지역별 재래식 간장과 시판 개량식 간장의 품질특성 분석 (Quality Characteristics of Regional Traditional and Commercial Soy Sauce (Ganjang))

  • Purpose: Physicochemical and microbiological qualities were investigated to compare quality characteristics of traditional with commercial soy sauce (Ganjang). Methods: Nineteen traditional products were collected from six provinces and three commercial products were purchased in domestic markets. The proximate composition, inorganic substance contents, viable bacteria, and chromaticity of the soy sauces were measured. Results: Although concentrations of crude fat and protein were not significantly different between traditional and commercial Ganjang, the moisture concentration of commercial soy sauce was significantly higher than in traditional Ganjang (p<0.05). However, the amount of ash in commercial soy sauce was significantly lower than in traditional Ganjang (p<0.05). Total nitrogen concentrations of traditional and commercial Ganjang were 0.50-1.59% and 0.86-1.26%, respectively. Concentrations of Na, Mg, K, Ca, Li, B, Fe, and Sr in traditional Ganjang were significantly higher than in the commercial products (p<0.05). The number of total bacteria in traditional and commercial Ganjang were $3.3{\times}10^1-6.4{\times}10^7CFU/mL$ and $5.5{\times}10^1-2.0{\times}10^3CFU/mL$, respectively. Bacillus cereus were below 10,000 CFU/mL in all samples, and Staphylococcus aureus was not detected. Fungi was not detected in 13 samples of traditional Ganjang and the three samples of commercial soy sauce. Although lightness, redness, and yellowness were not significantly different among the Ganjang, G10 was had the highest values (p<0.05). Conclusion: This research provided information about the quality characteristics of traditional and commercial Ganjang.

Sous Vide Cook-chill 법으로 생산된 삼치 데리야끼 조림의 레몬즙 첨가에 따른 미생물적 품질평가 (Evaluation of the Microbiological Quality of Glazed Spanish Mackerel in Teriyaki Sauce by Adding Lemon Juice Using Sous Vide Cook-chill Method)

  • The principal objective of this study was to evaluate the microbiological quality of Glazed Spanish Mackerel in Teriyaki sauce by adding Lemon juice, using a Sous vide Cook-chill method. The control was prepared by mixing 100 g of cut Spanish Mackerel and 15 mL of Teriyaki sauce. 1.5 mL lemon juice was added to 15 mL of Teriyaki sauce. The product was stored at below $3^{\circ}C$, and its microbiological quality was assessed over varying storage periods (0, 5, 10, 15 days). Total Plate Counts at product flow showed no significant difference between the control and the lemon juice-added sample. However, the coliform counts at the end of mixing each sauce were detected at low levels of 1.65 Log CFU/g in the lemon juice-added sample, as opposed to 2.63 Log CFU/g in the controls (p<0.05). The microbiological quality by storage day was relatively high in the lemon juice-added samples. After reheating, the Total Plate Counts and Coliform counts of the lemon juice-added samples satisfied the standard applied in the processed food (5.0 and 2.0 Log CFU/g, respectively). It can be concluded that the addition of Lemon juice was more effective in ensuring the safety and extending the shelf life of Sous vide Glazed Spanish Mackerel in Teriyaki sauce.

표고 버섯과 양송이 버섯 브라운 소스의 품질 특성 (Quality Characteristics of the Brown Sauce Prepared with Lentinus edodes and Agaricus bisporus)

  • To evaluate the potential possibility of Lentinus edodes as an a sauce ingredient of sauce, the physicochemical and sensory characteristics of Lentinus edodes and Agaricus bisporus brown sauce were compared. The same mother sauce was used to prepare the for preparation of two different types of sauce was the same. The contents of moisture, crude protein, and crude ash were not different. However, crude fat content was higher in Agaricus bisporus brown sauce and carbohydrate content was higher in Lentinus edodes brown sauce. The amounts of total free amino acids were 1,236.45 mg% in Agaricus bisporus brown sauce and 791.73 mg%, respectively in Lentinus edodes brown sauce. Major free amino acids in both sauces were glutamic acid, alanine, aspartic acid, and arginine. Amino acid derivatives content was higher in Lentinus edodes brown sauce (644.55 mg%) than in Agaricus bisporus brown sauce (595.87 mg%). Major amino acid derivatives were ammonia, taurine, and carnosine in Agaricus bisporus brown sauce and sarcosine, ammonia, -amino isobutyric acid, and phospho ethanolamine in Lentinus edodes brown sauce. The L, a and b values of Lentinus edodes brownumsauce showed a higher tendency those of Agaricus bisporus. The viscosity of Agaricus bisporus brown sauce and Lentinus edodes brown sauces were 1976.67 cP and 2686.67 cP, respectively. The sensory score of color was not different between the both sauces, but those of flavor, taste, and viscosity of Lentinus edodes brown sauce were higher than those of Agaricus bisporus brown sauce. Especially, the sensory evaluation score on the flavor of Lentinus edodes brown sauce (7.6) was recorded higher than that (5.1) of Agaricus bisporus brown sauce. From the As a results, the overall acceptability of Lentinus edodes brown sauce was judged to be superior to than that of Agaricus bisporus brown sauce.

