩가루 고추장을 이용한 샐러드 드레싱의 품질 및 관능 특성 (Quality and Sensory Characteristics of Salad Dressing Prepared from Soy Powder Gochujang)

  • This study focused on the evaluation of the quality and sensory characteristics of salad dressing prepared from soy powder (Gochujang), in order to increase the level of usability for the Gochujang which is the representative seasoning and spice of Korea. The moisture content and pH of the salad dressing increased in proportion to the increasing amount of soy powder (Gochujang) (p<0.001). Regarding the sugar and salt contents, 20% of the soy powder (Gochujang) shows $26.17^{\circ}Brix$, While the largest value for salt content was 4.8%, with a significant difference existing among varivous samples (p<0.001) As the added amount of soy powder (Gochujang) increased, the sugar content of the salad dressing increased with a statistically significant change (p<0.001). Regarding chromaticity, when soy powder (Gochujang) was added the levels of lightness and yellowness showed a decreasing tendency, and the level of redness showed an increasing tendency, with a significant difference existing among various samples(p<0.001). The results of a sensory showed that, as the amount of added soy powder (Gochujang) increased, the color intensity, Gochujang flavor, and hot taste increased (p<0.001). The results of a sensory showed that, as the amount of added soy powder (Gochujang) increased, the Salad dressing of the glossy, sour flavor, sour taste, and oily level decreased tendency (p<0.001). The results of an acceptance test showed that a 15% content of the soy powder (Gochujang)showed the greatest acceptance values in categories such as appearance, taste, texture, and overall acceptability. Therefore, when making a salad dressing with Gochujang, it is appropriate to add a 15% content of Gochujang to improve the quality and sensory characteristics of the salad dressing.

닭발 추출 젤라틴을 이용한 샐러드 드레싱의 품질 특성 (A Study on the Characteristics of Salad Dressings Containing Chicken Foot Gelatin)

  • This study was conducted to present fundamental data on the physicochemical properties and sensory qualities of salad dressings made with chicken foot gelatin. Preliminary experiments were performed to confirm the gelatin powder concentrations in preparing gelatin solutions. A 2% gelatin solution, including 0.5% agar, was prepared for use in the experiments that followed. Sensory evaluations were conducted to compare the organoleptic acceptance of dressings manufactured with differing concentrations of the additive in seasoning soybean sauce, mayonnaise, and sesame powder. The viscosities of the dressings significantly increased with increasing gelatin powder concentration. A decrease in turbidity was observed in the mayonnaise and sesame dressings. The color difference values of all dressings indicated no changes. In sensory evaluations of dressings prepared with gelatin solutions at different concentrations of 2 g (1%), 4 g (2%), and 8 g (4%) of gelatin powder, the 4 g (2%) sample received the highest score for overall acceptance. From this study, which was conducted to find an efficient use for chicken house wast product, it is anticipated that chicken feet will be utilized as a new raw material for producing collagen and gelatin, protein sources widely increasing in use with in the food and bio-industries.

반응표면분석법을 활용한 피조개(Scapharca broughtonii) 조미가공품용 조미 소스의 공정 최적화 (Optimization of the Processing of Seasoning Sauce for Seasoned Broughton's Ribbed Ark Scapharca broughtonii Products Using Response Surface Methodology)

  • This study was conducted to optimize the processing conditions of seasoned broughton's ribbed ark Scapharca broughtonii products (S-BRA-P) using response surface methodology (RSM). The concentrated oyster extract content (X1, w/w), amino-based seasoning powder content (X2, w/w), and enzyme-treated stevia content (X3, w/w) were selected as independent variables, and amino nitrogen (Y1) and overall acceptance in a sensory evaluation (Y2) were selected as dependent variables. The optimal conditions of X1, X2, and X3 were 97.5%, 20.0%, and 0.9%, respectively, and the predicted values of the multiple response optimal conditions were Y1 (1,030 mg/100 g) and Y2 (8.3). Under the optimum conditions, the experimental values of Y1 and Y2 were 1,034 ± 6.0 mg/100 g and 8.5 ± 0.4, respectively, which was no significant difference from the predicted values (P<0.05). In conclusion, the optimized models of X1, X2, and X3 for the preparation of soy sauce-based sauce were suitably fitted. The optimum amount of seasoning sauce was 13% for the preparation of S-BRA-P. The S-BRA-P, which was prepared by adding the seasoning sauce and the other subsidiary material [finely chopped spring onion (3.8%) and cheongyang hot pepper (4.6%)], had a superior taste, color, and odor.

