CARCASS CHARACTERISTICS AND BEEF PALATABILITY AS INFLUENCED BY FEEDING RICE STRAW AND ALFALFA

  • Ninety feeder steers, predominantly Herefords weighing 280 kg, were assigned at random to each of nine diets: basal (high concentrate); 25 or 50% of untreated rice straw (25- or 50 URS) or ammoniated rice straw (25- or 50 ARS); a 50:50 mixture of URS - alfalfa or ARS - alfalfa replacing a proportion of the basal at 25 and 50%. Animals were slaughtered after 154 or 161 days of feeding. The cattle fed 50% URS had the lowest (P<.05) carcass weight, dressing & external fat thickness, kidney, pelvic and heart fat, rib eye area, marbling score, quality and yield grades, followed by cattle fed 50% ARS, 50% rice straw/alfalfa, and 25% rice straw alone or 25% rice straw/alfalfa mixture. Ammoniation of rice straw improved all measured traits. A 25% substitution of basal diet with untreated or ammoniated rice straw and a 50% substitution with rice straw/alfalfa mixture did not significantly affect carcass traits compared to the basal group. Only 50% ARS and 50% URS cattle showed differences in body composition (P<.05) with lower fat and higher water and protein contents. No significant differences were found in shear value, panel tenderness, connective tissue, juiciness, flavor and overall palatability of meat from steers fed the basal, ARS or URS diets.

Varietal Difference of Eating Quality after Storage in Room Temperature (벼 상온 저장시 식미관련 특성의 품종간 차이)

  • Rice ageing describes the changes in physical and chemical properties of rice grains during storage that alter the eating quality of rice. The prevention of deterioration in palatability of rice during storage is important for stable supply. In this study, We conducted to select the variety with superior palatability after storage at room temperature. 'Yeonghojinmi' had much higher head rice ratio of milled rice than that of 'Ilmi', 'Junam'and 'Hwayeong'at similar moisture content of approximately 15%. Grossiness and stickiness were higher in 'Yeonghojinmi' than that of the others. Meanwhile, yellowness(b value) of cooked rice was lower in 'Yeonghojinmi' than that of the others. Of the four varieties, Yeonghojinmi was maintained good eating quality after storage in room temperature, which also contributed to differences in palatability, such as protein content, glossiness, stickiness and color of cooked rice.

Palatability Evaluation and Physical Characteristics of Cooked Rice (쌀의 물리적 특성과 식미와의 상관)

  • Many parameters such as textural, cooking and pasting properties and chemical components aye the main reasons of tardy progress in evaluation of cooked rice. To increase the evaluation effect of cooked rice, physical properties and palatability of cooked rice were studied with five varieties. The highest palatability was observed in Kosihikari while Hoan showed the lowest value. The cooked rice of Kosihikari showed a high values of waxiness (0.12) and boiling time (21.1 min.) while the porosity and expansibility were as low as 19.0 and $28.6\%$, respectively. The water absorption time of Kosihikari and Sindongin was a little bit slow compare to the other varieties. A negative correlations were observed between palatability and expansibility (-0.390), porosity (-0.874**) and water absorption time (-0.960**) while a positive correlations were observed between palatability and boiling time (0.861**), waxiness (0.920**) and hardness (0.478). The path coefficient of water absorption time, porosity, boiling time and waxiness contributed to the palatability were 35.9, 22.7, 17.0 and $8.2\%$, respectively, Thus, the results obtained in this study suggested that the physical characteristics of vice grains could be effectively utilized in high quality of cooked rice breeding programs.