홍국파우더 루 첨가량을 달리한 브라운소스의 품질특성에 관한 연구 (A Study on the Quality Characteristics of Brown Sauce by the Addition of Red Yeast Rice Powder Roux)

  • 본 연구는 일반적으로 농후제로 사용되는 루(Roux)에 홍국파우더를 첨가하여 제조한 브라운소스의 일반성분 및 이화학적 특성, 관능적 특성을 평가하였다. 수분은 홍국파우더 루의 첨가량이 증가할수록 감소하였다. 점도와 탁도는 홍국파우더 루의 첨가량이 많을수록 증가하였으며, pH, 당도, 환원당도 홍국파우더 루의 첨가량이 많을수록 증가하는 경향을 보였다. 관능검사중 정량적 묘사분석 결과는, 붉은 색의 정도, 걸쭉한 정도, 시큼한 맛, 쌉쌀한 맛, 깔깔한 정도는 홍국파우더 루의 첨가량이 많아질수록 증가를 하였고, 누린내는 감소하였음을 알 수 있다. 브라운소스의 품질향상에 홍국파우더 루가 영향을 주는 것으로 사료된다. 이상의 실험결과를 종합해 볼 때, 브라운소스의 홍국파우더 루 첨가는 전체적인 기호도에 영향을 미치며, 홍국 파우더 30% 첨가 시 브라운소스의 기계적 특성과 관능 및 기호도의 향상에 가장 적절하다고 사료된다.

흑마늘 추출액의 첨가 농도에 따른 간장의 품질특성 및 항산화 활성 (Quality Characteristics and Antioxidant Activity of Soy Sauce with Added Levels of Black Garlic Extract)

  • Purpose: In order to develop soy sauce and increase its functionality, by adding black garlic extract. Methods: We compared quality characteristics and antioxidant activity of 20 days aging black garlic soy sauce from mixed manufacturers with raw soy sauce (commercial fermented soy sauce) and different ratio of black garlic extract (65 Brix, 0.3-5.0%). Results: The salt content of the black garlic extract (0.3-5.0%) added soy sauce were 12.35-12.77%. The pH was lowered to 4.99, and acidity was increased to 2.12%, depending on the increase in black garlic extract added ratio. The crude protein and total nitrogen contents were 6.23-6.62% and 1.10-1.16%, respectively, and content of amino form nitrogen was 0.52-0.53%, without significant differences between experimental groups. Contents of reducing sugar and free sugars (fructose and glucose) tended to be higher with higher mixing ratios of black garlic extract. Total phenolic compounds and flavonoids contents were significantly increased in the 3% and 5% black garlic extract addition group. At concentrations of 62.5, 125, 250, 500, 1,000 and $2,000{\mu}g/mL$, the DPPH and ABTS radical scavenging activity of the polysaccharides isolated from control soy sauce and 5% black garlic extract added soy sauce showed higher correlation with their concentration. Conclusion: These results, confirmed that the soy sauce produced by adding more than 3% of black garlic extract has high antioxidant activity.

적포도주를 첨가한 칠리소스 새우볶음의 품질특성 (Quality Characteristics of Sauteing Chili Sauce Shrimp with Red Wine)

  • The aim of this research was to evaluate the effects of red wine on the quality characteristics of sauteing chilli sauce shrimp. Cooked chili sauce shrimp was storaged on $3^{\circ}C$ fot 15 days. The TPC of sauteing chili sauce shrimp with red wine was increased for all experimental groups with a longer storage period and the groups with 10% or 20% red wine had lower TPCs than control. The AV and TBA were increased for all experimental groups with increased holding time, but in case of 20% red wine had lower value for AV and TBA than control and 10% red wine. In a sensory evaluation, the 10% red wine group was highly evaluated compared to control and 20% red wine group. In conclusion, we can find out that 10% red wine group was most pertinent to antimicrobial effect, antioxidant effect and sensory quality.

