Decreased Triglyceride and Cholesterol Levels in Serum, Liver and Breast Muscle in Broiler by the Supplementation of Dietary Codonopsis lanceolata Root

  • Effects of the dietary supplementation of Codonopsis lanceolata root on triglyceride and cholesterol levels in the serum, liver, breast muscle and bile in male Cobb$\times$Cobb chicks were investigated. The chicks (15-42 days old) were fed diets supplemented with 0, 0.25 and 0.5% Codonopsis lanceolata root. No differences were observed in body weight, feed conversion ratio, gall bladder weight or abdominal fat deposition among the control group and the two treatment groups. Liver weights were higher in chicks fed a 0.5% Codonopsis lanceolata diet than in those fed the control diet (p<0.05). However, serum levels of both glutamic oxaloacetic transaminase (GOT) and glutamic pyruvic transaminase (GPT) were not different among the three groups. Broiler chicks fed either 0.25% or 0.5% dietary Codonopsis lanceolata root showed decreased serum levels of triglyceride, total cholesterol and low density lipoprotein cholesterol compared to the control group (p<0.05). Supplementation with either 0.25% or 0.5% dietary Codonopsis lanceolata root decreased the triglyceride and total cholesterol levels in liver and breast muscle compared to the control group (p<0.05). Biliary cholesterol increased by 15% in chicks fed 0.5% dietary Codonopsis lanceolata root, suggesting that the biliary excretion of cholesterol had been elevated by dietary Codonopsis lanceolata root (p<0.05). In conclusion, these results indicate that dietary Codonopsis lanceolata root can decrease triglyceride and cholesterol levels in the serum, liver and breast muscle of broilers.

단백질 급원이 흰쥐 혈청 콜레스테롤 농도에 미치는 영향 (Effects of Dietary Proteins on Serum Cholesterol Concentration in Rats)

  • 상이한 단백질원이 흰쥐의 혈청콜레스테롤 농도에 미치는 영향을 조사하고자 명태로부터 조제한 어육단백질과 동물성의 카제인 및 식물성의 대두단백질을 비교 검토하였다. 실험 식이의 단백질 수준은 20%가 되도록 저지방 식이에 준비된 단백질 시료를 혼합하여 S.D. 계통 male rat에 2주간 급여한 후 혈청지질 농도를 분석하였다. 그 결과 혈청중의 총 콜레스테롤, LDL-콜레스테롤 및 총 콜레스테롤/HDL-콜레스테롤 농도는 카제인군에서 가장 높았고 어육단백질군, 대두단백질군 순으로 낮았으며 카제인군과 다른 두 단백질군 간에는 유의성이 있었다(p<0.05). HDL-콜레스테롤 농도는 어육단백질군이 다른 두 단백질군보다 높았지만 유의성은 없었다. 트리글리세라이드 농도의 경우 세 단백질군간 유의성이 있었는데 어육단백질군은 카제인군보다 약 19mg/dl 낮았지만 대두단백질군보다는 약 6mg/dl 높았다. 어육단백질의 Lysine/Arginine비, Glycine/Methionine + Cystine비는 대두단백질의 그것들에 가까운 비율이었다.

Development of Phytosterol Ester-added Cheddar Cheese for Lowering Blood Cholesterol

  • This study was carried out to investigate the effect of phytosterol ester addition on lowering blood cholesterol in cholesterol-reduced Cheddar cheese. For cholesterol removal, separated cream was treated with 10% ${\beta}$-cyclodextrin at 800 rpm, then blended with remaining skim milk and homogenized with 1,000 psi at $70^{\circ}C$. Experimental cheeses were manufactured by five different levels of phytosterol addition. After the cholesterol reduction process by ;${\beta}$-cyclodextrin, the cholesterol removal rate was in the range of 91.0 to 92.1%. Amount of short-chain free fatty acid and free amino acids increased with an increase of phytosterol ester, and those were significantly different from that of control in all ripening periods. All rheological properties also increased with an increase of phytosterol ester during ripening period. In sensory analysis, the scores of rancid, bitterness Cheddar flavor and off-flavor intensities increased significantly, while texture was decreased during ripening in phytosterol ester-added groups. Total blood cholesterol was reduced by 18% when rats were fed Cheddar cheese treated with 8% phytosterol. The present study indicated that phytosterol ester addition resulted in a profound lowering effect of blood with cholesterol-reduced Cheddar cheese.