향미유 제품에 대한 추출 용매별 로즈마리 추출물의 저장 안정성 향상 효과 (Increasing Effect on Storage Stability of Rosemary Extracts used for Various Solvent System on Seasoning Oils)

  • RPSO, SO, PNO의 3종 향미유에 대하여 로즈마리 유기 용매 추출물과 비교군으로 토코페롤을 각각 1,000ppm씩 동량으로 적용하여 60${\pm}$2$^{\circ}C$의 항온기에 저장하여 AV, POV 및 카르보닐 화합물 생성량의 변화 양상을 측정하였다. 이들 향미유의 AV, POV측정 과정에서는 고유의 색상으로 인하여 상대적으로 측정 오차가 크게 발생하였으며, 토코페롤은 AV, POV, 카르보닐 화합물 생성량 등 각종 측정 항목에서 항산화제로서의 역할보다는 오히려 산화 촉진제로 작용하는 것으로 밝혀졌다. 전체적으로 chloroform/MeOH 추출물 처리의 저장 안정성의 향상 효과가 가장 우수하였으며, 측정 항목 및 추출물별 저장 안점성의 향상 효과는 다음과 같았다. 즉, AV는 chloroform/ MeOH 추출물>ethyl alcohol 추출물>열수 추출물>ethyl acetate 추출물>acetone 추출물>무처리군>토코페롤 처리군이었으며, POV는 chloroform/MeOH 추출물>ethyl alcohol추출물${\geq}$ethyl acetate 추출물>acetone 추출물${\geq}$열수 추출물>무처리군>토코페롤 처리군이었고, 카르보닐 화합물 생성량은 chloroform/ MeOH 추출물>ethyl acetate추출물>ethyl alcohol 추출물>열수 추출물>acetone 추출물>무처리군>토코페롤 처리군의 순이었다.

닭발껍질추출 Gelatin을 이용한 Salad 드레싱의 이화학적 및 관능적 특성 (Physicochemical and Sensory Characteristics of Salad Dressing using Gelatin Extracted from Chicken Foot Skin)

  • 본 연구는 도살한 후 식용 부위를 제거하고 폐기되는 닭발을 이용하고자 닭발껍질에서 식품 소재인 gelatin을 추출하였다. 샐러드 드레싱의 물성 및 기호성 증진을 위해 닭발껍질에서 추출한 gelatin을 첨가하여 가공적성실험을 하였다. 결과는 다음과 같다. \circled1Gelatin - 한천용액으로 제조한 드레싱의 관능평가 결과에서 gelatin용액에 대한 조림간장의 함량이 10%인 것이 관능적으로 우수한 결과를 나타냈다. 겨자 마요네즈 드레싱은 마요네즈 함량이 낮을수록(10% 이하) 선호도가 좋아 마요네즈 첨가량이 적은 것이 바람직한 것으로 판단되었다. 참깨 드레싱은 gelatin 용액에 대한 참깨의 함량이 15%일 때 기호도가 높은 것으로 나타났다. \circled245$^{\circ}C$에서 전단속도에 따른 전단 응력을 관찰한 결과, 간장 드레싱의 점도는 조림간장의 첨가량이 증가할수록 처리구간 유의적인 감소를 나타냈고, 겨자 마요네즈 드레싱의 경우는 마요네즈 첨가량이 증가할수록 점도도 증가하는 것으로 나타났다. 참깨 드레싱도 역시 첨가량이 증가할수록 점도의 증가를 나타냈다. \circled3Gelatin의 첨가량을 달리하여 제조한 드레싱의 점도는 gelatin의 첨가량이 증가할수록 모든 시험구에서 유의적인 증가를 나타냈다. 마요네즈드레싱과 참깨 드레싱에서 gelatin첨가에 의한 혼탁도의 감소가 관찰되었다. 색도 측정 결과 gelatin첨가량에 따른 모든 처리구에서 유의적인 차이를 나타내지 않았다. \circled4Gelatin의 함량을 달리한 드레싱의 관능평가 결과, 전반적인 기호도는 gelatin-한천 용액은 2%의 gelatin과 0.5%의 한천을 함유한 것이 가장 우수한 것으로 나타났다.(Table 5). 이상의 결과들을 종합해 볼 때 닭발껍질로부터 추출한gelatin의 첨가는 물성학적, 관능적으로 더 우수한 것으로 나타나 새로운 소재로서 닭발껍질의 이용 가능성이 매우 크다고 판단된다. 또한gelatin을 이용한 드레싱의 개발은 한층 더 산업화의 일조를 할 수 있을 것으로 기대가 된다.
