This research was investigated which denitrification of wastewater containing nitrate, using upflow anaerobic sludge blanket process. The upflow anaerobic sludge blanket process is also used for both artifical and industrial wastewater. Main ingredients investigated in the artifical and industrial wastewater experiment were the determination of optimum organism/nitrate ratios, nitrate removal efficiency by various hydrogen donor addition and characteristics of granular sludge and gas production in case of various hydrogen donor addition. From the experimental results the following conclusions were made: In case of adding methanol, ethanol and sodium acetate as hydrogen donor granular sludge was formed 50 days after seeding. Average diameter of granular sludge was 4.0 mm and settling velocity was 37 cm/min. Production rate of gas 3.3 L/d in case of adding methanol as hydrogen donor in wastewater containing 150mg/L nitrate. However adding ethanol and sodium acetate as hydrogen donor, gas production rate were 2.2-2.7L/d respectively. In case of adding methanol as hydrogen donor treatability of artifical wastewater contained 150mg/L as nitrate was about 93%. But in addition of sodium acetate in wastewater contained 40mg.L as nitrate, nitrate removal efficiency was 80%.
This study was conducted to establish the hygiene standards for chicken entrees (deep-fried breast chicken, chicken and potato in red pepper paste and smothered chicken) served with in 3 different elementary school lunch programs during 2002. The study evaluated the layout characteristics of the food facilities, and determined the physical and microbiological hazards for the production of chicken entrees based on the HACCP(Hazard Analysis Critical Control Point) system. The kitchen layouts needed to be remodeled for the separation of soiled and clean work areas. The pH values for all items were over 6.0, which require careful attention. The microbial assessments of 3 chicken items revealed that the TPC, coliforms and Staphylococcus aureus were within normal ranges, but Salmonella was found at several stages in the production of all products, with the exception of smothered chicken. The bacterial counts of the kitchen utensils and cooks' hands exceeded acceptable limits, and workers' sanitary practices were poor in terms of sanitary handling and holding of foods and utensils. The CCPs determined related to the steps of receiving, cooking and breaking of egg shells. From our findings, it is recommended that chicken entrees should be prepared and served very carefully, as salmonella was detected at several stages during meal production, and the aim of the HACCP system is to secure against food-borne illnesses due to reckless school food service operations.

The purpose of this study was to investigate the sanitary management procedures of foodservice in elementary schools in Pusan area. The questionnaire which were administered to 189 dietitians was used in this study as a survey method. The results were as follows. Mean total length of employment for dietitians at school foodservice was 3.7 year. The mean serving scale was 1,052 meals. Meals were served at classroom 63.5%, lunchroom 23.8%, and classroom+lunchroom 12.7% of the schools. The mean time span required of meal delivery was 31.5min at the classroom serving place. Regarding total mean score of sanitary management procedures, time temperature was 3.48/5.00, personal sanitation 4.20/5.00, equipments and facilities sanitation 3.92/5.00. This study aimed at evaluating current sanitation management performances in Korean-Food restaurants by their operation types and to develop sanitary training posters based on the risk factors, in an attempt to improve the level of sanitation management in Korean food service facilities. Eighteen Korean-food restaurants that are managed by franchisor, franchisees as well as self-managed with large-scale and small-scale restaurants in Seoul and Gyeonggi-Do, were evaluated by on-the-spot inspectors with an auditing tool consisting of three dimensions, nine categories and thirty four items. Data were analyzed using SPSS. The total score of each group showed that restaurants managed by franchisees ranked the highest (59 out of 100 points), while self-managed, small-scale restaurants ranked the lowest (44 out of 100 points). In the categorization of sanitation management compliance, the dimensions of food hygiene during production recorded the lowest compliance rate of 47.7% (22.89/48.0 points) followed by the dimension of environmental hygiene 59.3% (20.17/34.0 points) and personal hygiene 60.5% (10.89/18.0 points). This indicated the need for urgent improvement. The items which showed the lowest compliance rates were 'proper thawing of frozen foods' (0%), 'notifying and observing heating/reheating temperature' (6%), 'using of hand-washing facility and proper hand-washing' (33%), 'monitoring temperature of frozen-foods and cold-foods' (35%), and 'prevention of cross-contamination' (36%) among thirty four items. Self-managed, small-scale restaurants, in particular, needed to improve sanitary practices such as 'sanitation education for employee', 'verifying the employee health inspection reports', 'storing food on the shelves 15 cm distance away from the wall', 'suitability of ventilation capacity of hoods' and 'cleanliness of drainage'. On the basis of the findings of this study, we developed sanitary training posters, especially for small-scale restaurant operators. This could be an effective tool to educate food service employees on sanitary knowledge and principles and could be used to improve the existing sanitary conditions in Korean food service facilities.
As a part of study on prevention from aflatoxin contamination of food and agricultural products, the effects of chloroform extract of various vegetables on the growth and the aflatoxin production by Aspergillus parasiticus R-716 were investigated. Among 15 vegetables tested, garlic, zinger. radish and cabbage were effective in inhibiting the growth of the strain, but eggplant and lettuce slightly accelated. Even though mycelial growth was permitted, 4 vegetables inhibited aflatoxin production in the order of radish, zinger, crown daisy and cabbage, on the contrary, edible burdock and red pepper increased. Especially radish was shown to reduce the aflatoxin production per mycelial weight most. With the addition of chloroform extract equivalent 30g of raw radish on solid media of rice and barley, aflatoxin production of the strain was also inhibited about $80\%$ (484ug, 191ug) of that produced in the control (1796ug, l049ug).

