The objectives of this study were to determine the consumption pattern and importance of Kimchi in our meals, and the preference of Kimchi. The 77.0% of the housewife respondents were preparing Kimchi at home. The reasons for not making Kimchi were ‘don't have time’(39.4%), ‘don't know how to make Kimchi’(18.2%) and ‘don't eat much’(18.2%). The amounts of daily Kimchi intake of the respondents were ‘less than 50g’(42.3%) or ‘50-100g’(29.8%). They are Kimchi because it was ‘delicious’(48.4%) or ‘habitual’(39.5%). The 70.0% of the respondents answered that Kimchi was important in each meal. The most respondents favored ‘moderate’ in the degree of fermentation(48.1%), hot taste(65.0%) and salty taste(72.4%). As the age of the respondents increased, they favored less sour, less hot and less salty taste. Baechu Kimchi(4.15), Chonggak Kimchi(3.89), Dongchimi(3.85), Kkaktugi(3.74), water Kimchi(3.67) were preferred by the respondents. The 73.97% of the respondents preferred Kimchi Jjigye. The 10- to 19-years old respondents preferred Kimchi Jjigye(52.8%), Kimchi pan cake(24.5%) and fried rice with Kimchi(17.0%).
Purpose: The purpose of this study was to understand the risk of falling associated with postmenopausal women and to identify the relationships between this risk and factors such as lifestyle, metabolic syndrome, and bone mineral density. Methods: The sample was 128 postmenopausal women between 50 and 65 from one menopausal clinic in an urban city. The Risk Assessment for Falls Scale II, developed by Glydenvand and Reinboth (1982) and adapted by Park Young-Hye (2003), was modified and used for this study. Results: The average fall-risk score in postmenopausal women was 7.2 out of 33, the fall-risk score associated with lifestyle was higher in women exposed to stress frequently or who favored spicy or salty foods. The fall-risk score associated with metabolic syndrome was higher in groups with HBP or with a waist circumference of 80cm or greater. The fall-risk score in groups with three or more factors of metabolic syndrome was the highest. Conclusion: The risk of fall in post-menopausal women was higher in groups with only elementary education, unemployed, reported two or more chronic diseases or reported frequent exposure to stress and for women who preferred spicy or salty foods or exhibited three or more factors of metabolic syndrome.
The purpose of this study was to investigate the method of making whole Chinese cabbage Kimchi, the family's taste in Kimchi and the reason for disliking the taste of Kimchi in the Taegu area. The results were as follows; 1) Most housewives learned the method of making the Kimchi from their mothers. Method was as follows; First, scatter salt on the whole Chinese cabbage and soak that for 3∼6 hours. After, wash the whole Chinese cabbage 3 times. Then, add red pepper powder, garlic, ginger and salted fermented anchovy as basic seasoning. Be sure to, mix the red pepper powder and salted fermented anchovy until they taste hot and salty. Store the whole Chinese cabbage until they ferment. Afterwards store the whole Chinese cabbage in the refrigerator. 2) It was the whole Chinese cabbage Kimchi that most family members preferred. 3) Among the family members, the old age group preferred newly made Kimchi because of the cool and fresh taste. The adult group preferred fresh taste, also smell and peculiar taste of the seasoning were important. The adolescent group preferred fresh taste and sour taste. 4) It shows that most of the family likes Kimchi, and among the family members, about 25% of the sons and daughters dislike Kimchi. And it shows that all family members dislike salty taste. 5) The older housewives’ Kimchi was preferred over the younger housewives’ Kimchi.