  • Cholesterol assimilated by Lactobacillus acidophilus ATCC 43121 was not metabolically degraded in that most of it was recovered with the cells. Cells grown in the presence of cholesterol micelles and bile salts were more resistant to Iysis by sonication than those grown in their absence, suggesting a possible alteration of cellular membranes. Cholesterol assimilation occurred during growth at pH 6.0, the amount of which was more than that by cells grown without pH control. Cholesterol assimilated by cells was recovered in the membrane fractions of cells both grown at pH 6.0 and without pH control. The effect of unsaturated fatty acids on cholesterol assimilation was not clear, since there was no significant (P> 0.05) difference in the amount taken up from micelles prepared using L-${\alpha}$-phosphatidylcholine, dioleoyl or L-${\alpha}$-phosphatidylcholine, distearoyl. Without Tween 80, little, if any, cell growth or cholesterol uptake was observed. In the presence of 0.05% Tween 80, cholesterol uptake increased dramatically as did growth. However, as the amount of Tween 80 increased beyond 0.05%, cholesterol uptake decreased while the amount of growth remained the same.

LDL Cholesterol 또는 Total Cholesterol의 적용에 따른 Framingham Risk Score와 10년 내 심혈관질환 발생 위험도 평가 (The Assessment of Framingham Risk Score and 10 Year CHD Risk according to Application of LDL Cholesterol or Total Cholesterol)

  • 증가하고 있는 심혈관질환을 예방하기 위한 연구와 함께 심혈관질환 위험도를 예측할 수 있는 평가도구에 대한 연구도 꾸준히 진행되고 있다. 가장 널리 알려져 있는 Framingham risk score (FRS)는 여러 선행 연구에서 그 타당성이 검증되었다. 본 연구에서는 연구 대상자들의 LDL 콜레스테롤과 총 콜레스테롤의 적용에 따른 FRS의 점수 차이를 살펴보고, 두 변수의 선택 적용에 따른 10년 내 심혈관질환 발생 위험도의 판정에 대한 일치도를 평가해 보고자 하였다. 2011 국민건강영양조사 데이터 중 심혈관질환 진단을 받은 자를 제외한 1,530명(남성 755명, 여성 775명)의 자료를 이용하였다. LDL 콜레스테롤 또는 총 콜레스테롤 중에 어떤 항목을 적용하느냐에 따라 FRS와 심혈관질환의 10년 예측위험도는 차이가 있었다. 남녀 모두 FRS는 LDL 콜레스테롤 적용 점수 보다 총콜레스테롤 적용 점수가 더 높았다. 위험도 10% 미만의 저위험군, 10~19%의 중등도 위험군, 20% 이상의 고위험군 분류에서 남성 106명, 여성 26명의 판정이 일치하지 않았다. 코헨의 카파 계수는 남성의 경우 0.718, 여성의 경우 0.884로 나타나 여성의 경우 더 높은 일치성을 보였다. 심혈관질환의 10년 예측위험도와의 관련성에서도 LDL 콜레스테롤을 포함한 회귀식 보다 총 콜레스테롤을 포함한 회귀식에서 남녀 모두 설명력이 더 높아 총 콜레스테롤을 반영한 FRS 산출과 10년 예측 위험도의 평가가 더 상관성이 더 높고, 더불어 남성 보다는 여성에서 더 일치하는 결과가 나타남을 알 수 있었다.

  • Objective: A case report on the Improvement of Hyperlipidemia Patients Using Ortho-Cellular Nutrition Therapy (OCNT). Methods: A Korean woman in her 50s was diagnosed with hyperlipidemia, and she has had a very high level of LDL-cholesterol. Results: After performing OCNT, the LDL-cholesterol level decreased from 208 mg/dL to 109 mg/dL. Conclusion: The application of OCNT to patients with hyperlipidemia can help reduce their LDL-cholesterol levels and relieve symptoms.

과량의 비타민 E 및 Cholesterol 첨가식이가 흰쥐의 혈청과 간의 비타민 E 및 Cholesterol 농도에 미치는 영향 (Effects of Excess Vitamin E and Cholesterol Supplements on Levels of Vitamin E and Cholesterol in Rat Serum and Liver)

  • 본 실험을 통해 뚜렷한 경향을 보여주는 몇가지 결과를 요약하면 다음과 같다. 식이vitamin E의 과량 첨가는 쥐의 혈청에 반영되어 나타났으며, 식이중의 cholesterol은 이 증가 효과를 감소시키는 경향을 보여주었다. 식이 cholesterol첨가로 인해 쥐의 혈청 cholesterol농도는 영향을 받지 않은 반면, 간의 cholesterol농도는 증가되었다. 과량 vitamin E와 cholesterol 두가지를 식이에 첨가하였을 경우 (IV-ECh IV'-ECh) 간의 cholesterol농도는 식이에 cholesterol만을 첨가한 경우 (III-Ch, III'-Ch)보다 더욱 높게 나타났다. 그리고 vitamin E만을 첨가한 II-E와 II'-E군에서는 간의 cholesterol농도를 낮추어주는 경향을 보였다. 간의 vitamin A 농도는 쥐가 성장함에 따라 감소하였으며 각 실험군 간에는 유의적인 차이를 보이지 않았으나, B군의 경우 과량 vitamin E 식이는 간 vitamin A농도를 감소시키는 경향으로 나타났다. Vitamin E, vitamin A, cholesterol 및 다른 여러 요소들간의 복잡한 상호관계를 알아내기 위해, age가 다른 그리고 여러 species의 동물을 이용한, 장기간의 단계적이고도 체계적인 많은 연구가 요구되어진다.