  • 재래식(在來式)콩간장의 제조(製造)에 있어서 국균(麴菌)의 종류별(種類別), 메주의 형태별(形態別)로 담금하여 숙성과정(熟成過程)중의 효소력(酵素力)과 성분(成分)의 변화(變化)를 검토한 결과(結果)는 다음과 같다. 1. 메주 및 간장숙성과정(熟成過程)중의 protease 활성(活性)은 Asp. sojae로 제조한 종국(種麴)이 Asp. oryzae로 제조한 종국(種麴)에 비하여 높았고 국수형의 매주가 벽돌형의 메주에 비하여 높았으며 amylase활성(活性)은 Asp. oryzae균(菌)이 Asp. oryzae균(菌)에 비하여 대체로 높은 경향을 나타냈다. 2. 간장숙성기간(熟成其間)중의 총질소(總窒素), 아미노태질소(窒素), 순고형분(純固形分)의 함량과 비중(比重)은 Asp. sojae균(菌)의 국수형의 메주로 담금한 것이 가장 높았고 Asp. oryzae의 벽돌형메주로 담금함 것이 가장 낮았다. 3. 완층능은 Asp. sojae균(菌)의 국수형의 메주로 담금한 간장이 $1.77{\sim}2.56$으로서 가장 높았으며 알코올성분(成分)은 전시험구 공히 검출되지 않았고 암모니아태질소(窒素)의 함량은 각 시험구간의 큰 차가 없었다. 4. 간장 숙성기간(熟成其間)중의 단백분해율(蛋白分解率)과 질소이용율(窒素利用率)은 Asp. sojae균(菌)의 국수형메주가 가장 높았고 Asp.oryzae균(菌)의 벽돌형메주가 가장 낮았으며 특히 메주의 형태(形態)에 따라 질소이용율(窒素利用率)은 많은 차이(差異)를 나타냈다. 5. 3개월간 숙성(熟成)후 간장을 여과하고 남은 재래식(在來式) 장중의 일반성분(一般性分)은 수분(水分) $54{\sim}61%$, 아미노태질소(窒素) $457{\sim}682mg%$, 염분(鹽分) $18{\sim}23%$, 지방(脂肪) $5.4{\sim}9.1%$, 단백질(蛋白質) $8.6{\sim}9.4%$로 나타났고 이중 Asp. sojae균(菌)의 국수형메주의 경우 성숙도(아미노태질소의 mg%)가 가장 높았다. 6. 3개월간 숙성(熟成)한 간장을 색 맛 향기(香氣)등에 대하여 관능시험한 결과 Asp. sojae균(菌)의 벽돌형메주로 담금한 것이 가장 양호(良好) 하였으며 Asp. oryzae균(菌)의 벽돌형메주로 담금한 것이 가장 불량(不良)하였다.

Combined Effects of High Pressure Processing and Addition of Soy Sauce and Olive Oil on Safety and Quality Characteristics of Chicken Breast Meat

  • This study was conducted to evaluate the combined effect of high pressure (HP) with the addition of soy sauce and/or olive oil on the quality and safety of chicken breast meats. Samples were cut into 100 g pieces and 10% (w/w) of soy sauce (SS), 10% (w/w) of olive oil (OO), and a mixture of both 5% of soy sauce and 5% olive oil (w/w) (SO) were pressurized into meat with high pressure at 300 or 600 MPa. Cooking loss was lower in OO samples than SS samples. With increased pressure to 600 MPa, the oleic acid content of OO samples increased. The total unsaturated fatty acids were the highest in SO and OO 600 MPa samples. Lipid oxidation was retarded by addition of olive oil combined with HP. The addition of olive oil and soy sauce followed by HP decreased the amount of volatile basic nitrogen during storage and reduced the population of pathogens. Sensory evaluation indicated that the addition of olive oil enhanced the overall acceptance and willingness to buy. In conclusion, the combination of HP with the addition of soy sauce and/or olive oil is an effective technology that can improve chemical, health, sensory qualities and safety of chicken breast.

복분자 분말 첨가 장어 소스의 이화학적 성분 및 품질 특성 (Physicochemical Component and Quality Characteristics of Eel Sauce Added with Bokbunja (Rubus coreanus Miquel) Powder)

  • In this study, the physicochemical and quality characteristics of eel sauce added with bokbunja powder were evaluated. Crude protein, crude fat, crude ash, and crude fiber contents increased in eel sauce with increasing amount of bokbunja powder. The lowest pH and salinity were observed in eel sauce added with 80% bokbunja powder, whereas the solid content, titratable acidity, and viscosity were the highest. Regarding Hunter's color results, lightness L and redness a values increased with increasing amounts of bokbunja, and the red color was significantly different between each sample. In the sensory evaluation results, the color, bokbunja flavor, bokbunja taste, salty taste, and moistness significantly increased with higher amount of bokbunja powder. Overall acceptability from 80%<60%<40%<0%<20% sequence supplemented with 20% in group symbols 7.08 to higher. Eel sauce added with 20% bokbunja powder produced the most desirable characteristics compared to other amounts of added bokbunja powder.

멸치(Engraulis japonicus) 염장발효덧을 이용한 속성발효 고순도 멸치액젓의 제조 및 품질 (Processing and Quality Characteristics of Rapidly Fermented, High Purity Anchovy Engraulis japonicus Sauce with Salt Fermented Anchovy Material)

  • To develop a value-added anchovy Engraulis japonicus sauce, we examined processing conditions and quality characteristics of rapidly fermented, high purity anchovy sauce (RPAS) by adding 30% (w/w) intermediate salt-fermented anchovy material. RPAS had higher total nitrogen and amino nitrogen contents, and lower salinity than traditional anchovy sauce (TAS). The total amino acid contents of RPAS and TAS were 17,626.8 and 12,808.2 mg/100 g, respectively, and the major amino acids were alanine, glutamic acid, lysine, cystine, valine, and leucine. The histamine contents of RPAS and TAS were 12.6 and 25.2 mg/100 g, respectively, and the protease activity levels were 0.851 and 0.595 unit/mg, respectively. These results demonstrate that RPAS was more flavorful, and could shorten the salt-fermentation period by more than half compared to TAS, and can serve as a high-end fish sauce.