Effect of Transplanting Times on Rice Quality in Mid-mountainous Area (이앙시기가 중산간지 고품질 쌀 생산에 미치는 영향)

  • In order to find out better cultivation practices in mid-mountainous area to produce high quality rice, an experiment involving four transplanting times and four varieties was carried out, during past three years $(2002\~2004)$. There was no significantly different on palatability of rice between transplanting time, but an interaction effect was between transplanting time and variety, The palatability of milled rice of Sangmibyeo, Hwayongbyeo and Junambyeo transplanted at May 10th were higher than Samcheonbyeo. The palatability of milled rice grown by May 20th day's transplanted, Sangmibyeo and Junambyeo were higher than Samcheonbyeo. The palatability of milled rice grown by May 30th day's trans-planted, Sangmibyeo and Hwayongbyeo were higher than Samcheonbyeo and Junambyeo. And the palatability of milled rice grown by June 9th day's transplanted, Sangmibyeo and Samcheonbyeo were higher than Hwayongbyeo and Junambyeo. It can infer that Sangmibyeo is one of the best option over the transplanting times in term of palatability, Amylose content of milled rice was showed without a significant difference between transplanting time, but there was an interaction effect between transplanting time and variety. The amylose content of grown by May 20th day's transplanted, Sangmibyeo and Samcheonbyeo were lower than Junambyeo. The amylose content of milled rice grown by June 9th day's transplanted, Sangmibyeo and Samcheonbyeo were lower than Hwayongbyeo and Junambyeo. And the amylose content of milled rice grown by May 10th day's and May 30th day's transplanted, was showed without a significant difference between variety. The protein content of milled rice grown by later season transplanted was lower than grown by earlier, The head rice yield wasn't different significantly between the treatment of transplanting times and varieties. But the yield of milled rice grown by transplanted at May 20th day was high most in between the treatment of transplanting time. In a conclusion gathering all above the results, 20th May day's transplanting time and Sangmibyeo was one of the best option for producing high quality rice among the treatments in considering with head rice yield, palatability, amylose${\cdot}$protein content and productivity, at Mid-mountainous area.

Physicochemical Properties of Rice Kernels Affected on Palatability (식미에 영향을 미치는 쌀 곡립의 이화학적 특성)

  • This study was investigated the relationship between palatability and physicochemical properties of rice kernels from two rice cultivars, including Gopumbyeo and Palgongbyeo. Major fatty acids of rice were oleic(35% in Gopum, 33.2% in Palgong, respectively) and linoleic acids (42.9% in Gopumbyeo, 40.7% in Palgongbyeo, respectively). There were significant differences in composition of amino acids and content of sugar from non-starch polysaccharide between two rice cultivars. However, no difference was found in mineral contents between Gopumbyeo and Palgongbyeo. In Rapid Visco Analyzer examination, pasting temperature and breakdown of Gopumbyeo were lower than those of Plagongbyeo. In X-ray diffraction patterns of starches separated from two rice cultivars, traditional A type and there was no difference in crystalline of rice starch. We could also obtain the results that Goupumbyeo, known to have good eating quality, had higher palatability value than Palgongbyeo.

Effect of Appearance, Viscosity and Texture Characteristics on Rice Palatability in Some Rice Varieties (쌀의 외관, 호화특성 및 물성 차이에 따른 품종별 분류)

  • We analyzed factors which related with rice quality at seven varieties. The whiteness of Daeyabyeo, Hopyeongbyeo and Koshihikari were higher than those of other rice varieties. In the hardness of brown rice, Ilpumbyeo was the lowest, and Sindongjinbyeo was the highest among varieties. The hardness cooked rice of Hopyeongbyeo were significantly low, and cohesiveness of those were significantly high. but adhesiveness, viscosity and gumminess of Ko-shihikari was high than other cooked rice varieties. The palatability of Daeyabyeo and Hopyeongbyeo were higher than those of Ilpunbyeo and Ungwangbyeo. Varieties which were known as having good palatability were higher in the breakdown, while setback and consistency were low. In those varieties, factors of upper were correlated with palatability, so this were supposed to determine palatability.

Comparison of Rice Quality According to Agroclimatic Regions in Gyeoungbuk Province (경북 농업기후 지대별 쌀 품질 비교)