Functional Properties of Cholesterol-removed Compound Whipping Cream by Palm Oil

  • The present study was carried out to examine the changes in functional properties of cholesterol-removed compound whipping cream made by $\beta$-CD treated cream and palm oil. Six different ratios of cream to palm oil (10:0 as control, 9:1, 8:2, 7:3, 6:4, and 5:5, v/v) were tested. The overrun percentage increased with an increased amount of palm oil. When the ratio of cream to palm oil was 10:0 (control), the overrun was 130%, which was significantly lower than other ratios reached to 150%. Foam instability was measured as 3.1 ml defoamed cream in control, however, the value of foam instability decreased with an increase of palm oil addition. The TBA value of cholesterol-removed compound whipping cream increased from 0.08 to 0.13 with no addition of palm oil during 4 wk storage. When the ratio of cream to palm oil was 5:5, TBA value increased dramatically at 3 wk and thereafter. Among sensory characteristics, texture value increased with higher amount of palm oil, however, flavor and overall preferences were opposite. Above results indicated that partial substitution of palm oil in manufacture of cholesterol-removed compound whipping cream resulted in a stable foam development with little adverse effect on flavor and lipid oxidation during storage. The present study showed a possible application in manufacture of cholesterol-removed compound whipping cream, which may be effective in other foods.

A Korean Family with Cholesterol Ester Transfer Protein Deficiency

  • A 32-year-old female patient and her sister show high levels of high density lipoprotein (HDL) cholesterol in regular health checkups, since female patient was 11 years old. The patient's serum total cholesterol was 285 mg/dL and HDL cholesterol was 113 mg/dL. Her sister's total cholesterol was 240 mg/dL and the HDL cholesterol measured to be 90 mg/dL. Lipoprotein pattern and cholesteryl ester transfer activity gene analysis were examined in these patients. We found c.1321+1G>A (IVS14+1G/A) hetero mutation in cholesteryl ester transfer protein (CETP) genes. Generally, CETP mediates transfer and exchange of triglycerides and cholesteryl ester between plasma lipoproteins. Also we investigated a key role of HDL-CE and Apo A-1 metabolism. Patients with low levels of CETP have increased serum HDL levels. We hereby report two Korean cases of CETP deficiency in a family. Brief literature review ensues with the cases.

어성초 분말의 혼합 급이가 돈육의 cholesterol 및 산화물에 미치는 영향 (The Effect of Feeding Houttuynia cordata Thunb on Cholesterol and Cholesterol oxides of Pork Lion's)

  • 어성초 분말을 돼지 사료에 5%, 10%씩 첨가하여 12주간 사육시킨 후 등심부위를 냉장보관하면서 지질성분의 변화를 분석하였다. 돈육 등심의 저장 중 TBARS는 어성초 분말 급 이군에서 유의적으로 낮게 검출되었고, 지방산의 함량은 저장 2일에 대조군의 불포화지방산이 52.5%였으나 5% 및 10% 어성초 분말 첨가 급이군에서는 각각 53.7% 및 54.1%로 대조군에 비해 높은 비율로 정량되었다. 콜레스테롤 함량은 저장 2일에 5% 어성초 급이군에서는 $39.1{\pm}0.2\;mg/100\;g$, 10% 어성초 급이군에서는 $37.8{\pm}0.3\;mg/100\;g$으로 대조군$(48.9{\pm}0.2\;mg/100\;g)$에 비해 어성초 급이군에서 더 낮게 검출되었다. 돈육 등심 중 콜레스테롤 산화물의 농도는 저장기간이 길어질수록 증가하는 현상을 보여 $7{\beta}-hydroxycholesterol$의 경우 2일간 저장한 대조군에서는 $0.6{\pm}0.65\;{\mu}g/g$였으나 저장 23일 후에는 $2.3{\pm}0.3\;{\mu}g/g$으로 6.5배 증가하였고 10% 어성초 급이군에서는 저장 2일에 $0.3{\pm}0.01\;{\mu}g/g$, 23일에서는 $0.9{\pm}0.15\;{\mu}g/g$로 대조군에 비해 증가량이 유의적으로 낮았다. 19-hydroxycholesterol과 ${\alpha},{\beta}-epoxide$도 어성초급이군에서 대조군보다 더 낮은 함량이었다.
