소금종류에 따른 오이지의 이화학적 및 관능적 특성 변화 (Changes of Physicochemical and Sensory Characteristics of Oiji(Korean Pickled Cucumbers) Prepared with Different Salts)

  • This study was carried out to investigate changes in the physicochemical and sensory characteristics of Oiji(Korean pickled cucumbers) prepared with different salts(bay, refined and purified salt). The pH of Oiji prepared with bay salt was higher than those prepared with refined and purified salts. The salt concentration of Oiji prepared with purified salt showed the highest value during fermentation period. The cutting forces at middle part of Oiji prepared with bay and refined salts were higher than those of raw cucumber, and bay salt resulted in the highest force during fermentation period. The result of sensory evaluation indicated significant differences in color, odor, taste, texture and overall acceptability among salts at 5% level. Oiji prepared with bay salt showed the highest score in most the sensory characteristics.

Influence of Heat Treatment on the Physicochemical Property and Mineral Composition of Various Processed Salts

  • The effects of heat treatment on the physicochemical properties and mineral composition of sun-dried salt were investigated. The salts parched at high temperature were appeared the higher alkalinity and the lower oxidation-reduction potential (ORP) than the samples without heat treatment. The commercial salts (bamboo salt and yellow loess salt) and the sun-dried salt parched at high temperature had relatively higher sodium ion content (418-450 ppm) compared to that (418.0 ppm) of refined salt. The increase of calcium ion occurred in the salts parched at high temperature compared to the sun-dried salt without heat treatment, but the magnesium ion was vice versa. The commercial salt, yellow loess salt had highest turbidity (0.973) whereas sun-dried salt showed lowest level (0.097) among the tested samples. Turbidity of heat treatment samples decreased as solubility increased. The maximum concentration of dialyzed salt was reached after 4 hr regardless of various processed salts, but those had no difference significantly among the tested samples. The X-ray diffraction patterns of the parched sun-dried salts showed different peak intensity with common salts, and they were similar to the patterns of oxide salts, especially MgO. The maximum value (2.56%) of MgO appeared in the sun-dried salt parched at $1,400^{\circ}C$.

  • Although lovastatin (LS) is widely used in the treatment of hypercholesterolemia, its bioavailability is known to be around 5%. This study was aimed to increase the solubility and dissolution-permeation rates of LS using solid dispersions (SDs) with bile salts. The solubilities of LS in water, aqueous bile salt solutions and non-aqueous vehicles were determined, and effects of bile salts on the cellulose or duodenal permeation of LS from SDs were evaluated using a horizontal permeation system. SDs were prepared at various ratios of LS to carriers, such as sodium deoxycholate (SDC), sodium glycocholate (SGC) and/or 2-hydroxypropyl-$\beta$-cyclodextrin (HPCD). The addition of bile salts (25 mM) in water increased markedly the solubility of LS by the micellar solubilization. Some non-aqueous vehicles were effective in solubilizing LS. From differential scanning calorimetric studies, it was found that the crystallinity of LS in SDs disappeared, indicating a formation of amorphous state. The SDs showed markedly enhanced dissolution compared with those of their physical mixtures (PMs) and drug alone. In the dissolution-permeation studies using a cellulose membrane, the donor and receptor solutions were maintained as a sink condition using pH 7.0 phosphate buffer containing 0.05% sodium lauryl sulfate (SLS). The flux of LS alone was nearly same as that of LS-SDC-HPCD (1:3:6) PM. However, the flux of LS-SDC-HPCD (1:3:6) SD slightly increased compared with drug alone and PM, suggesting that entrapment of LS in micelles does not significantly hinder the permeation across cellulose membrane. In the dissolution-duodenal permeation studies using a LS-HPCD-SDC (1:3:6) SD, the addition of various bile salts in donor solutions (25 mM) enhanced the permeation of LS markedly, and the fluxes were found to be $0.69{\pm}0.41$, $0.87{\pm}0.51$, $0.84{\pm}0.46$, $0.47{\pm}0.17$ and $0.68{\pm}0.32{\mu}g/cm^2/hr$ for sodium cholate (SC), SDC, SGC, sodium taurodeoxycholate (STDC) and sodium taurocholate (STC), respectively. The stepwise increase of donor SGC concentration increased the flux dose-dependently. From the relationship of donor SGC concentration and flux, the concentration of SGC initiating the permeation across the duodenal mucosa was calculated to be 11.1 mM, which is nearly same as the critical micelle concentration (CMC, 11.6 mM) of SGC. However, with no addition of bile salts and below CMC, the permeation was very limited and irratic, indicating that LS itself is very poor permeable. Higher protions of bile salt in SD such as LS-SDC or LS-SGC (1 : 49 and 1 : 69) showed highly promoted fluxes. In conclusion, SD systems with bile salts, which may form their micelles in intestinal fluids, might be a promising means for providing enhanced dissolution and intestinal permeation of practically insoluble and non-absorbable LS.

Dissociation Constant of the Primary Amines and Quaternary Ammonium-methylorange Salts.