After the action of the volume based waste system, the volume of refuse discharged in a day was decreased 30 ∼40% than before. In the problems of environmental sanitation after this system, the number of sanitary insect( cockroach etc ) and rat was decreased, also the production of orders and dust caused by refuse was decreased in comparison with those before. This results were considered that the Separate Collection should be perfectly performed. In response, the regular envelope of refuse was serious problems, the improvement for this one was demanded. The kind of difficult refuse treated was waste rubbers> electric products > furniture> foodstuffs> bottles, cans> papers, pulps etc, and the next proposal for this system should be prepared. Conclusively, the volume based waste charge system should be remarkable system In terms of resources recycling as well as wastes reduction. Above all in order to conform this system the separate collection system should be systematically performed, the next improvable proposal of the detailed methods in this system should be prepared.

Kimchi cabbage is one of the four major vegetable crops in Korea. The total annual production of kimchi cabbage, the main material of kimchi, was 20,559 tons in 2015. Kimchi cabbage is one of the majer crops produced by farmers which accounts for about 80% of the total leaf vegetable production in Korea. As the consumption of environmental-friendly agricultural products increases, food safety is one of the major public health concerns. We analyzed the biological hazards of kimchi cabbage produced by two types of cultivation methos such as organic farming and conventional farming using various culture media and microscopy. A total of 432 samples were analysed for presence of sanitary indicator microorganisms (aerobic plate count, coliform count, yeast & mold) and food-borne pathogens (Staphylococcus aureus, environmental Listeria, Bacillus cereus). The population of sanitary indicating microorganisms and food borne pathogens was under 5 Log CFU/g in all tested samples. The results of total microorganism numbers of leaf surface showed a positive correlation to those of soil samples. Additionally, we examined chemical factors such as pesticide residues and heavy metals in soil samples. All tested samples did not shown contamination levels higher than the standard limit.
Recently, onset of bacterial disease, especially infiltration of chronic respiratory diseases have been increasing at high rate. The main cause of these diseases are originated from inappropriate sanitary management and slow progress in introducing system and herd free system, which are the base of productivity improvement in bigger pig management, Methods for the prevention and removal of these diseases, are divided into four categories. The first category includes prevention and removal of infectious diseases by organizing strict animal quarantine, enforcing vaccination, and legal regulation and disposal at the time of outbreak. The second category includes improvement of production systems. This purpose can be achieved by discontinuing the open herd system, which brings on the invasion of foreign pathogens and replacing the system by the closed type of farm. The third category includes introduction of herd free system can be achieved by repopulating conventional pigs with SPF pigs. If these means are unrealizable from economic or technical viewpoint, medicated early weaning system is perfomed. This system consists of disinfection of pigsty at pre-postpartum stage, application of drugs to pregnant sows and newborn piglets in accordance with the medication program, and early weaning and rearing of newborn piglets in isolation. This study was performed for minimization of excessive biofilm effects at the high strength organic wastewater treatment. As a results of biofilm attachment experiment using piggery wastewater, aggravation of water quality due to excessive biofilm showed after 15 days of operating times.4 excessive biofilm phase, the equivalent biofilm thickness and VSS contents per unit aura were observed in the range of 1,100 to $1,200{\mu}m$ and 2.5 to 3.0mg $VSS/cm^{2}$, respectively. In the aerobic fixed biofilm reactor/anoxic fixed biofilm reactor(AFBR/ANFBR) process with endogenous respiration phase, the BOD removal efficiency was obtained more than 90 percentage at the surface loading rate and volumetric loading rate of the AFBR maintained less than 17 g $BOD/m^{2}{\cdot}$day and 1.7kg $BOD/m^{3}{\cdot}$day, respectively. The removal efficiency of TKN and $NH_{3}$-N at the loading rates below 5.60g $NH_{3}-N/m^{2}{\cdot}day$ and 0.56kg $NH_{3}-N/m^{3}{\cdot}$day were above 76 percentage and 82 percentage, respectively. In order to reduced sludge production rate and aggravation of water quality, endogenous respiration phase was accepted at first AFBR reactor. As a results of this operating condition, sludge production was minimized and removal efficiency was maintained stability.