This study analyzed the dietary behaviors and adaptation for Korean foods among Central Asian workers(Mongolia, Kazakhstan, Uzbekistan, Kyrgyzstan) living in South Korea to provide basic and fundamental data that allows Central Asian workers to have desirable eating habits while living in South Korea. Questionnaires were completed by 186 Central Asian workers living in South Korea. From this study, we found that 56.8% of respondents ate three meals a day, and 27.2% of respondents ate two meals a day. 29.7% of respondents had no snacks. For adapting Korean food, Mongolia, Uzbekistan, Kyrgyzstan workers had difficulties adapting spicy and salty flavors and unpleasant smell while Kazakhstan workers had difficulties due to sweet flavors and spicy and salty flavors. Men adapted better than women to adapt Korean food. Women respondents ate Korean food more often than men. And the Uzbekistan ratio of eating homeland food daily was the highest. By providing understanding of dietary patterns of Central Asian workers, these results can be used as the basic and fundamental data for their Korean food adaptation.
In order to investigate dietary risk factors for hypertension in th elderly, dietary intakes and dietary habits of 405 elderly subjects, aged 60-94, were assessed by the questionnaire, anthropometric measurement and a 24-hour dietary recall. The prevalence of definite (>95mmHg for diastolic or>160mmHg for systeolic blood pressue) and borderline(90-95mmHg for diastolic or 140-160mmHg for systolic blood pressure) hypertensive subjects 33.3% and 19.3%, respectively. The distribution of the subjects for Body Mass Index(BMI), waist-hip ratio, and alcohol consumption were significantly different among definite, borderline, and normal groups(p<0.05). The distribution of the subjects for smoking, exercise, and preference of salty food were not significantly different among definite, borderline, and normal groups(p>0.05). From the generalized logistic regression analysis of the risk factors for the hypertension, the subjects with over 27 of BMI had significantly higher risk of hypertension. Alcohol consumption and preference of salty food were significant risk factors of hypertension in the elderly. Dietary risk factors for the hypertension that had significant relationship to the hypertension were intakes of potassium, calcium, phosphate, sodium, vitamin B1, niacin, and folate. There was no significant difference of consumption frequencies of food and dish among definite, borderline, and normal groups(p>0.05). The amount of intakes for cereals and grain product, bean and their products, eggs were significantly different among definite, borderline, and normal groups(p<0.05). In summary, the amount of dietary intakes to hypertension in elderly population. Longitudinal studies for dietary risk factors on incidence of hypertension are needed in general population, especially in the elderly.
The objective of this study was to develop sensory lexicons that can be utilized for various types of tofu such as pressed, unpressed, and tofu made from germinated soybeans, using generic descriptive analysis. In the first phase of the experiment, trained descriptive panelists developed and defined the appearance, aroma, flavor, and texture attributes that are commonly present in tofu. Then, the sensory characteristics of seven types of tofu were analyzed using the sensory lexicons established in the initial stage of the experiment. Four appearance, 6 odor/aroma, 6 flavor/taste, 7 texture, and 4 aftertaste attributes were identified, and reference standards were established for most of the terms in order to facilitate the understanding of the attribute definitions. The intensities of the sensory attributes were measured on a 15-point scale. Statistical analyses, including analysis of variance and principal component analysis, were used for the data. The seven tofu samples showed significant differences in the intensities of 22 attributes. The unpressed tofu samples were generally rated as being high in moistness, easy to cut, silky, and easy to swallow. The pressed tofu, on the other hand, was salty, astringent, beany, hard, and rough in texture. The tofu made with germinated soybeans was characterized as having a strong cooked bean flavor, salty and astringent aftertaste, and hard texture. Overall, the attributes of moistness, easy to swallow, and silkiness showed strong positive correlations; hardness and sticks to teeth were also positively correlated to each other.
The purpose of this study was to investigate eating habits and dormitory foodservices' satisfaction in university students using dormitory foodservice in the Jeollabuk-do Iksan area. Self-administered questionnaires were completed by 195 students (86 male, 109 female). Many students (58.5%) ate less than two meals per day and spent around 30 min eating meals. The results show that snack and midnight meals were the main reasons (37.9%) for unhealthy eating habits. Main source of nutritional knowledge and information were TV and the Internet (58.5%), followed by friends and people (25.1%), nutrition books (10.3%), elective courses (4.6%), and newspapers and magazines (1.5%). Men had significantly higher satisfaction scores for nutrition, taste, diversity of menu, as well as hygiene of dormitory food court compared to women (p<0.05). Salty taste was the most important factor in evaluation of taste satisfaction, whereas sour taste was opposite. The reason for taste dissatisfaction in the dormitory food court was not salty enough, and it may be related with their eating habits. The results show that students need education for adequate knowledge and information about the relationship between health and nutrition.