  • This study was carried out to provide the geographic information based on the distribution of rice qualities and palatability in Gyeoungbuk province of Korea. The rice grain quality and environmental factors were analyzed using 513 sampling sites based on different five-agroclimtic regions of Gyeoungbuk province during three years from 2002 to 2004. In rice grain quality characteristics, the average palatability was low in South eastern coastal and Tabaek semi alpine regions as $67.6\~68.3$ and the coefficient of variation (CV) was relatively high as $6.2\~7.4\%$. The average head rice rates were low in South and Central eastern coastal regions as $87.3\~88.2\%$ and CV was high as $8.2\~8.3\%$. The average protein content was high in Central eastern coastal regions as $8.0\%$ and CV was high as $8.2\~8.3\%$. In case of palatability, the variation was differed clearly between high and low agroclimatic regions; it means that it is possible to divide the same agroclimatic region of high CV into two or three areas by CV of palatability. As the results of subdividing each existing agroclimatic regions based on the palatability, the variation of grain quality characteristics was become lower than that of existing five-agroclimatic regions. Therefore, the re-establishing of agroclimatic region based on rice grain quality was very important for precise cultivation for rice.

Comparison of Properties Affecting the Palatability of 33 Commercial Brands of Rice (시판 브랜드 쌀 33종의 품종별 식미 관련 특성 비교)

  • This study was performed to compare the properties affecting the palatability of 33 commercial brands of rice. Five rice varieties were identified including Chucheongbyeo, Hitomebore, Ilpumbyeo, Nampyeongbyeo, Seachucheongbyeo, were compared in terms of physicochemical characteristics, texture, head riceratio, and palatability through Toyo values. We also analyzed the relationship between grain characteristics and palatability. Amylose content of 5 rice varieties ranged from 17.04-17.98%. Nampyeongbyeo had the lowest and Seachucheongbyeo had the highest content of amylose among rice varieties. The protein content of 5 varieties ranged from 6.72-7.55%. Nampyeongbyeo showed the highest content. The moisture content varied from 13.08-14.83%. Chucheongbyeo has the highest moisture content. The head rice ratio of Ilpumbyeo, Chucheongbyeo, and Seachucheongbyeo were over the 90%, which was lower than that of Japan. Chucheongbyeo had the lowest hardness value and the highest adhesiveness value as measured by texture analyzer. The palatability value was highest in Chucheongbyeo, and the lowest in both Nampyeongbyeo and Ilpumbyeo. The palatability value was negatively correlated with protein content, but positively correlated with texture, moisture content, and head rice ratio. Based on this results, the rice varieties with high palatability had lower contents of amylose and protein, but higher moisture content and head rice ratio. Chucheongbyeo seemed to be the valuable variety with the highest palatability among them.

Annual Variation of Quality in Commercial Rice Produced in Gyeongbuk (경북산 유통 브랜드 쌀의 연차간 품질 변이 분석)

  • Rice quality must certainly be considered as one of the primary preference for consumers. On aspect concerns marketing, such attributes as appearance, physicochemical characteristics, and palatability of brand rice are very important. Therefore this study was carried out to observe the quality of commercial brand rice in Gyeongbuk Province, Korea from 2002 to 2004. In seasonal changes of mean air temperature from early July to middle August, it was lower in 2003 by $0.8{\sim}3.3^{\circ}C$ than that in normal year. Among the rice quality characteristics, the cv of percentage of head rice and palatability (Toyo value) were very low but those of chalky rice and protein content were very high during three years, and the same tendency was also observed among the brands. The average percentages of head rice were 92.5% in 2002, 89.9% in 2003 and 93.3% in 2004, respectively. On the contrary, the percentages of chalky rice were higher in 2003 as 4.9% than those in 2002 (3.9%) and in 2004 (2.8%). These results were caused by the abnormal meteorological conditions in 2003. Due to the higher protein content (8.0%) in 2003, the palatability was deteriorated to 71.0. However the protein content in 2004 was reduced to 7.0% and this result improved the palatability to 77.0.

  • Fuzzy reasoning was applied to sensory evaluation of cooked rice. A sensory attribute diagnostics was done in terms of tour kinds of attributes-texture, taste, odor and appearance which determine overall palatability. First, rating for the contribution level of each attribute to the overall palatability was asked as one of five scales-very important, important, moderate, slight and very slight. Secondly, the preference level of each attribute for a cooked rice sample was asked as one of five hedonic scales-excellent, good, fair, poor and very poor. Thirdly, the results of the scales were converted into fuzzy values and operated by fuzzy reasoning. Finally, the contribution and preference levels of the attributes were composed to infer the overall palatability of cooked rice sample.
