This study was undertaken to analyze the iodine content in commonly donsumed Korean foods. Food samples were purchased from 3 randomly selected markets. The iodine contents in foods were determined by nuetron activation analysis (NAA). All irradiation of food samples were done at a pnueumatic transfer system (thermal nuetron flux : 1 $\times$1013n/$\textrm{cm}^2$.s) of the TRIGA MarkIII research reactor in the Korea Atomic Energy Research Institute . The results indicated that the iodine content was high in seaweeds, fishes, and iodine-enriched eggs in that order and very low in grain, beans , fruits and vegetables. Edible seaweeds contained iodine levels of between 13,700 and 1,790, 600$\mu\textrm{g}$/kg. Levels of iodine in fishes and shellfishes were between 478 and 2, 840$\mu\textrm{g}$/kg. Ordinary eggs contained 314$\mu\textrm{g}$/kg iodine, but iodine -enriched eggs contained 1,869$\mu\textrm{g}$/kg. The average concentration of iodine in milk was 207$\mu\textrm{g}$/kg. There was seasonal variation in the iodine content of milk , levels were highest in winter milk(230$\mu\textrm{g}$/kg) and lowest in summer milk(180$\mu\textrm{g}$/kg).The idodine contents of most vegetables and fruits were below 10$\mu\textrm{g}$/kg. The iodine contents of most vegetables and fruits were below 10$\mu\textrm{g}$/kg. From high to low , the sequence of foods with high iodine content in one serving was as follows ; sea tangle , sea mustard, iodine-enriched eggs, fish , laver and milk. This study may provide basic data on the iodine content of foods consumed by Korean which have not yet been analyzed .
The prevalence rate of thyroid dysfunction (hypothyroidism and hyperthyroidism) has increased within the Korean population and seems to be affected by iodine dietary habits. Some studies reported that the prevalence of thyroid dysfunction increase both in the area of iodine deficiency and excess. In this study, we tried to discover the difference in iodine intake, anthropometric measurements, and blood parameters between male subjects with or without subclinical thyroid dysfunction. A total of 5,249 subjects (Euthyroid: 4706, SubHypo: 454, SubHyper: 89) were used in this study. There were no significant differences in BMI, body fat, visceral fat, waist circumference, SBP, DBP, total cholesterol, HDL-cholesterol, LDL-cholesterol, TG, fasting serum glucose, HbA1c, alcohol intake, however significant differences were noticed in both age and smoking status. Through a food frequency questionnaire (FFQ), iodine intake per day was estimated. The average iodine intake was similar (SubHypo $392.9{\pm}279.0{\mu}g$, Euthyroid $376.5{\pm}281.7{\mu}g$, SubHyper $357.3{\pm}253.8 {\mu}g$) among groups. The main source of iodine intake was eggs (52.8%, 54.2%, 52.4%) followed by milk (16.3%, 15.8%, 17.8%), then sea mustard & sea tangle (12.4%, 11.9%, 11.6%). The prevalence of subclinical hypothyroidism and subclinical hyperthyroidism was higher in subjects whose intake was higher than the recommended nutrient intake (RNI). These results suggest that the excess consumption of iodine intake may act as one of the risk factors regarding thyroid dysfunction in Korea. Therefore, an adequate amount of iodine intake is necessary in order to prevent subclinical thyroid dysfunction and clinical thyroid dysfunction.
The purpose of this presents is to investigate, using natural food extracts(Green tea; Camellia sinesis, Du'chung; Eucommia ulmoides Oliver, Eu sung cho; Houttuynia cordate Thunb, Sam back cho; Saurus Chinensis, Baek hwa sa seal oho; Oldenladia diffusa Roxb., Laver; Porphyra tenera, Sea mustard; Undaria pinnatifda and Sea staghorn; Condium fragile) and juices(Sweet pepper; Capsicum annuum var. angulosum, Kale; Brassia oleracea var. acephala, Cucumber; Cucumis sativus, Onion; Allium cepa, Tomato; Lycopericon esculentum, Maesil; Prunus mume, Plum; Prunus salicina and Grape; Vitis spp.), the effect of natural plant components on the nitrite-scavenging under the different levels of pH. From the above mentioned extracts and juices, the content of vitamin C was detected, containing 65.1∼77.1 mg/100g, at the highest level in the Green tea, and followed by vegetables and fruits in order. The nitrite scavenging effect of teas, medicinal plants, and seaweed extracts, in the reaction system under the condition of pH 1.2, were 57.0∼100%, 50.0∼100%, and 18.0∼99.0%, respectively. To find out suitable indoor rearing tank shape and stocking density of the abalone Haliotis discus hannai, young abalones were reared in the square or ellipse shape tanks with various stocking densities and were fed dried sea mustard, Undaria Pinnatifida HARVEY for three years. There were no significant differences between the square rearing tank and the ellipse one in growth rate and survival rate. With regard to vertical design of rearing tanks with three floors, the significant differences were not found among culture floors. However, the growth and survival rates of young abalones from the running water system were significantly higher than those of the abalones from the circulating system (P< 0.05). For the stocking density experiment with 1,000, 1,500 and 2,000 individuals of 20 mm young abalone, there was no significant differences in growth and survival rates among these groups. However, in that of 200-400 individuals of 40 mm abalone and 100-300 individuals of 50 mm abalone, the lower stocking density of young abalone showed the higher growth and survival rates. The lower stocking density and the smaller size of young abalones showed the higher daily feeding rate and feed efficiency.