  • The data pf dosspcoatopm cpmstamts for aliphatic amines and quaternary ammonium-methylorange salts are based on the electrosatic theory of conductance. Dissociation constants for primary amines nad quaternary ammonium-methylorange salts (1$\times$10$^{-5}$~1$\times$10$^{-3}$ M) in nitrobenzene solution or water solution was evaluated from the relation of the concentration and the electric conduction and the electric conductance at $25^{\circ}C$ Plots of ${\delta}C$ against reciprocal conductance were linear ; hence the center-to-center distance of this salt was 1.75 $\AA$ in nitrobenzene solution.

면양의 췌장 외분비 기능에 미치는 cholate 및 deoxycholate의 영향 (Effects of cholate and deoxycholate on pancreatic exocrine secretion in sheep)

  • This study was designed to investigate the effects of cholate and deoxycholate on pancreatic exocrine secretion in conscious sheep with external bile and pancreatic fistulae. Bile and pancreatic juices were collected for a basal period of 2 hours. The pancreatic juice was returned to the intestine. Bile salts were infused into the jugular vein or duodenum for 90 minutes at the rate of 0.7mg/kg/min. Cholate and deoxycholate significantly increased the flow rate, pH and bicarbonate concentration of bile juice, but decreased the flow rate of pancreatic juice. The effects induced by intraduodenal infusion of both bile salts were significantly greater than those by intravenous infusion. Protein concentration and amylase activity in pancreatic juice were also significantly decreased by both bile salts; the effects were greater when the bile salts were infused into the duodenum than into the vein. The inhibitory effects induced by deoxycholate infusion were significantly greater than those by cholate infusion. The plasma concentration of secretin was significantly increased by intravenous infusion of deoxycholate, but it was not effected by intraduodenal infusion of both bile salts. The results indicated that cholate and deoxycholate markedly increased the secretion of bile juice and decreased the pancreatic exocrine secretion, although these effects were variable depending on the chemical composition or infusion routes.

무기질 염이 Sisomicin 발효 수율의 증가에 미치는 영향 (Effects nit Mineral Salts on the Improvements of Sisomicin field)

  • 여러가지 염이 sisomicin 발효에 미치는 영향에 대해 살펴본 결과, CoCl$_2$만이 항생물질 생성의 대사반응에 cofactor로서 작용하였으며 16.8 $\mu$M에서 최대항생물질의 수율이 얻어졌다. 한편, 앞의 경우보다 훨씬 높은 염농도에서 ZnSO$_4$, KH$_2$PO$_4$, FeSO$_4$그리고 MgSO$_4$가 각각 발효배지에 첨가되었다. ZnSO$_4$와 KH$_2$PO$_4$는 전혀 효과가 없었으나 FeSO$_4$는 약간 항생물질 수율의 향상을 가져왔다. 그러나 MgSO$_4$의 경우, 매우 높은 염농도에서도 균체생육의 저해가 약간 일어났으며, 최종 항생물질의 수율은 100% 이상 증가되었다. 이러한 결과는 부분적으로 발효 중 균체내에 생성된 항생물질이 균체외로 유출되는 효과가 증진된 것에 기인한다.

Corrosion Inhibition of Aluminium using 3-Hydroxy flavone in the Presence of Quarternary Ammonium Salts in NaOH Medium

  • The anticorrosive effect of 3-Hydroxyflavone (3HF) in combination with quarternary ammonium bromide and iodide salts (QAB and QAI) for aluminium corrosion in NaOH medium was studied at the temperature range of 303K-323K using weight loss study, potentiodynamic polarization study and impedance spectroscopic measurements. The results revealed that the inhibition efficiency increases with the inhibitor concentration and it further increases on the addition of quarternary ammonium bromide and iodide salts. The enhanced inhibition efficiency of the inhibitor in the presence of quarternary ammonium salts may be due to synergistic effect. The adsorption process of 3HF on the aluminium surface obeys Langmuir's adsorption isotherm. The mechanism of adsorption is further supported by Scanning Electron Microscopic study (SEM).

$\alpha$형 반수석고의 수화에 미치는 염류의 영향 (Effects of Salts on the Hydration of $\alpha$-Calcium Sulfate Hemihydrate)

  • The effects of salts which was used as a catalysis in formation of $\alpha$-calciumusulfate hemihydrate from dicalcium sulfate hydrate were investigated on the hydration of $\alpha$-calciumsulfate hemihydrate. The hydration of $\alpha$-calciumsulfate hemihydrate was studied by the measurements of crystalline water, heat evolution. Also the hydrates were analyzed by XRD, DSC and SEM. The promotive effect each salts on the hydration was as follows: NaCl>NH4Cl>NaNO3>NH4NO3, and the hydration rate was accelerated with concentration of salts. The effect of Al2(SO4)3 and potassium sodium tartrate on the hydration was slmilar to water, whereas sodium succinate and gelatin retarded the hydration in comparision with water. These salts affected the hydration time but total heat evoution was similar.

  • 1. The effects of saline and alkaline salts on the content of phosphorus in the leaves of selected vegetable plants under soil and sand culture was investigated. 2. The reduction of growth was associated with increasing intensity of salts, although no significant differences was evident. 3. Phosphorus content in the leaves of two plants was depressed with increasing concentration of two typs of salts. 4. It was noticed that the phosphorus content increased with treated salts. That is, phosphorus content was higher in the leaves of treated salt plots than that of control plots and the difference was significant in the soil culture. 5. The values of the phosphorus content were higher in the leaves of two crops of NaCl plots than that of $Na_2CO_3$ plots and the difference was significant in Radish.