The purpose of this study was to investigate the effects of preschool children's taste preferences on their intake of nutrients and the degree of dental caries. The subjects were 126 preschool children (boys 62 and girls 64) in Daegu area. Their taste preferences and food intake were investigated and their teeth were also examined. The energy intake of boys (1550 kcal) were significantly higher than that of girls (1441 kcal). Daily dietary intakes of nutrients-except niacin and vitamin C-were higher than those of RDA. Vitamin B$_1$ intake of the group preferring a salty taste was significantly lower than that of the other group (p<0.05). Vitamin B$_2$ intake of the group preferring a salty taste was significantly higher than that of the other group (p<0.05). Vitamin C intake of the group preferring a hot taste was significantly higher than that of the other group (p<0.05). The group with a preference for sweet had more experiences of dental caries and more decayed teeth than the other group, but which is not significant. The experiences of dental caries were negatively correlated with protein intake (p<0.01). The decayed teeth were negatively correlated with energy and protein intakes (p<0.01). Our data suggested that taste preferences are associated with vitamins intake and the degree of dental caries in preschool children. It means the sweet preference increased the experiences of the dental caries.
Field studies were conducted with kusabue variety and factorial design of 12 treatments composed of 3 levels, 10 kg, 15 kg and 20 kg of N per 10 a , and 4 levels of 80, 100, 120, and 140 hills per $3.3m^2$ plot in reclaimed slaty area having an average of 0.48% salt concentration. The law of spacing effect was observed in the increase of the number of stems at any application levels of N, and the increased N application exceeding 15 kg N per 10 a did not increase the number of stems in maximum tillering stages. The light recieving efficiency of plant population was greatly reduced by close planting when compared with the effect of increased N applications in heading stage. The spacing effect on the C/F ratio was not noted but was reduced markedly by the increased N applications, accordingly the spacing effect on rough rice yields to the LAI was less than by the increase N application. Closer spacing increased the number of panicle, and non-effective stems, decreased the number of grains per panicle and panicle weight. The increased N applications also increased the number of panicle, reduced the weight of 1,000 grains and the ratio of matured grains. It was recommended to plant 100 hills per $3.3m^2$ with the application of 15 kg N per 10 a in the reclaimed salty area of Korea.
Purpose: For college students, poor eating habits can cause problems with adult health. This study investigated the status of sweet food intake and the degree of stress in college students in the Seoul and Gyeonggi areas to provide a basis for nutrition education by analyzing the relationship between stress and sugar intake. Methods: The subjects were 760 college students, and the survey was conducted using a questionnaire. Statistical analysis for collected data was performed using SPSS (version 21.0). Results: The stress score showed higher stress in female students. Females had more stress in their employment and study-related problems than males. For changes in food intake under stress, the intake was increased greatly in females than in males. For food preference changes before and after stress, males preferred more spicy foods and less salty foods after stress. After stress, females significantly preferred sweeter and spicier foods and less salty, sour, and bitter foods. The intake of sweet foods by stress factors showed that the intake of snacks was higher under the condition of 'worry, fatigue, and tension', and the intake of beverages was increased significantly under the condition of 'anger and aggression'. Conclusion: Sweet foods were preferred under stress, and the amount of intake was increased. Education on food selection and nutrition information should be provided to prevent health problems that can be developed by the reckless intake of sweet foods. Active guidance is needed for college students to select the proper snacks instead of nutritionally insufficient foods to relieve stress.