Water temperature data of National Fisheries Research and Development Institute[NFRDI] during periods of 1990 to 2007 were analyzed to investigate the effect of the water temperature on catches of anchovy and Undaria Pinnatifida in coastal of Busan, Korea Our findings indicated that the catches of anchovy and Undaria Pinnatifida were controlled by various oceanographic conditions, mainly water temperature. The appearance of warmer water at stratification above depth. higher anchovy catches and cooler water at stratification below depth, higher Undaria Pinnatifida production.
Since its introduction in"Jeungbosallimgyeongje" in the mid-1700s, Chogyetang has continuously changed as a cooked food while still reflecting the era as in the following four phases. In the first phase from 1766 to 1920, Chogyetang was served as a hot pot dish consisting of boiled chicken with spring onions, vinegar, soy sauce, oil, and egg. The second phase from 1930 to 1950 involved the removal of vinegar, an important seasoning. Instead, a wider variety of materials such as beef, sea cucumber, abalone, cucumber, and mushroom were added. Third, from the late-1950s to 1980s, there were significant changes both in the materials and recipe. Chogyetang was changed into a cold food for consumption in the summer in which sesame, a new material, was added to make soup. The prepared soup was then poured over the chicken and vegetables. Fourth, from the late-1980s to the present, sesame, the main ingredient added in the third phase, was removed. Instead, vinegar, mustard, and sugar were added in order to increase taste. Therefore, Chogyetang has been changed into an a la carte menu item in which vegetables and noodles are added to boiled chicken, and it has become a popular summer food consumed when eating-out.
Flow and dynamic rheological properties of hot thickened soups for consumption by the elderly people with swallowing difficulty (dysphagia) were investigated at a serving temperature of $60^{\circ}C$. In this study, sea mustard soup (SMS) and dried pollock soup (DPS), which have been widely known as favorable hot soups provided in a domestic hospitals and nursing homes for dysphagic patients, were thickened with four commercial xanthan gum (XG)-based food thickeners (coded A~D) marketed in Korea. Thickened soups prepared with different thickeners showed high shear-thinning flow behaviors (n=0.15~0.21). Apparent viscosity (${\eta}_{a,50}$), consistency index (K), storage modulus (G'), and loss modulus (G") demonstrated differences in rheological behaviors between the XG-based thickeners. The magnitudes of (G') were much higher than those of (G") over the entire range of frequency (${\omega}$) with the high dependence on ${\omega}$, showing the rheological behavior similar to a weak gel. In general, all rheological parameter values of thickened DPS samples were higher when compared to the thickened SMS samples. These results indicate that flow and dynamic rheological properties of hot thickened soups containing commercial XG-based thickeners are strongly dependent on the type of thickener and soup.

Settlement of artificially released abalone, Haliotis discus hannai at the marine farming area in Jeollanam-do in 2007 was very efficient by showing the recapture of 2.0-5.2 ind./m2 and the survival rate of 60-67%. The growth of shell after 1 year was highest in Hwoenggando by 75.9 mm and the lowest in Hwasan by 64.6 mm. Our result especially showed that the effect of the stock recruitment was the most efficient when abalone was released. The shell growth of the released abalone was better when sea mustard (Undaria sp.) was provided as food (shell length was up to 23.9 mm) or predators were periodically removed (shell length was up to 23.8 mm) in order to enhance the effect of the artificial release than the control group. The recapture rate was also higher than the control. However due to the difficulty of managing the release areas, it will be more efficient to release the recruited stocks after considering various biological and ecological factors such as survey of suitable release areas, stock size, release density, and health of stocks.

This report described on the soluble, insoluble, and total dietary fiber level depending on the harvesting seasons and habitats in 9 species of marine algae. Total dietary fiber contents were comprised $25.4-38.1\%$ (dry basis) in green laver and $35.4-43.8\%$in sea staghorn of green algae, $34.2-48.8\%$ in sea mustard, $37.5-47.8\%$ in seaweed fusiforme, $42.9-71.3\%$ in gulf weed, and $37.1-45.1\%$ in sea tangle of brown algae, and $31.3-40.5\%$ in laver, $51.5-60.4\%$ in seaweed dilatata, and $57.1-65.8\%$ in seaweed furcata of red algae. Relatively high levels of both soluble and insoluble dietary fibers were found in seaweed furcata and gulf weed. The ratio of soluble dietary fiber to total dietary fiber was the highest in green laver $(43.7-64.8\%)$, sea mustard $(17.5-31.3\%)$, and seaweed furcata $(44.7-63.2\%)$ in their respective groups. The highest level of algal polysaccharides was confirmed to be an alkali-soluble alginic acid $(9.0-15.1\%)$ in whole brown algae, porphyran$(5.8\%)$ in laver, agar $(20.0\%)$ in seaweed furcata, and carrageenan $(23.8\%)$ in seaweed dilatata of red algae.
This study was conducted to examine the proximate composition, alginic acid and mineral contents and the types of calcium and magnesium in the parts(frond, stipe, sporophyll) of sea mustards. Carbohydrates and the crude fat was the highest in sporophyll. The contents of alginic acid were $25.9{\sim}32.2%$. Total alginic acid(32.2%) and insoluble alginic acid in water(27.7%) was e highest in sporophyll. Calcium and magnesium was the highest in frond. Phosphorous, potassium and sulfur was the highest in sporophyll. Iron, zinc and mangane was the highest in frond. Ca/P ratio in frond and stipe was about $1.7{\sim}1.8:1$ levels. Calcium and magnesium soluble in sodium chloride was the highest in sea mustards. Calcium and magnesium soluble in water was the highest in frond. Calcium and magnesium soluble in hydrochloric acid was the highest in sporophyll.
